nother holiday season is here and, as per usual, I didn’t quite see it coming. I tell time by the things I have to do, my personal calendar driven by schedules, assignments and deadlines. So when those important dates pop up, it never seems as if enough time has passed for it to be “(insert any date here) already?” I suspect I’m not the only one. So this year, I’m focused on making merry, rather than keeping busy. Accordingly, our December issue is all about having fun. This month we feature The Nutcracker ballet, put on every year by the Ventura County Ballet Company. VCBC invited us behind the scenes to glimpse a little of what it takes to bring this well-loved production from the rehearsal studio to the stage. Lots of hard work, of course — but there’s so much passion and joy there, too. From the tiniest ballerinas to the gravity-defying pros, that love of dance is what shines through during every performance, making The Nutcracker one of our most enduring holiday traditions. If you’re already a fan, perhaps our pictorial will help you appreciate the ballet in a new way. And if you haven’t yet taken in this most festive of seasonal spectacles? Perhaps you should. Speaking of festive . . . Oxnard transforms from a picturesque seaside community to Ventura County’s own City of Lights in December. The Plaza Park pagoda,

Christmas Tree Lane, Channel Islands Harbor’s Parade of Lights . . . every corner of Oxnard twinkles this time of year. An evening walking through the historic district will put anyone in the holiday spirit. If you feel like traveling farther afield, the friendly snowman Bonhomme will welcome you with open arms to Carnaval de Québec, the spectacular winter carnival that takes place every January and February in Québec City. Picturesque streets bedecked with frost, elaborate sculptures made of snow, the breathtaking ice palace — it’s the stuff of fantasy, and there’s plenty of time to plan a trip. Of course, you can always enjoy the creature comforts of home by staying in and whipping up a few batches of cookies. Chefs from around the county shared some of their favorite holiday recipes with us this month, and they are as easy to prepare as they are delicious. Make some for guests, or as gifts, or just to enjoy yourself — and fill the house with the scent of sugar and spice and everything nice. December is a time for family and festivities, good food and good company, fun-filled days and nights that sparkle. On Oct. 29, wine and music lovers alike came together for a good cause during a special benefit concert for Safety Harbor Kids. Sponsored by Ventura Land Rover Jaguar and Maserati of Bakersfield, actor/comedian Hal Sparks acted as emcee while Chicago co-founder and drummer Danny Seraphine, KISS guitarist Tommy Thayer and their friends joined up for an all-star performance. Opening for the headliners were Italian actress/singer Maria Elena Infantino and American Idol top-four finalist Jessica Meuse. In addition to a legendary rock concert, guests enjoyed fine wine, door prizes and a silent auction. hristmas is a big deal in Oxnard: Santa lives here. Built in 1948 and formerly stationed on Santa Claus Lane in Carpinteria, this roadside attraction was transported to Ventura Boulevard in 2003. St. Nick’s “new” home suits him: In December, all of Oxnard comes alive with holiday revelry. Ventura County’s tallest Christmas tree (over 110 feet high) is lit up for the season in downtown Oxnard’s central plaza, and there’s plenty more going on, from a Christmas parade to the harbor’s Parade of Lights.

A LITTLE HISTORY

Oxnard became known for sugar beet production, thanks to the town’s founder, Henry T. Oxnard, and his brothers. The city of Oxnard was incorporated in 1903, taking its name from the brothers who built a sugar beet factory in the heart of 18,000 agricultural acres. Oxnard built its first public library in 1907 with funds from Andrew Carnegie on the northwest corner of the plaza. The white, classically styled building stands out today as a county historical landmark and is the }}

only remaining structure from the early days of the plaza. Now the Carnegie Art Museum, it features cutting-edge contemporary exhibitions and boasts a noteworthy collection of work by Latino artists. A gallery next door showcases local artists. Oxnard and its environs have grown into a city of contrasts. Adjacent Hollywood Beach is where Clark Gable and other stars romped in the 1930s. Rudolph Valentino’s silent film The Sheik was filmed on the wild Hueneme dunes. In early days, a beach lot sold for $200. Today, a home on the sand goes for millions. The Hollywood stars of today still enjoy this seaside escape: Bryan Cranston and Bo Derek both have vacation homes in the area. Streets in Hollywood Beach, Hollywood by the Sea and adjoining Silver Strand got their names from tinsel town — there’s Cahuenga, La Brea, Melrose and even Hollywood Boulevard.

