To prepare the tomato, ethylene gas is applied. For small fruit, it takes about 4 days. Larger fruit takes up to three days. One the tomato is harvested, it is graded and separated by three sizes, two colors (green and light), and quality (#1 and #2).

Day 95 – Tomatoes are en route to AMC!

Fruit is inspected immediately upon arrival at AMC. It is sorted by pallets based on grade and color. The AMC repack team collaborates about the load, deciding when it will be used, and for what purpose.

At AMC, the tomato is again graded for color. Here we have six different color categories. The load is separated into nine different size categories. Product with cracks or decay, or product that is soft, is removed and discarded.

Tomatoes are then custom packaged to specific customer requirements. We have five different pack sizes and offer many options on labelling, including private and custom branding. And then, it’s off to the customer, and onto the menus of restaurants throughout the Midwest!
