Cherries are drupes, or stone fruits, and are related to plums, peaches, and nectarines. The English colonists brought cherries to North America in the 1600’s. There are more than 1000 varieties of cherries. In the 15th and 16th centuries, cherries were used for medicinal purposes. The oldest cherry tree is located in Jindai Sakura, Japan and is estimated at being between 1800 and 2000 years old. To bring out the flavor in cherry dishes, add pure almond extract. Cherries are best paired with sage, chives, verbena, ricotta cheese, and sweet cream. Try with beef and pork with black pepper.
