Ready, Set, March!

It’s March at the Jersey Shore. Not exactly flip-flop weather yet, but we’re over the wintery hump. Days get a little longer, temperatures begin to tick up and, if you’re catching some waves, you might even be able to downgrade the wetsuit from an cumbersome 6/5/4 mm to a light and breezy 5/4 mm.

And of course, it’s March Madness, which turns our minds to basketball. Quench your craving for basketball stories by reading Morgan Mechler’s coverage of Manasquan High School’s championship basketball team. You’ll meet the head coach and some of the Warriors who have been dominating the court this season.

It’s also a good time of year to be Irish—if not in blood, then in spirit. In this issue, in

honor of St. Patrick’s Day, we check in with The Women of Irish Heritage Jersey Shore, as well as Mark Collins, owner and general manager of The Irish Rail. If you’re celebrating St. Paddy’s Day the oldfashioned way, be sure to check out Mark’s tips for the ultimate hangover cure.

An Expert Opinion on St. Patrick’s Day

The co-owner of The Irish Rail spills a few industry secrets on perfect burgers, hangover remedies and which sport has the rowdiest fans.

Mark Collins is co-owner and general manager of The Irish Rail. In honor of the most Irish day of the year, we caught up with him to get some expert opinions.

The pub’s story begins with a fire at the Manasquan train stop. Tell us more.

Back in the ’90s, the old train station burned down. For a while, the train still made stops, but people were just waiting on the gravel next to the tracks. Mark Herrmann, a local builder and one of our owners, approached NJ Transit and offered to rebuild the station with his own supplies in exchange for the use of the building, and that’s how it got off the ground. Originally, the building was going to be office space and a laundromat. But then literally out of the blue, NJ Transit called and asked who they should make the liquor license out to. It turns out that as a train station, the building was automatically eligible for a liquor license.

So the bar kind of happened by accident?

It did. If you’ve been inside, you know that The Rail has a really unique multi-angled bar. The building had already been planned and plumbed when everybody found out about the liquor license, so instead of starting from scratch, those builders literally took a can of spray paint and made a line on the ground and designed the weird-shaped bar, working with the structure that was already in place. It was a happy accident that defined the space that we have now.

What makes The Rail particularly Irish?

We try to offer the warmth and the friendliness of an Irish pub every day of the year. On our usual menu, we do a Reuben, fish and chips, and a great Irish potato soup. And we’re one of the only bars in the area that serves what Guinness considers to be the perfect pint.

Suppose I’m ordering from the top shelf and splurging. What do you recommend?

We have some great scotches and several really nice bourbons. My go-to, if I’m splurging a little, is a nice oldfashioned with a good bourbon. And my wife loves a good tequila drink.

Which sport has the rowdiest fans?

That’s a tough question, but in general, I think it’s hockey. Lately, we’ve sort of become known as a hockey bar, and we have a lot of regulars who follow both the Devils and the Rangers. It’s a passionate sport. Last season, when the Devils played the Rangers, there were 9-year-olds yelling at the TV.

What exactly constitutes a perfect pint?

It all starts with a 20-ounce glass, or what’s called an Imperial pint. There are six very specific steps, and all our bartenders have been trained in those steps. Some of our bartenders have been trained locally, some have actually traveled to Ireland and learned abroad, and one of our bartenders, Shirley, is actually a first-generation Irish-American, fresh off the boat.

The Irish Rail burgers are locally famous. What’s your secret to a perfect burger?

First, it’s got to be fresh. All our hamburger is purchased locally from Carl Streit & Son, which grinds it to a perfect chopped meat. So about three times a week, we get a new batch of fresh burger— and it doesn’t come to us in patty form: We hand pack. Once we pack it, we don’t mess with it. I believe that if you put anything in the grind, you’re making meatloaf, not a burger. Our seasoning is salt and pepper, and that’s all we use. Every burger is served on a bun that’s buttered and browned, and we use a softer roll that comes fresh from the bakery. Since our place is relatively small, it’s just easier to work with fresh delivery instead of keeping everything in cans or freezers.

What’s the ultimate hangover cure?

I grew up in Oregon, and, back in the day, I used to love a banana milkshake. There was a creamery down the street and the milk came straight from the cow, so it was the freshest banana milkshake you could imagine. That milkshake, along with something greasy, was my go-to.

