Jaime started his journey at AMC as a Repacker and Box Assembler. His hunger was evident, as he always wanted to learn and frequently volunteered to help Shipping and Receiving. Because of this, he was promoted to a Loader. He continued to be curious and learned about customer orders, delivery times and paperwork. In 2012, Jaime earned his role as a Secondary Board Coordinator. Jaime has built a great line of communication with Sales, Logistics Coordinators, Loaders, and Order Checkers. Most recently, Jaime took full ownership of the repack board; becoming the Repack Board Coordinator.

His ability to train, communicate and work with others led to his promotion to 2nd Shift Manager in January of 2021.

In 2020 she was promoted to Warehouse Front Desk Attendant because of this knowledge and her ability to communicate with others.

Juan started as a Maintenance Mechanic in 2010. He was curious and determined and went above and beyond to learn about every piece of equipment in our Repack Department. He was able to master these machines and trained two other team members to do the same! We have significantly increased the number of and types of machines we have at AMC, and with Juan on our Maintenance team, uptimes have never been better. Juan is always ready to execute and lead by example. Because of this, he was promoted to Senior Maintenance Mechanic.

MEET THE TEAM

Director AMC FAMILY MEMBER SINCE 2015 When I first started at AMC, I spent two weeks in the Banana Department, two days in the Tomato Department, and a little over a year in our Organics Department.

I’ve been planted in Berries since 2016.

Prior to AMC, I spent twentytwo years in retail grocery.

I’ve ran two marathons and look forward to at least one more. I love golf, live music, and of course, good food.

One of these days I’m going to take up boating and learn how to play the violin.

I spent my first couple years at AMC in the Pepper Department. I worked with key retail accounts and then transitioned to the Tomato Department. For the last three and a half years I’ve been in Berries. In my spare time, I really enjoy spending time with my family and making memories with my three nieces and my fiancé. I like to golf, listen to live music, go on hikes, and spending as much time on Lake Michigan as possible.

Before I worked here I owned a photography and design company, ran our family bar for a couple years, and was a Chicago rep for a small brewery. Personally, I love playing music. I’ve played piano since I was seven, and along the way picked up guitar, bass, a little violin, and a couple other instruments. It’s cathartic and relaxing for me. My first child was born at the end of last year, so when I’m not at AMC, I’m hanging out with him, my wife, and our two dogs.

I’m new to the team and I’m constantly on my toes and questioning, “what’s next?”. Berries are a highly perishable commodity which makes selling them a constant race against the clock.

It’s very exciting.

Prior to joining the AMC Family, I was a produce merchandiser and worked in a receiving department. I’m owner of two dachshunds that I love dearly and in my spare time, I like to drive down to my local Taco Bell and order a Mountain Dew Baja Blast or snuggle in bed and watch Netflix. I have a huge heart, but an even bigger Passion for Produce!

Grower Spotlight

Owner Ronnie Young and Family

I

n 1986 Ronnie Young and partner Marvin Brown purchased an 85-acre farm in Dover, Florida and began an operation of raising, selling and shipping their own strawberries. Four years later, in 1990, they purchased a cooling facility and BBI Produce Inc. was born. Since then, they have added more than 600 acres of additional growing land.

Because BBI only handles their own fruit, they can more effectively monitor quality and consistency from farm to farm as well as the efficient implementation of new, environmentally friendly focused programs across all growing locations.

Ronnie began farming in the 1970’s with his father and brother. He has served on many boards and belonged to numerous associations related to farming, including serving as the President of the Florida Strawberry Growers Association. Ronnie has won numerous awards for innovation and production, including the Florida Farm Bureau’s C.A.R.E.S. award which is given to farms that provide outstanding protection and management of sensitive environments and who maximize the conservation and protection of natural resources.

In 2001 Ronnie’s son Adam was brought into farming.

He is now the manager of BBI’s newest farm, Strawberry Ranch.

Sadly, Marvin passed away in late 2019. His wife and daughter are still very active in day-to-day operations of BBI as well as running their own farms.

