Fermdor® R Classic is a rye-based sourdough powder. A traditionally mild sourdough with a balanced mild taste profile.
Fermdor® R Classic reduces and masks the acidic and bitter taste in wholemeal and rye breads. The baked good gets an elastic crumb, without affecting the crumb colour. Used in all types of artisanal bakery products, all types of rye bread and in whole grain breads.

What makes sourdough so tasty and versatile? We were eager to find out. And started experimenting with cultures, expanded our knowledge about fermentation, tested recipes, baked, tasted and developed a sourdough range called FERMDOR® For many years sourdough has been used almost exclusively to acidify bread and improve the taste of baked goods. However, it can be used for so much more, including making bread softer, with a moister crumb and open structure. In addition to delivering a unique, rustic flavour and improving the shelf life, sourdough fermentation also offers technological and nutritional advantages.
We are proud to present Bakels FERMDOR®, a range of sourdough products to assist bakers in efficiently producing a wide variety of artisanal style bakery products. Developed by our center of competence for sourdoughs in Switzerland. The TTT process is a completely natural process for heat treatment of cereals, which does not apply any chemicals or other additives during the processing of the raw materials.
With our natural and innovative TTT products made from pure wheat, rye and oats, it is possible for you to prolong freshness, improve softness and extend shelf life of your bread assortment, without adding any E-numbers.
TTT products have a very high water absorption capacity; up to two and a half times their own weight. This provides more moist and less crumbly bread.

AROMATIC MALT & WORT

Malt is a natural sweetener and an aroma with a unique full-bodied taste that varies from mild and sweet to deep and rich. Malt products provide a pleasant and appetizing colour while promoting the fermentation process by nourishing the yeast so that sugar does not need to be added to the dough. Our range of quality malts is based on barley, rye or wheat that has been harvested in northern Scandinavia.
Our malts are available as both liquid extracts and in powder form. We also offer organic options of our most popular products.

CAKE EMULSIFIERS
Cake Emulsifiers in gel form are mainly used to produce cakes with a high volume and improved freshness, while ensuring a highly stable product, a reliable production, and a consistent baking quality.
The advantage of using a Cake Emulsifier in gel form instead of a powder-based emulsifier is that the gel is easier to mix with the remaining ingredients in the recipe. The gel activates immediately and all ingredients can be added at the same time according to the all-in-one method. Therefore, the mixing time can be reduced.
Cake Emulsifiers in gel form have an outstanding aeration potential, which strongly favours the production of a large number of small, uniform, and stable air bubbles. As a result, the crumb structure is finer which leads to a good texture.

Sweden is a coffee-loving nation. In fact, the concept of having a coffee break with something sweet is so deeply rooted in Swedish everyday life, there is even a special word for it: Fika. Let’s dive into this cultural phenomenon, which has found its way around the globe, and learn about its associated baking traditions.
THE CONCEPT OF SWEDISH “FIKA” FROM GOTHENBURG TO TOKYO
In the early 2000s, Scandinavian cuisine rose in popularity beyond the Nordics, establishing itself on the global food scene. An international interest in ‘fika’ soon followed suit. Beyond a passing trend, the enduring and far-flung popularity of this new, Nordic coffee experience can be found in cafés in New York, Tokyo, Taipei and as far as Melbourne in Australia.
THE SOCIAL IMPORTANCE OF FIKA
For Swedes, fika is more than just a regular coffee break with a sweet treat. Rather than a purely culinary tradition, it is a social phenomenon that brings people together regardless of their background or circumstances. This social aspect is just as important as the tempting combination of hot coffee and sweet pastry.
‘Having a fika’ together is considered as quality bonding time, be it with family, friends, or coworkers. At work, many important discussions and major decisions are made over a fika or at the coffee machine. In fact, in a Swedish workplace, fika might be one of the most important meetings you have during your day!
THE SWEDISH CINNAMON BUN
Swedes love their cinnamon buns, and it is reasonable to assume that the bun is the most eaten treat of all time. Who can resist that sweet dough rolled up with a swirl of cinnamon and sprinkled with pearl sugar. In fact, Sweden even has a special day for the classic Cinnamon Bun. On October 4th every year, 7 million Cinnamon Buns are sold in Sweden on the official Cinnamon Bun Day alone. That is quite a number for a population of 10 million people.
THE SWEDISH SEMLA
Every year, Fat Tuesday, or Semmeldagen, as the Swedes like to call it, falls on the seventh week before Easter. In Sweden, it’s considered the national day of Sweden’s popular pastry, the semla.
The tradition is centuries old but the day and perhaps most importantly, the pastry, seem to be getting more popular by the year. Although new creative variations of the semla are introduced every season, the classic two-layer bun made of wheat and cardamom, stuffed with almond paste under a cover of thick layered whipped cream is in many ways considered holy to the Swedes. It’s no wonder that an estimated 6 million semlor are sold in one single day during Fat Tuesday. But the Semla season actually starts right after Christmas and during these months an estimated 40 million semlor are sold. For a small population of just 10 million people, that is an obscene amount of semlor.

CHOCKEX

Chockex is an alternative to regular chocolate and can be used for both covering and dipping. It is also great for decoration and moulding. Chockex gives a nice shine and a hard snap. The advantage of Chockex is that unlike regular chocolate, it does not require any tempering. Chockex is available in several different colours and flavours. All Chockex with palm oil are made from segregated RSPO-certified palm oil and free from hardened fat. Chockex Premium Dark and White are also available completely without palm oil. The cocoa we use in the products are Rainforest Alliance Certified. All Chockex are certified by Halal and Kosher.
