Welcome to the Gala

We are delighted to welcome you to the 2023 Wine Forum of Oklahoma. is year’s theme of “ inking & Drinking Globally,” celebrates a shared love of wine around the world. is incredible student-led event at Oklahoma State University is bringing together OSU alumni and friends.

Serving this year as the Wine Forum of Oklahoma 2023 Honorary Chairs are Monica and Joe Eastin. A 1992 graduate of OSU with a degree in business administration, Joe has been a beacon for what’s possible with hard work, determination, and a quality education. He co-founded a global so ware and service company, and he was inducted into the Spears School of Business Hall of Fame in 2012 and the OSU Hall of Fame in 2019. Joe and Monica were instrumental in the creation of the Eastin Center for Career Readiness, providing innovative programming to empower students in the Spears School of Business on the road to success.

In addition, Bree Stock will be the keynote speaker this weekend. She’s a Master of Wine, one of the highest quali cations in the wine industry. ere are fewer than 60 Masters of Wine in North America. Also, Chef Olivier Gaupin, a native of Orléans, France, is the celebrity chef for the event. He was inducted into the Maîtres Cuisiniers de France (Master Chefs of France) and is one of only 84 chefs in the U.S. honored with the designation. We are delighted to host such accomplished professionals and wine connoisseurs on the OSU campus, and we are especially grateful our students will be learning from and working with the very best in the business!

Besides our own appreciation for wine, we are delighted for the 2023 patrons, representatives from numerous wineries, and our honored guests to spend time with the students in our School of Hospitality and Tourism Management and others from across campus.

On behalf of all of us in the Spears School of Business, welcome to the 2023 Wine Forum of Oklahoma. A er a cancellation caused by the pandemic, we are delighted to present this outstanding event once again to you. e Wine Forum has become one of the most anticipated events at OSU, and we are glad it’s back!

We are pleased to have Monica and Joe Eastin as our Honorary Chairs. Joe has come a long way from being a student in one of my rst classes here at OSU, and we are very grateful for all that Monica and Joe have done for Spears Business and OSU.

e students, faculty, and sta of our School of Hospitality and Tourism Management have put a tremendous amount of e ort into ensuring that you each have a memorable experience. Our students have worked hard planning and executing this event, and I know they are eager to show you the full spirit of hospitality. I also recognize all that Susan Anderson has done to ensure that the Wine Forum is a roaring success.

is is my last Wine Forum as dean, and we have accomplished a great deal together. I will miss working with you all, and I am con dent that HTM and Spears will continue to prosper together. ank you for being here and supporting our students.

On behalf of the School of Hospitality and Tourism Management, it is my pleasure to welcome you to the Wine Forum of Oklahoma. is year, we have an entire new team of faculty advisors and students, and there is much anticipation intertwined with excitement as this is a signature event for our School and the Spears School of Business. Accordingly, our students and faculty advisors have diligently planned the Wine Forum with a reimagined focus in production.

We are very grateful for your participation as all of you are essential to ensure we continue the legacy and tradition of the Wine Forum. None of this would have been possible without the guiding vision and ongoing support of Carl and Marilynn oma, along with my predecessors, faculty, administrators, and students. Moreover, we are extremely grateful for all the past and current vintners, chefs, restaurateurs, moderators, speakers, and our patrons that have played a signi cant role in creating this unique learning opportunity for our students. is year, we are honored to welcome Joe and Monica Eastin as our Honorary Chairs along with our featured Chef Olivier Gaupin.

As this is a student-executed event, I can assure you that they have been hard at work, and eager to display their teamwork and skills. Besides the experiential education component, numerous student scholarships and program enhancements have been awarded over the years, helping us make a di erence as our students prepare for their professional careers. On behalf of our family, we raise a glass to the students and faculty who made this event possible, and we extend great appreciation to the vintners and chefs who have shared their time and talent with us. To each guest, thank you for investing in our students as future business leaders of the hospitality industry. To the patrons of HTM, thank you for your years of loyalty and dedicated support for this wonderful program.

With the direction of OSU’s fearless leader President Kayse Shrum, we look to transform the future of Oklahoma State. ank you for guiding us toward a bright future for OSU students. OLIVIER GAUPIN

A native of Orleans, France, Chef Olivier Gaupin joined Beemok Hospitality Collection (BHC) as Director of Culinary in August 2022. As the newly created Director of Culinary, Chef Gaupin will lead concept designs for the numerous restaurants and dining ventures in the collection, develop menus that celebrate the seasons and local community, while helping train and inspire the next generation of culinary leaders. His attention to detail and precise nature, coupled with his infectious smile and love for culture and people make him the ideal t to lead the Beemok culinary program.

