r. Harry Winston once exclaimed, “Jewels are more than my love and my life; they are an insatiable obsession.” Mr. Winston’s enduring passion for precious gems was constant throughout his life and served as the guiding light for all of his endeavors. As a House rooted in an unwavering commitment to the most exceptional gemstones, this passion continues to run deep today. For its latest offering of incredible jewels, the House of Harry Winston explores the intense feelings of love, through a high jewelry collection that chronicle its extraordinary phases. Forged in diamonds and colorful precious gemstones, the collection is a true expression of L.O.V.E. Much like an acrostic poem, each letter represents a different phase of love – the crescendo of an emotion that is innately felt, but at times, hard to express.

obsession, to From the first light of affection, to a passionate obsession the ultimate vow and an eternity together, with each phase the feelings of love grow stronger, and more meaningful. Of all of life’s gifts, these feelings are among the greatest. Like rare diamonds and gemstones, love is a force of nature not to be reckoned with. This is Winston with Love. Examining the infinite possibilities of this most heartfelt sentiment, the collection encapsulates each stage of love, focusing on variations in color, movement, meaning, and form. The collection, completely made by hand, offers a modern interpretation of the signature Winston design aesthetic and consists of 39 pieces, separated into four unique chapters.

The utmost precision and attention to detail are required to express the beauty and complexity of love. Winston with Love embodies the House of Harry Winston’s passion for expressing deep, intangible emotions in the world’s rarest gemstones through unparalleled craftsmanship and design.

As one of the world’s most recognized and awarded properties, we are always humbled when Acqualina Resorts & Residences is presented with global accolades. For the ninth consecutive year, Forbes Travel Guide awarded both our Resort and Spa the coveted Five Stars, while at the same time, U.S. News and World Report named Acqualina “#1 Best Resort in the Continental U.S.” To achieve both in the midst of what arguably has been one of the most challenging years in history is a testament to our team’s dedication and commitment to making every moment you’re with us something special and memorable. Together, we re-introduced the Acqualina App with even more incredible features and offer rapid Covid-19 testing pre-and post-travel to elevate the guest experience. In this issue, we delve into transformative Cryo treatments that flush toxins and reduce inflammation throughout the body with alternating hot and cold therapies, and talk Japanese fusion cuisine with Ke-uH Master Sushi Chef Oscar Noborikawa. We introduce you to a palace in the sky – the 21,000 square-foot Palazzo di Paradiso penthouse that will be the crown jewel inside The Estates at Acqualina; with 45,000 square-feet of amenities at your feet, including New York hotspot Avra restaurant, it may be the hardest home to leave. Whether you are visiting for the first time or are contemplating your own transformative change to make Acqualina your home, we extend a warm and gracious welcome. Kind regards, Deborah Yager Fleming CEO and Partner Acqualina Resort & Residences

Acqualina Spa by ESPA. Before or after being pampered at the indulgent five-star spa, guests can peruse the highly curated Acqualina Boutique, located within the spa and filled with vacation-ready clothing, beachwear, and accessories by some of the world’s premier designers. Tightly curated by Spa Director Catherine Davalle, who’s originally from fashion-rich Paris, the boutique is constantly evolving with new and fresh designers, many hand-picked by Davalle for their South-of-France vibes. “We’ve moved into a more exclusive and elegant style within our boutique. Many spa boutiques carry generic lines, but we’ve brought the quality of brands and uniqueness that our clients are expecting.” Shoppers will discover more than 30 brands, like the youthful collection of boho-spirited Hemant and Nandita to island-inspired staples straight from Ibiza by Charo Ruiz and tailored men’s shorts from Frescobol Carioca and luxury French swimwear brand Vilebrequin. Scoop up handmade straw hats and bags from Artesano, which are musts for Miami’s sun-soaked lifestyle, and embroidered canvas totes by Hester Bly, a stylish find for the beach and pool. Another iconic culinary institute makes its way south to Sunny Isles Beach at the ultra-luxe waterfront residential complex, The Estates at Acqualina. Avra Estiatorio, of New York and Beverly Hills fame, will open a stunning 10,000 square-foot Greek restaurant designed by the award-winning STA Architectural Group in early 2022. The oceanside estiatorio will transport guests to the Mediterranean seaside with a seafood-focused array of delicacies including fresh fish, grilled or baked in salt. The sleek and airy space will also debut an impressive raw seafood ice bar with daily fare sourced from the nets of fisherman in Greece, Portugal, and Spain flown to Miami daily. “With all of our venues, we have a seafood display on ice. Our concept is when you first sit down at the table, the waiter brings you to the seafood display, gives you a little education about each

