President's Letter

During this special time of the year, we are truly grateful for your support. Your generosity continues to drive WCNY’s mission to serve those who live, work, and study across Central New York.

The holiday season is one in which we treasure our families and embrace the traditions that bring us together. WCNY aims to bring happiness to your holidays through the many programs on PBS and Classic FM. Some of these have become their own seasonal traditions, ones that we hope you look forward to.

This year, we are thrilled to reintroduce the unforgettable characters of “Downton Abbey” with a marathon featuring every episode from every season, starting on Thanksgiving night and continuing through the weekend. Along with that, November will showcase “Salute to Service: A Veterans Day Celebration,” featuring the U.S. Army Field Band, as well as other Veterans Day programming. Finally, “Great Performances” will include Olivier Award nominee Kate Prince’s dance and theater show set to songs from Grammy Award winner Sting.

December will bring treasures including a “Call the Midwife” holiday special, the beloved annual “Christmas with the Tabernacle Choir,” and Agatha Christie’s “Lucy Worsley on the Mystery Queen.” The “Celtic Woman 20th Anniversary Concert” will also grace the airwaves, presenting an exclusive chance to acquire tickets for their international tour coming to Syracuse this Spring.

In addition, we are excited to present a beloved Central New York holiday tradition. WCNY will air multiple broadcasts of the Central New York Arts Council's "Dasher's Magical Gift." This enchanting ballet evokes the wonder of classic tales like “The Nutcracker” and “Rudolph the Red-Nosed Reindeer.” It captures the holiday spirit and has been an annual delight for families in Central New York for more than a decade.

As always, you can listen to Classic FM for special holiday programming, including host Adam Fine’s annual musical tribute to Chanukah, plus a series of specials that will air Christmas week. Classic FM's host and program manager, Diane Jones, will also be live on Christmas morning, treating you to a warm musical tapestry just as the hooves are lifting from our rooftops.

Thank you for being part of our holiday season, and, above all, thank you for letting us participate in yours.

Did You Know?

Finger foods became a novelty during the Prohibition era thanks to the proliferation of juice joints. Speakeasies provided their patrons with bite-sized snacks to keep them drinking and dancing all night.

Spiced Cranberry Sangria (6-8 servings)

Ingredients

• 1 - 12 oz. bag of cranberries (1/4 cup reserved for garnish)

• 2 oranges, juiced, plus a few slices for garnish

• 1 cup water

• 2-inch knob of fresh ginger, sliced

• 1-1/4 cups pure cane sugar

• 1 cinnamon stick

• 1/4 cup Cointreau

• 1 green apple, sliced

• 1 bottle of white wine

• Cubed ice

Directions

1. In a medium saucepan, add the cranberries, orange juice, water, fresh ginger, sugar, and cinnamon stick.

2. Turn the heat to medium and simmer for ten minutes, until the cranberries have softened.

3. Run the cranberry syrup through a fine-mesh sieve and press the cranberries to release any juices.

4. Transfer the syrup to a large pitcher.

5. Pour in the Cointreau and wine, and thoroughly mix.

6. Add reserved cranberries, orange slices, and sliced green apple.

7. Transfer to the fridge to chill for one to two hours. Stir the sangria before serving.

8. Serve over ice.

• 24 basil leaves

Directions

1. Bring a large pot of water to a boil and blanch the tomatoes for 20 seconds to make them easier to peel.

2. Quickly transfer the tomatoes to a bowl of ice water to prevent them from cooking. Then, use a paring knife to peel them.

3. Toss the peeled tomatoes with salt, vincotto, olive oil, and red wine vinegar. Let them marinate for at least one hour or overnight in the refrigerator.

Orange Chicken Polpettine (60 pieces)

Ingredients

• 1 lb. ground chicken

• 8 oz. silken tofu

• 1-1/3 cup panko

• 4 tsp. soy sauce

• 4 tsp. Shaoxing wine

• 2 tsp. grated ginger

• 1/4 tsp. white pepper, ground

Directions

• 1/2 tsp. salt

• 1/2 cup potato starch

• Vegetable oil for frying

For the Sauce:

• 2/3 cup orange juice

• 1/3 cup orange marmalade

• 2 tsp. potato starch

1. In a medium bowl, add the ground chicken, tofu, panko, soy sauce, Shaoxing wine, grated ginger, white pepper, and salt. Use your hands to knead the mixture until it's uniform.

