he Germans are known by the nickname “The Krauts,” which comes from sauerkraut, a famous German dish comprised of fermented cabbage.

Maybe Germans should be nicknamed “The Sausages” instead, because we have 1,500 kinds of different sausages in Germany – according to the Deutscher Fleischer Verband (German Meat Association).

There is a sausage for every occasion: breakfast, lunch and dinner.

According to the annual report of German Meat Association, we Germans have an emotional connection to our sausages: every region has their own traditional recipe. Let’s start with the most popular sausage, which comes from Frankfurt: the Frankfurter.

This is a thin pork sausage that is cooked and looks like a wienersausage. They are similar; the difference is that wieners contain beef and pork meat and are named after Vienna (Wien), the capital of Austria. German Frankfurters are the sausages that hot dogs aspire to be. Wieners and Frankfurters look the same but wieners contain beef and pork.

Let’s move over to Bavaria, the region in Southern Germany that is famous for its Weißwürste, which is a white sausage, traditionally made of veal meat and a variety of herbs. Weißwürste are served for breakfast with sweet mustard, beer and a pretzel.

Next sausage is a hearty all-time favourite from Baden Württemberg, which is a neighbour province of Bavaria:blood and liver sausage eaten with sauerkraut and mashed potato.

The sausages become creamy on the inside when they are cooked.

Let’s not forget currywurst: this is a sliced bratwurst with tomato-curry-sauce. It is not clear if this dish was invented in Hamburg or Berlin; both cities are claiming

Currywurst with a bun from hot-dog-stall in Berlin, Germany its roots. But Berlin is famous for its currywurst stands, and there is also a museum where sausage lovers can learn more about the history of the currywurst sausage.

Of course not all of the 1,500 different kind of sausages are perfect for hot dogs. The classic hot dog sausage in Canada is a wiener. In Germany people like to eat bratwurst as a hot dog with a bun that has a bit more crust than the typical hot dog bun found in Canadian supermarkets.

So what do dogs and sausage have in common, why is it named hot dog?

The website of the National Hot Dog and Sausage Council, which has its headquarters in Washington, DC, provides answers: “There are many legends about the word hot dog. The origin of the word ‘hot dog’ stirs as much debate as the existence of UFOs,” it says. “Bruce Kraig, a culinary historian, points to college magazines where the word “hot dog” began appearing in the 1890s. The term was current at Yale in the fall of 1894, when “dog wagons” sold hot dogs at the dorms. The name was a sarcastic comment on the

provenance of the meat. References to dachshund sausages and ultimately hot dogs can be traced to German immigrants in the 1800s. These immigrants brought not only sausages to America, but dachshund dogs. The name most likely began as a joke about the Germans’ small, long, thin dogs.”

But more important than the name is the taste. Of course Germany is a sausage-lovers-paradise. But look no further, Yukoners, there are a lot of German influenced butchers in Whitehorse where you can get a quality sausage. According to my friend Nancy you can get the best Weißwurst at Stacey’s Butcher Block in Porter Creek (they also make elk and caribou sausages that are very tasty).

I recommend the maple infused Bratwurst at Burnt Toast Café as a perfect breakfast to celebrate national hot dog day. Enjoy!

The (Mis)Adventures of A Puppy

I

n life there can be many instances one regrets. Such as accidentally sending a text to the wrong person, or throwing out an ill received joke. Or, uttering the thought, “Let’s get a second dog.”

Before we knew it, the puppy was arriving. Aside from another dog bed and Puppy Chow, we really hadn’t thought much about bringing a second dog into our house.

But, guidance on how-to-prevent-emotionaltrauma-inflicted-on-dog-numberone-by-bringing-puppy-into-hishome isn’t all found in one place.

It’s threaded in google searches, library books, the pet store cashier and next-door neighbours.

Suggestions include getting them used to each others scent prior to meeting, supervising their play at all times and introducing them on neutral territory. It seems more complicated than bringing a second baby into the family.

