Mix into a smooth dough, normal mixing time
Dough temperature: 27-28°C

Mixing time: 5+4 minutes
Resting time: 20 minutes after dough rounding

Flat bread: roll down to approx. 3,5 mm and prick.
Larger bread cakes: dough weight 250 g, roll down to approx. 4 mm and prick.

Topping: Sifted wheat flour
Mixing time: 5+2 minutes
Resting time: 2x10 minutes
Dough weight: 500 g in a tin
Proving time: approx. 50-60 minutes
Starting temperature: 230°C
Baking temperature: 190°C
Steam: 7 seconds
Baking time: approx. 25 minutes

COOKIES
Bakels Oat & Chia 300 g Wheat flour
Margarine
Egg (6 pcs) 300 g
Cranberry / Chocolate
Topping: Bakels Chockex Premium
Mix sugar and margarine. Add the rest of the ingredients. Mix the dough until it is properly combined
Divide into 3 pieces and form thick lengths. Put in the freezer until the dough is properly cold. Take out and cut into desired thickness.

CRISP BREAD

Open damper the whole time

Roll down to 1,5 mm. Prick and put on sprayed, perforated baking trays. Divide into desired sizes. Brush with water and sprinkle with seed topping.

Mixing time: 4+2 minutes
Dough temperature: cold, store water and flour in the fridge the day before.
Resting time: 20 minutes in refridgerator between each fold.
Dough weight: approx. 60-65 g
Proving time: approx. 2 hours
Baking temperature: 180°C
Steam: 2 seconds
Baking time: approx. 16 minutes
Laminate the margarine into the dough, 3x3 folds.
Roll down to approx. 3 mm, cut out and roll into croissants.


Superseed CHIA
Chia seeds come from the plant Mexican Chia sage (Salvia hispanica) which is native to Central America.
Chia seeds are rich in B-vitamins thiamine and niacin, and also contain calcium, iron, magnesium and zinc.