2. Add one inch of oil to a heavy bottomed pot and preheat the oven to 340°F.

3. Put the 1/2 cup of potato starch in a bowl.

4. Generously dust your hands with potato starch and scoop out one level tablespoon of meat mixture into the palm of your hand. Roll the meat around to make it spherical and to dust the outside surface with potato starch. Place the meatballs on a non-stick baking sheet. Repeat until you've used all the meat.

5. Fry the meatballs until golden brown, rolling them around so they brown evenly.

6. Whisk together the orange juice, orange marmalade, and two teaspoons of potato starch in a sauté pan and bring to a boil. Add the fried meatballs and roll around to coat evenly. Serve hot or at room temperature.

The Oxonian Cocktail (1 serving)

Ingredients

• 3 oz. Advocaat (Dutch/Belgian eggnog liqueur)

• 3 oz. English-style pale ale (Extra Special Bitter)

• 1 oz. spiced brown sugar syrup

• 1/4 tsp. each of ground cinnamon, cloves & ginger

• Top with grated nutmeg

Directions

1. For the spiced brown sugar syrup, dissolve two cups of light brown or evaporated cane sugar into one cup of water over low heat.

2. Add a 1/4 teaspoon each of ground cinnamon, ground cloves, and ground ginger. Stir until combined and allow to cool.

3. Combine all ingredients in a glass and grate a small amount of fresh nutmeg over the top.

Little Shrimp Casseroles (24 pieces)

Ingredients

• 4 tbsp. unsalted butter, melted

• 2 tsp. chopped garlic

• 1/4 cup minced scallions

• 1/2 cup (about 2) white button mushrooms, coarsely chopped

• 1/2 tsp. black pepper, freshly ground

Directions

• 1/2 tsp. salt

• 2 tbsp. canola oil

• 1 lb. (about 24) large shrimp, peeled

• 1 cup fresh breadcrumbs (from about 3/4 slice of bread processed in a food processor)

• 1/4 cup dry white wine

1. Mix the butter in a large glass bowl with the garlic, scallions, mushrooms, pepper, salt, and one tablespoon of oil. Add the shrimp and toss to mix well.

2. Divide the mixture among four individual gratin dishes, or spoon it into a large gratin dish or shallow baking dish.

3. In a separate bowl, toss the breadcrumbs with the remaining tablespoon of oil, so they are lightly coated but still fluffy.

4. Sprinkle the shrimp mixture with the breadcrumbs and pour the wine on top.

5. About 30 minutes before serving time, heat the oven to 425°F.

6. Place the gratin dishes or dish on a cookie sheet and bake for ten minutes, or until the topping is nicely browned and the shrimp are cooked through. Serve immediately.

Ingredients

Dough

• 1/2 cup pecans, finely ground

• 1/2 cup cream cheese, room temperature

• 4 tbsp. unsalted butter, room temperature

• 3/4 cup all-purpose flour

• Pinch of salt

Filling

• 1 large egg

• 1/4 cup packed light brown sugar

• 2 tbsp. pure maple syrup

• 2 tsp. vanilla extract

• 1 tbsp. unsalted butter, room temperature

• 1/4 tsp. salt

• 3/4 cup pecans, toasted and coarsely chopped

Directions

1. Preheat the oven to 350°F. Mix cream cheese and butter with an electric mixer fitted with the paddle attachment. Mix on medium-high speed until well blended. Add flour, ground pecans, and salt; mix just until dough comes together. Alternatively, stir together ingredients with a wooden spoon in a large bowl.

2. Roll dough into 1-inch balls— press into the bottoms and up sides of cups of mini-muffin tins.

3. Whisk egg, brown sugar, maple syrup, vanilla, butter, and salt in a bowl. Stir in pecans. Spoon about 1-1/2 teaspoons filling into each muffin cup.

