Cherry Season is right around the corner! Domestic crop arrives the last week of April and goes through August.

Offshore cherries are available November through January.

These super fruits are a summer must have for desserts, salads, sundaes, and much more.

Cherry Varieties

Bing

Most popular variety. Multi-purpose fruit good for snacking and cooking. Sweet, tart, tangy.

Brooks

Large and firm, early season. Dark red, almost black skin with bright red flesh. Balanced, sweet-tart flavor.

Coral Champagne

Large, to extra-large in size. Similar in taste to the Bing, very sweet.

Rainier

Larger fruit with yellow flesh and red/ orange/pink skin. Low acidity, high brix. Floral and fruity.

Santina

Medium sized and dark red in color. Sweet, firm, and crunchy.

Skeena

Late season, large, sweet, and firm. Dark red, and kinda shaped like a kidney.

Lapins

Plump fruit that softens as it matures. Mild, sweet, and fruity.

Tulare

Early season variety with a good flavor combination of both sweet and tart.

Cherries are drupes, or stone fruits, and are related to plums, peaches, and nectarines.

The English colonists brought cherries to North America in the 1600’s.

There are more than 1000 varieties of cherries.

In the 15th and 16th centuries, cherries were used for medicinal purposes.

The oldest cherry tree is located in Jindai Sakura, Japan and is estimated at being between 1800 and 2000 years old.

To bring out the flavor in cherry dishes, add pure almond extract.

Cherries are best paired with sage, chives, verbena, ricotta cheese, and sweet cream. Try with beef and pork with black pepper.

Cherry Goat Cheese & Thyme Toast from Starr Ranch Growers

Ingredients

2 pieces of sourdough toast

1/2 cup Starr Ranch Growers’ Rainier and dark sweet cherries, pitted and sliced

2 tbs goat cheese

1 tbs honey

juice from half a lemon

fresh thyme

Directions

1. First, pit and slice Starr Ranch Growers’

Rainier and dark sweet cherries and toss gently in honey combined with lemon & juice.

2. Toast slices of sourdough bread and top with whipped goat cheese.

3. Top with honey, lemon, cherry slices, fresh thyme, and crumbled walnuts.
