Some beautiful things that have happened this past month…

Aotearoa New Zealand was named the best country in the world (again!) by readers of the UK’s Telegraph. Also in the UK, Liam and Noel Gallagher of Oasis – the greatest band of the 90s! – made a triumphant return to the stage, marking the end of 16 years of fraternal fighting. Verve magazine co-founder Fran Ninow celebrated the birth of her first grandchild, and my 10-month-old baby became a tentative toddler by taking his very first steps (beating his brother’s record by a mere 11 days – and hopefully not marking the beginning of a Gallagher-like rivalry).

While on the 90s, our new fashion and beauty editor Hélène Ravlich has curated a very cool blue jeans spread, and we also feature some of the most sought-after sneakers out there.

August is, of course, the month of Best in Beauty by Verve , and some standout stories this year include Tertiary Extracts Ōtautahi, a pioneering startup using sheepskin to boost women’s health; salmon sperm as skin therapy; and a sit-down with sustainable skincare superstar Emma Lewisham to discuss her brand partnership with Porsche.

There are some places that take your breath away the moment you arrive –Flockhill is one of them.

Perched amid the dramatic sweeps of the Southern Alps, just 90 minutes from Christchurch, this 36,000-acre working sheep station feels as though it belongs to another world.

Designed for up to eight guests, The Homestead is a four-bedroom home exclusively offered for sole use. Built into the hillside, its architecture is shaped by its surroundings. Inside, the interiors are warm and understated – think soft wool throws, polished timber, stone and leather –with just enough modern touch to remind you you’re in the lap of luxury. The four bedrooms boast kingsize beds, gas fireplaces, underfloor heating, private terraces and luxe ensuites with freestanding baths positioned for the view. Communal spaces draw you together: a soaring lounge with an open hearth, a snug den with a vinyl deck, and a terrace complete with a pool, spa and firepit for starlit evenings.

A private chef and attendant cater to your every whim – from baristastyle breakfasts to sunset canapés and four-course dinners, shaped by seasonal produce, garden harvest, and your own requests.

The newly opened Villas offer the same considered comfort with more flexibility. Each of the seven buildings house two suites connected by a shared lounge, giving guests the choice of a Junior Suite (onebedroom), Deluxe Suite (one-bedroom and a lounge), or the entire Villa (two-bedrooms and a lounge).

Here, as in The Homestead, attention to comfort is absolute: underfloor heating, air-conditioning, luxurious robes and slippers, deep baths, and private decks with sweeping alpine views. While the Homestead offers its private chef, Villa stays include daily breakfast, lunch, and dinner in Flockhill’s restaurant, Sugarloaf – all part of Flockhill’s thoughtful hospitality. The restaurant also recently opened to the public for lunch and dinner by reservation request.

Sugarloaf is a destination in its own right. Set against the rugged backdrop of the station, it celebrates the land through cuisine. The restaurant garden – with more than 30 varieties of fruit, vegetables, herbs and edible flowers –supplies Sugarloaf with nearly all its produce. A prep-heavy kitchen, utilising heritage cooking techniques and an extensive ferment library, allows for dishes that appear simple yet reveal layers of developing flavour. The result is dining that feels both deeply local and quietly inventive. This October, Sugarloaf has teamed up with Ruinart and Caviar Mafia to bring guests a two-night event you won’t want to miss (tickets can be purchased now on Flockhill’s website).

What also sets Flockhill apart is the way it invites guests to engage with its spectacular setting. The property’s signature Farm Tour is complimentary to all guests and reveals a portion of the 36,000-acre station and the work of their shepherds and dogs. For those seeking

more adventure, curated activities span hiking, biking, ATV tours, fly-fishing, rock climbing, jet-boating, horsetrekking and many food and beveragerelated experiences. The limestone boulder fields – once described by the Dalai Lama as the “spiritual centre of the universe” – offer spectacular walking and climbing.

In winter, Flockhill becomes a gateway to the snow. Porters, Broken River, Mt Cheeseman and Mt Hutt ski fields are on your doorstep, and the activities team can assist with everything from transfers to passes to rentals to lessons. ALEPPO SOAP

Revered as possibly the world’s first soap, this one originates in Aleppo (obviously), in Syria, and is traditionally crafted by mixing olive oil, laurel (or bay) oil, water, and lye, sans chemicals. Its roots are thought to trace back over at least 2,000 years – with some even claiming it a favourite of Cleopatra – and it was introduced to Europe following the Crusades of the 11th century. Traditionally, each bar takes nearly a year to cure, the soap ages for months until it turns pale gold outside and stays green inside.

ARGAN OIL

Known as Morocco’s ‘liquid gold’, Argan oil is extracted from the fruit of the argan tree which is endemic to the North African nation. The oil, which for centuries has served both culinary and medicinal purposes, is traditionally produced by Berber women using an ancient, manual method which involves sundrying the fruit then crushing the kernels with stones, and handpressing the oil. Around the turn of the 21st century, women organised into cooperatives to expand production, access international markets, and gain economic independence. Today, the global demand for argan as a beauty ingredient – most notably for its moisturising power – has elevated its price and desirability, while empowering the women who preserve this heritage craft.