Research and Development Driscoll’s is a pioneer of berry flavor and innovation with a dedicated research and development team focused on breeding proprietary varieties exclusively for their network of independent growers. Driscoll’s dedicated team of agronomists, breeders, sensory analysts, plant health scientists, and entomologists, work together to create:

Driscoll’s uses traditional breeding practices, such as cross-pollination, to ensure the highest quality for consumers.

Cross-pollination is the transfer of pollen from one plant to another. In the same way bees move pollen from plant to plant, Driscoll’s team of breeders move the male pollen from one plant to the female part of a different plant (the pistil). Cross-pollination is important because it allows two separate plants with desirable characteristics to parent potentially even better children plants. If one blueberry plant is robust and capable of surviving in various climates, and another blueberry plant has fruit that is especially delicious, the breeders can take the pollen from the first plant and add it to the second plant. The result is that some of the child plants will have the favorable characteristics of both parent plants.

This process allows Driscoll’s to discover new varieties of berries using the same natural breeding techniques employed by farmers for thousands of years. By using this natural method, Driscoll’s never needs to irradiate or genetically modify their plants.

Matching berries for natural cross-pollination is a very big process. In any given year, Driscoll’s chooses the best plants and makes about 700 crosses. Each cross results in anywhere from 40 to nearly 300 seedlings.

That means that in a single year, Driscoll’s has over 100,000 seedlings that could potentially become a new commercial variety in the future.

VERSATILITY | GROWER SPOTLIGHT | 13 So how does Driscoll’s look at 100,000 seedlings to decide which ones will become the next great berry variety?

They utilize many techniques to find the best of the best, including examining the genes of the seedlings to identify which will grow up to be the best plants. Then the seedlings that show signs of meeting Driscoll’s high standards go to a nursery to grow for a season. Of those, only the top one percent are chosen to move on to the next year for further analysis. During that year, data is collected about fruit yield, fruit size, shelf life, and initial flavor tests.

After that, plants move onto the “time of planting trial” where berries will spend three years being tested in different plots. During this time, Driscoll’s conducts berry flavor sensory panels to ensure only berries that meet their high flavor standards can become a commercial variety. By the time a berry is released, it’s

usually been tasted several thousand times. The final stage is the “on the farm trial” where berries are tested in different climates for different types of growers.

Driscoll’s also works with its pathology department to ensure plant health and to make sure that plants can grow in a variety of conditions. Only after a berry passes these rigorous tests will a berry get a name and become a variety that is ready for the market.

Although it can take many years to develop these quality varieties, they only have an average lifespan of approximately 3.5 years. This is due to the accelerated development of the Driscoll’s breeding program and the company’s ability to quickly identify strong, healthy plants that produce the best tasting and longest-lasting berries.

Organic farmers respond to these everyday challenges differently, with agricultural practices that restore, maintain, and enhance ecological balance. The organic techniques Driscoll’s independent growers use manage soil health, weeds, and pests naturally, utilizing no synthetic fertilizers, pesticides, herbicides, or other prohibited materials. Driscoll’s takes pride in protecting the land for generations to come, closely working with their independent growers to find new and innovative organic farming practices. This includes crop rotation, beneficial insect management and the use of cover crops and compost.

As the leader in organic berries, Driscoll’s works with certifiers, growers, and industry partners to grow the opportunity for organic berries in the marketplace. Driscoll’s independent farmers are certified organic by USDA-accredited certification agencies and recognized by their certification agency, the California Certified Organic Farmers (CCOF).

Driscoll’s also works with external partners, like universities, to pilot organically-approved techniques that increase the health of the soil and reduce the instances of harmful disease in plants. This includes cover crops, crop rotation, composts, and pre-plant soil treatments such as anaerobic soil disinfestation and steam.

The plant health team also, like a good doctor, determines what might be harming a plant before making a treatment recommendation to Driscoll’s growers and nurseries.

Beneficial bugs, like ladybugs and bees, are crucial for organic growers. Driscoll’s entomology team are experts in identifying opportunities that use predatory insects to keep pests at bay, spending a great deal of time in the lab researching the effects and benefits of bugs on the farm.