DOWNTOWN GOES ALL OUT! Downtown Oxnard gets all dressed up for the holidays, but visitors can go casual. Fuel up for breakfast or lunch at popular local spots Tomas Café, BG’s Cafe or superpopular Fresh and Fabulous. A sweet spot in the historic Woolworth Building for pastries, cookies, desserts and tasty crepes (both savory and sweet) is Xielo — just follow your nose to this Fourth Street gem. Heritage Square, a collection of carefully maintained historic homes, lights up for the holidays. Victorian House Tours at the Square and the Gingerbread House Contest run Dec. 9-31. Costumed docents guide the tours, and guests can admire handmade gingerbread houses on display inside the historic chapel. Latino comedian George Lopez is behind the Fifty150 clothing store that sells t-shirts, caps and similar items. Friends of the Library Books and Things is a nonprofit gift shop at the Oxnard Public Library offering inexpensive gifts, including neat stuff for kids and lightly used books. Frida’s Treasures carries Latino artisan goods and apparel. (Call first to see if she is open.) Gordon’s Western Wear is reliable for hats, belts and everything for the wranglers in your life. Throughout December, the Winter Fantasy Music and Light Show runs from 5 to 10 p.m., transforming the historic pagoda in the square into a high-tech interactive experience with a computer-orchestrated show that mixes over 30,000 flashing colorful lights, holiday music, animated characters and lit trees. Take a leisurely stroll along Oxnard’s Christmas Tree Lane where lights glow nightly from 6 to 10 p.m. on decorated homes along F and G streets and between Fifth and Palm streets in the Oxnard National Historic District. The lane is open Dec. 10-25. Or hop aboard a double-decker bus for the Annual Holly Trolley Tours ($12/per person) Dec. 12-14, departing from Heritage Square for a tour

through the historic district’s spectacular displays with a stop for hot cocoa and cookies. Abuelitas in the know buy masa to make their Christmas tamales at La Central Bakery and Tortilla Factory. Chow down on authentic Mexican fare at La Gloria Market, next to the Transit Center, or hit Carnitas El Rey (rated in top 100 on Yelp!) on East Fifth Street for carnitas tacos, tender pork, handmade tortillas and pico de gallo.

HOLIDAY HARBORSIDE The annual Parade of Lights in Channel Islands Harbor is a well-attended event. Activities include snow play for kids, a visit by Santa and Mrs. Claus, a local parade, holiday artists’ market, live music, children’s activities and more. The free, lighted boat parade (taking place this year on Saturday, Dec. 9, with the theme Fairy Tales Afloat) begins at 7 p.m. and can be viewed from all points along the harbor’s edge and at restaurants located within the harbor, also home to the popular Channel Islands Maritime Museum. Reserve a table at The Waterside Restaurant and Wine Bar for views of the parade (pre- or post-). Brunch after the Sunday Oxnard Farmers Market also draws a crowd. New owners are adding tasty items to The Waterside’s menu, like finger-licking-good Szechwan pork ribs and a healthy kale salad with dried cranberries and pomegranate seeds. Or escape upstairs to the Brazilian oasis Moqueca, where the relaxed atmosphere with a bossa nova soundtrack is sure to soothe any holiday meltdowns. The signature dish moqueca is the star here. The seafood-andtomato-broth delight is served steaming hot in a traditional clay pot. The full bar whips up caipirinhas made with cachaca. Tasty passion fruit mousse for dessert makes for a sweet ending. Pooches are welcome at Sea Fresh, which has a doggie menu in addition to plenty of seafood choices for humans.