fish, and you can pick your fish, and he gives it to the kitchen to clean and cook,” explained Avra co-owner Nick Tsoulos. The global culinary adventure continues with fruity, full-bodied olive oil, bottled exclusively for the restaurant and created with handpicked olives from Ancient Greek groves, pressed within three hours of harvest. This majestic nectar will garnish each dish served and is literally delicious enough to drink. “The olive oil is made especially for us; it is an excellent quality olive oil. The extra virgin olive oil is cold-pressed, and we get it from the Greek island of Crete, so there is a different acidity level. When we chose it, we did our research, and we think it’s perfect. It’s not too acidic and pairs well with anything. We put it in salads, we make dressing with it, we emulsify it with lemon and put it on our whole fish dish,” Tsoulos said. If you’ve been lucky enough to venture to Greece, then you’re well aware that

this dynamic (and delicious) culture is centered around communal dining and Avra will offer a plethora of dishes that are perfect for family-style dining, including authentic salads and cheese boards. “Most of our menu is based on sharing and family-style eating from the salad and the appetizers to even the whole fish—which we recommend for a party of two or four to share. We also have smaller fish and dishes to cater to those who want four individual courses,” Tsoulos told us. Tsoulos is no stranger to the concept of shared eats. In fact, many of the recipes incorporated into Avra’s menu are very personal to him. “There are a couple of recipes that have been in my family for generations that I brought into the restaurants, like our spinach pie and a couple of orzo dishes and the lobster spaghetti—the sauce comes from my grandmother and

a couple dessert recipes. Family and dining go hand-inhand,” he explained. As for the design, the modern-meets-warm decor features floor-to-ceiling windows, high ceilings, and a glamorous aesthetic that matches the transformative energy of the Acqualina brand. The Trump Groups’ vision of The Estates at Acqualina was to create a unique lifestyle that will set it apart from the rest of the world. The Acqualina Brand is an iconic name that is transforming the South Florida skyline forever with a residential enclave whose beauty, luxury, and service place it in a class of its own worldwide. Located inside Villa Acqualina, a Mediterranean-inspired villa that’s the heart of The Estates, Avra Estiatorio will be a European-inspired restaurant and urban oasis for residents, visitors, and locals to relish.

JAPANESE FUSION CUISINE COMES TO ACQUALINA An Interview with Chef Oscar At the helm of Ke-uH, a new Japanese restaurant offering traditional dishes with a modern twist—such as the salmon pizza—Chef Oscar Noborikawa brings a high-level sushi experience and a passion to the kitchen. By Rayna Katz

Where are you from? Peru

Where have you worked previously? I was a sushi chef at Nobu Miami for 14 years, and after I opened restaurants in Madrid and Aruba. In 2017, I returned to Miami and joined Ke-uH’s first location in Weston, Florida.

How did you come to be at Acqualina? By 2020, we wanted to expand to bring our menu to more guests. During that period, Acqualina’s CEO Deborah Yager Fleming contacted us, and we thought Acqualina Resort was perfect for our concept.

What dishes have been most popular? The most popular are the Chirashi roll, spicy honey shrimp, tuna pizza, and Kurobuta pork buns.

Are there others you recommend?

I’m a more traditional sushi lover, and I love our Toro Nigiri (bluefin tuna belly) and the Japanese Uni (sea urchin) Nigiri. For more of a fusion dish, the salmon pizza is one of my personal favorites.

every single bite. Oscar Noborikawa, Master Sushi Chef

How does the restaurant complement Acqualina’s Costa Grill and Il Mulino New York? It brings more variety to the hotel, offers customers unique Japanese fusion dishes, and delights them with another delectable gastronomy experience.

