JRCINTHENEWS

Clovis Metcalfe, head of both the Betting, Gaming, and Lotteries Commission (BGLC) and the Jamaica Racing Commission (JRC), is urging newly graduating trainers to always stay on the right side of the law, as the sport's integrity must be protected for the horse racing sector to survive.

With the image of Jamaica's horse racing industry not always being the cleanest, Metcalfe advised newly trained trainers to always follow the regulations or face prosecution by the JRC

"You need to operate as professionals and manage your people, horses, and business properly. Respect and value your owner ' s investment in you; they have choices, and now they will have even more choices, so treat them well," Metcalfe ended

What You Will Need:

FRESH MANGO SALSA

It's summertime which means it's mango season! Why not find creative things to do while it's in abundance This simple and colourful mango salsa is super easy to make It's sweet, spicy and delicious! The tropical flavour of mangoes creates a sweeter salsa than the traditional tomatobased version Serve this fresh mango salsa with chips, tacos or salads, or just eat it straight out the bowl as a salad You will need only six basic ingredients to make this easy mango salsa: ripe mangoes, red bell pepper, red onion, cilantro, jalapeno and lime

How to choose the best mango for salsa

Choose ripe mangoes, ones that are more yellow or orange than green Mangoes that are green in colour are unripe A ripe mango will also smell fragrant The flesh should be soft, but not mushy

1. In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeno. Drizzle with the juice of one lime.

2. Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again For best flavour, let the salsa rest for 10 minutes or longer

Storage suggestions: You can store the salsa in the refrigerator, covered for 3 to 5 days. It will be best in the first day or two.