ON THE FAR SIDE OF THE 101 The Collection at RiverPark is a popular destination for holiday shopping. Tucked away near the movie theater is the California Welcome Center, where I was pleased to discover signed books by local authors (including Ventana contributor Ken Alpine, among others), original art, charming handmade seashell boxes and cool postcards, T-shirts and even baseball caps celebrating “the Nard.” The Annex, which just opened in November, features the artisanal shops CherryHills Market (housewares) and Sueño Jewelry Studio for handcrafted goods. If you’re hungry, grab a fast, easy and delicious bite at one of the Annex’s many gourmet eateries, which include Tim Kilcoyne’s Scratch Sandwich Counter, Seoul Sausages, Love Pho, PokeCeviche, Gasolina Café and many more. }}

CHOCOLATE CHIP FLEUR DE SEL COOKIES “Chocolate is just something I think about for the holidays,” says Angelique Williams, pastry chef of Café Ficelle. She loves the mix of sweet (from the chocolate) and savory (from the sea salt) offered by these chocolate-chip-with-a-gourmet-twist cookies. The secret, she says, is in the coarse sea salt and the top-quality ingredients: Williams uses Valrhona chocolate exclusively, and suggests that home bakers do the same. Crunchy on the outside, chewy on the inside, these cookies are one of the bakery’s top sellers. “They fly off the shelves!” Williams says with a laugh.

Preheat oven to 350 degrees. Sift together dry ingredients. In a stand mixer fitted with a paddle attachment, cream the butter and sugars on low speed. Add vanilla and scrape down the sides of the bowl, and mix for a few seconds longer. Turn off the mixer and add the dry ingredients and the chocolate chips; mix on low speed until dry ingredients are fully incorporated. Stop the mixer and scrape down the sides and bottom of the bowl, making sure no butter is at the bottom. Fold the dough with a rubber spatula to incorporate anything the mixer may have missed. Line a baking tray with parchment or baking paper. Using a 2-ounce ice cream scoop, scoop out balls of dough and drop onto the tray, the balls about 2 inches apart. With the palm of your hand, flatten just the tops of balls so they are not rounded. (They do not need to be completely flattened.) Bake for 12-14 minutes, or until cookies have flattened out and cracked a bit. For a softer 20

Ali Davis, co-owner of the Sugar Lab Bake Shop in Ventura, got this coconut cookie recipe from her great-grandmother, Loretta. “It was given to me a couple years ago at a family reunion and I knew we had to add it to our menu at the bakery,” she says. Crunchy almonds, earthy oats and shredded coconut add texture as well as flavor. “To me, Christmas is about spending time with family and sharing joy and love through baking,” Davis adds, “so this is my way of spreading the holiday cheer with family, friends and customers alike.”