You’ve said you work to achieve “balance in every single bite.” How will Ke-uH diners discover that? Our menu has a balance of taste, and we assemble every dish with a unique flavor profile to deliver a great experience in every bite. All sauces and a few ingredients are made in-house, such as ponzu, yuzu, eel sauce, aiolis, vinaigrette, orange candy, and Kani tempura. We cook the octopus sous vide for three hours, the pork belly and ribs are cooked for hours, and all the plates are finished when the customer orders.

How does the restaurant differ from the other Ke-uH? Ke-uH at Acqualina offers a full bar, and diners there can enjoy spectacular ocean views. It’s one of the best outdoor dining spots in all of Miami.

What are some signature cocktails of The Bar at Ke-uH? We serve some excellent cocktails, including Shoga Collins with Japanese Roku gin, Passion Mule with Fever Tree ginger beer, and Ke-uH the Rock with Teremana Reposado and watermelon.

At Acqualina, our team is dedicated to providing exceptional personalized service and unforgettable experiences.

Adventure seekers can visit Everglades National Park. For people who want to experience South Florida culture, we have lovely art galleries and museums. For the best in dining, Miami has fantastic restaurants.

What is the best part of working at the property?

Describe your role at The Mansions.

The good vibes! From my first day, the team made me feel like I had been working here all my life. Also, the residents are so kind. They thank us daily and often treat us like we are part of their family.

My role is to keep The Mansions at Acqualina in optimal condition and ensure that all the equipment and areas in the building are properly maintained. Most importantly, it is to provide a five-star environment and five-star service to our residents.

When did you join the Acqualina team?

Name something about The Mansions that residents may not know. The Mansions has domestic water tanks on the roof of the building, which is uncommon in Florida. If there is a hurricane or a city water supply issue, the building will have water for a week.

What on-site activities would you recommend for residents at the property? I suggest Acqualina Spa and dinner al fresco at Il Mulino New York.

What image would you post tagged #DreamingofAcqualina. A photo of our fantastic engineering team!

List a few fun facts about yourself. My daughters and I ice skate. However, I am not very good. On one occasion, I fell three times, and they laughed all day.

Rachele Ibarra

Where are you from? Jamaica

How did you come to work on the Acqualina team? While working at another property in Sunny Isles, I was referred by a hotel guest and a former colleague who joined Acqualina.

What is your favorite part of working at the property? Welcoming our guests who I have come to know well and cherish and connecting with our team. As I look back at how much we have achieved together, it gives me an incredible sense of accomplishment.

What is the ideal day at Acqualina look like for a guest who wants to experience the ultimate getaway? As one of the most pampering settings is at Acqualina Spa, the perfect day would first begin with enjoying side-by-side massages with a loved one in the ultimate Royal Spa Suite. As a hopeless romantic,

I recommend a beachfront dinner at sunset – it’s exquisite, unique, and exceptional. We offer innovative marine biology sessions at AcquaMarine Kids Club for guests traveling with children – it’s award-winning and so much fun. Fitness fanatics can do private workouts with a personal trainer, and those seeking relaxation can lounge at any of our three oceanfront pools and gorgeous beach. I recommend reserving an Acquabed for total comfort overlooking the sea.

What image would you post on social media with Acqualina? While each space at Acqualina is exquisitely beautiful, my post would be of our entire team assembled on the sand positioned together, forming a shape of a heart because all of our team members love what we do.

With more than 1,000 people moving to Florida daily, there’s a chance someone you know dreams of a beachfront penthouse apartment. Their standards are exacting: they want five bedrooms, not nine; a chef ’s kitchen, children’s playroom, Pilates studio, salon with pedicure thrones to accommodate friends, a multiplex cinema, two offices; the list is detailed, the criteria unmovable. In truth, nothing less than an entirely customizable space will do because if the last year has demonstrated anything, it’s that home must be a multi-functional, live/work/play space. Welcome to Palazzo di Paradiso, a singular, two-story bespoke masterpiece perched on the top two floors - 51 and 52 - of The Estates at Acqualina, the $1.8 billion residential development opening later this year. Completely customizable by the buyer, Palazzo di Paradiso is unique in the luxury space, says President of Sales Michael Goldstein. “We haven’t created the floor plan; we’ve created the canvas,” says Goldstein. “It’s the world’s finest penthouse in the world’s finest residences, and because it’s so unique and rare, we didn’t want to design it ourselves; we wanted to sit down with the buyer and create what they need,” he says.