Entomologists also evaluate the landscape and suggest practices that can increase biodiversity of the area. They share this information with growers and others in the industry to further collective knowledge on the subject. The introduction of additional native crops brings in more beneficial bugs which increase the resilience of crops without the use of synthetic inputs.

Sweet and classic, this is the most common banana variety. They’re the “go to” fruit for nutritious breakfasts and snacks and delectable desserts and breads.

Also called apple bananas, these short, chubby bananas have a sweet and mild flavor similar to a mix of apple and strawberry.

They’re sweetest when they are fully ripe, this is when the skin turns black.

Plantain

(also known as a “cooking banana”) Popular in Caribbean and South American cuisine, plantains are a member of the banana family but because they have such a high starch content, they are cooked, and served, like a vegetable, most often boiled or fried. As the fruit ripens, the peel becomes darker and the flesh becomes sweeter.

These petite bananas are sometimes referred to as “Lady Fingers” or “mini-bananas”.

About three inches in length, they have a bright yellow peel and dense, sweet, and creamy flesh.

Squatty and slightly square at the edges, these bananas are tangy and lemony.

When ripe, the fruit is soft and the skin is yellow with black spots.

Banana Flowers

Large and usually weighing more than a pound each, the petals of the banana flower can be used as serving dishes or as wraps for steaming meat. The outer “florets” need to be cleaned before cooking or eating by removing the pistil and calyx of the bloom.

Skip the cleaning of the inner florets and add them directly to stir frys or salads. The heart of the flower is similar in taste to an artichoke heart, and can be prepared in similar ways.

Botanically, a banana is a berry. This is because botanic berries contain seeds inside the flesh of the fruit, rather than outside.

Banana splits were invented in 1904 by David Evans Stickler, a 23-year-old pharmacist from Pennsylvania.

If you wrap a banana stem tightly in cling wrap, the fruit will last three to five days longer.

To speed the ripening of a banana, put it in a paper bag with an apple or tomato. These fruits produce ethylene gas, which accelerates ripening.

Believe it or Not… It’s a Berry!

There are two different ways to categorize produce, culinarily and botanically. While we like to think that any fruit with the word berry in the name is a berry, more than likely, they are not… botanically speaking.

Fruits have four botanic families that include citrus (lemons, limes, oranges), pomes (apples and pears), drupes (stone fruit including cherries, peaches, and plums), and berries.

Seed

All fruits are categorized by their skin and flesh.

They all have three layers: Exocarp – Outer layer (skin) Mesocarp – Flesh, this is usually what is eaten.

Endocarp –This is a layer that encloses the seeds.

Epidermis or skin

Fruits are also categorized by which part of a plant develops into the fruit. For example, some fruits develop from flowers containing one ovary, while others develop from flowers containing several.

Berries are the most common type of simple, fleshy fruit.

To be considered a true botanical berry, fruits must: • have a thin endocarp • be fleshy without a stone or pit • be produced from a single flower that contains one ovary So, by this definition, grapes, currants, tomatoes, avocados, cucumbers, eggplants, pumpkins and bananas are all classified as botanical berries! And strawberries, blackberries, and raspberries are not because they develop from flowers with multiple ovaries.

To bring out the flavor in cherry dishes, add pure almond extract.

Cherries are best paired with sage, chives, verbena, ricotta cheese, and sweet cream. Try with beef and pork with black pepper.

Place the avocado in a paper bag with either an apple, banana, or kiwi.

Why this works… these fruits (including the avocado) produce ethylene gas. “Trapping” the avocado in its own gasses, or the gasses of other fruits, speeds up the ripening process.

To quickly ripen a rock hard avocado, wrap in tinfoil and bake in the oven at 200° until the avocado is soft. This could take up to an hour, so check frequently.

ou passed The Motive test (see Sourced, November 2021 – February 2022 issue, What’s Your Motive? ).

Congratulations.

Get ready, the hard work now begins.

Passing the test simply means that you are leading for the right reasons. It’s not about the rewards – the compensation, the title, the authority to delegate what you don’t like to do while keeping what’s fun– it’s about the responsibility to lead others – to care for them, to enjoy watching them grow, to know that you are playing the long game.

