The Acqualina App In addition to guestroom iPads, a new downloadable App offers heightened customization opportunities, from requesting extra pillows, housekeeping and turndown service times to booking restaurant and spa appointments. It’s Miami’s first Five Star resort to utilize an app that books Acquabeds and oceanfront cabanas via interactive maps to choose between three locations – adult, recreation or beach club pools. Feeling peckish? Order food while at pool, beach and private cabanas, request complimentary best-selling books, read the daily paper, view return flight information and checkin – all via the new Acqualina App.
GEMS (Guest Experience Managers) While visits to Acqualina have always been personalized, new GEMS take customization to the next level with personal outreach prior to arrival. Residents and guests now have a resort emissary who is in contact via phone, email or video conference to customize the guest’s private bar, order groceries, offer virtual tours and more. The same person engages with guests throughout their stay to tailor experiences and jump on any pop-up requests for the ultimate in curated luxury.
NASA scientists couldn’t have engineered a more thorough approach to cleanliness standards Acqualina has instated to keep its guests and residents safe: • Every interior and exterior space and surface throughout the resort’s 4.5 beachfront acres are disinfected with Environmental Protection Agency (EPA)-approved electrostatic disinfectant tools using a combination of detoxification chemicals and electrostatic molecules. • The highest-grade CDC and WHOrecommended disinfectants are used within modern electrostatic sprayers to disinfect every guestroom prior to arrival, with Ecolab hospital-grade peroxide cleaners used on the 10 mosttouched surfaces, including handles and knobs, remote controls, bathroom surfaces, telephones and climatecontrol panels. • Non-contact temperature checks are taken upon arrival, and guests receive a complimentary protective gear kit that includes two disposable masks, a bottle of hand sanitizer and disinfectant wipes.
• The resort’s interior air quality surpasses CDC and FDA requirements with air filters and air conditioning systems undergoing frequent cleaning. • Electrostatic foggers disinfect the resort’s beachfront Costa Grill restaurant and famed Il Mulino restaurant daily prior to breakfast, lunch and dinner service, and tables are sanitized between every guest visit. • Hand-sanitizer dispensers – touchless where possible – can be found throughout the resort, and guests, residents and staff are required to wear masks for everyone’s safety.

few well-dressed permanent guests are holding court at Acqualina these days. Turning social distancing into a stylish art form, Acqualina has partnered with Bal Harbour Shops to dress four mannequins – two perched in conversation and two observing the bar’s comings and goings -- that gently remind guests to keep a safe distance from one another. The mask-wearing models are outfitted in two of Bal Harbour Shops luxury boutiques’ latest collections:
Akris The signorina with legs crossed wears a light silk crêpe sheath dress in a romantic Variazoni print, while her companion sports linen crêpe doubleface shorts topped with a Variazoni print, cotton voile shirt dress. The Anouk day bag in cervo-calf leather completes the casual outfit. Swiss brand Akris distinguishes itself by designing sleek pieces for the global, career-oriented woman.
Ermanno Scervino Perched on the royal blue couch, one mademoiselle wears a lightweight white organza dress accompanied by flat suede sandals with crystal embellishments. Her stylish friend sports an oversized denim shirt the designer reinterpreted with luxurious jewel button closures and a pleated crêpe de chine midi shirt with a tropical-inspired placed print and side slit. Leather sandals and rope belt with crystal application finish the look. The Italian womenswear line is known for its sensual glamour and feminine flourishes.
More than 100 luxury boutiques fill Bal Harbour Shops’ lush, open-air garden setting, creating an ideal partner from which Acqualina Resort plans to select new brands to rotate the mannequins’ ensembles. While the exquisitely clad mannequins are a clever way for residents and guests to stay current on new international collections, they reinforce Acqualina’s subtle message to wear masks and maintain a six-foot distance throughout its elegantly relaxed surroundings.