Red lipstick has represented everything from seduction to rebellion, evolving into a symbol of confidence, identity, and empowerment across cultures and generations, with history spanning over 5,000 years. In ancient Mesopotamia and Egypt – where it was derived from crushed beetles and other natural pigments – it signified wealth and power, and was worn by royalty like Queen Puabi and Cleopatra, while in Ancient Greece, it was associated with sex workers. Though it was later embraced by Queen Elizabeth I, it was condemned by the Church, and during the suffragette movement, red lipstick became a bold feminist statement. During the second world war, red lipstic came to symbolise patriotism and morale.

Wellness from Waste

The Kiwi startup turning sheepskin into the future of women’s wellness.

You probably wouldn’t expect the next big breakthrough in women’s health to come from sheepskin. But in Christchurch, biotech start-up Tertiary Extracts Ōtautahi (TEO) is harnessing just that – and making waves on the global wellness stage in the process.

Founded by a team of scientists and entrepreneurs, TEO is behind Ovitage, a next-generation edible collagen made from upcycled New Zealand sheepskins – a by-product that would otherwise end up in landfill. Rich in amino acids linked to skin, muscle, gut, and even cognitive health, it’s the super ingredient in TEO’s debut product line: Everee Women.

In the ever-evolving world of aesthetics, where yesterday’s vampire facial is today’s passé indulgence, a new contender has slithered (or swum?) onto the scene: the salmon sperm facial. From Beverly Hills to Bondi, from Kim Kardashian’s surgically sculpted visage to Jennifer Aniston’s perennially plump glow, this peculiar treatment is being whispered about in hushed, reverent tones.

So, what exactly is this piscine potion promising to do for our complexions?

First, let’s clear up a key misconception: no one is slathering raw fish spawn across their cheeks. The so-called salmon sperm facial relies on polynucleotides – small, purified fragments of DNA extracted from salmon sperm. Once injected beneath the skin (via a needle), these polynucleotides work their magic: binding moisture; encouraging collagen and elastin production; stimulating new blood vessels; and scavenging free radicals. In short, they’re multitasking molecular miracle-workers for tired, thirsty skin.

Originating in South Korea – a country known for being lightyears ahead in skincare innovation – polynucleotide treatments have been quietly

transforming complexions since around 2015. But only now, thanks to celebrity endorsement and the inevitable TikTok frenzy, are they hitting the mainstream. Globally, and now including New Zealand, clinics are offering various iterations: Rejuran, Ameela, “salmon DNA therapy” –different names for the same fishy fable.

The results? Don’t expect an overnight glow-up. Unlike filler, which plumps instantly, polynucleotides play the long game. Subtle improvements – dewier skin, softened fine lines, a fresh-fromholiday radiance – emerge gradually over several weeks. A course of two to three treatments spaced a couple of weeks apart is typically recommended, with top-ups every four to six months. Devotees rave about reduced fine lines, improved skin hydration and texture, reduced under-eye hollowness, and a certain indefinable je ne sais quoi that no highlighter stick can mimic.

The downsides? First, the cost: expect to part with upwards of $650 per session for a full face. Then, the discomfort: even with numbing cream, the sensation has been described (eloquently, one might add) as “tolerable, but deeply unpleasant”. But a little pain in pursuit of perfection is practically a rite of passage.

In terms of downtime, the treatment is surprisingly low-key. You might experience some redness, swelling or puffiness for 24 to 48 hours – perhaps not ideal for a same-day soirée, but nothing that requires hiding under a hat for a week.

Injecting fish DNA into your face does raise a few ethical eyebrows. Most formulations source the sperm as a by-product of the fishing industry, meaning no fish are harmed specifically for beauty purposes. Some brands go further, ensuring traceable, sustainable harvesting practices for those with a more conscious approach to skincare.

Perhaps most fascinating of all is how this treatment straddles the divide between science and nature. For those uneasy about synthetic fillers or neuromodulators, salmon sperm injectables offer a curious compromise: a natural substance, bio-compatible with human DNA, coaxing our skin to regenerate and rejuvenate itself.

Ultimately, salmon sperm injectables may be one of the more peculiar paths to radiant skin – but in the world of beauty, stranger things have earned their place.

Some people feel unsure about things like injectables. What do those first conversations usually look like?

Most people come with lots of questions, which is great. I take them through everything step-by-step, chat about what they’d like to improve, and what’s realistic. There’s no pressure. The goal is to help them feel comfortable and informed, even if they just want to think it over first.

What have been some of your biggest business lessons along the way?

There are always ups and downs. Trust your intuition, back yourself, stay positive, and be grateful. Don’t be afraid to ask for help – you can’t do it all alone.

In a beauty world obsessed with immediacy, there’s something quietly radical about preparation. It’s not dramatic. It’s not trending. It’s not even visible. But in the skilled hands of a permanent makeup (PMU) artist, prep becomes the foundation of the entire experience, long before the needle touches skin.

For Sheila Ferneyhough – a PMU artist and founder of The Refinery in Mission Bay – permanent makeup is less of a service and more of a ceremony. “Building something beautiful on a neglected canvas can be a little challenging” she says.

“As a PMU artist, I don’t just work on skin—I work with it,” continues Sheila, whose approach to brows, lips, and liner mirrors the quiet precision of a hand -sewn hem. “Your skin is the canvas. The way you prepare it determines the outcome entirely.”

And prep, darling, is everything!

THE SLOW BEAUTY COUNTDOWN

Unlike throwaway trends or 10-minute facials, PMU is about patience. Think of it as a pre-show rehearsal for the skin – a beauty slow burn where every step matters.