Preheat oven to 350 degrees and line a cookie sheet with parchment paper. In a mixing bowl, cream shortening, brown sugar and granulated sugar together until fluffy. Add in eggs, one at a time, and beat until mixed. In a separate bowl, combine shredded coconut, almond slivers, flour, baking powder and baking soda. Whisk together. Slowly add ingredients to mixer until just combined. Fold in rolled oats. Using a cookie or ice cream scoop, scoop the dough onto the parchment, leaving about 2 inches between each cookie. Depending on the size of the scoop, you should be able to get at least six per tray. Bake for 12 minutes. Allow to cool and transfer to a wire rack to continue cooling. Makes about 20 cookies. Rich powdered chocolate and creamy white chocolate peppermint candies make this cookie a customer favorite during the winter months at the Sugar Lab. “This is a great cookie for Christmas since it combines the classic flavor of peppermint with a nice, dark chocolate cookie,” says Ali Davis. She uses a light hand with the peppermint extract, to keep it from overwhelming the chocolate, but feel free to play around with the quantity if you want a mintier punch. 1 stick (4 ounces) butter, room temperature ½ cup (3.5 ounces) granulated sugar ½ cup packed (3.7 ounces) dark brown sugar 1 egg, room temperature ½ teaspoon vanilla extract ½ teaspoon peppermint extract 1 cup (4.5 ounces) all-purpose flour 2/ cup (2.1 ounces) cocoa powder 3 1 teaspoon baking soda 1/ teaspoon salt 8 2 tablespoons milk 1 ½ cups Hershey’s white chocolate peppermint kisses, chopped PREPARE THE DOUGH In a medium bowl, whisk together flour, cocoa powder, baking soda and salt. In a separate bowl, cream together butter and sugars until light and fluffy. Add egg and vanilla. Scrape bowl as needed. Slowly add dry ingredients to the wet ingredients. Stir in milk and fold in chopped kisses. The dough will be very sticky. Refrigerate for 2 hours. BAKING Preheat oven to 350 degrees and line a cookie sheet with parchment paper. Using a cookie or ice cream scoop, scoop the dough onto the parchment, leaving about 2 inches between each cookie. Depending on the size of the scoop, you should be able to get at least six per tray. Bake for 12 minutes. Allow to cool and transfer to a wire rack to continue cooling. Makes about 10 cookies Cookies last for one week in an airtight container at room temperature, or frozen for three months. Half-Dutch, half-Spanish chef Sandra Cordero cut her teeth in the culinary world of Los Angeles, preparing local organic ingredients with a cosmopolitan flair at the popular Gasolina Cafe in Woodland Hills. She pays homage to both sides of her heritage in two local eateries that recently debuted at The Annex in The Collection at RiverPark: Pancake, specializing in (what else?) Dutch pancakes; and Gasolina, offering a taste of Spain. Cordero developed this recipe to celebrate the flavors she experienced on her family’s farm in Galicia. “From the saffron to the almonds to the hint of lemon, this cookie always tempts me to book the next flight to Spain,” she says. ½ cup butter, softened 1/ cup extra virgin olive oil 3 1 ½ cups sugar Zest of 2 lemons 1/ cup honey 3 3 cups flour 1 ¼ teaspoons baking powder 1 teaspoon salt 3 eggs 3 tablespoons orange juice 3 pinches saffron, bloomed in 1 tablespoon hot water 6 ounces almonds, toasted, salted and chopped Sugar for sprinkling on top

Preheat oven to 350 degrees. Combine flour, salt and baking powder in a bowl. In a standing mixer fitted with a paddle, cream sugar and honey with butter and olive oil until pale and fluffy. Add lemon zest and saffron. Combine eggs and orange juice and mix into sugar mixture until incorporated. Next add dry ingredients and mix until incorporated. Fold half of the almonds into the cookie dough. Using a 2-ounce scoop, drop balls of dough onto a parchment-lined sheet tray, the balls about 2 inches apart. Top with remaining almonds and sprinkle with sugar. Freeze until firm and bake for 10-12 minutes. Cool on a wire rack before serving. The recipe, courtesy of Kilcoyne’s mother, is simple to prepare, and the cardamom, cinnamon and clove will give off a delicious scent when baking. “If you are feeling really adventurous, I like combining a little bit of cayenne pepper, black pepper and cocoa powder to make it similar to Mexican hot chocolate,” Kilcoyne adds. 1 cup unsalted butter, softened 1 ¼ cup powdered sugar, plus more for dusting 1 teaspoon pure vanilla extract 1 large egg, beaten 2 cups all-purpose flour 1 teaspoon ground cinnamon ½ teaspoon ground cardamom ½ teaspoon ground cloves ¼ teaspoon cayenne pepper (optional) ¼ teaspoon ground black pepper (optional) 1 tablespoon cocoa powder (optional) ¼ teaspoon kosher salt ½ cup pecans, finely chopped

PREPARE THE DOUGH Using a mixer, cream the butter and 1 cup of powdered sugar until smooth. Add the vanilla and egg. Gradually stir in the flour, ground cinnamon, cardamom, cloves, cayenne, pepper, cocoa powder and salt. Stir in the chopped nuts. Form the dough into a disk, wrap with plastic wrap and chill until firm. BAKING Heat oven to 350 degrees and line a cookie sheet with parchment paper. Remove the dough from the refrigerator and quickly roll into 1-inch balls, making sure not to overwork the dough. Place balls about 2 inches apart on the baking sheet. Bake for 15 minutes. Remove from the oven and put cookies on cooling rack. Using a small sieve, heavily dust the tops with the remaining powdered sugar. Makes about 2 ½ dozen cookies. GRANDMA’S SUGAR COOKIES (GLUTEN-FREE) “When I was a little girl, at Christmastime, our grandma always baked a plateful of sugar cookies with green and red frosting,” says Amanda Pritchett, head baker at Ragamuffin Coffee Roasters in Newbury Park. With a nod to both family tradition and the modern diet, Pritchett devised this gluten-free version of the holiday classic. “A simple pastry can make someone feel all kinds of things, and with this cookie, I hope to bring about the simple nostalgia of childhood, simpler times, as well as the ringing-in of the holiday season,” she says. Its simplicity allows it to become a delicious canvas for the imagination, so make it your own by adding any number of flavorings, shapes and decoration. Note: Pritchett finds that gluten-free baking is best done using weight measurements, and she has included both weights and standard measurements in her recipe here.