You joined Acqualina Resort in April 2020. What was it like starting a new job during a pandemic? When joining a hotel as a senior executive, there is a vast amount of information that one needs to become familiar with in a short period of time, in order to effectively manage the operation and lead a team successfully. As the world was in the midst of a pandemic, my acclimation to the operation and familiarization of the property needed to progress in hyperspeed, so I could quickly and effectively assist our leadership team with developing and implementing new procedures and standards to create a safe and sanitary environment for all our team members, guests, residents and visitors. I also wanted to ensure that we preserve the friendly, caring and personalized five-star experience that Acqualina is renowned for.
What inspired you to pursue a job in hospitality? Hospitality is a cultural trait of Scandinavians. During my youth growing up in Norway, I was continuously exposed to warm and caring hospitality extended to me by friends and family. These enjoyable and memorable experiences embedded a lasting impression that inspired me to a profession in hospitality. I began my career journey in 1989 and advanced through several management positions in five-star hotels over 16 years while in New York City. After leaving New York, I developed, owned, and managed a fine dining Northern Italian restaurant. In 2008, I relocated to Turks and Caicos to open a luxury resort as Managing Director, which I managed for the past 10 years prior to joining Acqualina.
What drew you to Acqualina? I was impressed with the grandeur and beauty of the property and its renowned reputation as a refined and sophisticated luxury brand with an incredibly talented, devoted, passionate and professional hospitality team. I was also attracted to
Acqualina Resort and Residences as it is family owned with owning-partners that prioritize five-star standards and who genuinely care for the wellbeing and happiness of all team members.
Tell us about a typical day on the job. As soon as I wake-up, I review emails and reports from the overnight shift. Once I arrive to the resort, I inspect the property and check on the wellbeing of our team members, guests and residents. Most of the day, I am assisting our team to plan, organize and strategize on the operation and service experience at Acqualina. Between meetings, I walk through the property greeting guests, residents and visitors while continuing to inspect all areas to ensure our quality standards and service levels are maintained.
If a guest asked for a “must-do” during their visit, what would you suggest? Reserve a private cabana at one of our three oceanfront pools and try our signature Acqualina Coconut drink; enjoy the comfort of an Acquabed on the beach with the soothing sounds of the ocean and the crystal-blue waters; or relax on one of our plush red sofas with panoramic ocean views while enjoying lunch with a bottle of rosé wine.
Give us some fun facts about yourself. I enjoy traveling and experiencing authentic cuisine from all cultures. I was very athletic during my youth, playing tennis, ping pong, ice hockey and skiing. I competed in USTA tennis tournaments for many years and also played on a semi-pro level hockey team. My wife is originally from Colombia and we have a vacation house in the Quindío region of Colombia, which is one of the premier coffee-growing regions in the world.

What led you into luxury sales? I received my first opportunity in New Development at the age of 22 selling Gramercy Park for the Graham Companies. I was extremely fortunate to find incredible mentors and true community leaders as an example at such young age. Now, at the age of 48, I feel blessed to have learned from the best, which allows me to go above and beyond for the most demanding client.
What’s it like selling during a pandemic? Covid-19 changed the world and the way we sell real estate. This year has been an opportunity to reflect on what is truly important to our families and clients. Now more than ever, clients are looking for a community with all the services, a variety of restaurants, amenities, and strict health safety measures.
Is there a common amenity that every client seems to want? At The Estates at Acqualina, we have families from all over the world looking for safety and amenities for every age. Acqualina is a true fusion of recreation and relaxation as you can find everything from a FlowRider to basketball courts, several pools and even meditation zones.

Tell us about a favorite day at The Estates. My favorite days are when I get to see the progress of our fabulous lobbies designed by Karl Lagerfeld. Seeing his vision come to life is a true dream for those like me who love the world of luxury and design.

What led you into the hospitality industry? My career in hospitality started at the Four Seasons Hotel Toronto when I moved to Canada at the age of 20. I worked there for 26 years. Over the years I’ve held several positions, however, my passion is service. I love the interaction and learning our guests’ individual needs and preferences. I have a genuine interest in creating unforgettable experiences. It’s not a job, it’s a blessing!
How is The Grill keeping diners safe?
We’re practicing safe distancing, wearing masks and gloves, washing our hands, and sanitizing spaces at all times. We also offer delivery to residences for those that prefer to stay in the privacy of their home.
What’s the most ordered dish by residents? Either our seafood or fish special, or the churrasco with chimichurri sauce. Mr. Jules Trump favors the branzino and often says it’s the best in the world.
Describe your favorite part of the job. Greeting our residents and their families when they come to spend the day with us outside of the grill and receiving the many compliments of how impressed they are. Very often I’m told by our residents, “This is the best place in the world.”
Give us some fun facts about yourself. I’m a proud mother of the three most wonderful girls in the world. They live in Canada, where I resided for most of my life along with the rest of my family. Friends and family are especially important to me. I really enjoy entertaining at home, cooking, dancing, and helping others whenever possible.

