CULINARY ARTS  Introduction to Mediterranean Cooking (Virtual)

The research continues to roll in: eating like a Mediterranean has been shown to reduce your risk for heart disease, cancer, and diabetes; aid in weight management, and protect you against dementia, depression, and Alzheimer’s disease. Chef Duane Ehrens and his wife Karen Ehrens, a Registered Dietitian, share background on the diet, recipes, and meal suggestions to help you eat more like a Mediterranean here in North Dakota. Duane and Karen will share practical information about how to include more whole grains, vegetables and fruits, beans, and quality fats and oils in your diet. Right now, there is a large renewed interest in cast iron cookware, but many are afraid to use it, thinking it’s too hard to care for. Not true! The benefits of cast iron for everyday use (longevity, healthy, and quality of food) can be great. In this class you will learn tips on cleaning, restoring, seasoning, and cooking with cast iron.