Our family opted to have the dogs meet in the backyard, follow each other into the house, and let it slowly sink into dog #1 that annoying dog #2 isn’t really going anywhere. Like, ever.

Puppies can be like a bad camping trip, as memories get fonder with time. A solid two years can make a rainy, miserable, brokentent-pole camping trip, a recollection of a damp, enjoyable weekend. Meanwhile a two-year gap since your last puppy can replace the memories of sleepless nights, with cuddles and cuteness. We were in for a rude awakening.

Events member of the family, we broke out the old kennel from the basement. We also broke out a new dog bed, miniature dog treats and lots of carpet stain remover from our wallets.

But when that for-legged fuzzball comes in, it’s pretty hard to believe. He’s here to stay. And in the midst of this dreaming about all of life’s adventures he going to experience, how many moose bones he’ll enjoy, and uh oh, he’s already chewing up the baseboard.

Puppies like to chew. This revelation is cemented in holes in shoes, massacred sunglasses, and homework actually eaten by your dog. As dog don’t have hands, their mouth is their mechanism to

explore and experience their surroundings. According to the American Society for the Prevention of Cruelty to Animals, chewing is a way for puppies to relieve the pain caused by incoming teeth. In general, it combats boredom for dogs and can relieve mild anxiety and frustration.

So basically, chewing is fidget spinning for dogs.

But for all the times he’ll treat the recycling like a treasure chest of toys and yip at the delivery man, he’ll do something so cute and kind, it’ll make your heart swell.

e was a foundling on the streets of Edmonton – a golden cocker spaniel whose hair was so matted with burrs that much of it had to be shaved off.

It was my 6-year-old daughter and two of her friends who brought him home, after he had attached himself to them on the playground.

Of course, we did the responsible things: put posters around the neighbourhood, contacted local vet offices and the SPCA, bought ads in the Edmonton Journal in a vain attempt to locate his owner.

Since their house already had one dog, my daughter’s mother said thanks, but no thanks, so responsibility for the dislocated dust-mop fell to my lot.

My daughter named him George, in honour of her favourite stuffed animal, Curious George.

The appellation was appropriate; he wasn’t the keenest knife in the intellectual drawer, but he certainly had curiosity.

As his hair grew back in, his legs took on a dense feathering that would make a draft horse proud, and his droopy ears became a riot of silky tassels.

George’s most distinguishing feature, though, was an unruly blonde top knot that made him look like Punkinhead, the “sad little bear” made famous by Eaton’s department store in the 1940s and ’50s.

I thought the jig might be up the summer a girlfriend and I took him with us on a trip to the Golden State to attend a wedding in the posh Los Angeles suburb of Bel Air. Not so. Indeed, Californians seemed especially proud to consider him one of their own.

The drive from Edmonton had been arduous, but pleasant.

George spent most of the trip either lying placidly on the back seat, or thrusting his head out the side window to check out the action and catch the breeze.

The day we got to San Francisco was a scorcher, but we were determined to spend at least a bit of time sight-seeing after driving all that way. But what to do about George?

We finally found a shady street, where it also looked safe enough to leave the car windows at halfmast. As an extra precaution, we had brought one of those foilcovered cardboard screens that blocked the entire windshield from solar rays.

We left George snoozing contentedly on the floor in back, beside a massive bowl of water that should have lasted all day, while we went about the serious business of being tourists in a city we both loved.

It was only after we returned that a sickening thought occurred: did we really leave a half-dozen plump rum balls in a warm car?

Where there should have been six rum balls, there was just a chocolatesmeared box and a shaggy dog with a contented smile.

George’s curiosity had clearly got the best of him again.

Now, we all know chocolate and dogs don’t mix.

Fortunately, George survived, with nothing more than a bout of diarrhea to show for his adventure.

And the rest of the trip to L.A. was done with the windows rolled down all the way.

A Hot Dog By Any Other Name...

o devote an entire issue of What’s Up Yukon to the celebration of the hot dog, one must completely understand exactly what a hot dog is ... and isn’t.

