That smoked bacon at the grocery? It’s probably never come within a mile of a wood log. Practically all bacon—not to mention cheese, fish, and many other “smoked” foods—are not actually smoked at all, but doused in a dose of liquid smoke. Liquid smoke, made by catching smoke in condensation, is to real smoked foods as instant coffee is to a cup of proper brewed coffee: it hits the same basic notes, but lacks all of the nuance and character of the real deal. Liquid smoke is much quicker and much cheaper than slow smoking, but it will never impart the same sweetness as applewood logs, or the same intensity as hickory. Don’t take my word for it. This is one of those products that didn’t sound that appealing to me at first. Smoked olive oil? Smoked flavors should go with savory things like meat, I thought, not oils. But after tasting the oil, my preconceived misconceptions were dashed. It’s really good. Unique for sure, and not something you’ll use as an every day oil, but its flavor is excellent: peppery, a little grassy and slightly bitter, but with a sweetness from the deep, rich smoke of a mix of oak, beech, and birch wood. The icy waters of the north Atlantic fill Iceland’s Westfjords with pristine sea water ready to be turned into sea salt. In warmer climates, the sun does the work of evaporating water and leaving salt behind. In Iceland they use geothermal heat from the lava flowing underneath their feet to boil sea water. In Puglia, the heel of Italy’s boot, after the wheat harvest, fields were burnt to clear the land. Traditionally, after the burn, the landowners let the peasants go out and collect any leftover burnt wheat—farina arsa, in Italian. The burnt grains gave their bread and pasta a dark color and deep, toasty flavor. Today farina arsa is made by toasting wheat in an oven, not fields, but the flavor is still rich and smoky, like a campfire. These orecchiette—”little ears”—are a traditional Puglian shape. Rick Field pickles this okra in a brine with oaksmoked Spanish paprika to give it a special zip. For those who know okra as mushy and mealy take note: this is neither. Spanish piquillo pimientos are to peppers what Parmigiano Reggiano is to cheese: the undisputed sovereign. However, buyer beware: there are many versions sold these days and almost all of them are packed with peppers roasted on gas grills, not wood fired grills. There’s a huge difference in flavor. In the same way that home barbecue tastes better when it’s done with wood, roasted piquillos improve when they get a dose of smoke. Gas-roasted peppers are fine. But wood-roasted peppers are magnificent, the beech wood smoke imparts umami richness and amplifies the flavor. Wood-fire roasted piquillo pimientos are always more expensive since wood roasting is a finicky process, but the return on flavor you get with your extra dollar is extraordinary. They also happen to be gorgeous. Lay a rose-red piquillo on a white plate in a pool of luscious Alziari olive oil (online), and you’ll have an hors d’oeuvre as luscious to look at as it is to eat. I’m a fan of almost anything stuffed inside of a piquillo pepper—so when I found these fish-stuffed peppers I was quite excited. Piquillo flavor—especially when roasted over a beechwood fire—beats any other roasted pepper, and it’s bold enough to handle being stuffed and sauced. Here the sauce is a simple rustic tomato, and the stuffing is one of two fishes. First is salt-cured cod, soaked and cooked to silky smoothness. The second is hake and prawn, which have a delicate flavor in balance with the addition of the savory earthiness of garlic and onions. There’s a reason this is our top selling bacon. It is perfectly balanced between softly, pleasantly sweet and salty/smoky. To me this is the Platonic ideal of bacon. If I were to choose one bacon to eat every day, which pretty much sounds like heaven, this would be it. The Nueskes start with Pietrain-breed pork. Fourth-generation farmer Greg Gunthorp not only cures his own bacon—he also raises all the heritage-breed Duroc pigs himself on his pasture-based northern Indiana farm, without antibiotics, hormones, growth promotants or any other modern “improvements.” Durocs are famous for their flavor—it’s so rich it almost seems a little beefy. Greg dry cures the Duroc bacon for a week with salt and celery powder, then smokes it over hickory logs for 12 hours. Lightly smoky, a little sweet and all the way delicious. Most bacon is made from the belly of the pig. This one is a little different, made from the jowl, or cheek. Its texture is delicate, its aroma almost