Opt for Natural Fibres: Choose clothing made from organic cotton, linen, hemp, or bamboo. These materials are more sustainable and biodegradable compared to synthetic fibres. Natural fibres are also often more breathable and comfortable.
Second-Hand Shopping: Explore charity shops, thrift shops, vintage shops, and online platforms like Depop or Vinted. Buying second-hand reduces the demand for new clothing production and gives pre-loved items a new life.
Support Ethical Brands: Look for brands that prioritise sustainability and ethical practices. At the moment, we are really loving Omnes, Casa Raki, NUDEA and Mashu.
Care for Your Clothes: Extend the life of your garments by washing them less frequently, using cold water, and air drying. This not only saves energy but also keeps your clothes in better condition. Avoid using a tumble dryer, as it can wear out fabrics faster.
Repair and Upcycle: Instead of discarding damaged items, you could learn basic sewing skills to repair them. It’s a fantastic way to revamp your wardrobe and existing pieces.
Create a capsule Wardrobe: Use pieces that can be mixed and matched together. Aim for a cohesive colour palette and styles that complement each other throughout the different seasons.
Eco-Friendly Accessories: Choose sustainable options like jewellery made from recycled materials or bags crafted from eco-friendly fabrics. Look for brands that use ethical production methods and sustainable materials.

Casa Raki is a London-designed women’s brand with items made from high-tech, organic, and recycled fabrics. It manufactures locally to reduce its climate impact.

Ethically made from hightech but ecological fabrics in a couture factories in Portugal and Bulgaria, Casa Raki commits itself to sustainable and responsible practices from the outset. Targeting only sustainable materials and processes, while focusing on improving and extending garment life.

The brand encourages an open dialogue and invites consumers to re-evaluate the relationship society has with clothing.
For example, they include recycled nylon or recycled polyester in all swimwear pieces, turning waste into a resource. To make its fabric, ECONYL, waste such as industrial plastic, waste fabric and fishing nets from the oceans is recycled and regenerated into a new nylon yarn that is exactly the same quality as virgin nylon.
And for their Resortwear collection (consisting of dresses, jumpsuits, skirts etc) they selected a 100% GOTS certified organic linen. From field to fibre, from yarn to fabric, the making of linen is a story of passion and craftsmanship whilst being the most sustainable fabric in the planet.

The ‘sober curious’ movement is beyond a passing trend.
It’s a shift in the way people are questioning the role of alcohol and exploring a healthier relationship with drinking. This doesn’t necessitate complete sobriety, it promotes personal choice and becoming more mindful of consumption. Many of us drink out of habit, whether to socialise, relax, or cope with stress. But more people are beginning to ask, “How does alcohol actually affect my body and mind?” This introspective approach invites individuals to consider not just when they drink, but why they choose to drink at all.
It’s important to distinguish being sober curious from full sobriety. Sobriety means abstaining from alcohol for various reasons such as health, religious reasons, personal or family experiences with addiction or simply not enjoying it.
Being sober curious means reflecting on why, when and how you consume alcohol. It allows people to experiment with drinking less, without making a permanent commitment. As awareness of the physical and mental impacts grows, more people are choosing to cut back, discovering a healthier, more balanced life.

Take a leisurely stroll to St Catherine’s Hill and enjoy the stunning view overlooking Winchester.
While it can be tempting to stay indoors during the winter months, getting out and about in the Hampshire countryside is just the thing to colour your cheeks and breathe fresh air into your lungs, and you’ll be rewarded with the stunning views and surrounding nature!
If you’re looking for a leisurely stroll that’s under 5 miles, you can’t go wrong with a hike along St Catherine’s Hill, which is around 4 miles and takes you along the tree-topped beacons of the wonderful Meon Valley reserve.
The walk starts outside Winchester Cathedral and from there you can meander through the cloister then right through The Close, walking by Pilgrim’s School, and exiting through Priory Gate on to College Street.
Getting out and about in the Hampshire countryside is just the thing to colour your cheeks.
From College Street, turn left under King’s Gate and continue to College Street, followed by a left and then right to remain on this road. At the end of the road is a track veering off to the right with a gate at the entrance, and from here you go left to follow the path along the River Itchen.
Pass the playing fields near the college, cross the road, and take the gravel path opposite which will be signposted Clarendon Way.
Walk across the fields towards the church and hospital of St Cross. Remain on the path through an avenue of trees, and then follow the path as it veers to the left, exiting through the gate leading to the old mill. Continue along the gravel path until you reach the road, then turn left to carry on beyond the barrier.
Next, turn left to continue along the Itchen Navigation and you will then see St Catherine’s Hill on your right. Finally, it’s time for the steep incline up the seam of wooden steps towards the hilltop, and once you reach the top you will then be rewarded with the fantastic view overlooking the city of Winchester. There is far more than just fantastic views to enjoy when you reach the summit! You’ll see the Shetland sheep who roam this picturesque hill, and you may also spot the abundant birdlife such as Whitethroats, Yellowhammers, Blackcaps and Green Woodpeckers.
To return to your starting point, walk back down the hill and turn right through the carpark. Cross that road and follow the path marked ‘Pilgrim’s Trail’, and continue until you reach College Walk, then turn right back onto College Street.