Immediately what scratches at the mind is the question: What is the difference between a sausage and a hot dog?

I laugh, because I know exactly what the difference is: you put flavour on top of a hot dog (mustard, ketchup, et al.) while the flavour is already inside a sausage.

Too simple?

I decided to talk to hot dog enthusiasts and hot dog vendors for their own feelings on the subject.

All I got was a shrug (at most) and a half-hearted explanation that a hot dog is, indeed, a sausage... just a different kind of sausage.

Still not good enough... so I Googled it.

The website www.DifferenceBetween.net tells us that, yeah, they are the same.

But isn’t that a lot like referring to a parking lot full of cars as Fords?

Why, then, would we say, “sausages and hot dogs”?

I scrolled down further.

The website suggests that hot dogs are a snack, while sausages can be a meal.

And the texture of the hot dog is that of pureed paste (which is exactly what it is) while a sausage has bits of meat still distinguishable.

Aha... here it is: the hot dog is an Americanized German sausage. It is designed to be quicker to prepare (having been pre-cooked) and bland enough to appeal to the lowest common denominating palate.

I am on a mission now... I go to Yukon Meat and Sausage for the answers I seek. Look... the word “sausage” is right there in its name.

I am directed to the basement where the sausages, and the rest of the magic, are created.

I have long heard that nobody wants to see laws or sausages made, so I was ready to shield my eyes.

However, I entered a clean and bright and clean room that housed gleaming equipment. And, instead of encountering trolls, I met two professionals: Jurgen Haas (with the reassuring European name) is the butcher and sausage maker; Chris Jordan is the meat cutter.

They laughed when I told them hot dogs have their own special week.

“They do?” Jordan asked.

Haas is still laughing.

“We need to make a lot of these,” Jordan continues.

I try to help out with the question of the day: What is the difference between sausages and hot dogs?

“Hot dogs and sausages are the same,” says Haas.

But are hot dogs more bland?

“It depends on the spices,” says Jordan.

Haas and Jordan are not antihot dog, they say, explaining that they make European Weiners.

“But the spice is different,” says Haas. “Ours is secret, everybody has their different kind of spice and keeps it secret.

“And I don’t use chemicals.

“The real difference between

anything is the passion of the butcher,” Haas finally says. “Some butchers don’t have passion, so they don’t make nice sausages.

“My goal is to be able to look the customer in the face.”

Jordan explains a little further: “You can be honest with the customer.”

Haas shakes his head, “We are ambassadors to the food industry.”

I leave to allow them to start their day, filling the display cases of The Deli upstairs. But they were too polite – too professional – to tell me what I suspected to be the real answer.

Amps up for its 39th Year

Dawson City is getting ready to host three days of non-stop music, featuring over 20 artists at six different venues from July 21st to July 23rd

t may be the 39th year of Dawson City’s beloved annual music festival, but this tried-and-true summer favourite is always sure to include some firsts.

This is definitely the case for East Coaster Andrea Vincent, who took over as Dawson City Music Festival Executive Director last August. Though she has been involved in organizing music festivals for the last seven years in her home town of St. John’s, Newfoundland, the Dawson City Music Festival will be Vincent’s first production of a northern festival, as well as her first time experiencing the tiny, but spirited, event.

“It’s both nerve wracking and exciting,” Vincent says.

She’s looking forward to experiencing the Yukon firsthand. “I always thought I’d like to visit the Yukon by the time I was 30,” Vincent says of her arrival to the territory. “I started this job one month to the day of turning 30.”

While there are many charm-

ing small towns across Canada that spring to life with colourful festival goers clutching tickets, band merchandise and overflowing mugs of local beers, there is something unique about the Dawson City Music Festival. For many it marks the peak of summer in the Yukon.

Nestled in a valley bottom and set against the backdrop of the Klondike gold fields and the mighty Yukon River, the whole of Dawson City seems to become a stage during the iconic event. Hotels and campgrounds book solid with music thirsty locals and visitors, Dawsonites open their homes to festival performers, and six venues around town - from St. Paul’s Anglican Church to the The Odd Fellows Hall ballroom to the Front Street Gazebo - grace world class musicians for three solid days of music.