Four weeks out, the ritual begins. Waxing and tinting are paused. Accutane is stopped. By week three, lash and brow serums – those little overachievers – are shelved. At two weeks, it’s time to retire acids and peels, scan your cleanser labels for hidden AHAs, and let the skin breathe.

People underestimate how much skincare can affect pigment retention. One stray active (ingredient) can be all it takes to derail flawless healing.

One week before, tanning is off limits. Then, 48 hours prior, it’s time to skip alcohol, beauty supplements, and those buzzy fish oils. The day before? Cancel your HIIT class. Avoid aspirin, ibuprofen, vitamin E, and niacin. These all thin the blood – and in the world of PMU, a clean, controlled surface is gold.

WHAT ABOUT INJECTABLES?

If your heart is set on lip blush for a splash of colour, you’re not just prepping skin – you’re preparing texture. Hydration is the key. Think litres, not sips, and coconut water is the business. Gently exfoliate each day and apply balm morning and night for a week before your session.

Not every face is ready to receive PMU. If you're pregnant or nursing, the answer is no – no exceptions. There just isn’t enough safety data available. Clients should wait until the little one is weaned. The beauty will still be here.

Those undergoing cancer treatment must wait six months post-recovery, with doctor’s clearance. Keloid prone should steer clear of microblading and those using medicated topical steroids like hydrocortisone, will need medical approval, as skin may be deemed too thin for PMU.

PMU may not always be possible, however, there are more suitable alternatives.

Before barbers became the guardians of the short back and sides, they were also who men turned to for dentistry and surgery, and everything in between!

ANTIQUITY CLIPPINGS

The barbering trade dates back thousands of years, with razors found in Bronze Age Egyptian relics. Egyptians began barbering around 5000 BC using oyster shells and flint tools. Throughout antiquity, barbers held high status, often serving as priests or healers, with barbershops also often doubling as social hubs. The Greeks introduced barbering to Rome, and a young Roman’s first shave became a rite of passage.

BLOOD ‘N’ BLADES

In the Middle Ages, barbers weren’t just cutting hair – they were cutting veins, pulling teeth, and even drilling into skulls. Known as barber-surgeons, they stitched wounds, drained abscesses, and balanced the body through bloodletting by using leeches or blades. That iconic striped pole still outside barber shops today was first used to symbolise this gory trade: red for blood, white for bandages, and blue for veins!

DOCTOR ROBERT

Highly respected 19th-century British barber-surgeon Dr Robert Liston gained renown as the ‘fastest surgeon’ of his era able to amputate limbs in less than 30 seconds before anaesthetics existed – a speed that saved lives. He also pioneered ether anaesthesia in 1846, transforming surgical practice. But, alas, there's a more unfortunate record to his name, having once performed a leg amputation that inadvertently sliced open two people also present leading to an infamous 300% mortality rate operation.

HAVING A TURKISH

Turkish barbers have a rich history rooted in the Ottoman Empire of the 13th century. The tradition of the straight razor shave has been passed down through generations, preserving their centuries-old techniques. Warm towels soften the skin, thick foam is applied with a brush, and a curved straight razor is expertly used to navigate the face’s contours for a close, smooth shave. The experience usually includes a relaxing facial massage and finishing hot towel, making it both a grooming and cultural ceremony. Today, Turkish barbershops remain vibrant community spaces where history, skill, and hospitality blend, offering visitors a unique glimpse into a rich heritage that is celebrated the world over.

A CUT ABOVE

Shitsui Hakoishi, a 108-year-old Japanese woman, was recognised this year by Guinness World Records as the world's oldest female barber. Born in Nakagawa, Tochigi Prefecture, she began her barbering career at 14 and earned her licence at 20. In 1945, she lost her salon during the US firebombing of Tokyo but reopened in Nakagawa in 1953. Hakoishi attributes her longevity to the support of her loyal customers and has no plans to retire. “I could come this far only because of my customers,” she says. “I am turning 109 this year, so I will keep going until I reach 110.”

BARBER SHOP LINGO

Barber lingo can be confusing, here’s a brief rundown:

Fade . A gradual blend from very short hair to longer lengths up the head.

Taper. A subtle shortening around the neckline and ears; less dramatic than a fade.

Drop fade . A fade that curves lower behind the ears for a rounded shape.

Temple fade . A fade concentrated at the temples, blending into longer hair.

Hard part . A shaved line that defines a parting in the hair, adding sharp contrast.

Buzz cut. A short, uniform cut using clippers all over the head.

Crew cut . Like a buzz, but slightly longer up top.

Clipper over comb . A technique using clippers and a comb to blend and shape.

Scissor over comb. Like clipper over comb, but with scissors for more precision.

Line up. Or a shape up – defines the hairline with straight, sharp edges.

Texturising . Adds movement or removes bulk with tools like thinning shears.

Blowout . Styled with a dryer for volume and shape.

Growing up in a family “immersed in the fashion industry” meant it was inevitable that Joshua Pfaff, founder of iconic downtown barbershop Gents & Rascals, followed a similar path. “After completing school, pursuing a career in hairdressing felt like a natural choice,” he tells Verve

“As barbering began to gain popularity, I made the transition. It encompasses everything I love about life: creativity, social interaction, and the opportunity to build a brand recognised for skill, consistency, and high-quality services.”

What sets you apart from other barbers?