floral, thanks in part to smoking over sweet applewood. The jowl is pretty fatty, and it tastes a little richer than regular bacon. This version comes from Smoking Goose in Indianapolis, Indiana. They source their pork from nearby small, family owned farms. The pigs are humanely raised, and they’re never given any antibiotics or growth promotants. They season the jowls with a bit of ground coriander and black pepper for just a hint of spice, then smoke them over applewood for a subtle sweetness. From Red Bear Provisions in Chicago, this salami is based on a traditional Russian recipe. It’s made from choice cuts of Angus beef ground with pepper and garlic, plus coarse chunks of pork fat to give it a silky richness. The salami is smoked over a mix of maple, oak, and hickory, then ages for a few weeks. The result is rich, garlicky, deep, delicious. Speck originated in the Alto Adige, the alpine region of the South Tirol in northern Italy (though this one is made in Iowa). This is mountain people’s meat, meant to fortify. It’s a lean piece of pork, cut from the rear leg, rubbed with sea salt and smoked over apple wood. Where prosciutto is delicate and subtle this is chewy and robust, earthy and rich, sweet and smoky. It may not be as well known as some cured meats you know but don’t let that stop you. Berkshire pigs are a heritage breed loved for their full flavor. When third-generation ham curer extraordinaire Sam Edwards started using them instead of his standard pig stock, the results blew him away. Idiazábal is a small village located in the Goierri valley in the heart of Basque Spain. The cheese was named for the town long ago, when shepherds would descend the mountains at first snow. They’d stop at the village and an annual market would spring up. They were the main attraction, offering the ewe’s milk cheese they’d made and smoked over the summer. The market still exists today. So does the cheese. This version gets its trademark smoky musk from smoking over a mix of hawthorn and cherry woods. Chermoula is one of those sauces that has a thousand variations across north Africa. This take, inspired by maker Mehdi Boujrada’s home country of Morocco, is a mix of sun dried tomatoes, cilantro, parsley, cumin, coriander, paprika, garlic, preserved lemon, and a pinch of salt and vinegar. Its deep, herbaceous flavors and bright savory notes go well with any type of dish from roasted vegetables to steak to the pairing it was born for, fish. “Miche” is French for loaf and typically refers to the large size and round shape in the style of traditional French country bread. Ours is made from a mix of Michigan wheat, rye flour, whole buckwheat, and spelt flour, all whole grain and freshly milled on our stone mill at Zingerman’s Bakehouse before being mixed into a dough and naturally leavened by its own unique starter. Twenty-four years after we started baking them in Ann Arbor, you'll still be hard pressed to find a loaf like them anywhere in the country. Believe it or not, most “rye bread” sold in America contains very little rye flour. These are different. These are breads like my grandparents ate in Eastern Europe: plenty of rye flour, a natural sour rye starter (not the usual canned shortcut) and lots of time to let the dough develop. Argentina’s Terroir Gran Mendoza Olive Oil One of the amazing things about olive oil is that tastes like where it’s from. The French word for this is terroir and it’s the unique flavor that the soil, climate, and environment impart to food. The specific terroir for this oil is the Mendoza province of Argentina. The Laur estate was one of the first to cultivate olives in the region, beginning in the early 1900s. Although Americans tend to gravitate toward sweet caramel-flavored balsamics, Marino is quick to emphasize “the key to great Balsamico is balance.” Exaggerating sweetness is an easy way to enhance appeal and reduce the need for proper blending and aging. Of all the vinegars you can find at the grocery store, rice vinegar isn’t usually celebrated for having much flavor. Sharp, harsh, sure. But flavorful? Not so much. Enter American Vinegar Works and this wonderfully complex rice vinegar that’s smooth on the tongue with flavor you notice in a good way. Made by fermenting sake in small batches in oak barrels, this vinegar boasts slightly savory notes balancing out the bright acidity you’d expect. Cider vinegar was once a standard ingredient in kitchens across the continent. These days, a good, North American made one is surprisingly hard to find. This one, from third-generation apple growing