Garlic Confit Fish & Potatoes

Recipe:

FOR THE POTATOES:

2.5 to 3 lbs. Yukon gold potatoes sliced thin

1 container Golden Taste Roasted Garlic Confit

2 tsp. salt

2 tsp. black pepper

2 tbsp maple syrup

handful Kosher Taste fresh chopped parsley

2-3 tsp. sumac

FOR THE FISH:

2 large fillets of cod or turbo

2 tbsp. oil

3 tbsp. stone ground mustard

Salt and pepper

Chopped Kosher Taste Parsley

2 lemons

Instructions:

FOR THE POTATOES:

Mix everything together on a parchment lined baking sheet. Place in 375F and bake for 45 minutes

FOR THE FISH:

Line a baking sheet with parchment and oil. Place the fillets on the tray Season with salt and pepper. Shmear the mustard on the top of the fillets. Garnish with the parsley Squeeze on lemon worth of juice over the top. And then place slices of lemon on top of each fish. Bake for 20-23 minutes in 375F oven.

NOTHING BUT MANGO

SPRINGY SALMON WITH LEMON DILL SAUCE

Bright, zesty flavors come together in this light and refreshing seasonal-inspired dish.

4-6 salmon fillets

2-3 cloves garlic, crushed

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper, to taste

Lemon Dill Sauce:

½ cup mayonnaise, sour cream or Greek yogurt

2-3 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 teaspoon lemon zest

1 teaspoon Dijon mustard

Salt and pepper, to taste

Directions: SALMON:

1. Preheat your oven to 400° and line a baking sheet with parchment paper.

2. Wash and pat dry the salmon fillets with paper towels. Place on the prepared baking sheet.

3. Spread some crushed garlic on each fillet. Drizzle with oil and lemon juice. Season with salt and pepper.

Bake for 20 minutes, or until the salmon flakes easily with a fork.

For stovetop option: Cook salmon in a skillet over medium heat for 4–5 minutes per side.

LEMON DILL SAUCE

1. In a small bowl, combine all the ingredients and stir until well combined.

2. To serve, spoon a dollop of sauce over each fillet. Garnish with fresh herbs and lemon slices.

1,2,3 SESAME ZA’ATAR SALMON

Za’atar adds a fragrant Middle Eastern twist to this tender baked salmon. Finished with a simple tahini drizzle, it’s a super fast, super simple Yom Tov (or weekday) dish.

Ingredients

4-6 salmon fillets or 1 medium side of salmon

2 tablespoons olive oil

1 tablespoon lemon juice

1½ tablespoons za’atar spice blend, or more to taste

1 tablespoon sesame seeds

Salt and freshly cracked black pepper, to taste

Lemon wedges and fresh parsley for garnish

Tahini dip, for serving

Instructions

1. Preheat your oven to 400° and line a baking sheet with parchment paper.

2. Wash and pat dry the salmon fillets with paper towels. Place on the prepared baking sheet.

3. Season with salt and black pepper. Then evenly sprinkle za’atar and sesame seeds.

4. Bake for 20-30 minutes (depending on the size), or until the salmon flakes easily with a fork.

5. Optional: Serve alongside tahini dip. Garnish with fresh parsley and lemon wedges if desired.

GARLIC & TOASTED WALNUT PASTA

This versatile garlic pasta is light, flavorful, and the perfect side to complement any salmon dish.

Ingredients:

1- 16 oz. bag angel hair pasta

4–5 garlic cloves, crushed

¼–⅓ cup oil (adjust to your preference for moisture)

Salt and black pepper, to taste

Handful of toasted walnuts, roughly chopped

Optional: pinch of red pepper flakes, chopped parsley, or grated Parmesan

Directions:

1. Cook angel hair pasta according to package directions. Drain well.

2. In a large mixing bowl, combine the warm pasta with the rest of the ingredients and toss until fully coated. Taste and adjust seasoning. Add more oil if needed for a silkier texture.

3. Serve warm or at room temperature, topped with parsley or Parmesan if desired.

NOTE: If you’re preparing this dish in advance, omit the toasted walnuts and only add them prior to serving for optimal crunch.