No hair of the dog?

A lot of people recommend the hair of the dog. I don’t. If you do that, you might feel better temporarily, but you’re just prolonging the inevitable. There’s a little bit of science to the hangover game. Protein is important. Eggs are great. Sweet potatoes are really helpful; they have tons of vitamin A, magnesium, potassium and all of those things that you lose when you’ve been drinking. So, if it’s the morning after a long night and you stop by our place, I would recommend The Jersey Shore burger, topped with pork roll, egg and any kind of cheese you want, along with a side of sweet potato fries. Try that, and you’ve got a perfect meal to get back everything you burned through the night before.

A local entrepreneur is flying the drone that might save your life.

It’s every swimmer’s nightmare: Joe McCarthy, 62, is 500 feet from the beach, doing his best to tread water as he waves his arms and yells for help. But there are no lifeguards on duty, and visibility is getting bad, with a heavy fog setting in.

Then, a buzz becomes audible from overhead: A drone appears through the fog, orients itself directly above Joe and lowers a personal flotation device (PFD). The PFD lands neatly within reach and automatically releases itself from the drone once Joe takes hold. A team of rescuers reel Joe toward the shore via paracord. Two minutes later, he’s standing on the beach.

It’s late afternoon on Manasquan beach, and Michael Parziale is testing his latest innovation in drone-assisted search and rescue technology. Joe McCarthy is a willing participant and an exceptional swimmer, but he hasn’t been given much advance instruction, except to swim out to sea and wave his arms. The test is tremendously successful. It’s hard to quantify how many lives this technology could save.

Inspiration Leads to Innovation

Michael Parziale is a longtime Manasquan resident; his family has owned the Riverside Cafe for 59 years. Generally speaking, Parziale is an entrepreneur. More specifically, he’s a realtor, a licensed private pilot and a former ambulance corps member. About two years ago, Parziale began exploring drone photography to market real estate. He was immediately hooked and inspired. “As soon as I began to get the hang of it, I said, what else can I do with this thing?”

It turns out, there’s a lot that can be done. In 2022, Parziale founded The U.S.A.R. (Unmanned Search and Rescue) Drone Team, a donation-based non-profit that utilizes drone technology to assist in search and rescue along the Jersey Shore. The inspiration, according to Parziale, was never to profit or hold patents, but to give back to the community and to improve the success rate of the existing technologies.

Consider, for example, the demo on the beach and the precision with which Parziale is able to lower the PFD to Joe—not just by

dropping the flotation device into the water nearby, but by actually making contact before the device is mechanically released. This sort of innovation dramatically reduces the guesswork in a drone-assisted rescue, and it didn’t exist until Parziale started tinkering.

“I found in talking to a lot of search and rescue teams, particularly in rapid water rescues, that if you remotely drop a line or a PFD in a river, it’s easy to miss somebody who doesn’t have the energy to go swimming or to catch something. I said, ‘We’ve got to find a better way to do this.’”

That’s exactly what he did: Parziale and his team devised a PFD that is automatically released and inflated only after its human target applies a few pounds of pull. In his tests on Manasquan beach, Parziale’s simulated rescues have clocked about five minutes from launch to retrieval. “In some cases,” says Parziale, “you don’t even have to get your feet wet.” A video of this demo is currently streaming on the U.S.A.R. In High Demand

News has traveled fast. U.S.A.R.’s services are already in high demand across New Jersey and beyond. Parziale currently is working with the Wayne Police Department to train and outfit drone operators. He’s selling his designs to beach departments as far away as Japan and Australia. In February, he’ll be showcasing his newly invented ice rescue harness at the International Ice Rescue Instructor Academy in Kennebunkport, Maine. “Every door,” says Parziale, “has opened new doors which opened new doors.”

Additionally, Parziale’s nonprofit offers drone training courses for veterans and their immediate families. Parziale estimates that an otherwise untrained beginner can become adept in photogrammetry, aerial mapping and 3D surveying in about five weeks. For veterans seeking employment, these skills can open doors to groundbreaking and potentially lucrative careers.

As for coastal communities like Manasquan and Brielle, Parziale imagines that drone assistance will become an essential part of water rescues. He believes that this technology will never replace lifeguards or first responders, but instead can add incredible new tools to those responders’ toolboxes.