So just how do you do that?

What’s your plan?

In Patrick Lencioni’s book, The Motive, he lays out the five responsibilities at which a leader cannot whiff. While Lencioni has been writing books for over twenty years, and although this is his most recent effort, he will tell you that this is the book he should have written first. I agree. I’ve been working with or leading teams going on forty-years, and I can’t find a better

model to follow that explains what to do and why to do it, as a leader. I believe these five responsibilities, call ‘em skills or disciplines if you’d like, apply to platoon leaders in the Army (where I started) all the way to the CEO position. It’s why I use this book to coach leaders and why, at the Anthony Marano Company, we over-communicate these in working with our leaders.

trust, debate well, commit to popular (and unpopular) decisions, hold one another accountable, and have rigor to look at a scorecard. Those are kind of

the five behaviors outlined in The Five Dysfunctions of a Team by Patrick Lencioni, but these are not unique to Lencioni’s thinking. Google has conducted in-depth research to tease out differences between their highperforming teams and teams that struggle. They also concluded that high performing teams create a “psychologically safe” environment (fancy words for trust) and team members generally speak in the same proportion (the ability to debate well). And

that’s the how – be deliberate to build those five behaviors on your team.

Must Master #2 Managing Direct Reports Must Master #1 Build a Cohesive Team This is where it all started for the AMC Executive Team five years ago. After leadership passed to our third generation (Anton and Damon) in 2016, we started this journey with an executive offsite meeting. A consultant then, I recall that the offsite was productive, even if it may have felt awkward. It was a newly formed team, and everyone was unfamiliar with sitting around a fancy table for two days sharing personal histories and uncovering our purpose and core values. It was a productive start and, most importantly, the discipline to build a team was set.

That’s the counsel for a leader at any level. First, build your team. Stick to the process. Have confidence that if you build the team the right way, the results will follow. And that’s the why – teams are charged with delivering results.

This is probably more surprising to CEOs than for midevel leaders to hear, but the principle applies at any level. Don’t assume your people can read your mind or know on their own what needs to be done and how.

Team members need guidance and direction. It’s your job as a leader to provide that. That’s the why – team members need, and want to know, what you expect of them.

One of the greatest mistakes I’ve observed was by a CEO of a Fortune 100 organization who, even though he was adamant that his team follow a process to build a cohesive team, would not direct his reports to do the same. His reasoning was understandable. First, when he was in their shoes (he had been promoted from within), he resented being told how to build his team by his CEO. Second, he assumed correctly that his reports were smart and experienced, and that they would figure it out on their own. But by failing to provide specific guidance to manage what he expected, the company had uneven and differing results at the next level and beyond. As a company, it’s the difference, in my opinion, between doing B work or A+ work. As I told another leader who didn’t want to provide specific guidance, “It’s okay. You will be mediocre, so just be really good at being mediocre.”

At the Anthony Marano Company, we use simple tools such as screens with red, yellow, and green statuses, to inform team and individual scorecards. These statuses inform the agendas for both weekly team and one-on- one meetings. And that’s the how for us – use clear and simple tools to set goals, track progress, and set meeting agendas.

One final note on one-on-one meetings, to be transparent, AMC has debated this internally a lot. There is a little art needed by managers when running one-on-one meetings. What needs to be managed will vary between a highperforming team member and a struggling, or new, team member. So, adjust the frequency and agenda items by situation,

Must Master #3 Run Effective Team Meetings Most times I avoid sports comparisons, but I can’t here. For eye-rolling readers, please follow along a bit.

Most NFL fans likely love or hate the New England Patriots. No matter where you land, I believe it is fair to say that Bill Belichick probably runs a pretty good practice. After all, how could his teams compete for the Super Bowl year-in and year-out? Critics of this may point out that he had Tom Brady or that it’s his system, which are both true. But where did the team get aligned on who was going to do what, when, and how? In practice. I’ve never attended a Patriots’ practice, but I get the sense Belichick runs a good one. I imagine there is some structure, coupled with

expectations

you want to win championships, practice like a champion.