“The Dawson City Music Festival always seems to do a great job of offering something for everyone,” says Vincent. “We bring in a variety of genres. It’s important to

This year, festival organizers saw an exceptionally high volume of applicants: 600 to 700 applications were submitted between September to December 2016.

“It’s a lot of work to go through submissions, but being exposed to so much new music is one of the perks of the job,” Vincent says.

Highlights for this year’s lineup include an eight piece traditional Haitian voodoo band, Chouk Bwa Libete, who combine Haitian roots with contemporary music; Duchess Says, an artful Montreal based band mixing new wave, punk and electro; and local Dawson act The Dead Wild, who play what Vincent describes as “a dark country genre/rockabilly honky tonk.”

Other Yukon acts include The Ukes of Hazard, The Hän Singers and Calla Kinglit.

The festival will showcase over 20 musical acts from July 21st to July 23rd, as well as 15 culinary

and craft vendors.

Saturday, July 21st from 11 a.m. to 2 p.m. marks KIDSFest, the annual children’s component of Dawson City Music Festival, with performances by Whitehorse children’s performer, Michael Brooks, and Yukon Girls Rock Camp participants, which sees 23 girls and gender non-conforming youth between eight to 18 years of age showing off their musical chops and empowerment skills mainstage at Dawson City Music Festival. This portion of the event is free (no festival pass required) and features face-painting, arts, crafts, games and dancing.

There are plenty of hotels and hostels around town to choose from if you’re in need of accommodation, and overflow camping is available at the Crocus Bluff ball field, which costs $10 per night

and campsites can be reserved online.

If interested in volunteering for the event, Vincent encourages individuals to sign up online as there are many volunteer roles yet to be filled before festival kickoff.

While Vincent might not get to kick her heels back, relax and soak in all of her and team’s hard work this festival season, she looks forward to the cultural experience, and extends a huge thank you to sponsors, friends of the festival, the Dawson City Music Festival board and committee heads.

“That’s the joy of planning music festivals,” Vincent laughs.

“You get 60 seconds here and there to look around and see how much fun audiences and musicians are having.”

The action in this movie is derivative, a few cool chase scenes, but nothing we haven’t seen before. Ansel Elgort and Lily James have great chemistry, but without a script or direction to support them they are left floundering in scenes that don’t really go anywhere or add anything to the movie.

So it could seem like I am picking on this movie a little bit. But with its blatant product placement and nonsensical ending I feel like I am right to do so, but

The character motivations are all over the map, they are inconsistent and just kinda staggering from one scene to the next.

Jamie Foxx and Kevin Spacey seem to have placed a bet on who can mug to the camera more, and really, I am not sure who won.

Dave, is there nothing great about this movie? Nothing at all? In all fairness I have to give the movie one thing: is has a top tier soundtrack – great music that fits a lot of the scenes perfectly. Some of the choreography to the music was excellent as well bringing a new dynamic to what could have been a stale waiting scene. The music is so integral that the movie verges on becoming a musical at certain points, as some of the best scenes are the ones where clunky

dialogue is abandoned to let the music tell the story and emote.

If you are up for a cheesy, it’sso-bad-it’s-almost-good kind of night you can check this out, but I would recommend you buy the soundtrack and skip the movie.

This movie gets a one out of five product placed Subarus.

Patient, boisterous, loyal and stubborn, every dog has a singular personality with a combination of unique traits; but there are certain qualities — like good with people, comfortable in the wild, can carry a pack — that are unconditionally required to join author Chris Czajkowski’s dog pack.

As a wilderness guide for almost 30 years, Czajkowski maintained a revolving duo of canines to support her extraordinary backcountry adventures. In her forthcoming semiautobiographical book, Harry: A Wilderness Dog Saga, we are introduced to the dogs that supported her three-decade long guiding career and given the stories not only of their lives, but of Chris’ life through the dogs’ perspectives.

