W elcome to the November issue of Your Local BURY. Hope you’ve survived the “Trick or Treats” and are looking forward to a great

Bonfire night!

Check out our exclusive interview with Bury’s World Champion, Scott Quigg. He appears to have had comparatively little recognition thus far for his achievement, so it’s great for us to celebrate Scott, who is a fabulous ambassador for Bury.

Hollins Dental expands into new premises

Hollins Dental Laboratory has recently expanded their business to a brand new purpose built surgery and laboratory all under one roof at 54 Bury Old Road, Whitefield.

Robert, who has 18 years of experience in his field, now boasts a coveted London Royal College of Surgeons certificate to mark his Clinical Dental Technician qualification. The course involved such aspects as medical emergencies, infection control and other associated skills.

Previously, his laboratory work only involved referrals from the area’s dentists. Your Local BURY arranged an exclusive interview with one of Bury’s most popular sportman and the WBA super-bantamweight Champion of the World!

Firstly, I have got to say huge congratulations on becoming WBA super-bantamweight Champion of the World!!

The last time we interviewed you was about 2 years ago and you’d just won the British title with a convincing win over Jason Booth and I remember asking if we could interview you again when you win the world title. How does it feel to be crowned WBA World Champion?

It’s great to be talking to you again and it makes it all the better doing this as world champion as I set out to be the last time we spoke. I don’t think it’s sunk in yet, sometimes I’ve got to pinch myself because this is what I set out to become, since the age of 14 and dropping out of school. I’ve worked so hard and sacrificed so much to achieve it but this is not where I want to settle. I want to become one of the best World Champions this country as ever had so this is just the beginning of a lot more hard work, dedication and being focused on becoming the best that I can.

You’ve had some great contests over the last few years, which one has been your most memorable and given you the most satisfaction?

I would have to say my last fight in becoming World Champion. To realise a dream that I’ve had from such a young age and the mental focus that I’ve had. Nothing would stop me until I became world champion and that was a great moment for me. My mum and dad backed me when I asked to drop out of school and I told them I wouldn’t let them down and I’d become World Champion. It feels great that I kept my promise.

Obviously, the last fight against Cuba’s Yoandris Salinas was a real test. Some pundits have been critical stating you were too cautious and possibly over rated him, whilst others have applauded your tactics against the unbeaten Cuban as being spot on. How do you rate your performance?

There are always critics everywhere, in any walk of life and you just have to listen and take the positives from them. But a lot of these who were critical, saying the tactics were wrong and I should of done this and that, are the same people who were tipping me to get beat with whispers behind the scenes. Yoandris Salinas had 317 amateur fights with 306 wins and was 4 time Cuban National Champion. He’d been unbeaten in 22 professional fights and signed by Golden Boy promotions who were building him up as the next star. I thought the tactics we came up with and the game plan was 100% correct and I believe I won the fight by 2 rounds. How do I rate my performance? I stuck to the plan and proved I more than belong at world level.

You’re defending the title very quickly in Manchester on the 23rd November, on the undercard that sees Carl Froch defend his WBA and IBF super-middleweight titles against George Groves. Do you know anything about your opponent and what sort of tactics can we expect to see?

Yes it’s good to be back out so soon. I wasn’t to bashed up after the last one and to have the opportunity to defend my title so soon and close to home I jumped at the chance. I had a couple days off after my last fight and then was straight back in the gym. We’re waiting on an opponent to be confirmed within the next couple of days.

What plans does your promoter, Eddie Hearn, have for you now that you are the World Champion and would

you like to challenge any of the other World Champions and possible unify the division?

Eddie and the team have big plans and it’s exciting times. The main thing is boxing regular and working on trying to get the unification fights. There are some really big fights out there and they are the ones I want to be involved in and prove I’m the best in the division. My job is to keep training hard, stay focused and improving so I’m ready for whoever is in the opposite corner.

Who do you think is currently the best boxer in your division? (apart from you obviously!)

The Cuban Guillermo Rigondeaux.

I’m sure you’re fed up of being asked but the fact is that Scott Quigg vs Carl Frampton is one of the biggest domestic fights around and the fans are eager to see it. Is this a fight Eddie Hearn and Frampton’s promoters can make and could we see held at Gigg Lane? That would be some night!

This is a fight I want and the British public want. After my last fight we made a huge offer to Frampton’s team and they choose not to take it, so there’s not much more we can do. Barry McGuigan seems to think he runs the show and wants everything on his terms so that’s always going to be a problem in making the fight, but I do believe the fight will happen and I’m 100% confident I can beat him every day of the week.

November 2013 Gallagher’s Gym. How’s the training different than it was previously and what’s your typical day in training camp for a fight?

First of all I want to thank my old trainer, Brian Hughes for the foundations he built in me. He still has to take a lot of credit as to why I have become World Champion.