4. Bake until crust begins to turn golden for about 20 minutes. Let cool completely in tins on wire rack before unmolding. Tassies can be stored in single layers in airtight containers at room temperature up to three days.

Luna’s Holiday Fruitcake Recipe

Ingredients

* 2 cups chopped nuts (Your choice! Examples include walnuts, pecans, Brazil nuts, etc.)

* 1-1/2 cups pitted dates, chopped

* 1 cup maraschino cherries, halved (or other dried fruit like raisins, pineapple, green or red candied cherries, berries, etc.)

* 1-1/2 cups all-purpose flour

* 1/2 tsp. baking powder

* 1/2 tsp. salt

* 3 eggs

* 3/4 cup sugar

* 3/4 stick butter, softened

* 1 tsp. vanilla

Directions

1. Preheat the oven to 300oF. In a bowl, combine the nuts, dates and cherries or other fruit.

2. Add the flour, baking powder, and salt. Mix until combined.

3. In a separate bowl, beat the eggs, butter, and sugar together, then add the vanilla. Combine egg mixture with nuts and flour. Pour into a greased and floured 9x5 inch loaf pan.

4. Bake for 1 hour and 35 minutes. Check the cake with a toothpick and see if it comes out clean. Allow it to cool for 10 minutes before removing it from the pan and cooling completely on a wire rack.

5. Cut the cake and share with family and friends!

We hope you had fun together! Be sure to post a photo of the finished dish and tag us on social media @wcnypbs._kids. We’d love to see how it turned out!

Animals in Alaska

Which fact matches each animal? Draw a line.

My fur is usually red but my tail always has a white tip.

I am a part of a team of dogs that pulls a sled.

I'm a bird that can swim underwater.

In winter, my fur becomes thick and white.

My tall legs and wide hooves help me walk in deep snow.

My wings can be eight feet across when I spread them out.

LINER NOTES

Listen to the (now) award-winning WCNY Community FM!

When WCNY launched Community FM in the summer of 2022, we did it with a simple goal in mind—to create and air original local programming that focuses on local people and local perspectives. Almost a year and a half later, the station has exceeded those humble expectations in many ways. We at WCNY are very proud that Community FM has been honored by the New York State Broadcasters’ Association with a prestigious “Serving New York” award, celebrating local broadcasters’ commitment to serving our communities.

Ten original local radio programs now air monthly or semi-monthly on the station. In addition, Community FM provides a broadcast platform for 12 more locally produced podcasts and community affairs programs. All of our shows, including the original programs highlighted below, provide you with a broad-based view of what makes our region a terrific place to live:

• Built to Serve—showcasing the critical work being done by our region’s many non-profit and service organizations

• Check It Out—find great programs and services for our children available at the Onondaga County Public Libraries

• Checkup from the Neck-up—Psychologist Rich O’Neill offers ways to improve our mental and physical health

• CNY Heroes with Dan Cummings—with information for and about our local veterans and their families

• Innovate to Educate—hear about dynamic, unique educational programs at work right now in our local schools

• On the One LIVE!—highlighting Central New York’s active and very talented local music scene, hosted by DJ Bella J and DJ ha-Meen

• Our New Neighbors—featuring compelling stories of immigrants and refugees re-settled here, hosted by New Americans

• Syracuse (On)Stage—go behind the curtain at our region’s outstanding professional theater company

We encourage you to give Community FM a listen if you haven’t already. Please take a look at the program schedule published in this and every edition of “CONNECT” magazine. Our community-based programming airs seven hours each day, a total of nearly 50 hours a week. Go to wcny.org/communityfm for information on how to listen on an HD radio or stream the station online. Plus, all of our original programming and locally produced podcasts are available for on demand listening at the same website, with a complete archive of all our past shows, nearly 200 of them as of this writing!

As always, all of us at WCNY sincerely appreciate your listening and your support of all our radio stations!