5 ½ ounces ( 2/3 cup) butter, cold. 200 grams (1 cup) sugar 1 teaspoon vanilla 1 egg 4 teaspoons milk 280 grams (2 cups) gluten-free flour blend (Cup4Cup recommended) 1 ½ teaspoons baking powder ¼ teaspoon salt PREPARE THE DOUGH In a medium mixer bowl, using a flat beater, cream together sugar, butter and vanilla. Add the egg, and mix on low until the egg is just incorporated. Do not overmix! In a separate bowl, whisk together the dry ingredients. Add the dry ingredients to the sugar and butter mixture, mixing on low until the ingredients are just incorporated. The dough may look sticky, but it will firm up in the refrigerator. Divide the dough in half, wrap both halves with plastic wrap, and place in the refrigerator for at least 2 hours, or overnight. ASSEMBLY AND BAKING Preheat oven to 350 degrees. Using a blend of gluten-free flour blend and powdered sugar, generously flour a counter or other rolling surface, and a rolling pin. Remove the dough from the fridge and roll to ¼ inch thickness. For thinner cookies, roll to 1/8 inch thickness. Note: The colder the dough, the less the cookies will spread in the oven. Work with half of the batch at a time. Use your favorite cookie cutter to cut out the cookies. (With a nod to her grandmother, Pritchett prefers to use a juice glass or jam jar.) Place cookies on a baking sheet lined with a silicone mat or parchment paper and chill for 10-20 minutes in the refrigerator or freezer to re-chill the butter and prevent the cookies from spreading too thin or getting crumbly. Take sheet of cookies from fridge/freezer and place directly into a preheated oven. Bake for 6 minutes. The cookies are done when the edges are lightly browned. Remove from the oven and leave cookies on the tray for about 5 minutes. Carefully transfer them to a cooling rack to finish cooling. Frost generously with buttercream frosting (recipe below) and any desired decorations. BUTTERCREAM FROSTING 16 ounces powdered sugar 4 ounces butter, softened 2 ounces milk 1 to 1 ½ teaspoons vanilla Whisk together ingredients until light and fluffy. Add food coloring, if desired. Spread generously onto the sugar cookies. Makes 20-24 cookies, depending on the size of the cookie cutters. Store cookies in an airtight container for maximum freshness. hen it comes to winter fun, Carnaval de Quebec is the place to be! This annual tribute to all the joys of winter introduces visitors to everything from ice sculpting to tubing down snow slopes . . . and so much more. Carnaval de Quebec 2018 is set to take place Jan. 26-Feb. 11 in various locations around Quebec City, the charming capital of the Canadian province of Quebec, just north of the border and about a two-and-a-half-hour drive east of Montreal. Historically, the walls built around Quebec City — about a three-mile defensive belt — were meant to protect from attack by the British, and were later re-fortified by the British after taking Quebec from the French in 1759. But while any threat has long since passed, Quebec City still retains the distinction of being one of only two walled cities in North America. (The other is Campeche, Mexico.) Quebec City’s setting is on two levels, and a convenient funicular will easily take you from the lower part of town to the upper part, where you might wish to stay in the magnificent 19th-century Château Frontenac, site of the famous meeting of Franklin D. Roosevelt, Winston Churchill and Canadian Prime Minister MacKenzie King during World War II. I still fondly remember my earlier visit to Carnaval with its opportunity to enjoy the city’s Old World charm. By the time I arrived, the city had become a winter wonderland, with a thick layer of snow covering its colorful mansard roofs and ice floes slowing the St. Lawrence River. On the Plains of Abraham, a magnificent urban park, people were out enjoying cross-country skiing. Here and there I ran into Bonhomme