I couldn’t have had a better teacher to start me off on my career because he knew the art of boxing and that’s what he taught. Skilled defence, correct punching and a knowledge of where to be in the ring. There isn’t any trainer about now that can teach the way he did, he knew how to build a fighter who had never laced the gloves into becoming champions. Since moving to Joes I’ve also improved in all aspects of my game. The time he puts in the tactics along with the variation of punching he teaches has all helped improve me and his conditioning methods have also took my fitness to a whole new level.

I know that your family are a massive part of your life and I can’t help noticing that Lindsey & Kenny (mum & dad) are getting regulars on the TV cameras! How do you think they are coping with their celebrity status!

My mum isn’t to keen on it, anytime there’s cameras about or she knows they’re coming she makes sure she’s not around! My dad on the other hand likes to think he’s got what it takes to be on TV but I think he needs to watch it back and realise he needs to stay away because he takes the title from me on stuttering!

Seriously, it’s fantastic to see that all the hard work and dedication has reaped the rewards and I’m sure the whole of Bury is proud to have such a World Champion!

In my opinion this is only the start! Best of luck in your title defence on November 23rd.

CHEF’S RECIPE

Head Chef at the San Rocco in Walshaw Cross shares his delicious Tiramisu recipe.

Pannettone Tiramisu If you don’t like Christmas pudding or just want an alternative, this is a great option.

It is quick to make and tastes great. You can make one big Tiramisu in a large serving bowl. Or you could make around 8 individual Tiramisus.

Ingredients

Preparation Method

•4 shots espresso, or strong coffee

1.Mix the espresso, caster sugar and amaretto, to taste, in a large bowl.

•2 tbsp caster sugar •50ml/2fl oz amaretto, or to taste

2.Brush the panettone slices with the coffee mixture and set aside.

•1 ready-made panettone, cut into rectangles 15cm/6in long, 1cm/½in deep

3.Place the mascarpone, vanilla seeds and caster sugar into a separate bowl and mix together.

•500g/1lb 2oz mascarpone •1 vanilla pod, split, seeds scraped out •150g/5oz caster sugar •200ml/7fl oz double cream, whipped until soft peaks form when the whisk is removed •1 tbsp coffee powder, for sprinkling •dark chocolate, grated, to garnish

4.Add the whisked double cream and fold into the mascarpone mixture.

5.Place a piece of soaked panettone onto each plate. Add a spoonful of the mascarpone and cream mixture to each soaked panettone slice, then place another panettone slice on top to make a sandwich.

6.Spoon more cream over the top and sprinkle a little coffee powder.

7.Transfer to the fridge to chill for 2-3 hours.

8.To serve, remove from the fridge and sprinkle with gratings of dark chocolate.

A BEGINNERS GUIDE:

Spring Flowering Bulbs Many bulbs, such as crocus, daffodils and snowdrops will increase naturally in most sites and with different flowering times there will be a succession of interest.

If planted in your flower beds, the dying foliage will be hidden by growing herbaceous plants and shrubs.

Bulbs are best planted in groups of similar colour and a wonderful show will be created if they are combined with flowers of contrasting colour that bloom at the same time. Try tulips planted with forget-me-nots or wallflowers.

Under trees with no leaves, bulbs will get any available sunlight so will grow happily and give a welcome splash of colour when nothing else has yet woken up. Bulbs can be planted in grass - perhaps in the lawn or a grassy bank - as long as the foliage has time to die down before the first mowing. Grass protects bulbs from mice and squirrels. Try Anemone blanda, chionodoxa, crocus, fritillaria, daffodils (narcissus).

Store somewhere cool and dry and replant in October/November for a spring display. If buying new bulbs, plant as soon as possible and before they start growing. For instance, most daffodils will start producing roots by late summer and other bulbs by mid-autumn.

One exception is snowdrops. These are best bought ‘in the green’ which means the leaves are already growing and they are then planted and left to spread.

Bulbs should always be planted with, at the very least, 2-3 times their own depth of soil above them or even more if the soil is very light. If bulbs become overcrowded, lift them in the dormant season after the foliage has died down. Clean off the soil, leave them to dry then store in paper (not plastic) bags to await replanting.

Some bulbs are best lifted each year such as tulips and to make this easier you could try planting them in large pots and sinking them in the ground.

After the leaves have died down, lift the bulbs and let them dry out.

VOLVO XC70 VOLVO CARS paved the way for a totally new segment with the V70 Cross Country in 1997 – and then came the less long-winded moniker: the XC70.

The Swedish company’s focus in the continuous development of the XC70 model has been to create a well-heeled on-road car with competent, off-road ability. The rugged and refined present-day look reflects the vehicle’s underlying strength and competence. Volvo says to think of it as an “exclusive goose down jacket, designed around those who like their adventure with a true feeling of sophistication”. Pretentious marketing spin? Not really.