There is possibly nothing gastronomes look forward to more than outdoor dining during Miami’s winter months, particularly when gentle ocean breezes mingle with romantic Romeo & Juliet balconies, the melodic sounds of ocean waves, stellar service and some spectacular new menu additions at Acqualina’s famed Il Mulino New York restaurant. Beginning in November, Corporate Executive Chef Michele Mazza introduces crudo – the Italian take on sashimi – using locally sourced snapper, tuna, swordfish and daily catches from local fishermen. The presentation is simple, “the Italian way,” he says, “using orange, lemon and lime to mingle the sweet and tart citrus flavors, all prepared à la minute” for his fresh, light crudo and ceviche additions. While holding fast to menu favorites, Chef Mazza introduces new dishes using olive oil, garlic and seasonal vegetables from South Florida farms – avocado, bell pepper, micro

greens, eggplant, among others – to create lighter menu options that include organic, free-range chicken and fresh pasta made from prized Italian Caputo flour, which also comes in a gluten-free version. “I see people want to eat lighter; they’re more health conscious and may not want heavy sauces,” says Mazza, “I’m using the Italian organic flour for pasta, pizza and ravioli dishes, then creating light sauces using vegetable stock for the pasta, and white wine for the fish,” he says, noting that guests who value the traditional dishes won’t be disappointed. Favorite menu items, including Ravioli ai Porcini with champagne truffle cream sauce, English Dover Sole and Ribeye Tagliata aren’t going anywhere. Neither are 18-month aged Grana Padano cheese, 18-year balsamic vinegar Bonini and Carnaroli Acquerello Tenuna Columbara, the secret to Chef Mazza’s incomparable risotto.

lways set in a villa-like atmosphere, the Il Mulino dining experience is even more private with newly established Covid-19 guidelines. Three outdoor “Romeo and Juliet” balconies perched above the terrace create romantic private dining alcoves, while eight tables – spread six feet apart – grace the terrace and overlook the pool and beach. Indoors, only 14 tables – seating a maximum of six people – glow amidst tapestries and wrought-iron chandeliers. Though Il Mulino’s bar is closed at the moment, its mixologists have created five ingenious vacuumsealed “Cocktails on the Go.” From a Lychee martini to Passion margarita, Negroni and the Bella Donna featuring limoncello, Aperol and Grey Goose Citron, these handy packs can be opened immediately and poured over an ice-filled glass, or stored in the fridge to imbibe later in guestrooms or under the stars.