What inspired you to become a chef, and how did your culinary journey begin?
Becoming a chef was almost inevitable for me. My parents met in a kitchen—my dad is an executive chef and my mum is a pastry chef—so the kitchen has always been part of my life. I first worked in a professional kitchen at South Lodge with my dad when I was 14. Though they advised against it, I became hooked after winning a young chef competition at 15 and I never looked back.
Is there a chef you admire the most or take the most inspiration from? Who and why?
I admire Rasmus Munk, the owner of Alchemist in Copenhagen. His creativity and ability to craft such a sensory dining experience are incredible. I visited his restaurant during the filming of MasterChef: The Professionals, and what struck me most was not just his culinary skill but how he treats his team with such respect. It’s rare to see someone excel in both their craft and as a leader.
Speaking of MasterChef: The Professionals, how was this experience, and which moment or dish stands out to you the most?
Winning MasterChef was an unforgettable experience. The pressure was intense, but it taught me a lot about time management and working under constraints. The standout moment was the final, where I took a risk by saving lobster and beef fillet for the last round. I didn’t expect to reach the final, so it was a gamble, but it paid off. It showed me the importance of trusting your instincts, even in high-pressure situations.
It’s about finding new possibilities in everyday ingredients.
You’ve had residencies at Camellia at South Lodge and The Avenue at Lainston House— how did these experiences shape the menus you now create?
My residencies gave me invaluable experience. At Camellia, I first stepped into a head chef role where managing a high-demand restaurant challenged me - but it helped me understand how to balance creativity with the realities of a busy kitchen. At The Avenue, I’ve shifted focus to a more refined approach, using Hampshire’s best produce, particularly from the Lainston House Kitchen Garden. These experiences mean I can now focus on delivering unique dishes with precision.
How would you describe your cooking style, and has this changed throughout your career? What can diners expect from your food at The Avenue?
My cooking style is still evolving, but I like to keep things simple and let the ingredients shine. I avoid overwhelming dishes with too many flavours and instead focus on perfecting a few key elements. At The Avenue, guests can expect the best of local produce with bold yet refined flavours. I want to create a dining experience where every dish surprises, but in a way that feels harmonious and approachable.

What are some of the standout dishes on your new menu, and what makes them special to you?
We’ve had great feedback on the whole menu which is really rewarding, but I particularly love the bread course with fennel pollen laminated brioche and garden herb butter. The venison loin with beetroot, onion caramel, and duck liver sauce is another favourite—rich and well-balanced. For dessert, the whipped cheesecake tart with pear, fig leaf, and blackberry and pastis sorbet is a real highlight.
What is your favourite part about being a chef?
For me, the best part is the creativity—taking an idea and transforming it into a dish. I love working with ingredients in unexpected ways. One dish I’m particularly proud of is the crab course, where I use

Far from just being a celebration of stone and mortar, the anniversary will reflect and celebrate nine centuries of the Cathedral’s storied past and its historical and cultural significance in Sussex.

Central to the celebrations will be an exhibition named Religion, Rebellion & Reformation, running from 14th February to 15th November 2025. This exhibition will display nine fascinating artefacts from East and West Sussex, each a representation of a bygone century, and highlighting the influence of Christian faith on both the Cathedral’s history and the region’s cultural landscape.
And for music lovers, the Cathedral’s renowned musical heritage will be honoured through a special anniversary concert, Together in Unity, which will celebrate the 60th anniversary of Leonard Bernstein’s ‘Chichester Psalms’. This powerful and stirring piece of music was commissioned by the Cathedral in 1965 and showcases the cultural exchange between the US and the UK, highlighting how the Cathedral has been a significant patron of the arts. New Year is usually a time for setting new goals and choosing new health habits. In 2025, one of the main new habits on the list may be meditation, the world’s fastest-growing health trend.
It’s a trend which pleases Liz Court, for whom meditation is not exactly a new health habit. She learned Transcendental Meditation way back in 1967 and trained as a TM teacher with Maharishi Mahesh Yogi at Rishikesh, India, in 1970. Liz has run TM centres in Watford, Harrow and now in Bordon, Hampshire.
“Transcendental Meditation is ideal for people who think they can’t meditate,” she says. “It’s easy to learn and completely effortless to practice. You don’t have to get rid of thoughts, monitor breathing, or try to be ‘in the moment.’ It just goes by itself, automatically.”
So, what actually happens in TM?
Liz compares the process to diving beneath the waves of an ocean. “The surface of the ocean is constantly changing, like the contents of the mind. But deeper in the ocean is stillness, and the mind is the same. When we settle the attention to quieter levels of thought, we contact inner stillness, energy, and happiness.”
Tiredness, tension and stress are dissolved, resulting in more energy and happiness.
Liz explains that since everyone is naturally drawn to greater happiness, once the process is properly learned, it unfolds effortlessly on its own.
Learning TM properly involves using an individually chosen mantra or word, to use (silently) as a vehicle for the mind to settle down, along with the technique to use it properly. That’s done in a one-to-one session with a qualified TM teacher.
TM is recommended for two twenty-minute sessions each day. The benefits, says Liz, are widespread and highly evidence-based. During TM, the brain becomes highly synchronised, displaying coherent activity, which has been linked to improvements in every area of mental performance and cognitive function, from improved memory and learning ability to
increased self-confidence and self-esteem. And because the mind settles down, so does the body, gaining a state of deep physical rest.
Liz says that Transcendental Meditation is the complete opposite of anxiety - during TM, blood pressure comes down, breath rate reduces, and muscle tension relaxes. It’s a state of restful alertness. During TM, tiredness, tension, and stress are naturally dissolved, resulting in better health, more energy, happiness, and greater success in life.
Over 600 scientific studies have been conducted in 200 independent universities and research institutions worldwide during the last 40 years. The research has shown a huge range of mental and physical benefits from TM, ranging from improved heart health to better relations with co-workers.
Regular use of Transcendental Meditation even slows down the ageing process - reduced stress helps us to stay younger for longer!