True Goldrush Atmosphere

As a wilderness guide in a remote area of the Chilcotin region of British Columbia, Czajkowski depended on her dogs for safety, companionship and physical labour. In turn, these dogs were able to live a wildly free existence.

From encounters with porcupines, caribou, bears and wolves, to running and bushwhacking mountain paths and enjoying spring ice break or summer swims, it’s evident that Czajkowski’s dogs lived an incredible life. And so has Czajkowski.

While this is a story about dogs as told through the lovable perspective of her canines, the central character in every tale is the (real) author herself. Trailing her through a 30-year off-the-grid career, the dogs observe Czajkowski and her successes and misfortunes

along the way. Through their canine interpretations we see her the years her small business expanded with new solar-powered cabins, and later got Internet(!); the years they were evacuated because the wildfires got too close and, over time, the many relationships she built with her seasonal community. Also evident: Czajkowski’s joy in the natural world, especially the wildflowers of the mountains (something the dogs never cease to be confused by).

The dogs, of course, are also the subject of those trials and tribulations at times. Injuries and illnesses are part of life, and living in remote areas amplifies their emergency. It’s particularly apparent in these times that Czajkowski’s relationship with her dogs is much more than pragmatic: they are her pack. Her trust in these

animals is with dedicated respect and care.

True to how one may assume a dog’s perspective could be, Harry: A Wilderness Dog Saga is written with simple dialogue in a straightforward fashion. It’s an interesting choice to write a book through an animal’s view, and this one hits a lot of humourous notes in doing so. At times the canine intonations may be overly abundant, but dog lovers will adore those sentiments and the many quizzical anecdotes on human behaviour keep the tone light and playful. And that’s what Czajkowski’s novel does best: advocates for us to nakedly observe the wonder of the world, uninhibited by the noise of human conclusions.

Why You Should Be Carving your Hot Dogs

H

ot dog carving is my latest passion project.

This past weekend I became the general of my own army comprised of perfectly seared

men and women armed for battle in a soft and squishy

Hot dog carving is not only a beautiful vehicle of self-expression, it also allows the hot dogs to crisp and sear even more than simple grilling, making for an even better vehicle for relish and mustard. The

Here is a simple how-to for making a hot dog man, but this is by no means meant to curtail your own creative ambitions. And even if you’re a purist when it comes to hot dogs, try giving your next batch a simple cross hatch pattern, you’ll be pleasantly surprised at how well your condiments get into all the nooks and crannies.

Put two notches in either side of the hot dog just above the arms to make a neck – then carefully grill.

It might take a couple tries to figure out where to place your cuts so that your hot dog doesn’t fall apart on the grill

The Week That Was...

T

he week began with my English friend finally making it with her CanaDream Camper – a one-month, one-woman journey from Calgary to Whitehorse.

For the special occasion , to celebrate her arrival, we decided to head to Takhini Hot Springs; my first time. The boiling hot water is pleasant and it’s a pretty quiet Wednesday evening after work.

Only a few people floated around the water and the weather was perfectly overcast with a slight breeze to cool you down.

After the hot springs the heat instigated palpable hunger. So we headed off to Klondike Rib & Salmon for a meal. Packed with a wait list of 30 minutes, we put our names down and decided to head to a pub for a drink. We headed to the Dirty Northern and my friend got the taster flight, which was well-enjoyed in the trendy little pub.

Once finally inside the Klondike, it was another 30 minutes for food. At this point, I could’ve eaten an entire cow, but instead my delicious half rack ribs arrived.

It was devoured very inelegantly, with sauce over my face, clothes and at some points the waitress giggling at me with my paper napkin tucked into my t-shirt and me sucking the meat from the rib bones. I have no shame when it comes to eating ribs!

As we waddled home with our meat-filled bellies, it was time to say goodbye and off she left.

Thursday was a thoroughly entertaining evening with a pit stop to check out the Fireweed Community Market in Shipyards Park.