Prior to joining BHC, Olivier was with Benchmark Global Hospitality, where he served as Director of Culinary Operation since 2019 and spent nine years with Loews Hotels & Co.

A graduate of France’s CFA Charles Peguy School, Gaupin developed a passion for ne food and wine at an early age, following his family’s heritage of ne chefs to pursue a career in the culinary eld. Gaupin visited the U.S. for what was intended to be a three-week vacation and has now been sharing his culinary talents in the U.S., France and throughout Europe for more than 30 years.

International highlights include serving as chef de partie of the Michelin-rated Hotel Negresco in Nice, France; personal chef for the defense minister in Paris and chef de partie at the famed Hotel Stuva Colani in St. Moritz, Switzerland.

In the U.S., Gaupin has led the kitchen in some of the country’s most distinguished restaurants and hotels including Provence Restaurant in Washington D.C., chef de cuisine for the P ster Hotel Milwaukee Wisconsin, Ritz Carlton Hotel Atlanta, Ritz Carlton Hotel St. Louis, Water Sound Beach and Resort, Watercolor Inn and Resort, and Alys Beach Resort, Florida.

As a leading bene t auctioneer, Karen Sorbo’s dedication, e usive energy, commanding yet elegant stage presence and precision techniques, have engaged audiences across the country and internationally. Karen has raised over $900 million dollars conducting over 2,900 auctions since 1993.

Highly regarded for her knowledge and expertise as a fundraiser, Karen has been prominently featured in local and national media. In 2011, she was selected as part of the 2011 “Women of In uence” Speaker Series by Minnesota Monthly Magazine. In January 2012, Karen’s performing, humanitarian e orts and 20 successful years as a leading bene t auctioneer were showcased on Access to Experts TV.

Since she rst began bene t auction work in 1993, Karen has been an active member of the National Auctioneers Association (NAA) and Minnesota State Auctioneers Association (MSAA). Karen joined the Women Speakers Associations (WSA) in 2012 as a founding member. She has mentored others and worked diligently to expand the exposure, presence, and caliber of bene t auctioneers. She was featured in the WSA April 2012 eNewsletter as one of the “Women You Need to Know.”

Karen’s level of experience encompasses successful nancial procurement over a wide spectrum of programs including environmental, private, and public schools, churches, community projects, and an ever-expanding range of non-pro t organizations. She o ers solid attention to detail and planning, powerful fundraising tools and exemplary service. In addition to being a bene t auctioneer, Karen is a speaker, author, mentor, resilience coach, humanitarian, documentary lm producer/director and travel enthusiast.

STOCK

Bree Stock is a Master of Wine, one of the highest quali cations in the wine industry, she is Oregon’s rst MW and the only MW in the Paci c Northwest, globally there are only 420 MWs, less than 60 in North America. Bree has over twenty years of international experience across the wine business sector. Australian-born, her wine career began in the on-trade with Sommelier buying roles. She has worked in nearly every role in the wine industry and developed broad industry experience in management and sales director roles in on-trade, distribution and importing specializing in wines of the Iberian Peninsula, US and Australia.

An avid explorer and learner and a certi ed WSET educator (2008) she became a Master of Wine in 2016. Working as an international wine education and management consultant developing and presenting wine certi cation programs for both trade organizations (Oregon Wine Board, Oregon Wine Experience, Willamette Valley Wineries Assoc, NW Wine Coalition, Washington State Wine, Wines of Spain and Tempranillo Alliance) and consumers. She is a frequent presenter at trade conferences such as TEXSOM, SommCon, ProWein and Cornucopia and an educator with the Online Wine Academy in Napa Valley. She is the Director of Education at the Oregon Wine Board, advising since 2017.

She sits on the board of Assemblage Diversity in Wine, Masters of Wine North America and SommCon, organizations that align with her philosophies to provide access to wine education and industry support to all. A regular wine judge for international competitions Decanter, TEXSOM TIWA, Decanter and IWC.

Her extensive travels for harvest and brand consulting to the Iberian Peninsula, Central and Eastern Europe, the US, South Africa, and Australia inform her work and drive her consultation partnerships. She co-founded Constant Crush Advisors in 2017 to continue her commitments to knowledge and idea sharing and to expanding the conversation around sustainable and innovative vineyard and wine production.

Her wine brand, Limited Addition Wines, focuses on grape variety and stylistic diversity in Oregon’s Willamette Valley for a sustainable future. She continues to consult and make wine for growers with like-minded philosophies including Concinnitas Fermentations, Artist Block wine, and Grace + Vine all based in Oregon and sourcing grapes and wine from organic vineyards in the Paci c Northwest.