Our journey started with a small team – my brother Rupert, one other barber, and myself. Initially, our client base was small, allowing us to deliver efficient, high-quality service in a walk-in format. Since then, we’ve experienced incredible growth, expanding to our second location and building a team of 11 barbers.

What was behind your decision to move away from walk-in appointments?

The decision was rooted in respecting everyone’s time – both our barbers’, who work tirelessly, and our clients who wait for their turn. Time is a valuable resource, and while some enjoy the chance to take a break, no one wants to wait excessively for a haircut. After 15 years of walk-in service, I found myself yearning for a structured schedule that affords me a reasonable lunchbreak and eliminates the pressure of having clients impatiently check their watches!

How has the industry evolved during those 15 years?

Today, clients are more informed than ever. It’s common for them to sit in the chair and provide well-articulated descriptions of their desired haircuts. Additionally, the advancements in tools can’t be overlooked. Our barbers dedicate significant time to researching the best on the market. You’ll notice that each barber takes pride in their setup, utilising the latest and greatest equipment, all maintained in immaculate condition!

How do you want people to feel when they’re in the chair – and when they leave?

I regularly ask myself if this is the kind of environment I would want for my own haircut. In today’s barbering landscape, the experience itself is paramount –I believe the haircut represents 60% of the final result. Even the best haircut can’t compensate for an uncomfortable experience –if a barber doesn’t engage or make the customer feel at ease, they likely won’t return.

What grooming or haircare products do you stock and recommend?

little over 20 years ago, US-based Kiwi property investor Peter Cooper saw the potential to turn Britomart’s decaying heritage buildings into a precinct of offices, open public spaces, cafes, restaurants, bars, and boutiques that the whole city could enjoy.

“Auckland City Council had given protection to the 19 heritage buildings in the Britomart precinct before the development rights for the area were put up for tender,” Britomart Association’s director of communications and community, Jeremy Hansen, tells Verve. “This was the result of an earlier public outcry at redevelopment proposals by other organisations that had suggested demolishing the old buildings. So, it was always part of Cooper and Company’s vision to restore and retain them – and to work with Heritage New Zealand to make them function effectively and become beloved for a new generation of users and occupants.”

Peter had previously developed a place named Southlake Town Square in Texas – an empty field near Dallas Fort Worth Airport that is now a thriving civic, business and retail precinct based around a generous public square. “At the time, indoor malls were a big thing, and Peter was told by a lot of people that creating a town centred around an outdoor square was insane,” continues Jeremy. “His success despite those predictions was part of what gave him the confidence to take on the Britomart project here.”

Jeremy believes that the collection of heritage buildings is among the most important in the country.

“The combination of this with modern architecture, pedestrian-friendly streets, public artworks, and with the sunny, relaxed public space of Takutai Square and its lawn makes it a unique space in the city.”

There’s a lot of art and design around the precinct –how do you choose which creatives to work with, and any personal favourites?

“It’s always been our company’s belief that good art and design can enrich an area and people’s experience

of it. A great precedent was set when the fountain in Takutai Square was established as part of the Britomart masterplan along with Waitematā Station – an artwork named Te Rou Kai by Ngāti Whātua Ōrākei artists Bernard Makoare and Renata Blair with Chaz Doherty. We’ve slowly added to the collection over the years. My personal favourite is Maunga, the five-storey high mural on Commerce Street by Shane Cotton, because of the story it tells about the city, and how its scale makes it such a landmark for the place.”

How do you keep Britomart feeling fresh as the city keeps growing?

“We work pretty hard on programming Takutai Square to keep it feeling alive and interesting – with food truck lunchtimes, our Saturday markets, a Matariki light show, changing displays of temporary artworks, plus performances such as kapa haka, dance, music and more. We want to make people feel welcome here and connected to the place.”

The true test, he says proudly, is when visitors arrive from other parts of the country or from overseas – the response is always positive, with guests seemingly immediately understanding the precinct’s meaning and energy.

“It’s made me realise that people notice and appreciate the effort everyone puts into creating a welcoming city space. Make a place nice, and people will enjoy it. It’s that simple.”

And as for what’s next?

“Like the rest of Auckland, it’s always evolving. We have a few things coming up later in the year and early next year that I’m excited about but can’t talk about just yet. But watch this space!”

RUNNING OF THE BULLS

Every July, Pamplona’s controversial San Fermín festival sees a few thousand thrill-seekers dressed in all-white, with red handkerchiefs, sprint through cobbled streets alongside charging bulls in the famous Running of the Bulls. The event is a as dramatic as it sounds – with hundreds of injuries each year, and the occasional fatality. The tradition dates from 16th century bullfighting and was first made famous around the world by Ernest Hemingway’s 1926 novel The Sun Also Rises.

WORLD'S LARGEST TOMATO FIGHT!

Every year, on the last Wednesday of August, the quiet town of Buñol in Spain erupts into chaos during La Tomatina, the world’s largest tomato fight. Tens of thousands of kilogrammes of overripe tomatoes are thrown as thousands of locals and tourists join in the messy, exhilarating event. The festival’s origins remain a mystery, but the most popular story dates back to 1945 when a community parade was interrupted by a scuffle that led tomatoes being grabbed from a nearby market stall and hurled in anger during the melee. The following decade, the festival was banned by Franco, which only added to its mystique and, for a time, caused it to become an act of protest against the dictatorial regime. Now, La Tomatina has become a joyful and legendary celebration full of laughter, camaraderie, and tomato-covered fun that draws visitors from around the world each year.