MEET THE WCNY COMMUNITY FM HOSTS

Major Charles Roberts

Community FM wouldn’t have been possible without the dedication of several volunteer show hosts from throughout the community. One of the first programs to launch was “Built to Serve,” a monthly show that highlights the critical work of our local non-profit organizations. In December of 2022, the show featured the Syracuse Area Salvation Army and Major Charles Roberts, Director of Onondaga County Operations. Charles was a natural behind the mic and became the host of the show starting last February, graciously volunteering his time and talent to WCNY in the midst of his many and varied Salvation Army duties. So far, Charles has hosted shows featuring The Prevention Network, the Center for Community Alternatives, Blueprint 15, Americorps Senior Companions/Salvation Army Senior Services, Hillside, the Gifford Foundation, Erin’s Angels, the Upstate Foundation, and the CUS Foundation. Thank you Major Charles Roberts for your dedication to our community!

How Do I Make Friends as an Older Adult?

Remember when we were kids, and it was easy to make friends? I remember going to summer camp and making boondoggle keychains next to a girl who would become my good friend. The basis of our friendship? We both loved cats, crafts, and jumping rope. It was spontaneous and easy.

Friends are the ballast that help us through the rough patches. Midlife poses challenges and losses that can leave one feeling isolated and lonely. Without friends, we have no buffer from the suffering that is part of life. Life is just harder. Friends make us more resilient and happier.

So why is it so hard to make friends as we get older? We’ve all heard the well-meaning advice: join a club, pick up a hobby, use a site like Meetup. But it’s a lot more complicated, otherwise there wouldn’t be so many lonely people.

In addition to a significant time commitment, taking initiative and asking someone for coffee feels awkward. At this age, we have decades of lived experience that includes complicated and painful relationships. Most of us carry some fear that if people really got to know us, they wouldn’t like us. So, it’s scary to make the first move. Making friends as an older person requires courage and determination.

Recently, I picked up the book “Platonic” by researcher Marisa G. Franco, who is an expert in friendship. One of the main takeaways is the importance of showing up again and again to the same places. We need repeated exposure to feel connected to others. But the best piece of advice from Franco’s book was to assume people like you. That’s a challenge for all of us who have experienced the wear and tear of painful relationships over the decades. But it’s an optimistic approach that can have profound benefits.

Here’s a challenge: next time you are at a gathering, assume people like you and see what happens. Don’t be surprised if you feel more comfortable and warmer towards others. Then, gather up your courage and ask a potential friend out for coffee. It might feel awkward, but if you are middle aged, you’ve done harder things. And who knows? You may have just made a friend for life.

PARTNER SPOTLIGHT

The Manlius Cinema has been in constant operation since 1918 and proudly serves the Central New York community with a mix of new releases, classic films, and independent productions. As one of the last single screen ‘shotgun style’ theaters in existence, the spirit of film lives on as it has for over a century.

Under new management, restoration and improvement projects have given the theater technical upgrades, as well as a fresh aesthetic, while keeping all the charm of a small town art house. Come out to the Village of Manlius and see for yourself how history and modern entertainment co-exist in the most modest way.

World-Class Guitarist, Tommy Emmanuel, Delights WCNY Supporters in Ithaca

An unforgettable performance took place at the State Theatre of Ithaca on Sept. 12, attracting an enthusiastic packed house. WCNY hosted nearly 30 supporters and guests at this spectacular event featuring the prodigious talent of renowned guitarist, Tommy Emmanuel.

Tommy Emmanuel, widely regarded as one of the greatest guitarists of our time, captivated the crowd with his mesmerizing melodies and virtuosic skills. The concert showcased Emmanuel’s unmatched ability to blend various genres, effortlessly weaving together elements of jazz, blues, country, and rock. The concert was a truly wonderful evening for all.

The concert not only provided an evening of exceptional entertainment, but it also played a vital role in supporting WCNY’s mission to enrich the lives of Central New Yorkers through educational and cultural programming. The event’s success was made possible with support of generous individuals who understand the importance of public media.

“We are incredibly grateful to Tommy Emmanuel for his support of PBS and WCNY and for sharing his extraordinary talent with our members,” expressed Shannon Hanrahan, VP, Philanthropy. “On-air fundraising concert events such as this not only bring together a community of music enthusiasts, but also allow us to continue providing high-quality programming to our loyal audience. WCNY remains committed to delivering engaging content that educates, inspires, and entertains.”
