While we think of fruit cake as a cheap, industrial hol iday laughing stock, these are another species altogether, crafted by Robert Lambert from rare citrus that he candies himself. I used to joke that The Netherlands only had one cheese: Gouda. Gouda in endless varieties, gouda with endless wardrobe changes. Gouda aged one year. Two years. Four years. Gouda with red wax. Gouda with black wax. To me, Dutch gouda was an enjoyable cheese, but monotonous, dull. It never got me excited. It never had me reaching for more.
Then I met Betty Koster. Betty and her husband Martin founded the cheese shop Fromagerie l’Amuse in Amsterdam in 1989. The Frenchified name belied its confidence in its home country. This was a shop of fine imported cheeses—many of them French—alongside some good-enough Dutch ones. That soon changed. Betty began traveling across the country, meeting cheesemakers and agers. She took chances on small Dutch cheesemakers. She worked with cheese agers who were willing to experiment with different lengths of aging, different temperatures, different environments.
By the time I met Betty she’d been developing her stable of great Dutch cheeses for almost two decades. She’d become an icon in The Netherlands. She had gone from cold-calling cheesemakers to talk about the cheese she just bought to driving to
farmers across the country and seeing them make cheese firsthand. She got to know the person behind the cheese, something no other shop or exporter did at the time. Before that the Dutch farmers and cheesemakers were unknown. They made cheese in anonymity, which, in the food world, is never a recipe for excellence. Any time a food is made without recognition it is usually made for cost savings, for profit—not for flavor. Today, her shop is the most copied, revered, sought-after and examined vessel of Dutch cheese in the country. When you visit you’ll see a glowing wall of waxed wheels of gouda behind the case. It’s still a gouda-centric cheese business. But the diversity in the goudas is shocking. From soft, sweet, young goudas to crystalline, caramelized aged ones. From sheep’s milk goudas from flocks grazed on seaside grasses to goat’s milk goudas that taste like milkshakes. Many Americans I know admiringly refer to Betty as the Julia Child of Dutch cheese. She’s larger than life, expressive, immediately approachable, funny, and knows her topic inside and out. The cheeses she brings to America have a big personality, just like her. The cheeses she finds, the way she chooses to age them — they are exciting. They will have you reaching for more.

Jacob Rispens shepherds 300 Lacaune sheep, which is precisely 73 more individuals than live in Morra, the town he calls home. The sheep’s fat-rich milk is made into compact wheels of gouda. Rustichella pasta, from Italy’s Abruzzo region, is made from hard durum semolina that’s extruded through bronze dies so it has a scruffy, rough surface, perfect for holding sauce. From Gragnano, a hilltop town just south of Naples that’s known as the birthplace of dried pasta. The Zampino family makes Gentile pasta using a special type of wheat called Senatore Capelli, an old heirloom varietal that’s difficult to grow but incredibly aromatic. The Napoletani shape is like a shell, but with more embellished ridges. Ziti rigate are ridged tubes. Both are outstanding with chunky sauces.

Where did they come from? And why are they so good?
Babka is a sweet loaf, both fluffy and rich, kind of like a light textured coffee cake with a dense filling swirled throughout. Its origins date back five hundred years or so to the Jewish communities in eastern Europe, places like Belarus, the Baltics, Ukraine, Poland, and Russia. The original babka was a tall, yeast-risen cake, probably a lot like an Italian panettone (find it at zingermans.com each December).
Historian Lesley Chamberlain believes it arrived from Italy via Queen Bona in the 16th century. Babka developed as a Russified version of the cake.
By the late 19th Century, babka looked like what we know today: a sweet, swirled loaf, longer than it is tall. The grandmothers of the shtetls in eastern Europe (where babcia is the word for grandmother) probably made babka with leftover challah bread dough wrapped around nuts or jam. These days, the nuts have been replaced with fillings like fruit, cinnamon or, most popularly, chocolate—an addition that first showed up in the Jewish communities in New York’s Lower East Side in the mid-1900s.
The master bakers at Zingerman’s Bakehouse make two flavors of babka. The first is swirled with chocolate and cinnamon and studded with juicy golden sultana raisins. The second is stuffed with pieces of roasted apple, toasted bits of walnuts, and a swirl of Michigan honey. Each comes wrapped in tissue and gift boxed, and serves 6–8.

When it’s summertime in Northern Michigan, aka “The Cherry Capital of the World”, cherries are everywhere—piled into bushels, baked into pies, even made into wine. The rest of the year we’re thrilled to savor the summer flavor with these dried cherries from third generation family owned Friske Farm in Charlevoix. Tart Montmorency cherries are dried with a little bit of sunflower oil and sugar to balance the natural sour flavor. Where many overdry their cherries which can make them as tough as old gummy bears, these are left plump and soft, tender and terrific. The flavor is spot on dark cherry sweet without a hint of bitterness.

Ayvalik, a seaside region on Turkey’s Aegean coast, is renowned for its olives—so much so that this olive oil is made exclusively from the region’s eponymous olives. Hand-picked Ayvalik olives are pressed within a few hours for a smooth, buttery extra virgin olive oil that is typical of the light, lovely coastal flavors we associate with our old standby Roi olive oil from the Italian Riviera (find it at zingermans.com). The flavors here are gently green and grassy with light vegetal notes and a mild bitterness. Balanced and approachable, a drizzle of this oil will liven up almost any dish without being overpowering. It’s rare to find vinegar made from vermouth because it’s a longer, more expensive process than making regular wine vinegar. But the extra effort yields a unique condiment that captures the herbal, fruity essence of this favorite Spanish tipple. The process begins by making vermouth, a bittersweet fortified wine infused with herbs, spices, and botanicals. The vermouth is slowly fermented into vinegar using the Shützenbach method which creates a smooth, delicately flavored vinegar. Finally, a little bit of the wine and grape must is added in before it’s aged for a year in French oak barrels. The aging softens and balances the flavors, delivering a bright, lively vinegar with a sweet finish. It adds a complex depth of flavor, so I often substitute it for red wine vinegar to elevate dishes from humdrum to stellar. Perfect for marinades, vinaigrettes, and drizzling over fish or roasted vegetables.