CADAQUÉS

Tucked into a horseshoe bay on Catalonia’s rugged coast, Cadaqués is a former fishing village turned artistic haven. Whitewashed houses, cobbled lanes, and a crystalline sea merge to create a world that has inspired the likes of Dalí, Picasso, and Miró. The town remains unspoiled, is fiercely preserved by locals, and retains a creative spirit in every corner. Dalí claimed it to be “the best place in the world,” and it doesn’t take long to see why.

Brutal Ballet

From Bond girl to Marilyn Monroe, Ana de Armas has spent the past five years ascending Hollywood’s A-list with speed and style. Now, with the long-awaited John Wick spin-off Ballerina , the Cuban-Spanish star proves she can fight, fall and rise with panache, too.

Set between John Wick chapters three and four, Ballerina sees Ana play Eve, a grieving assassin trained through the brutal ballet school of the Ruska Roma. Shot in Prague over five months – and kept under wraps for more than two years – the movie reunites her with Keanu Reeves whom she previously worked alongside with in Knock Knock and The Gray Man. “Keanu is relentless,” she says. “He never complains, so I couldn’t either. He sets the tone. You just try to keep up.”

The actor describes this role as the most physically demanding of her life. “Every joint, every muscle, especially my back… I was in pain every day,” she admits. “But looking back, I don’t remember the pain. I remember what we created.”

Preparation began six months before filming with daily jiu-jitsu, weapons training, and classical dance drills with the Wick stunt team. “It was brutal,” she says. “I was icing my knees in the hotel bathtub most nights. But I became obsessed with making her believable. She’s not just another female assassin. There’s grief. There’s rage. It’s character-driven violence.”

After the global spotlight of Blonde – which saw Ana take on the haunting role of Marilyn Monroe – and her slick blockbuster turn as a Bond girl in No Time To Die, the actor reveals that she’s choosing projects carefully, with an eye on art and drama rather than box office collateral.

“I’ve said ‘no’ to three good scripts recently,” she says. “I didn’t want to disappear again. I’m craving balance. A small house, Italian lessons, dinner with friends. Not everything has to be fast or loud.”

Ana was born in Havana during Cuba’s ‘Special Period’ – a time of extreme economic hardship that began following the collapse of the Soviet Union in 1991 – and grew up with barely any access to film or television. “Maybe one movie a week,” she recalls. “That scarcity probably made me more curious.”

At 18, she left Cuba for Madrid – a move made possible because her maternal grandparents were Spanish – and soon landed a role in the teen drama, El Internado. After much success on Spanish screens, she was encouraged to move to LA – despite being able, at the time, to speak much English. “That wasn’t easy,” she says, “but I wanted to support my family. That was my goal.”

The goal has been well and truly smashed, with further roles in other hit films like Blade Runner 2049 and Knives Out – for the latter, Ana was praised for her “standout performance” by the Times and was nominated for a Golden Globe.

And though Ballerina is blood-soaked and bruising, she speaks about it with a smile.

“It’s beautiful and terrible,” she says. “I think people will be surprised. I know I was.”

Crispy fried red mullet with chickpea & red onion salad

SERVES 4 TAKES 30 MINUTES

Red mullet is one of the gems of the sea, one that I adore for its distinctive flavour, delicate texture and the charming ‘smile’ it seems to wear at the fish market – always a sight that brings me joy. This highly prized fish, particularly revered in the Andalusian coastal town of Barbate, is known for its range of sizes and for the versatility it offers in cooking methods. Whether it tips the scales at a few grams or approaches the heftier side of half a kilo, red mullet always delivers great taste and quality.

Best known for the way its sweet, nutty flavour – which some liken to a cross between crab and lobster – stands out whether it’s grilled or pan-fried, red mullet is a winner. This recipe celebrates this delightful fish by pairing it with a wonderful chickpea salad, complementing the natural flavours with the freshness of the lemon and aromatic fennel seeds. The contrast between the warm fish and the cool herbaceous salad creates a food experience that is balanced and exciting.

INGREDIENTS

4 tbsp chickpea flour

1 tsp smoked pimentón

8 red mullet fillets

75ml (⅓ cup) olive oil

Flaky sea salt and freshly ground black pepper

For the salad

1 tbsp olive oil

1 garlic clove, bashed

1 tsp fennel seeds

2 × 400g tins of chickpeas (garbanzos), drained and rinsed

1 red onion, finely chopped

Juice of 1 lemon

3 tbsp extra virgin olive oil

Large handful of flat-leaf parsley, leaves picked and chopped

METHOD

Prepare the salad. Heat the oil, garlic and fennel seeds in a frying pan. Add the chickpeas and gently cook for 3–4 minutes, stirring, then tip into a large serving bowl and season well with salt and pepper.

Add the onion and lemon juice and set aside while you prepare the fish.

Mix the chickpea flour with the pimentón and plenty of salt and pepper. Dredge the red mullet fillets in the flour.

Heat the oil in a large frying pan (skillet) until it shimmers, then add the fillets and fry for 4-5 minutes until golden and crispy, turning once. Drain on paper towels.

Add the parsley to the salad and serve with the crispy red mullet fillets.

Arroz al horno with pork ribs

SERVES 6

TAKES 3 HOURS PLUS MARINATING

Ribs have a special place in my heart – they’re just irresistible, no matter how they’re cooked! In this recipe, while rice serves as the foundational ingredient, the ribs are the star of the show. Marinated to perfection, the ribs release their rich, savoury juices into the rice as they cook, infusing every grain with a depth of flavour that is mouthwatering and satisfying.

