What:

Baking brings people together and gives us the opportunity to create something made with care.

Whether you’re baking with family, a friend, or solo, the process and

end result is therapeutic, and whether you’re sharing this with others or keeping it all for yourself (yes, you deserve it), this recipe will make you feel happy & warm inside!

Muffin Ingredients

• 1 medium apple, peeled + chopped into small pieces

• 1.5 cups organic all-purpose flour (or gluten free 1:1 baking flour)

• 1 teaspoon baking soda

• ½ teaspoon baking powder

• 2 teaspoons ground cinnamon

• 1 teaspoon ground nutmeg

• ½ teaspoon ground allspice

• ½ teaspoon sea salt

• ½ cup organic brown sugar or sweetener of your choice

• 1 ½ teaspoon vanilla extract

• ¾ cup almond milk

• 1 tablespoon apple cider vinegar

• ½ cup pure maple syrup

• ¼ cup vegan butter, melted

Crumble Topping Ingredients

• 1 cup pecans, roughly chopped

• ½ cup organic all-purpose flour (or gluten free flour)

• ½ cup organic brown sugar

• 1 ½ teaspoon ground cinnamon

• ½ teaspoon ground nutmeg

• ¼ cup butter, partially melted

Instructions

1. Combine almond milk and apple cider vinegar in a small bowl; let sit for 5 minutes to thicken/ activate.

2. Preheat oven to 400°F. Lightly grease a muffin pan or line with liners.

3. In a large bowl, whisk melted butter, maple syrup, vanilla, and the almond milk mixture until well incorporated.

4. Add flour, baking powder, baking soda, brown sugar, cinnamon, nutmeg, allspice, and salt. Stir until just combined, then fold in apples. Don’t overmix! Batter should be thick—scoopable but not pourable. Adjust with a little milk or flour if needed.

5. Spoon batter into the muffin pan.

6. For the topping, mix flour, brown sugar, pecans, cinnamon, and nutmeg in a medium bowl. Add softened butter and mix with a pastry blender (or a fork in a pinch!) until crumbly. Sprinkle evenly over muffins.

7. Bake 20–24 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan before removing.

Time to indulge! Pair the muffins with your favorite coffee, tea, or a glass of plant-based milk. These apple spice muffins are a perfect way to celebrate the fall!