We headed to The Miner’s Daughter (next to the Dirty Northern Pub) for our dinner. The trendy place served my salmon burger on a wooden board and a tad overfilled iced-boozy sangria. It was tasty, but a bit expensive, and, feeling a bit too uncool for the scene we headed to Baked Café for the comedy show.

It was full evening, and the show was actually quite funny with a few of the locals who were game enough to participate. At one point I was crying with laughter, which is always a sign of a good show.

The weekend was rolling around and I was excited because I was doing my first Yukon Search and Rescue training weekend. After work, I packed my van and headed off to Pine Lake near Haines Junction.

The drive was incredible. I had not been this far west or north from Whitehorse. And the incredible mountain views were stunning. With only minute worries, such as my fuel gauge randomly dropping to empty on my journey, I made it alive and found the Yukon Search and Rescue camping spots.

Friday evening was spent meeting people involved, eating pizza and enjoying being out in nature.

Saturday morning rolled on and it was lashing rain. What a joy for helicopter rescue training!

We headed to Trans North air field, who were running the training. It was an incredible experience, as I had never been in or near a helicopter before. It was

A week filled with copious amounts of tasty food, hot springs, a comedy show, helicopter and boat rescue training and a paddle on the Takhini River! very effective to be able to feel, see and hear the effects that the helicopter would have in a reallife scenario. It was thoroughly enjoyable and productive training – although we were all wet and cold by the end.

At lunch we all huddled under the camping covers with a fire stove lit to dry us and keep us warm. The rain stopped – thank goodness – as we were about to start our boat rescue and incident command trainings. First up was the boat, and I was lucky enough to get to wear a giant, men’s large, orange onesie – just my colour!

And into the boat we went, practicing rescue techniques. I also got my first experience driving a boat – that was pretty fun!

By the evening, the sun was beaming down and after an amazing dinner around some quality people, it was another early night. In the morning was a practice search and rescue scenario, which involved walking through what can only be described as the Yukon jungle and the success of locating our “victim.”

Then, it was time for me to go, as I had another engagement on the way back to Whitehorse. I was using, again, my Yukon coupon booklet to get a 2-for-1 discount with Muktuk Adventures to do a 2-hour guided canoe trip down the Takhini River.

As I drive down the windy, gravel road, I arrive at a large number of kennels and sled dogs.

If you don’t like dogs, do not go to Muktuk! It is the land of dogs and every adventure will have some pups along for the trip. I was

greeted by friendly staff who let me cook my lunch on their stove and once my flat mate arrived, we walked down to the river to venture out on my first canoe trip.

The scenery was stunning and it was nice using my arm muscles for a change.

After two hours, though I was pretty knackered and was glad to finish the long, winding journey to the Takhini bridge. And back we went to Muktuk to collect our car and head home to Whitehorse.

It was an amazing weekend, although very tiring. It just shows how much you can do, see and explore in just one weekend!

Heart Healthy Hot Dogs

Hot dogs are a cultural icon and fortunately there are many healthier alternatives to the packaged versions

If you’re a vegetarian or vegan searching for a plant-based “not dog” to grill up at your next summer barbeque, you’re likely to find a few options at most grocery stores

ried, boiled, barbecued or campfire roasted, there’s nothing more quintessentially “summer” than a classic hotdog, especially paired with white bun, French’s mustard, ketchup and relish.

While I loved this old standby as a child (who doesn’t love a good ol’ fashioned weiner roast?), as an adult, I’ve become far too informed about the preparation and seriously questionable (and potentially carcinogenic) ingredients in generic, store bought hot dogs, to consider consuming them.

Sure, hot dogs were mainly reserved for family camping trips to Quiet Lake and down the Yukon River as a child, but I thank dog my parents recognized that hot dogs were not part of any hearthealthy food group.

Most packaged hot dogs you’ll find at the grocery store contain pork and beef meat “trimmings” (hello cheeks, jowls and snouts), fat, flavourings, colouring, and preservatives like sodium erythorbate and sodium nitrite. Personally, if I’m going to indulge in meat, I’ll take mine wild or organic, preservative free, and void of mystery meat.