Carnaval, Carnaval’s cheery, big-hearted, redhatted snowman and “King of the Quebec Winter Carnival.” Among the activities of Carnaval 2018, one of the most interesting will be the International Snow Sculpture Competition, in which countries will try their luck sculpting ice, with competitors judged on the basis of technical, creative and thematic qualities. Teams will represent the United States, Germany, Italy, Ukraine, Ecuador, Argentina, France and, of course, Canada, last year’s winner. But you don’t have to be a member of one of these teams to give ice sculpting a try, because Carnaval will offer individual visitors an opportunity to sculpt through Ice Experience, a program for groups of 20 or more. And speaking of sculpture, Carnaval’s massive Ice Palace will be constructed in front of the Quebec National Assembly building, with entertainment scheduled inside and outside the palace. If you really crave the cold, however, the famous Ice Hotel, rebuilt every December about 30 minutes outside the city next to Village Vacances Valcartier, will offer chilly rooms for the night. I have to admit, on my own visit to Carnaval, I preferred the warmth of my “regular” hotel — but I did have a friend who stayed at Hôtel de Glace, and he managed to stay warm inside his sleeping bag. If you dispense with an overnight stay, you can still enjoy the hotel’s frosty beauty by having a cocktail at the bar, where your drink will be served as cold as a snowy night . . . in a glass made of ice. Winter sports are surely a highlight of Carnaval. If you’re into sledding, get ready for the famous Ice Slide on the Grande Allée. Those who go in for tobogganing should head for Terrasse Dufferin. giant foosball, snow tubing and other fun activities for kids and adults. I remember getting the thrill of my life by joining eight other souls in a giant inner tube as we went careening down a snow path. At one point, with my scarf flying wildly around my neck, I thought I would slip out of the tube, but I managed to make it to the bottom in one piece, joining everyone in wild peals of laughter. Quebec’s maple groves often have sugar shacks for tasting, and the sweet prize is served in an amazing variety of ways, from maple syrup crepes to a delectable dish I found on the menu of Restaurant aux Anciens Canadiens called maple syrup pie with fresh cream. But for a true Carnaval experience, consider wrapping maple taffy, spread on a board of fresh snow, onto an ice cream stick. One of Carnaval’s biggest events, the famous canoe race, will take place in the St. Lawrence River, starting on the afternoon of Feb. 3, with an opportunity to watch it from a boat. Two night parades will also be held — one in the lower part of town on Feb. 3 and another in the upper part on Feb. 10, along with plenty of musical entertainment. When visiting Carnaval, it’s a good idea to dress warmly and bring snow boots, warm gloves, a scarf and a hat. Chilly weather is a given during any winter visit, but the nip in the air is easily assuaged by a wonderland of activity . . . and a warm Quebec reception! v

M

agical princes, toys come to life, sugar plum fairies and dancing cookies — these enchanting visions leap from the imagination to the stage with every production of Tchaikovsky’s The Nutcracker ballet. It wasn’t always so: Its premiere in St. Petersburg in 1892 was met with a lukewarm response, with critics calling the choreography “disorderly” and “amateurish,” criticizing the ballet for using children instead of professional dancers and veering dramatically from the E. T. A. Hoffman story, which itself was an adaptation of the Alexandre Dumas, pére, original. Today, of course, a performance of The Nutcracker is one of those events that ushers in the holiday season, as much as Christmas carols on the radio and Rankin/Bass television specials. Rehearsals for the Ventura County Ballet Company’s production, which kicks off Dec. 2, started in September, with hour upon hour devoted to choreography, costuming, pointe work and precision. VCBC invited Ventana Monthly behind the scenes a few weeks before opening night to get a glimpse of how reality becomes fantasy, and to see the cast — young children from the ballet school, gifted students and seasoned professionals — in its natural element. These graceful dancers are living proof that dreams can come true. }}