You see, as well as All-Wheel Drive, Hill Descent Control is a further boost to the XC70’s go-anywhere potential. And these days, fresh exterior design cues sharpen its road presence. If truth be told, the XC70 would look at home in any environment, whether it’s in the middle of the open country or at your place of business.

As with the V70 estate car, the rear seats can be folded down in three 40/20/40 sections.

Collapse all of the seats flat and the load space swells from 575 litres to 1,600 litres.

Another handy function is the poweroperated tailgate. What’s more, the outer rear seats can be fitted with integrated child booster cushions that offer children from the age of three and upwards a cosy and safe ride height. That’s a massive tick in the box for any parent of youngsters.

On the road, IntelliSafe, - Volvo’s umbrella name for all its active safety systems, is a vital part of the driver-centric approach in the XC70. This month Gemma Goodall, Media Manager at Bury Football Club shares an entertaining chat with the Little & Large of Bury FC.... goalkeepers Brian â&#x20AC;&#x2DC;The Beastâ&#x20AC;&#x2122; Jensen and Reice Charles-Cook.

A footballer begins by playing in the garden or the playground for fun. Can you describe what's it's like playing the game for money?

BJ: When you are young and you are playing the game you are just playing for the sheer fun of it. When you make it as a professional playing for money, it's a funny thing.

RCC: When I was a scholar and I received my first pay cheque I thought to myself I love this, I want a lot more of this. It's great getting paid for something that you really love to do!

When you were young, did you and your parents think there was a realistic possibility of you playing professionally?

RCC: Yes; I was just 3 years old.

BJ: My parents never really saw me play until I was about 18 years old as neither of them liked football. I more or less made it by myself. Later on in life they began to follow me

and have continued to follow my career.

Do you remember the first time you signed an autograph for a fan?

BJ: Yeah I do. It was a little bit of a mishit though, I signed one to Peter Schmeichel just for a bit of banter but he didn't take it how I hoped he would RCC Yes, it was a reserve game when I was at an Arsenal.

We'd just come off the bus and I saw all the rest of the team signing autographs so I thought I'd get involved, even though I hadn't played BJ: Did you even have a signature?

RCC: No...I just made it up. I just scribbled it so it would look more professional and added a fake number to it because I hadn't even been assigned a squad number at that point.

November 2013 against one another. How does competition among players for limited positions affect the team spirit in the side?

BJ: You’re talking to goalkeepers here! It's the famous goalkeepers union. We have a lot of banter but at the same time you do need that element of competition.

RCC: For me having someone like Brian around is great because he's teaching me whilst he's continuing to learn. He's been in the game for years, he made his professional debut before I was even born.

BJ: That makes me feel so old!

If you could change one thing about the game what would it be?

BJ: Everything has changed so much and people just keep trying to continue to change elements of the game, but I think there comes a time when you have to stop.

RCC: I have one thing...I consider myself to be half decent on the pitch, so I would like the managers to have faith in the goalkeepers so that the likes of myself could come onto the pitch one day as an outfield player. I will score a hat-trick one day! I've done it in training before and I think I'd be able to do it on a match day. So to Bury's new manager if you are reading this.....if you ever need a goal in the last 10 minutes then I'm your man!

BJ: That is what I'd change in the game...over confidence!

What is the best piece of advice you've received, and what was the source of that advice?

RCC: I got mine from Brian and it was 'Don't let Fred Barber (Bury's goalkeeping coach) break you!'. It's so bad; the amount of times I have ran to the gate since I've been here over the course of three months is ridiculous. I've been close to breaking but Brian has been there with little words in my ear because he knows what Fred is like having previously worked together. So that's definitely the best piece of advice that I have been given.

BJ: That's my advice, if you work hard it'll pay off.

When you're on the cusp of death looking back on your life, what do you hope to see?

RCC: That's a very good question! I would really like one of those statues of myself outside a football ground.

BJ: What like the Michael Jackson one down at Fulham?

(Reice looks at Brian in dismay) RCC: I've actually seen a spot just outside the ground a Gigg Lane where I wouldn't mind one, just in front of the entrance where the media come in, I'd really like a statue there.

BJ: Can I have one next to him? It'll just need to be a little bit bigger though.

Who’s the better goalkeeper of the two of you?

BJ: Reice RCC: I’d say me as well (he says smiling) Who’s the better looking of the two of you?

RCC: I’m taking that one as well BJ: (Laughs) Obviously not have you seen this face!

It’s Movember next month are you growing a moustache?

BJ: He can’t (pointing at Reice) RCC: He’s right. I’m 19 years old and I’ve tried every method in the book. Every morning I look in the mirror and I still don’t have even a strand of hair on my face. Seriously this is one for all the readers; if you know of a method or can find a method to grow facial hair then please let me know because I can’t keep being told that I look 14 years old. All I want is a little bit of facial hair that’s all I ask!