According to the U.S. National Institute of Health, studies are now providing increasing evidence that eating red meat on a regular basis may shorten your lifespan.

Research has also linked red meat

consumption to increased risk of diabetes, cardiovascular disease and cancer. Processed red meats like bacon, hot dogs, sausage and salami are among the worst culprits.

In a study by the Harvard School of Public Health looking at the association between red meat consumption and mortality over the course of approximately 30 years, researchers found that an additional daily serving of unprocessed red meat increased the risk of total mortality by 13 per cent and an additional serving of processed red meat (including hot dogs) increased the risk of mortality by a staggering 20 per cent.

I’m not here to trash talk a cultural tradition, nor am I trying to dissuade you from enjoying this ubiquitous fare (I’m not that much of a weenie). I’m a firm believer that moderation is key and if you eat the odd processed dog here and there, you’re probably not going to cause any long term damage.

I am however, going to offer alternatives to the traditional frankfurter – options that are ethical or cruelty free, and far better for your health, and the planet.

If you’re a vegetarian or vegan searching for a plant-based “not dog” to grill up at your next summer barbeque, you’re likely to find a few options at most grocery stores. These veggie, meat-free alternatives are usually made of

fermented soy proteins like tofu.

While brands like Yves Soy Dogs, Lightlife Smart Dogs and Tofurky Hot Dogs are still processed and packaged, they are lower in fat and cholesterol than their meaty cousins.

But these meatless wonders are also at a physiological and environmental cost. Soy has been linked to health risks like cancer, infertility, endometriosis, infertility, and low libido, and soy’s widespread use in recent years has proven to be incredibly destructive to the planet.

If you’re hankering for a hot dog that’s healthy, sustainable and vegan, you might consider carrot hot dogs. Yep, that’s right.

Carrots, when peeled, boiled, marinated and roasted until soft and charred, are about as healthy and au natural as you can get.

You might laugh at this seemingly sad excuse of a hot dog, but amazingly, when paired with a smokey glaze and spices, is a delicious, plant-based surprise. Place in a bun, top with caramelized onions and your favourite condiments and you’re set for your next cookout.

Seasonal Recipes with Sydney Oland

Hot Dog Bánh Mì B

ánh mì is the Vietnamese word for bread, specifically a baguette style loaf introduced to Vietnam during the French occupation. It typically uses a combination of rice flour as well as wheat flour to make a really fantastic, very unique final product.

In North America the term bánh mì is most commonly used to describe a sandwich - generally filled with grilled meats seasoned with fish sauce and lemongrass as well as pickles, mayonnaise and fresh herbs.

This recipe is an homage to the bánh mì using some of the typical flavours of this iconic sandwich to top a grilled hot dog. This recipe for pickled carrots tends to steal the show almost anywhere, so don’t be afraid to throw any leftovers on a cheese plate or in a salad once you’ve finished with your hotdogs.

Quick Pickled Carrots Serves 6 INGREDIENTS 1 cup white vinegar ¼ cup sugar 3 Tbsp salt ½ cup water 1 garlic clove, finely sliced 1-inch piece fresh ginger, peeled and finely sliced 3 carrots, finely sliced with a peeler 1 small red onion, finely sliced

Hot Dog Bánh Mì ... cont’d Bánh Mì Hot Dogs Serves 6 INGREDIENTS Sriracha sauce, to garnish Lime wedges, to garnish Sliced Thai chilies, to garnish (these are wicked hot, so proceed with a bit of caution)

4 hot dogs 2 hotdog buns ½ cup diced cucumber ¼ cup mint leaves ¼ cup cilantro leaves Mayonnaise, to garnish

In addition, this course addresses the importance of holism and balance. rom antique carousel and ferris wheel rides, to wearable art and cake bake off contests, to beer and wine gardens, to beach wrestling and the Fisherman’s Rodeo, the Southeast Alaska State Fair really does have something for everyone.

