Spiced apple Chutney

• 900g apples, cored and chopped • 110g sultanas, raisins or chopped dates
This spiced apple chutney is the epitome of Autumn in a jar - rich, fragrant, and bursting with flavour. It’s sweet, savoury, and tangy notes make it the perfect companion to meat and cheese boards, making an impressive gift for family and friends.
Method
Put all the ingredients into a preserving pan. Slowly bring to the boil until the sugar has dissolved. Simmer for 1½–2 hours, stirring occasionally to stop the chutney sticking to the pan. The chutney is ready when it is very thick, and you can draw a wooden spoon across the base of the pan so that it leaves a channel behind it that does not immediately fill with liquid. Decant into sterilised jars, seal and cool. Store in a cool, dark cupboard for two to three months before eating.

For a heartwarming winter soup, try this Apple and Squash soup. The sweet combination of apples and squash creates a velvety soup with a hint of spice - perfect for cosy evenings.
Ingredients
• 1 large butternut squash
• 2 cooking apples
• 160ml chicken stock
• 200ml coconut milk
• 50g brown sugar
• 1 teaspoon ground cinnamon
• ½ teaspoon ground nutmeg
• ¼ teaspoon ground cardamom
• Pinch of salt
Method
Preheat the oven to 200°C. Slice the squash in half and remove the seeds. Place face down on a lined baking sheet and roast for 30-40 minutes, or until soft. Allow the squash to cool, scoop out the flesh, and place in a blender. Peel and dice the apples. Place them in a microwave-safe dish with 2 tablespoons of water and microwave on high for 1 minute, or until softened. Add the apples and their liquid to the blender with the squash, chicken stock, coconut milk, brown sugar, cinnamon, nutmeg, cardamom, and salt. Blend until smooth.
Serve in bowls with a drizzle of coconut milk and freshly grated nutmeg on top. For extra heat, add a pinch of cayenne pepper. For added texture, sauté diced apples in butter and use as a garnish.

Ingredients
• 75g ground walnuts
• 2 tablespoons brown sugar
• 2 tablespoons beaten egg
• 1 tablespoon milk
• 3 tablespoons butter, softened
• ¼ teaspoon vanilla extract
• 1¼ teaspoons lemon juice, divided
• Pastry for a double-crust pie (23cm/9-inch)
Method
Preheat the oven to 190°C. In a large bowl, combine the ground walnuts, brown sugar, beaten egg, milk, 1 tablespoon of the softened butter, vanilla extract, and ¼ teaspoon of lemon juice. Roll out half of the pastry and line a 23cm (9-inch) pie dish. Press the nut mixture evenly over it.
In another bowl, toss the sliced apples with the remaining lemon juice. In a separate bowl, mix together the caster sugar, plain flour, cinnamon, nutmeg, and salt. Coat this evenly over the apples. Spoon this filling over the nut mixture in the pie dish. Dot the top of the apples with the remaining 2 tablespoons of butter. Roll out the remaining pastry and cut into strips. To create the lattice crust, place the strips over the pie in a criss-cross pattern, then trim, seal, and flute the edges. If desired, brush the top with a little milk for a golden finish.
Bake in the oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling. Allow the pie to cool slightly before serving warm, topped with your choice of indulgence. Perhaps a scoop of vanilla ice cream, a dollop of clotted cream or a drizzle of hot custard for extra deliciousness.

Beautiful South explores the remarkable career of Chef Robert Thompson MBE, delving into how he became the youngest British chef to earn a Michelin star. After relocating to the Isle of Wight 17 years ago, Chef Thompson has established several successful restaurants.
How did you start your career as a chef?
“I started cooking at the age of 10 and knew early on that I wanted to pursue it professionally. My older brother was already a chef and attending catering college, which gave me a good insight into the profession.

I began my training at college, then after a year, ventured out into the world of Michelin Star restaurants. I moved to Winteringham Fields in Lincolnshire, starting as an apprentice at age 19 under the guidance of the incredible two Michelinstarred husband and wife team, Germain and Annie Schwab. They were a fantastic couple who supported me immensely and provided the

