Ingredients
1 carrot, peeled and finely grated
1 zucchini, finely grated
250g chicken mince
400g can black beans rinse and drained
1 tsp ground cumin
½ cup natural yogurt
1 tbsp fresh lemon juice
2 wholegrain bread rolls, halved, toasted
2 tomatoes, thickly sliced
150g coleslaw
Method
1. Squeeze excess moisture from the carrot and zucchini. Place in a large bowl. Add the chicken, beans and cumin. Season. Stir until well combined. Divide mixture into 4 portions and shape into 2cm-thick patties.
2. Lightly spray a barbecue or fry pan with oil. Preheat on high. Cook the patties for 4 minutes each side or until golden and cooked through.
3. Meanwhile, combine the yoghurt and lemon juice in a bowl.
4. Top each bread roll half with tomato, a patty and coleslaw. Drizzle over the yoghurt sauce to serve.