The marinade is a bold mix of aromatics and spices, including the zest of lemon and sprigs of fresh oregano, enhanced by a good pinch of pimentón. Marinating not only tenderises the ribs but deepens the flavours. As the ribs slow-cook to tender perfection, their flavours combine with the lemon’s acidity, cutting through the richness and balancing the fatty succulence of the pork.

This harmonious blend of tender meat, aromatic seasoning and refreshing citrus results in a dish in which the flavours dance together in unison. Paired with the soft, flavourful rice that captures all the essences of the marinade, this dish is both hearty and refined.

INGREDIENTS

6 chunky pork belly ribs

200ml (1 cup) white wine

Pared zest of 1 lemon

4 sprigs of oregano

Good pinch of pimentón

75ml (⅓ cup) olive oil

1 large onion, finely sliced

2 red capsicums, deseeded and sliced

3 large tomatoes, chopped

3 garlic cloves, crushed

300g (1⅔ cups) bomba or other medium-grain paella rice

700ml (3 cups) fresh chicken stock

Flaky sea salt and freshly ground black pepper

METHOD

Put the ribs in a dish with the white wine, lemon zest, oregano and pimentón and marinate for 1–2 hours, or overnight.

Preheat the oven to 140°C fan. Put the ribs in an ovenproof dish and cover with kitchen foil. Bake for 2 hours, or until tender.

Meanwhile, heat the oil in a paella pan or ovenproof dish.

Fry the onion and peppers for 10 minutes until really softened, then add the tomatoes and garlic and cook for 5 more minutes.

Increase the oven temperature to 170°C fan.

Add the rice to the pan, then nestle the ribs into the rice, pouring in any of their juices. Pour over the stock, season well with salt and pepper and return to the oven. Bake for 40–45 minutes until the rice is tender and the ribs are browned, then serve.

Roast root veg with chorizo & bread

SERVES 2–4 TAKES 45 MINUTES

This dish is so unforgettable, I can’t get it out of my mind; emerging from the oven bubbling and golden, filling the kitchen with irresistibly delicious aromas. The smoky chorizo is divine, and the chunks of sourdough bread eagerly absorb the rich, roasted flavours. It’s an ideal choice for all sorts of get-togethers. Serve it piping hot, straight from the oven, topped with a sprinkle of fresh fennel leaves for an extra layer and hint of brightness. This beautiful, rustic creation is guaranteed to delight everyone at your table.

INGREDIENTS

8 baby carrots, halved lengthways

3 baby or 1 large fennel bulb, cut into wedges

4 small beetroot, halved or quartered

Good pinch of smoked pimentón

2 tsp coriander seeds

2 tbsp olive oil

200g cooking chorizo, skin removed and meat broken into pieces

200g stale sourdough bread, torn into pieces

3 tbsp fresh chicken stock

Large handful of fennel fronds or dill, chopped Flaky sea salt and freshly ground black pepper

METHOD

Preheat the oven to 180°C fan.

Tumble the veg into a roasting tin with the spices and oil. Season well with salt and pepper, then roast for 25 minutes, turning once.

Add the chorizo and mix together and return to the oven for 10 minutes.

Add the bread, tossing to coat in the chorizo oil, then drizzle with the chicken stock. Sprinkle with a little more salt and pepper and return to the oven for a further 10 minutes. Scatter with fennel fronds and serve.

Orange-roast peaches with honey & lavender

SERVES 6 TAKES 30 MINUTES

The arrival of stone-fruit season always brings me so much joy – it’s a time of anticipation and celebration. Although it takes a couple of weeks for the very best of the season to reach its peak, the wait is well worth it. This recipe has quickly become a firm favourite at Iris, our home in Andalusia, loved by both our friends and guests. We often pair it with an almond cake and a carefully curated cheese board featuring some of the finest cheeses from the region, making it the perfect centrepiece for a shared table.

INGREDIENTS

6 ripe yellow peaches

2 oranges

3 tbsp honey

2 sprigs of lavender, leaves picked Vanilla ice cream, to serve

When it comes to honey, I’m particularly fond of the exceptional varieties from Prado del Rey in Cádiz and Las Hurdes in Extremadura. Their deep, rich, sophisticated flavours are unparalleled and since they’re not overly sweet, as honey should be, they complement the natural sweetness of stone fruits beautifully, adding an extra layer of indulgence to this simple yet stunning dish. METHOD

Preheat the oven to 160°C fan.

Cut a cross on the bottom of the peaches, then plunge them into a pan of boiling water for 20 seconds, then scoop out with a slotted spoon into a bowl of iced water.

Peel the peaches and put them in a small roasting tin. Zest one of the oranges and juice both. Blend the juice and zest with the honey, then pour over the peaches. Scatter with the lavender.

Roast for 20-25 minutes until sticky and tender. Serve with vanilla ice cream.

History Returns

A piece of jewellery with strong ties to Alfred Buckland – the original owner of Highwic – has found its way home.

The item, a mourning bracelet – thought to have been worn by Buckland after the death of his first wife Eliza in 1866 – has been gifted to Heritage New Zealand Pouhere Taonga by his great-granddaughter, Jane Chapman.

