A simple soup that nourishes the soul.

Carrot Ginger Soup

Ingredients:

3 large carrots (chopped)

1-inch ginger (grated)

1 onion (chopped)

2 cups vegetable broth

1/2 cup coconut milk

How to Cook: Sauté onion, carrots & ginger. 1. Add broth & simmer for 20 minutes. 2. Blend until smooth, stir in coconut milk. 3.

Ingredients

For Chicken:

4 boneless chicken breasts

3 eggs whisked

1/4 cup cornstarch (for chicken)

1/4 cup all purpose flour

salt and pepper to add flavor

oil of your choice (for frying)

Cut chicken into bite-size pieces.

For Sweet and Sour Sauce:

1/2 cup honey

1/4 cup soy sauce

3 tablespoons vinegar

1/4 cup catsup

1/2 teaspoon garlic powder

1/2 teaspoon ginger powder

1 teaspoon chili flakes

2 tablespoons cornstarch

2 tablespoons sesame seeds

salt and pepper to taste

sliced green onion

Mix cornstarch, all purpose flour and whisked eggs and dredge the chicken.

Fry the chicken until golden brown.

To make the sauce - mix honey, soy sauce, vinegar, catsup, ginger, garlic, salt, pepper and chili flakes. Heat in a pan for 5 minutes.

To thicken the sauce, whisk cornstarch with 2 tablespoons of water until you form a paste.

Pour this into the sweet and sour sauce and continue whisking until the sauce thickens.

Toss the chicken with the sweet and sour sauce until fully coated.

Serve with rice and garnish with sesame seeds and green onion.
