Two tablespoons of extra virgin olive oil
1 medium yellow onion
½ tablespoon of salt
2 tablespoons of tomato paste
1 large can of tomatoes (liquid included)
2 cups chicken broth
2 tablespoons unsalted butter
1 teaspoon of sugar
Black pepper to taste
Cheese
Flat white bread
1. In a soup pot warm the olive oil over medium heat. Add the onion and salt and stir occasionally until onions are tender and translucent (7-10 minutes).
2. Add tomato paste.
3. Pour in canned tomatoes and chicken broth, stir to combine. Increase heat and bring the mixture to a simmer.
4. Add sugar and black pepper and set aside to cool.
5. Prepare a pan with olive oil.
6. And sliced cheese to you bread and fry until golden brown or until the cheese has fully melted.
7. Serve your tomato soup and toasties and enjoy your meal!
