Chef Tiffany Derry’s Three-Course Dinner Menu
SALAD COURSE
Caesar Salad
A blend of kale, romaine, and mustard greens, topped with duck fat breadcrumbs and Pecorino Romano cheese, all tossed in Caesar dressing.
ENTRÉE CHOICE OF:
Burnt Sugar Short Ribs
Tender short ribs glazed with a rich blend of soy, burnt sugar, and allspice, served with blanched baby carrots, roasted pearl onions, and a sweet potato purée.
Fennel-Roasted Chicken
Fennel-roasted chicken breast with a sweet honey glaze, served with crispy fingerling potatoes and blanched asparagus, topped with a roasted wild mushroom and bacon demi-glace.
Chargrilled Cabbage
Charred red cabbage served with spicy garbanzo beans and drizzled with tangy charred lemon chimichurri.
DESSERT COURSE
Pistachio Olive Oil Cake

Peach Koolaid
INGREDIENTS
• 4 parts Roasted Peach Rum
• 2 parts Mango Syrup
• 2 parts Peach Tea
• 1 part Lime Juice
• 1 part Dry Curacao
• Garnish with Sliced Peaches
DIRECTIONS
Roasted Peach Rum
1. Preheat oven to 350°F.
2. Quarter 4 peaches and roast them for 20 minutes.
3. Combine roasted peaches with with 1 liter of Flor de Caña rum in an airtight container.
4. Store for 4 days, then strain.
Mango Syrup
1. Thinly slice 3 ripe mangoes.
2. Bring water (500g) and half the sugar (325g) to a boil. Remove from heat and add mangoes.
3. Let sit for 15 minutes, mashing/agitating every 5 minutes.
4. Strain the mixture, then add the remaining sugar (325g).
5. Cool before use.
Peach Tea
1. Heat 1 liter of water just below boiling.
2. Pour over 5 peach tea bags and steep for 4 minutes.
3. Add sugar (50g) and stir.
4. Cool before use.

Tiffany Derry is the founder of Tiffany Derry Concepts and co-founder of T2D Concepts, the Texas-based purpose-driven hospitality group behind Roots Chicken Shak, Roots Southern Table, Radici, and ‘Shef Tiffany spice and apparel line. Tiffany stepped into the spotlight when she appeared on Bravo’s “Top Chef” Season 7, earning the title of “fan favorite” and finishing in the top four. Additionally, she is an ambassador for the diabetes organization Novo Nordisk and sits on the Board of Directors for Food Policy Action.

Charlie Miller has been a journalist at The Post-Standard and Syracuse.com since 1987. He was a news reporter before he ran the sports department. Now, he eats and drinks his way through Central New York, writing stories and producing videos about local restaurants, bars, concerts, and anything else that’s fun. Yes, it’s a real job.
He graduated from Indiana University with degrees in journalism and music. After moving here, Charlie earned his master’s degree at Syracuse University’s Newhouse School. He has been a part-time professor at Newhouse since 1997.

Bidding Instructions
1. Bid on your phone by visiting one.bidpal.net/tof24 and registering or text TOF24 to 24372. There is no app required.
2. Register on any page of the auction center by tapping on the “Sign in” link in the top right corner. Registration is required to make a donation or place a bid.
3. Sign in with your email address, Facebook account, or Google account. After selecting your preferred sign-in method, you will be prompted to enter the required information for registration.
4. Select the item you would like to place a bid on.
5. Tap the “Bid” button to open the “Place Your Bid” pop-up window, where you can enter your bid. You can also click the “Watch” button to bookmark the item for later.
6. Enter your bid and then select “Confirm Bid.”
7. In the next window, you will be able to set your Max Bid—the most you are willing to spend on the item. If you don’t want to set a Max Bid, you can simply select “No Thanks.”
8. Please pick up your items at the conclusion of the event in the Upper Lobby. Large items must be picked up at the WCNY-TV Studios, Monday through Friday, from 9 a.m. to 5 p.m.

How do I know if I won an item?
Tap the person icon in the top right corner to check the status of your bids. You can see whether you are the highest bidder, if someone outbid you, or if you won the item.
How do I pay for the item I won?
In the same section mentioned above, you will be able to pay for your transactions on the receipt tab.
How can I get my invoice?
Supporters will be texted a receipt when their purchase is completed. There is also an option to email yourself a receipt. WCNY will also send email receipts to guests as needed.
Is there any bid limit on items?
There is no limit on how many items you can bid on or how many times you can bid.
How can I make a donation?
Go to the “Make a Donation” page and select your donation amount. Or enter your amount by selecting the “Other” option, then select the donate button.
Is there sales tax on the item?
Only certain packages are subject to 8% sales tax.