The Next Call for Help

What began as an enterprising hobby now has Parziale’s phone ringing on a daily- and nightly- basis. He keeps his primary drone, a DJI Matrice 30T, within close reach 24 hours a day because he’s never sure when the next call for help will occur.

Over the past few months, Parziale has helped rescue both people and pets. In October, he assisted in locating a mentally challenged Toms River man who had gone missing after getting lost in the woods. After two straight days of community search efforts, it was Parziale’s drone that finally made thermal identification. The Toms River man was found unconscious in hypothermic condition but has since recovered.

As this story nears its deadline: It’s late January in Wall Township. A 17-year-old dog named Monsie has been missing for two days. His owners are frantic. The weather is cold and dreary; the temperature is dropping into the low 40s.

The owners reach out to Parziale via Facebook. He’s on the scene within the hour, operating his drone and scanning the woods in a methodical grid formation. He spends a few hours searching for Monsie that night and returns to continue searching on the following morning.

As tips and support come in from the community, Parziale finally obtains a visual, which reveals that Monsie is trapped in a dense patch of stickers. Monsie is cold and hungry

but begins to wag his tail as his owners arrive to untangle him. The humans endure a few scrapes and scratches, but they’re overjoyed. A few minutes later, Monsie is trotting through the snow, on his way home. Michael Parziale is packing up his drone, but certainly not for long.

Celebrating St. Patrick’s Day and National Women’s History Month with the Women of Irish Heritage, a social and service organization

The month of March has become synonymous with St. Patrick’s Day. Throughout the month, people can be heard announcing their Irish heritage and proudly declaring the percentage of Irish genes in their DNA. However, on March 17, regardless of your heritage or family lineage, everyone considers themselves to be Irish, especially around the Jersey Shore, an area often referred to as the Irish Riviera. People dress in head-to-toe green, attend weekly parades, listen to Celtic music, holler “Sláinte” and clink their glasses while enjoying a green beer or a pint of the black stuff.

March is also National Women’s History Month. It’s a time to commemorate and celebrate the vital role of women in American history, as well as

society in general. Women of Irish Heritage is a nonprofit, non-denominational organization that has found a way to combine these two celebrations. The group was formed in 1973 by sixteen women who shared both a common Irish heritage and a love for philanthropy. Over time, it was decided there was a need for a smaller branch located in a different part of the state. This led to the formation of the Women of Irish Heritage Jersey Shore (WOIHJS ) chapter in 1998, and their official incorporation in 2002, with a home base located in Manasquan. According to Martha Finan, current Vice President of the Jersey Shore Chapter, “We are gearing up for our 25th anniversary with live music, dancing, food and lots of fun!”

325 Strong and Growing

The Women of Irish Heritage Jersey Shore is a group of local women who have proudly come together to promote, foster and advance Irish culture. They spearhead many social and philanthropic activities throughout the community. They raise funds for educational, charitable, religious and public-spirited purposes, and their generosity has benefited countless people in our area. It has often been referred to as “The Jersey Shore’s Premier Irish Women’s Club.” As of this writing, there are 325 members, and they are always looking to add more.

“We like to stay active and involved in our community and within ourselves,” says Finan. “We host many different types of ‘how to’ classes and day trips. This past year, for example, we held classes on Irish dancing, knitting and crocheting.” Finan lists additional activities, including an epoxy making night; a wreath making night; a game night; and a hatchet throwing night.

“We took a tiki cruise around the area,” Finan continues, “and a cruise

up the Hudson to a West Point Football Game. (Go Army!) We also have a group of ladies who took up pickleball and joined a local league.”

This spring, the group has a trip planned to Ellis Island and the Statue of Liberty. “We are always looking to try something new,” says Finan. “If there is an interest for an activity and we have members who are willing to participate, we try to make it happen.” In addition to these outings, the group also holds monthly meetings, hosts inspiring guest speakers, organizes fundraising events and participates in local charitable walks as a team. “We like to keep ourselves busy,” says Finan.

Calling All Mná Iontach

Nancy Kelly, a relatively new member, feels the organization has introduced her to a whole new set of friends.