“There’s very little in the collection directly linked to Alfred himself, so this is a rare and really special addition,” says Highwic’s Collections Manager, Belinda Maingay. “Family stories say it belonged to Alfred and that he wore it.”

Alfred Buckland was a prominent Auckland landowner, auctioneer and agriculturalist. Born in England, he arrived in New Zealand in 1850 and quickly established himself as a leading livestock auctioneer, opening Auckland’s first public wool sale in 1858. He built Highwic in 1862, where he lived with his two wives – Eliza, and later Matilda – and their 21 children. Buckland played a key role in Auckland’s commercial and civic life, and his legacy remains tied to the region’s farming and business development.

The bracelet likely dates from the 1860s to 1880s, aligning with Eliza’s death, though it could also fall around the time of Buckland’s second marriage to Matilda in 1867. Made of gold and set with a garnet surrounded by seed pearls, it also has a small compartment on the back, likely intended to hold a lock of hair – a sentimental feature common in Victorian mourning jewellery.

“It is an interesting piece in many ways reflecting the ‘cult of mourning’ that developed with Queen Victoria following the death of her husband Albert,” adds Belinda. “Victoria wore black for the rest of her life, and – given her extraordinary influence – different mourning customs evolved, particularly in countries like New Zealand that were part of the British Empire. These included specific items of mourning clothes, and even jewellery.”

Whatever its origins, the bracelet now sits back where it belongs – at Highwic, the home Buckland shared with his family of 21 children.

Jane Chapman reveals that the family is thrilled that it has returned.

“We’re delighted the bracelet is now at Highwic,” she says, “and being looked after by Heritage New Zealand.”

Selling With Integrity

Ray White Mount Eden realtor Claudia Wright grew up in a family of real estate agents in Wellington where she learnt all facets of the industry from staging through to selling.

“I got my real estate licence as soon as I turned 18 to help Mum and Dad with open homes,” she tells Verve . “They’d just launched the AndCo Realty Group and were flat out, so it was all hands-on deck. That early exposure and the excitement of building a thriving business really cemented for me that real estate was what I wanted to do long-term.”

What are some of the most important lessons you learnt?

One thing that’s always stuck with me is Dad’s integrity. He’s the only salesperson I know who would genuinely tell someone to keep their home if it was the right move. His advice has ended up making clients hundreds of thousands of dollars over time and brought about repeat business. That kind of honesty is rare, and it’s shaped how I work too.

What do you love most about working in the Auckland property market so far, and how does it compare with working in the capital?

It’s a much bigger market and definitely more competitive. I used to be able to zip around Wellington in 10 minutes, but up here I really have to plan my day around traffic. That said, I do appreciate the wider roads and better parking near listings!

I’ve noticed people tend to spend more on their homes here, and the properties are often larger too. The sales methods are different as well – Wellington was mostly deadline sales and tenders, whereas Auckland is very auction-driven. That was new for me, but now I really enjoy the energy and pace of an auction campaign.

How do you help your clients navigate the more stressful parts of buying and selling?

I’m as involved as my clients need me to be. This isn’t just a one-off transaction – it’s about building long-term

relationships. I’ll always go the extra mile and make myself available when they need to talk through concerns or just need a bit of reassurance. I’m with them every step of the way.

What trends are you currently seeing in the local property market?

Buyers expect to see listings online in a really engaging format – walkthrough videos, reels, Instagram stories – you name it. It’s about creating a buzz and reaching people where they’re already scrolling.

Are there any particular types of homes or neighbourhoods that you’re especially passionate about?

I’ve always had a soft spot for Remuera – my nana had a beautiful old Chapman Taylor home there and I spent a lot of time there growing up. I also really love Meadowbank, St Heliers, Mission Bay, Ellerslie and Greenlane—any suburb with easy access to the water feels like home to me.

Can you share a standout moment or success story from your time in real estate?

We had one of our highest priced properties hit the market in Plimmerton which had been on the market with another agency and hadn’t sold. I had buyers I was working with that were not even looking in that area but I felt they would love it in every other way – I sold it to them a day later, way over what was appraised. They called recently and they still love it there!

Design Estimates

Architectural design is filling the gap.

There is a gap between a set of Building Consent documents and a set of documents a builder can cost up or build the project with.

What's missing?

Building Consents give you the structure, the site services and the claddings. Council doesn't want your house to fall down or leak and wants the drains to work. They don't care about your kitchen and bathroom cabinetry, electrical and lighting layouts, door handles, tiles and flooring, colours, appliances, and so on – all the items you really care about – but your builder needs to know about those items in order to give you a meaningful budget estimate.

The builder can give you a price on a set of Building Consent documents, but that

price will include sums of money for items not specified. He will allow a sum for the kitchen, but that could range from $60,000 to $160,000, depending on finishes. You hope he has allowed enough money for the kitchen you expect.

His estimate will also have tags – meaning no money allowed for – for items such as unexpected ground conditions, hitting rock or soft spots.

The builder may have used a quantity surveyor (QS), the accountant of the building industry, to establish a project estimate, and again you hope the QS understands the level of quality you expect.

On a recent project, I thought the QS estimate was too low – the first time to

be that much! He had got the level of quality wrong and priced the steel joinery as though they were aluminium and the kitchen benchtops as Formica, not the natural stone the client expected, and on it went.

And what is included in the costing, and what has been left out? Does it include airconditioning, security, fencing, driveways, landscaping, window coverings, appliances, and so on?