The same is true of meetings and teams in business – the

The most important meeting is the weekly team meeting.

This is when some structure is necessary. The purpose of the meeting is to make small, timely decisions to keep the team on track toward agreed upon goals. Toward that end, championship caliber meetings rely on a scorecard review and team member input to identify the most important topics that need attention (a resolution, decision, guidance).

Championship caliber meetings also end similarly – with a recap of decisions made and quick alignment on what needs to be shared with others afterward. At AMC, we also review our company purpose and core values, often mining for stories that reinforce our clarity. And that’s

the how.

36 | Sourced | march 2022 — june 2022 A couple more notes on the how. First, it can take a few reps to get this down. Most weekly meetings are run poorly. It’s not always easy to begin a new habit; trust the process. Second, the leader should be more like a conductor leading an orchestra. The leader doesn’t have to take the notes, run the white board, or drive a visual aid.

The leader should orchestrate the debate, keep things moving along, make decisions, and force closure and clarity.

Must Master #4 Have Difficult and Uncomfortable Conversations This seems obvious, but who among us hasn’t ducked telling someone close to us what he or she needed to hear?

This is hard. It may also be that single learnable skill that helps the team the most. Nothing turns a team around more quickly than when a team member hears firsthand what he or she is doing that is holding the team back. And that’s the why – leaders can’t avoid having any conversation that holds the team back.

Only one of two things will happen when a leader has a difficult conversation.

And some more on the how. Team meetings are the best place to quickly address the difficult and uncomfortable conversation. To borrow an Army term, when a leader (or any team member) makes an “on-the-spot correction” (whatever is holding the team back) with others present, the chances of it happening again are diminished. It’s like setting the bar a bit higher.

No one wants to fall short.

Gnarly, more difficult topics will arise, and those topics may best be held for the one-on-one.

But don’t default to the one-on-one setting when the entire team may benefit from hearing this.

Blackberry Ginger Bourbon Smash ingredients 2 oz bourbon ½ oz ginger syrup juice of ¼ lime 5 mint leaves 3 oz blackberries lemon lime soda ice

directions 1.

To make ginger syrup, combine ¼ cup sugar, ¼ cup water, and 4 oz peeled and chopped ginger and bring to a boil.

Let steep for one hour, strain and cool.

2.

Muddle berries, fresh mint leaves, syrup, and lime juice.

3.

Add bourbon and ice.

4. Shake well.

5.

Pour/strain over fresh ice in a rocks glass.

6. Top with lemon lime soda and garnish with fresh berries and mint.

Cauliflower Gratin ingredients 2 tbs butter (cold) 2 tbs flour 1 cup whole milk

In a sauce pot, combine butter and flour over low heat to make a roux.

Be careful not to burn.

Whisk in milk and bring to a boil.

Add 1 cup gruyere cheese.

1 cup heavy cream

4. Season to taste with salt, pepper, and nutmeg (should only be a pinch).

1 ½ shredded gruyere cheese

1 large head of cauliflower

Slice long ways in half inch slices.

6. Brush inside of 9x13 pan with melted butter

½ cup bread crumbs salt, pepper, and nutmeg to taste

Cut out core and remove leaves from cauliflower.

Layer cauliflower, gruyere, then cheese sauce in a pan. Repeat layering and top with remaining gruyere and bread crumbs.

8. Bake at 400° for 15-20 minutes, cauliflower should be tender and top should be golden brown.

Rustic Ratatouille ingredients

directions

½ small eggplant diced into 1-inch squares

1.

1 zucchini (quartered, seeded, oblique cut)

2.

1 yellow squash (quartered, seeded, oblique cut)

3.

½ small red onion, medium diced 4 oz multicolor cherry or grape tomatoes 2 large fresh basil leaves, chopped 5 leaves fresh oregano, chopped 2 oz extra virgin olive oil salt and pepper to taste

Toss tomatoes in oil and blister slightly on stovetop, in pan, or in roaster.

Lightly sauté all other veggies, one at a time, in olive oil.

(Just briefly, to get the “raw bite” out.)

Toss everything together with fresh herbs. Season to taste, add olive oil to taste.