Significant strides in automotive sustainability in the UK has made our automotive industry more environmentally friendly and socially responsible.
The industry is a major contributor to climate change and global carbon dioxide emissions, so sustainability has become increasingly important.
A quarter of a century ago, the UK automotive industry made its commitment to sustainability clear with the publication of its first annual sustainability report. As consecutive reports over the years have shown, the industry has driven sustained success – in social, environmental and business terms – making production more efficient, reducing waste, and sourcing energy from renewables.
The result is a major reduction in the carbon cost of vehicle production and the 2023 edition of this report shows a significant milestone has been reached, with direct CO2 emissions per vehicle manufactured down by more than half since 1999.
A few 2023 milestones over 2022:
• CO2 emissions down 20% per vehicle
• Production energy use down 18% per vehicle
• Production water usage down 17.7% per vehicle
It is an achievement that comes through longterm dedication and grit against a backdrop of challenges – the 2008 financial crash, Brexit, Covid-19 and the major global supply chain disruption that followed.

2023 saw significant declines in CO2 emissions, energy and water usage as Britain’s factories turned out their highest volumes in five years, exceeding one million vehicles. But last year was also momentous for the huge investments secured in our net zero transition, with almost £24 billion announced to produce a new generation of zero-emission vehicles, electric batteries and components in the UK.
Such growth in sustainability is the latest chapter in the industry’s ‘green’ transition. Amid fierce global competition, maintaining a competitive edge is becoming harder but those commitments in 2023 underline the global appeal of the UK automotive industry – with renowned R&D expertise, a highly skilled and flexible workforce coupled with first class products and famous brands.
Of course, these achievements could not have been realised without collaboration between the automotive sector and government – along with a raft of adjacent industries and stakeholders.
The UK’s automotive industry can be the driving force behind our green growth agenda. Impressive achievements of the last 25 years aside, still needed is a suitably ambitious industrial strategy that delivers longer-term sustainability goals.
This must include clean and affordable energy, strong free trade agreements providing access to critical raw materials, enhancing zero emission supply chains and an upwardly-skilled workforce geared for a greener future. Implement these measures and a million EVs will be rolling off our production lines every year by 2035, bringing massive environmental, economic and social benefits with them.
Sustainability
The problem with the term sustainable is that it is now so overused that it’s practically meaningless. Businesses of all sorts toss the word in to convey an awareness of ‘something important about our natural environment’, although it’s so nonspecific, a cynic could say it is used as a very effective ‘greenwashing’ token. How sustainable is a biodegradable, non-toxic cleaning spray if it comes in a single-use bottle?
Hopefully, we all understand that not all plastic is recyclable, that none is infinitely recyclable, and that only a very small percentage of our recyclable plastic is indeed recycled, even if we put it in our designated bin. Then, there is the significant energy used and the toxicity released in the recycling process. Of course, as a householder, it is better to recycle than not to recycle, but it is by no means the path to a genuinely clear conscience… nor sustainable.
Similarly, how sustainable are the organic blueberries grown with sensitivity to the soil and airfreighted from Peru because they’re not ‘in season’ in the UK but oh-so-important to have for their ‘Super Food’ properties?
Perhaps the answer is to define ‘sustainable’ robustly in the commercial setting and restrict its use to products and processes that really can show evidence of benefit for the environment.
(The Soil Association did this very effectively for the term’ organic’, which then became recognized in law 30 or so years ago.) We could then use the term to discern the things we buy.
Meanwhile, if we all understand the gravity of our unfolding environmental catastrophe and the urgency with which we need to manage it, we have some chance of addressing the challenges; in doing so, we need to get comfortable with being both vigilant about our choices and active in our determination to discriminate between the end products, and the systems and processes used to produce them. But we aren’t good at getting comfortable with environmental vigilance around retail and lifestyle because until we’re practised, we imagine that it feels depressing, bleak, pointless, and even a killjoy. But here’s the thing – when you are practised, it becomes way more than comfortable - it becomes joyful! And it does have an impact.
Living and consuming with accountability can be truly uplifting. It takes a little more effort and a little more time, but we are talking a little here. Small changes to daily habits and choices can have a meaningful impact on how you feel about yourself