MESSIKA Paris was born in Paris in 2005 and is run by Valérie Messika, daughter of the famous diamond merchant André Messika. In 2005, Valérie launched MESSIKA Paris – a contemporary and accessible interpretation of the diamond which is freed from forced exercises like the river or the solitaire. Moveable stones, bracelets and necklaces with elastic flexibility, the immediate best-selling MOVE and Skinny lines play brilliantly as technical innovation and modernity without compromising quality. Her creations are symbols of femininity, emancipation, and power. In 2013, Valérie Messika unveiled her first Parisian Flagship store on rue Saint-Honoré, which houses the finest jewelry and Haute Joaillerie from the House. All the collections are represented by many celebrities who are loyal to the brand on the red carpets. From Paris to Hollywood, the sets shine on Beyoncé, Rihanna, Kendall Jenner, Kristen Stewart, Charlize Theron, and more. The House has since expanded to creating 100 new models across fine jewelry in its Atelier in Paris as well as one High Jewelry collection every year. The latest collection, Lucky Move Color, is a variation of the iconic MOVE collection, and is inspired by lucky charm medallions. This new collection is the first of its kind and in the history of the House to not be purely dreamt in diamonds. Instead, the collection is adorned with semi-previous colored stones. Having always stayed true to her gem of choice, this bold move was a creative challenge for the Founder and Creative Director who was given the blessing to use the family name under the promise of only ever working with the stone for which the family name is known. “I have replaced the gold with an ornamental stone, but it is not faceted like a diamond. It’s a first, but for this decidedly playful collection designed to bring good luck, adding color seemed like an obvious choice.”

For the past decade and a half, Valérie Messika has been shaking up the codes of French jewelry, pushing its boundaries with an audacious spirit toward a younger, edgy look, with touches of tribal, punk and ethnic influences in an industry used to classicism, for an attitude of casual glamour and a look of modern luxury.

A Miami landmark and an integral part of the city’s diverse style and culture, Aventura Mall is a must-visit destination for residents and South Florida visitors. Unique experiences, a world-class art collection, eclectic dining, and cutting-edge architecture are just a few elements that make Aventura Mall more than a shopping center; it’s a remarkable playground for culture-seekers and trendsetters alike. Sweeping views and modern design echo triumphantly through the mall. An oasis for shoppers seeking a unique experience, Aventura Mall continuously features newlyopened shops, delectable restaurants and artistic works. A dynamic, new three-level wing, designed by world-renowned architect Carlos Zapata, offers unparalleled panoramic views and unique offerings that create an experience that ventures far from the status quo. Inspired by Miami’s spirit of openness and generosity, Apple’s two-level store complements the creativity that pulses through Aventura Mall. The undulating, vaulted roof provides a sustainable touch, harvesting rainwater to reduce the potable water consumption year-round.

The Arts Aventura Mall program, which includes pieces from Louise Bourgeois, Ugo Rondinone, Julian Opie and Jorge Pardo, also features an 8-foot tall by 8-foot long by 4-foot wide LOVE sculpture by Robert Indiana, one of the preeminent figures in American Pop art. Conceived in 1966 and executed in 1998, LOVE can be found outdoors on the upper level next to Tap 42 Craft Kitchen + Bar. With artistry emerging throughout the center, Aventura Mall’s architecture delivers cutting-edge design and emboldened creativity. Carlos Zapata’s vision for the new wing is highlighted by an 84-foot by 50-foot glass entrance that brings the “outside in” with panoramic views of the surrounding landscape. It continues with an uninterrupted, 350-foot-long skylight that provides the wing with abundant natural light. Zapata also left his architectural mark on LEVEL THREE, Aventura Mall’s dynamic new event venue. His salient details and composition make the space an inviting, modern canvas for fêtes and ceremonies of all varieties. Floor-to-ceiling windows offer sweeping views of the city, while the lush rooftop terrace transports guests into an enchanting oasis. LEVEL THREE has gathered an A-list following, becoming the backdrop for high-profile occasions including a fundraiser for Miami HEAT star Dwyane Wade.