ith its diverse and eclectic menu, tapas style and ingredients from the earth’s four corners, it’s unsurprising that Ke-uH restaurant garners such gushing adjectives as “creative,” “different,” “extraordinary” and “exciting” in its online reviews. Opened in 2017 in Weston by eight entrepreneurs – friends since primary school – Ke-uH’s forthcoming grand entrance in Acqualina Resort & Residences – in the former AQ space – may be subdued, but those in the know are buzzing with low-key excitement. The menu may look familiar to fans of Kazumi restaurant on Key Biscayne – they have owners in common, with tapas presentation and sharable plates at the menu’s forefront. Carlos Delfino Chef/Founder and part owner of Ke-uH and Kazumi, worked with Master Sushi Chef Oscar Noborikawa, to create this inventive Ke-uH menu. Noborikawa spent 14 years in Nobu Miami, perfecting his art under the disciplined tutelage of some of the country’s most revered Japanese masters before being elevated to prestigious Executive Sushi Chef. Noborikawa says his command of Japanese cuisine can be distilled down to ingredients and balance. He works with trusted purveyors to import Japanese Hamachi yellowtail, Uni sea urchin, octopus and sweet shrimp, Scottish salmon, Yellowfin and Bigeye tuna from Central and South America and Bluefin tuna from the Mediterranean Sea. The Chefs at
Ke-uH make everything from pizza crust to ponzu sauce, yuzu soy, truffle flavors and aioli from personal recipes to accompany sushi and non-Japanese menu items include baby back ribs, sliders and Kurobuta pork belly, plus vegetarian, vegan and gluten-free options. “It’s the balance in every single bite,” says Noborikawa. “For me, it’s the combination of the quality of product, the preparation, the respect of and care for every single ingredient and inherent discipline to create the perfect balance of citrus, spiciness, sauce for expressive sushi,” he says. “The grilled octopus is cooked sous vide for four hours,” says owner Daniel Fernandez. “There’s a tremendous amount of work put into every single dish.” If you haven’t experienced Ke-uH, Fernandez and Noborikawa say order the crispy spicy krab Ke-uH salad, tuna tacos, tuna and salmon pizzas – both with trufle oil, a “Bonzai Truffle” roll that contains Ke-uH salad, avocado and cucumber wrapped in green soy paper, topped with tuna cubes and truffle oil, the “Spicy Honey Shrimp” that bathes tempura shrimp in jalapeno aioli, honey, almonds and walnuts, and the most popular “Bea” roll with combination of crispy shrimp, fried plantain, avocado and cream cheese wrapped in red chili soy paper and topped with eel sauce and lemon pepper. New Ghost Makes its Presence Known Rolls-Royce Motor Cars Miami welcomes a new kind of luxury vehicle to South Florida By Erica Corsano
Seldom does a new product launch garner the kind of attention Rolls-Royce Motor Cars Miami has experienced from their recent reveal of the much anticipated Ghost 2021. While all Rolls-Royce customers are a loyal breed, Miami Rolls-Royce clients take the concept to an entirely new level. The luxury dealership, which is a member of the Braman Miami family of dealerships, had to push back their original April launch for the vehicle to September due to the global pandemic. But that didn’t stop their team from having a record month. General Sales Manager Alvaro Borge says that the dealership actually saw an increase in sales, delivering thirteen new Rolls-Royces in Miami alone—their monthly average was between seven and eight.
Why the uptick in business? Borge attributes it to a combination of things. “We have a lot of clients who normally travel, who didn’t go anywhere for the summer due to the pandemic—a silver lining for us.” Borge says the increase has been steadily rising since May, partially due to a special rebate offered to clients. The rebates vary with each model, but present a compelling financial benefit to the client— and it works; business is booming. In fact, pre-sales are currently taking place for the new Ghost 2021, a car that presented an opportunity for customers to own a quietly opulent, more compact Rolls-Royce: its slightly smaller than the brand’s Phantom design. Borge explains: “The Ghost is a more compact version of the brand’s Phantom,
giving us an opportunity to capture clients who want something smaller and more discreet for everyday. And it’s easier to park!” In September, a select group of clientele were invited to get up close and personal with a static display (no test drives yet) of the exquisite vehicle. This was following a virtual sneak peak months prior, direct from Goodwood, England, where Rolls-Royce cars are manufactured. The virtual unveiling resembled something you’d see in a modern-day James Bond film. Current Rolls-Royce owners have access to a private smartphone application called “Whispers,” whereby they can get news and updates and learn about new launches like this one. But those who are craving their luxurious new driving experience will have to be patient— the car will start production in January 2021 and deliveries are slated to begin in the spring.
Still, the anticipation of the new Ghost, which is totally redesigned featuring brand new, high technology, has Miami Rolls-Royce lovers buzzing. Clients have been patiently waiting to purchase the car and Borge expects the orders to roll in. Pun intended. “The car is incredibly appealing for this market...our last ten years have been so successful in Miami and this just adds to the excitement,” explains Borge. Pricing starts at $332,000 and with add-ons, the average price will be around $380,000. An affordable luxury in comparison to the car manufacturer’s Phantom model which starts at $500,000. “It’s a perfectly-balanced and incredibly powerful car and our clients are excited for it. This is probably the most successful RollsRoyce of the company has ever built and it has given RR the volume and the ability to sell more units,” adds Borge.
