Creamy Pumpkin Pasta
Prep Time : Cook Time : Servings :

Ingredients :
2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
500g pumpkin, cut into cubes
50-100ml whole milk
2 tbsp tomato purée
2 tbsp mascarpone
350g short pasta
40g grated parmesan
Notes :
Place leftovers in an airtight storage container in the refrigerator for up to 4 days
Procedure :
STEP 1
Heat the oil over low-medium heat fry the onion with a pinch of salt for 10-15 mins
Add the garlic and fry for 1 min more
STEP 2
Cook the pumpkin for 10-15 mins until tender
Drain and tip into a blender
Blitz with 50ml milk and the onions
Mix with the tomato purée and mascarpone bring to a simmer over low heat
STEP 3
Cook the pasta and drain it
Toss the pasta with the pumpkin sauce, parmesan, and 50-100ml of the reserved water to loosen
Season with parmesan

Ingredients
1 ¾ cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon ground cloves
½ teaspoon salt
1 cup pumpkin puree
2 large eggs
1 cup sugar
½ cup vegetable oil or melted butter
¼ cup milk
1 teaspoon vanilla extract
½ cup walnuts or chocolate chips (optional)
PUMPKIN BREAD
This easy pumpkin bread is a fall favorite, packed with warm spices and the rich flavor of pumpkin. It’s moist, delicious, and perfect for breakfast, dessert, or a snack.
Instructions

Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.

Mix dry ingredients: In a large bowl, combine flour, baking soda, spices, and salt
3. Combine the wet and dry ingredients, stirring just until blended. Optionally, fold in walnuts or chocolate chips.