“About two years ago the WOIHJS was recruiting new members and I was interested to learn about it. I thought there would be about 25 ladies. When I entered the banquet room, I was surprised to see about 150 women of all ages, and I did not

know anyone! At the next meeting I saw a few former classmates from St. Rose High School. We immediately christened our table The Wild Irish Roses, and the rest is history.” Kelly says she loves her time with the group because it creates an atmosphere that combines work and pleasure.

While the group is very social and active all year long, the reason they were formed and their common thread has never been forgotten. This fantastic group of mná iontach (Irish women) most look forward to the month of March, when representatives spiritedly participate in annual St. Patrick’s Day parades in Monmouth and Ocean Counties, with Belmar and Seaside being their favorites. They can be seen holding banners, wearing shamrock stickers and proudly showcasing their Irish heritage.

The group is always looking to expand its membership and interests. There are only a few requirements to join: Members must be at least 18 years of age with at least one-eighth Irish heritage and be willing to smile, laugh and have a lot of fun.

Digging Deep and Playing Hard

Andrew Bilodeau gives us an inside look at the Manasquan High School boys’ basketball team and his coaching style.

As you fill out your March Madness bracket, trying to predict the winner, the upsets and the Cinderella stories, don’t forget about our local high school team, which in the past two years has been drawing its own attention, upsetting opponents and even winning state titles.

Like most sports at Manasquan

High School (MHS), basketball has become extremely popular and competitive. Several players have gone on to play at the collegiate level, many with aspirations of reaching “The Big Dance.” In honor of March Madness, I sat down with Andrew Bilodeau, head coach of the boys’ basketball team, to

talk about the season, the superstitions, past and present players—even his NCAA championship predictions.

Coach Bilodeau is the 2023 Shore Conference Coach of the Year and is currently in his 16th year of coaching the Warriors, with no plans to end his run anytime soon.

What do you like best about coaching at MHS?

There is no place like Manasquan High School! The school and community breed quality kids and fantastic athletes. The community comes together to show support for the players whether they have students on the team or just love the sport. It is truly amazing to see the stands filled and to hear the cheering from people of all ages. It certainly adds to the intensity of the games and makes the experience much richer. I think our entire coaching staff is well aware of how blessed we are here at MHS. We talk about it with the kids and amongst ourselves. We had two guys join our staff from other schools this year, and both have said numerous times what a unique and extraordinary place it is. We all feel blessed to coach at MHS and to work with the guys we do.

How has this season been?

Last year we won state sectionals, and it was an honor to lead my team there. I knew at the beginning of this season that we would have to do some reshaping and adjusting of positions. We lost a few key players from last season due to graduation, injury and transfers, however the Manasquan Warriors continue to dig deep, play hard and hold their own. We have a great group of guys; they have great chemistry and camaraderie, and I am very proud of them.

How do you prepare for games?

We start preparing for games the minute the schedule is set for the season. We’re very big into scouting and making sure we know our opponents’ strengths and weaknesses. We have a lot of film sessions and prepare written reports for every game. We review the reports before, during and even after the game. I try to alleviate any surprises from happening before the first tip-off.

How do you motivate your players?

The minute the calendar turns from fall to winter sports, the boys are ready to play. Motivation isn’t really an issue for them; it’s more a matter of helping them find their inner confidence and bringing it out on the court. They are accustomed to expectations, whether it be academic standards, values learned from their families or watching past players’ performances. We focus on meshing their skills, teaching them how to work together and draw from each other.

How do you approach discipline with your players?

I think the kids take care of that themselves. They know what it’s like to play on a team here at MHS. One thing I am very insistent on is punctuality. Punctuality is a discipline itself. Punctuality leads to success: It promotes commitment, professionalism and respect. “Early is on time, and on time is late.”

Do you have any superstitions or rituals?

I am terribly stricken with superstitions. I think clothing may be one of the biggest ones. If we win, I have to wear the same thing to the next game. If we lose, I will change my sweater and don’t wear it again. I also send text messages to the same few people every game day. The boys have their own superstitions, whether it be sitting in the same seat on the bus or getting food from the same place, especially Wawa. Last year’s team had the biggest superstition of all. The night before each game they would jump in the frigid ocean. They would continually ask me to come along.

Did you ever take the plunge with them?

Yes, I made a deal with them earlier in the season. I promised if we won the Group 2 state championship, I would go with them. Maybe that was motivation, maybe it was superstition, but I kept my word, and we all went swimming that night. We had fire trucks shining their lights and plenty of warm towels and blankets waiting for us when we got out. It was something I’ll never forget.