Pierre Gingras in the Monteregie region of Quebec, fits the bill. Gingras starts by crushing only whole, hand picked organic apples (no windfalls are used nor are scraps or scrapings from previous pressings) from his own orchard. The juice is allowed to convert to vinegar slowly and naturally and then spends two years in French oak barrels, where it mellows and matures. Ortiz Tunas from Biscay Tuna is one of the most popular foods we sell. It may seem surprising because here in the U.S., tinned tuna is a low-end commodity usually sold in supermarkets. In Spain it’s at the complete opposite of the culinary spectrum. Tuna in tins, especially these from the fourth-generation family firm Ortiz, is one of the jewels in Spain's culinary crown. Ortiz's fish are all line caught— not netted—hand filleted at sea and quickly tinned by hand in good olive oil. The olive oil is key. Portuguese Sardines Tuna is our top-selling tinned seafood, but sardines aren’t too far behind. It’s surprising to me since sardines are not a big part of the popular food scene in America. This is perhaps the classic case of tinned food seen as poor, low-quality food. Before college students ate 75 cent ramen, they ate 10 cent sardines. Forget that stereotype. Here, four or five tender, perfect sardines, come nested in a tin of olive oil, and their flavor is extraordinary—the prize of Portugal, revered there as a kind of national seafood treasure. i lovE sea hedGEhOgs Sea Urchin Pasta Sauce Sea urchin is an acquired taste. But once acquired it haunts you. For me, there is nothing else I can eat that evokes the sea as strongly as it does. Mussels are close. Oysters are closer. But sea urchin is briny and funky in a way that, as soon as the first bite hits, I can recall what the summer wind off the ocean felt like. I first tasted Paolo Licata’s sugo di ricci—sea hedgehog sauce, the Italian word for sea urchins—in Sicily a decade ago. When we got the first shipment of a few cases it was just as I’d remembered: a sweet, delicious Sicilian classic tomato sauce, spiked with shrimp and anchovies, with a deep current of urchin flavor running throughout. It’s a smooth sauce, homogenous, no chunks of fish, and I adore it on a plate of just-cooked Rustichella bucatini (online) with nothing else except a glass of cold white wine nearby. The sauce’s flavor is strong enough that a little goes a long way, which makes the expense of such a luxury easier to bear. A few spoonfuls per person is enough, so a jar can easily serve 8. Parmigiano Reggiano

Practically all Parmigiano Reggiano is made from milk pooled together from multiple farms. But the fifth-generation cheesemakers at Valserena make a farmstead cheese. That means they not only make the cheese, they also raise the cows, and all of the milk comes from their own herd. Where most parm is made from the milk of Freisian cows, at Valserena they raise brown Bruna Sola cows. They produce less milk than Freisians, but it has more butterfat—and more flavor. After two years of aging, the cheese is outstanding. It has a citrusy, mouthwatering quality, not unlike what you experience when you eat a juicy steak. Cabot Clothbound Cheddar

Cheddar was originally wrapped in cloth, not dipped in wax. To my mind it has a far more compelling flavor that way. Cheddars aged in cloth have a complexity and length of flavor that’s unmatched by wax. The wheels we get are made by Cabot Farms in Vermont, and then aged at Jasper Hill Cellars. The Jasper Hill team specially selects wheels just for us. The rinds are brushed with lard, and they have a beefy, brothy flavor. Swedish Fish, For Reals

While gummy bears were garnering all the attention, the folks at Kolsvart in Malmö, Sweden were busy reminding the world about their claim to chewy candy fame: Swedish Fish. Unlike the one-note grocery version, the Kolsvart fish are as fun to behold as they are to eat. Most American meat comes from animals bred to turn feed into flesh as efficiently as possible. We bred out their ability to survive the elements (solution: cram them cheek by jowl into enormous barns) or to fight disease (solution: pump them full of antibiotics). We also bred out most of the flavor. The good news is that there are a handful of farmers out there today who are breaking from the industry norms and turning back the clock on meat. They’re raising heritage breed animals that were selected for flavor, not efficiency. They’re raising them outdoors, on pasture, where they have plenty of room to roam and they eat what they’ve always eaten rather than laboratory-developed rations.