The longstanding annual festival, which takes over the 25-acre fairgrounds in the small town of Haines, Alaska, is gearing up for its 49th year. This year’s event, called Fishnets and Chainsaws, takes place for four action-packed days, from July 27th to July 30th.

“There’s something going on all the time somewhere on the property,” says Southeast Alaska State Fair Executive Director Jessica Edwards. “It really feels like the pinnacle of summer.”

The state fair is one of about 12 events that the non-profit organization puts on every year. Other events include the beloved beer festival, the fisherman’s barbecue during the Kluane Chilkat International Bike Relay and smaller events like film festivals and community parties. Most importantly this year the festival will hold their first annual Dinky Doggy Derby at 1 p.m. on Sunday, July 30. It’s a race in three weight classes for dogs under 30 pounds. Edwards says that there may even be some “hot dogs” in that contest. (Mini Dachshunds are often called hot dogs or wiener dogs).

The Southeast Alaska State Fair is not to be confused with the larger Alaska State Fair, which happens over 12 days in Palmer, Alaska. While the southeastern version is definitively smaller, hosting approximately 12,000 people over four festival days, Edwards says the event has a distinct flavour unique to the adventure capital of Alaska.

“Haines is a small town, but it’s a big event. The entire town is tired after the festival is over,” laughs Edwards, applauding Haines’s communal effort in composing the yearly fair. The event is community organized and sees more than 1,000 collective volunteer hours.

“It’s a time when people come together from all over the region, from Whitehorse, to Juneau and Haines junction and Skagway. You see people you haven’t seen for a year and people make a tradition of it.”

While many Yukoners accurately associate the Southeast Alaska State Fair with colourful contests,

carnival games and beer gardens, Edwards says people may not know that the fair boasts a strong music festival component as well.

“We have excellent musical acts happening from noon to midnight on Friday and Saturday,” Edwards says. “People are often surprised at the quality and amount of music we have.”

This year’s musical lineup showcases a diverse

array of eclectic talent, including Delhi 2 Dublin, the Eric Krasno Band, John Wayne and the Pain, and Yukon’s own Gordie Tentrees and the Whiskeydicks. From Indian electronic music and bass, to electronic reggae-dub, to Celtic-gypsy rock, to blues and funk, and all genres in between, the fair covers just about every musical taste.

Headlining bands will be leading workshops on the smaller park stage at the pavilion, which provides a beautiful grassy setting for intimate acoustics.

and play smaller sets, which allows people to see acts in a less produced environment and hear about what these musicians are doing and why,” Edwards explains.

This year’s big do features about 50 craft and info vendors, and 15 food vendors, flooding in from all over Alaska to showcase their delectable wares for the fair.

Food choices range from Indian samosas, to Thai food, to sushi, to fried cheese curds, and burritos.

Edwards says that the food is so unbelievable, that some people come just to eat.

The state fair is also well known for being a family friendly event, with a free kid’s craft area and carnival games. The four days include children’s workshops and plenty of family activities – and all fair activities are free for children under six.

“It’s a great place to bring kids,” Edwards says. “It’s all an ages event and it’s really affordable.”

If you haven’t been to the Southeast Alaska State Fair, or if you’re hankering for a road trip to Haines, Edwards encourages Yukon residents to make the journey. Haines is accessible by road (take the Alaska Highway west to Haines Junction and continue to the Haines Highway and border) or via the Haines/Skagway Fast Ferry which provides daily ferry departure from Skagway.

“Haines and and the Yukon have a relationship by road, and I think this is a particularly wonderful weekend where there is something for everyone to do,” Edwards says.

“It’s a great weekend to not only enjoy the fair, but to go hiking and boating.

“For me the fair is the highlight of my year. I love seeing all of the happy faces and it’s such a joy to see so many people here enjoying themselves and our town.”

The Southeast Alaska State Fair takes place in Haines, Alaska from Thursday, July 27 through Sunday, July 30. Free overflow camping is available at the Fort Seward Parade Grounds, or alternatively, Haines has multiple campgrounds and lodging to choose from.