An architect deals with a lot of builders and quantity surveyors, so can assist and guide you through the budget estimate process.

ANCIENT BEGINNINGS

Three-and-a-half-thousand-year-old artworks depict women of the Minoan civilisation (a Bronze Age population on the island of Crete) wearing clothing around the bust, while Ancient Greek texts like The Iliad and Lysistrata mention the strophion – a band or cord used for breast binding. Roman women used similar garments, also known as mamillare, usually during physical activity. A famous 4th-century mosaic from the Villa Romana del Casale in Sicily shows female athletes wearing linen bandeau-style tops – very early versions of sports bras.

MIDDLE AGES TO THE RENAISSANCE

During the medieval period, breast support was minimal. Corsets emerged in the 16th century to shape the torso and reduce the waistline rather than lift the bust. Though they were originally worn by both men and women, corsets evolved to become primarily female attire. By the 1500s, corsets had taken a lasting form: stiffened fabric with stays made from horn, whalebone, or wood. However two linen ‘bras’ dating from around 1440–1485, found at Lengberg Castle in Austria, feature separate cups and longlines – seriously resembling early versions of modern bras and shifting thinking around the garment’s evolution.

THE CORSET CUTS IT

By the 18th and 19th centuries, tightly laced corsets had come to dominate Western fashion, but as the 1900s approached reformers began developing alternatives comprising lighter garments with shoulder straps and separated bust support. French designer Herminie Cadolle famously split the corset in two in 1889, creating the corselet-gorge, a prototype bra, which she presented at the World Expo in Paris in 1900. Fourteen years later, Mary Phelps Jacob patented the first modern bra using handkerchiefs and ribbon. Metal shortages caused by the first world war also hastened the corset’s decline, and bras soon become the new norm.

MANUFACTURING MAINSTREAM

Throughout the 1920s and 1930s, bras became evermore commercially popular. Companies like Maidenform, appealed to the flapper subculture and helped standardise sizing. (During the second world war, Maidenform converted factories to produce parachutes and ‘pigeon vests’ – also called pigeon bras – for carrying messenger pigeons.). In the 1940s and 50s, cone-shaped bras became fashionable, boosted by new materials like nylon and Hollywood icons like Marilyn Monroe, while the 60s and 70s saw bras challenged in feminist debates. In 1977, the Jogbra – the first modern sports bra – emerged, transforming activewear and leading to greater variety in fit and function.

INTO THE 21ST CENTURY

Bra design has now become more inclusive, offering options for a wider range of sizes, gender identities, and post-mastectomy needs, as well as wireless and sustainable styles. Modern innovation focuses on customisation, smart fabrics, 3D printing, and eco-friendly materials, with today’s consumers increasingly valuing comfort, health, and ethical production. Kristen Classi-Zummo, apparel industry analyst at Circana, says that post-pandemic there was a brief swing back towards wired and lace bras, but now it’s all about the comfort that consumers grew accustomed to during lockdowns. “It’s no longer a choice between feeling good and looking good,” she tells Vogue . “Modern consumers demand both.”

Siam Haven

There is a certain tenderness in returning to Thailand as a daughter of this land.

Each visit feels like a return to my roots, where I first learned the meaning of wellbeing.

On this most recent journey, we travelled to Hua Hin to experience Chiva-Som. Opened in 1995 as Asia’s first wellness resort, it has been guiding

guests toward a more conscious way of living ever since. Its name means ‘Haven of Life’ in Thai, which I found to be a fitting description.

Set within seven acres of lush gardens by the Gulf of Thailand, the resort invites you to slow down from the moment you arrive. As we walked beneath fragrant frangipani and giant banyan trees, the unhurried pace and closeness to nature made this place feel almost elemental. Is it really so close to the bustle of Bangkok and its 11 million people? The gentle pace of life made it hard to believe.

Our days unfolded with thoughtful rhythm. There was a sense of being completely cared for, with a guest experience manager orchestrating our days so we could surrender to the flow, focus on the practices themselves.

Each morning began with a one-onone session with a yoga master or a physical therapist, who guided us through movement designed to restore strength and balance.

Every afternoon brought an hour-long massage at our chosen time, releasing layers of tension we hadn’t realised we

were holding. Between sessions, we could slip into the steam room, sauna, jacuzzi, or the serene lounge, where the world outside seemed far away. In the evenings, we practised a 60-minute breathing technique and settled into daily meditation that stilled even the busiest minds.

We embraced these rituals fully, day after day. Chiva-Som’s holistic approach to wellness, incorporating mind, body, and spirit, could be felt in every detail. Meals felt restorative, light yet nourishing, each dish carrying nutritional notes. One afternoon, we wandered down to the palm-lined beach, toes sinking into the warm sand, and sat watching the tide roll in. It was a rare stillness that stayed with me long after we left.

What began as research trip became something far more personal. It reminded me of the kind of sanctuary I want Sa-Ni to offer. A small echo of Thailand’s timeless wisdom, where people can slow down, exhale deeply, and rediscover themselves.

Purpose and Beneficiaries. Does the trust still align with your original intentions? Have family circumstances changed (e.g.

new marriages, children, estrangements) that require a variation to the trust or a memorandum of wishes?

Protecting your legacy is not a ‘set and forget’ exercise; it requires diligent stewardship. A professional review is the necessary step to confirm your trust’s compliance and ensure it continues to function as a valid and protective vehicle for your legacy.