This season is going really well, and as the tournaments begin soon, we are looking for a chance to win another state championship!”

What is your coaching philosophy?

Something I always tell my players is “Mental is to the physical as four is to one.” I coach with the belief that preparation, mindset and the willingness to compete are far more important than any God-given physical abilities. I believe that values beat talent, and the tight-knit relationships of the Manasquan community are the best weapons they could have.

Who are you predicting to win the NCAA this year?

I haven’t looked at the teams very much, but I’m rooting for Princeton or Indiana.

How does it feel to have so many MHS students recruited to play at the collegiate level? Do you keep in contact with players after they graduate?

I think it’s great! For the most part, they’ve been engaged in basketball for most of their lives. To see a kid’s dreams come true is very special and super rewarding. Manasquan is a small town, and to have so many players be able to make connections and move on to the collegiate level is a testament to our community and our school.

One of my favorite things as a coach, teacher and parent is how many alumni come back to show their support. They talk to the players and offer tips, suggestions, tricks and pointers. They help with practices, they volunteer their time and even run summer camps and programs for the younger kids. Something about this community, people leave but they never forget it. Once a Warrior, always a Warrior!

Eating Green for Good Luck and Good Health

I don’t know about you but when I think of March, I think of the color green. Maybe it’s from memories of my Gram showering me with dollar bills on my birthday, which is this month. Most likely though, it stems from the tradition of wearing and decorating everything green on St. Patrick’s Day. As a chef, seeing the color everywhere inspires me to incorporate more shades of green into my cooking and diet, and I encourage you to do the same.

All vegetables are healthy, of course, but dark leafy greens in particular are nutritional powerhouses.* This includes Swiss chard, spinach, romaine, kale, arugula, bok choy and collard greens to name a few. We could spend all day on the disease-fighting benefits of these foods but suffice to say, the more greens we incorporate into our diets, the better off we’ll be.

For me, kale is a superstar ingredient, but I understand that its texture and bitterness when eaten raw don’t appeal to everyone. This is where the

magic of cooking and proper preparation become (perhaps quite literally) a lifesaver. Cooking kale and other bitter, dark leafy greens through steaming, boiling, sautéing or roasting cuts the bitterness and toughness. Combine this with proper seasoning and/or other ingredients, such as in a soup, and you have yourself a recipe for a healthy and delicious dish.

My favorite way to prepare kale, though, is massaging it with a little extra virgin olive oil, lemon juice and seasoning until it’s nice and tender, and then enjoying it as a salad. There is something particularly satisfying about transforming this superfood into a delicious treat using just your hands and a few staple ingredients. Try it by following this month’s featured recipe, and you’ll see what I mean!

So Happy St. Patrick’s Day to all who celebrate. I propose we honor the great patron saint of Ireland with a new tradition this month: Eating more leafy greens and less Lucky Charms. Cheers to that!

MASSAGED KALE SALAD

Serves 2-4

CHEF’S NOTE:

Nutritional yeast can be found in the health food section of your grocery store and adds a dairy-free cheesy, umami flavor. Also, depending on the size of the lemon and bunch of kale, you may need to use less (or more) lemon juice. Start with the 1-2 tablespoons and add more if it needs more punch.

INGREDIENTS:

• 1 bunch of kale (curly, lacinato or any other variety)

• 2 tbsp extra virgin olive oil

• 2 tbsp lemon (or vinegar of choice)

• pinch salt and pepper

• 1 tbsp nutritional yeast (optional)

TOPPINGS:

• 1/2 bell pepper diced

• 1/4 cup chopped or whole walnuts

• 2 tbsp golden raisins (or dried fruit of choice)

INSTRUCTIONS:

• Strip kale from stems and cut or tear into bite-sized pieces.

• Add kale to a large mixing bowl and drizzle lemon juice, olive oil and pinch of salt and pepper. Massage the ingredients together by squeezing the kale in your hands until the leaves are tender and everything is incorporated together. Really get in there and break up those fibers.

• Add nutritional yeast (optional) and toss. Taste for salt or a bit more lemon/olive oil.

• Once seasoned to perfection, add to bowl and add toppings.

• Enjoy!
