

Hello and welcome to the June edition of our newsletter.
Well winter is here, bit of a shock to the system to wake up to -5 a couple of weeks ago, I am sure it won’t be the last frosty day for winter. Our crafters are busily knitting for our jumpers and Jazz tree, be sure to keep an eye out for the tree, more details to be added to our Facebook page. As most of you are aware our Warwick office is in Plumbs Chambers building in Warwick, this building is believed to be the second oldest shop in Queensland. During jumpers and jazz, we will be opening the building to the public on specific days and times to allow locals and visitors to enjoy the wonderful history of the building. Please see the jumpers and jazz program for days/times of the guided tours. June brings National Reconciliation week from 27May to 3rd June 2023, the theme this year is Be a Voice for Generations - urges all Australians to use their power, their words, and their actions to create a better, more just Australia for all of us. My role: QA Coordinator which consists of doing internal audits, document updating and control, creating service bookings, Training audits ect…
Background: I have worked in several different roles such as QA Assistant for a pharmaceutical company, Accounts officer for a livestock company, Real estate from office through to sales person.
Personal Qualities: I am Easy going and very approachable. I like to help others and the company to streamline work processes for a more efficient work place.
What do I love about my role: I like Streamlining processes to make the company work more efficiently. Working with a great team who strive to do the best they can.
Future plans for my role: Eventually have all processes very streamlined and easy to follow for all (Eliminate complexity which will make the company run more efficient).
This month the crew have a new challenge whilst out for their walks - to find something interesting!

For the last 12 months Travis and Shaz amongst other interests have been focusing on the construction of the Macintyre Wind Farm at Karara, just west of Warwick. Trav has a very keen interest and extraordinary knowledge on this subject. Most Friday's this is the first port of call on the travelling duos scenic adventures. To watch the progress each week is something Trav looks forward to very much. There have been hundreds of photos taken, developed and kept safe in numerous albums. Travis's interest in this construction doesn't stop at visiting the site. He explores the internet and Facebook for any information regarding the development and transportation of the turbines, cranes, blades, towers and anything that is heading to the site. Trav especially likes to track the route from the Port of Brisbane, the Toowoomba bypass, through to Millmerran and onto the Inglewood Road to the Karara site. Shaz and Trav have been so fortunate to have seen firsthand many of these vehicles, wide loads and pilot vehicles along these roads. Often Trav will interview the drivers about their knowledge of the wind farm and any other jobs they've done in the past and future travels.
The duo have been to the Port of Brisbane to see where the turbines etc are stored which was a real thrill. The empty trucks travel down Cunningham's Gap where Trav has been able to get photos of them going past while having lunch at Aratula on some of the other Friday's adventures. There is to be 180 turbines to be erected in phase one and about the same again in phase 2. This will take a few years to complete. It is the 6th windfarm to be built in Australia and one of the world's largest onshore wind farms. There is currently around 20 standing complete. Trav personally knows many people working there and often has firsthand news from them about the goings on. As Trav has several albums filled with photos of the site, there will always be an historical account of this project.

Step 1 of 5
Preheat oven to 200°C/180°C fan-forced. Line 2 large trays with baking paper.
Step 2 of 5
1 tbs olive oil
1 brown onion, finely diced
3 clove garlic, crushed
280g baby spinach leaves
1/2 bunch kale, stalks finely chopped, leaves torn
1/4 cup mint, chopped
1/4 cup continental parsley, chopped
3 free range eggs
250g ricotta
100g feta, crumbled
375g filo pastry sheets
100g butter, melted
2 tbs sesame seeds
Heat oil in a large frying pan over medium heat. Add onion and garlic, then cook, stirring, for 5 minutes or until onion oftens. Add 1 handful of spinach and kale, then cook until wilted and moisture has evaporated. Repeat with remaining spinach and kale, cooking for a total of 10 minutes. Transfer to a medium bowl.

Add herbs, 2 eggs, ricotta and feta to spinach mixture and mix to combine. Season with pepper.
Step 4 of 5
Lay 1 pastry sheet pastry on a chopping board and brush with a little butter. Place a second sheet on top. Cut lengthways into three strips. Place 1 heaped tbs spinach mixture in the bottom corner, then fold up along the length of pastry strip to create a triangle. Place on tray. Repeat with remaining pastry and filling.

Lightly beat remaining egg, then brush over triangles. Sprinkle with sesame seeds and bake for 30 minutes or until golden. Serve.
