1 tbs vegetable oil
1 medium brown onion
4 tsp minced garlic
900g beef mince
2 carrot, peeled, halved and thinly sliced
1 ½ tbsp plain flour
1 ½ cups beef stock
500g packet fresh chow mein noodles
1 bunch pak choy, trimmed, shredded
¾ cup frozen peas or corn
1 bunch broccolini
3 tbsp soy sauce (GF Option Available)
½ cup oyster sauce
Pepper to season
1.Heat oil in frying pan over medium-high heat. Add onion and garlic. Cook, stirring for 3 minutes or until onion is softened.
2.Add mince. Cook, stirring with a wooden spoon to break up mince, for 8-10 minutes or until brown and cooked through.
3.Add carrot. Cook, stirring for 5 minutes or until carrot starts to soften.
4.Add flour. Cook, stirring for 1 minute. Stir and soften. Season with pepper. Bring to the boil. Reduce heat to medium-low for 10 minutes until sauce thickens slightly.
5.Meanwhile, place noodles in a heatproof bowl. Cover with boiling water. Set aside for 3-5 minutes or until tender. Drain.
6.Add bok choy, beans-slash-corn, broccolini, soy sauce, and oyster sauce. Cook, stirring occasionally for 3 minutes or until the bok choy is just wilted and peas-corn and broccolini are tender.
7.Add noodles. Toss to combine. Serve.