You launched You Be Chef, which is a premium home dining experience when restaurants were forced to close during the COVID-19, tell us more about that.
“I never planned it initially. I just did what a chef would do - created a menu with the stock I had and used takeaway containers to deliver it. Within weeks, I was driving around the Island twice a week, delivering meals. It saved my business.
‘I have never worked so hard in my life, the thought of doing it again is almost sickening.’
Now, You Be Chef has evolved into a premium home dining experience, offering set menu boxes delivered to your door so you can cook like a chef.”
RT Cafe Grill is inspired by the Isle of Wight and your experiences. Why is this?
“I opened the RT Cafe Grill at the Royal Maritime House in Ryde this March. I want guests to enjoy high-quality produce in a laid-back setting. The grill offers breakfast, lunch, and dinner with a modern British menu infused with Isle of Wight flavours. The ground floor location with garden provides breathtaking views across the Solent, especially on summer evenings.”
With Thompsons relocating and re-opening its doors in Autumn, what can guests expect?
“Thompsons will launch in Autumn 2024 at Royal Maritime House through a number of pop-up tasting menu events. The restaurant will offer a full fine dining experience with an open kitchen where guests can watch the chefs at work.
With the cafe grill going so well, I want to take my time with the re-opening of Thompson’s. Popup nights are a great way of offering guests the choice of different dining options, and will allow me to understand the best time to re-establish Thompson’s full-time.”
How do you get involved with charities?
“I receive numerous charity requests weekly but can’t support them all. However, I do support several, including the Earl Mountbatten Hospice. I also collaborate with Van Mossel Esplanade, a local car dealership. Every year we hold a charity gala dinner and provide all the food, staffing and venue for free. The event has now raised in excess of £150,000. I’ve always tried to help as much as I can.”
You were awarded an MBE last year for your contributions to charity, hospitality, and tourism. How did it feel to receive the award?
“ I thought it was a joke at first when I received the envelope marked ‘On His Majesty’s Service.’ It felt surreal, as I didn’t think someone like me would receive such an honour.

Headteacher Julie Summerfield of the 11-16 Secondary School, Horndean Technology College (HTC) was nominated for the ‘Hampshire Education Leadership Award’. Anybody from the 69 secondary and over 200 primary schools across Hampshire can be nominated for this.
A ‘judge’ from a successful Hampshire school then visited HTC to explore the views of staff and children and to ascertain Julie’s impact. Julie was then put forward for the award with three other staff (two heads from primary schools and one from a sixth form College).
On the night Julie won, the presenter read out some of the reasons why she gained the award including the comment that, ‘She has and continues to put her heart and soul in to her role to make the lives of the young people in and beyond her care better while supporting and investing in the development of the staff she works with’.

Continuing to be built in Sunderland for local and export markets, the ubiquitous Nissan Qashqai is one of the best-selling cars in the UK. It is rightly regarded as the car that triggered the crossover SUV trend almost twenty years ago – a type of car that has dominated global markets in recent years.
This refreshed third-generation Qashqai was revealed in April 2024. Updates include redesigned head and taillights, a new front fascia inspired by the all-electric Ariya, new exterior colours, new alloy wheel designs, new seat designs, and new interior materials.

The second option is the Qashqai e-Power, which is a very clever variation on a hybrid. Instead of an engine driving the wheels with help from an electric motor – as in many hybrids – the 187bhp electric motor does all the propulsion work, and the engine is deployed only to power the electric motor and charge the small battery. The car is very efficient and smooth-driving, and it feels a lot like driving a purely electric model.
On the road, the Qashqai is competent rather than hugely enjoyable to drive. Ride quality is good, and the engines are refined, so it’s a comfortable car for any kind of driving. The 1.3-litre petrol engine with mild-hybrid assistance is a solid unit but lacks a little in terms of performance. The Qashqai e-Power is the one for you if your budget can’t stretch to the Ariya EV (from £39,645). It’s smooth and hushed at low speeds, but can sound a bit hoarse when pushed hard.
The infotainment system uses Google builtin services, and there is an updated Around View Monitor feature with a front camera viewing angle of 200 degrees. The new Driver Assist Custom Mode feature allows drivers to preference certain safety features. There is also a new N-Design trim grade for the updated range.
There are two power plants available. The first is a 1.3-litre petrol unit tuned to either 138bhp or 156bhp, with a choice of manual or automatic gearbox. All-wheel drive is available on the top-spec models.
The model walk-up begins with the range-entry Acenta Premium, followed by N-Connecta, N-Design, Tekna and the top-end Tekna+. All except the base model come with impressive Google-based media systems, so tech is a strong point.
Prices have risen with this 2024 MkIII update, as the Qashqai now starts from £30,135, rising to £42,980 for the top-spec car.
To be fair, the Qashqai isn’t the roomiest car in its class, but as runaway global sales suggest, it’s more than adequate as a family car. Its boot capacity ranges from 504 to 479 litres, which is average for the class, but notably smaller than the latest Hyundai Tucson and Kia Sportage.
Be assured, the Qashqai remains a great family car. It’s comfortable to drive, has enough space for passengers, the engines are relatively efficient, and it’s relatively well-priced. It’s a good all-rounder if you want a no-fuss family SUV.

Morgan Fereday
Morgan is the Sales and Marketing assistant here at Beautiful South. She has recently graduated with a First-class degree in Business and Management (Marketing) at Bournemouth University. Outside of work, Morgan enjoys spending her weekends with family and friends, shopping and discovering new local places to eat.
