METHOD

1. Slice pupunha (heart of palm). Dice the garlic, onion and tomato. 2. Heat the olive oil, add the pupunha and sauté until golden. 3. Add the garlic, then the onion and lastly, the tomato. Sauté for 3 minutes on medium heat. 4. Then, add the coconut milk, cassava puree, dendê oil, cilantro and lemon juice.. 5. Stir and let it cook on low heat for another 10 mins. Salt to taste. Enjoy!

Oh, and don’t forget the drink s! The Caipirinha. It is one of the mo st classic cocktails in the world and Bra zil’s national drink. Its main ingred ient is cachaça and the drink is pro tected by law as the national patrimon y of Brazil. Cheers! INGREDIENTS • 2 limes, chopped into wedg es, plus extra lime wedges to serve (optional) • 6 tbsp golden caster sugar • 200 ml of cachaça • A few handfuls of crushed ice METHOD Put the lime wedges in a large jug with the sugar, then use a mu ddler or the end of a rolling pin to bre ak them down. Release as much juice from the wedges as possible, and let it mix with the sugar to create a syrup – you can also do this with a large pestle and mortar. Discard the lime peel. Divide the syrup and cachaça betwe en four glasses, then top with the cru shed ice. Serve garnished with lim e wedges, if you like.

METHOD

1. Preheat the oven to 200°C and add the potatoes to a pan with cold water (it should cover the potatoes). 2. Season it with salt, and boil over medium-high heat for approx. 10 - 15 min, or until soft. Drain and let cool. 3. Meanwhile, peel and chop the onions and garlic. 4. Chop the bacon into small pieces. 5. Heat the oil in a large saucepan over medium heat and sautÊ the bacon and onion for approx. 3 mins. 6. Add the garlic and saute for another 2 min. 7. Deglaze with white wine and cook for 2 min. 8. Peel and cut the boiled potatoes. 9. Add half the potato slices to a baking sheet. 10. Season with salt and pepper and cover with half the bacon and onion mixture. 11. Make a layer on half of the sliced Reblochon and repeat the process with the remaining ingredients. 12. Cover with milk and bake at 200ºC for approx. 30 - 40 mins, until the top turns golden brown. Enjoy!

METHOD

1. Gather the ingredients. 2. Wash, peel, and grate the potatoes. Place the grated potatoes in a clean dishcloth or cheesecloth and squeeze as much of the liquid as you can out into a bowl. Let the liquid stand a few minutes, then carefully drain, leaving potato starch at the bottom of the bowl. Add the potatoes back to the starch. 3. Grate the onion over the potatoes. Add salt, pepper, nutmeg, and egg. Mix thoroughly. 4. Heat oil in a frying pan. You can use a nonstick pan and just a few drops of oil if you wish, but for best results, use 1/8 to 1/4 inch of oil. 5. Drop about 1/2 cup of potato mixture into hot oil and atten with the back of a spoon. Fry 4 to 5 minutes on each side, or until golden brown. 6. Drain on paper towels and serve hot with applesauce and or sour cream.

METHOD

1. Combine tomatoes, cucumbers, pepper, garlic, vinegar, and water into the bowl of a food processor or blender. Blend until smooth, then add olive oil and blend to combine. Taste and season with salt, pepper, and more vinegar if needed. Cover and refrigerate until chilled. 2. Meanwhile, in a large skillet over medium heat, add enough olive oil to coat the bottom of the pan. Add cubed bread and cook, stirring occasionally, until bread is golden and crisp. Remove from heat, season with salt, and let cool. 3. To serve, pour the soup into bowls and top with basil, croutons, and a drizzle of olive oil.

METHOD 1. In a small bowl, whisk together the spices. Set aside. 2. In a large bowl, combine the chicken, yogurt, half of the garlic, half of the ginger, and half of the spice mixture, saving the rest for later. Stir, cover, and allow it to marinate for at least 15 minutes or overnight. 3. In a large, heavy bottomed pot or high-walled pan, heat the oil and butter over medium-high. Remove the chicken from the marinade and add it to the pot in batches. Cook until it’s browned all over and begins to char, turning once, about 6 minutes total. Remove from the pan and set aside for later. Repeat until all of the chicken is browned. 4. Add the chopped onion and the remaining garlic, ginger, and spices to the pot. Cook, stirring occasionally, until the onion softens, about 4 minutes. Add the crushed tomatoes and gently scrape the bottom of the pan with a wooden or rubber spoon to release the browned bits while stirring. 5. Pour in the coconut milk and add the chicken back to the pot. Stir and reduce to low heat. Let simmer for 10 minutes, stirring occasionally. Garnish with chopped cilantro and serve over basmati rice.

Have a taste and add more lemon juice or a splash of water if needed, then transfer to a serving bowl. 6. METHOD

1. Put the egg yolks into a bowl, finely grate the Parmesan, season with pepper, then mix well with a fork and put to one side. 2. Cut any hard skin off the pancetta and set aside, then chop the meat. 3.Cook the spaghetti in a large pan of boiling salted water until al dente. 4. Meanwhile, rub the pancetta skin, if you have any, all over the base of a medium frying pan (this will add fantastic flavour, or use 1 tablespoon of oil instead), then place over a medium-high heat. 5. Peel the garlic, then crush with the palm of your hand, add it to the pan and leave it to flavour the fat for 1 minute. Stir in the pancetta, then cook for 4 minutes, or until it starts to crisp up. 6. Remove the garlic from the pan, then, reserving some of the cooking water, drain and add the spaghetti. Toss well over the heat so it really soaks up all that lovely flavour, then remove the pan from the heat. 7.Add a splash of the cooking water and toss well, season with pepper, then pour in the egg mixture – the pan will help to cook the egg gently, rather than scrambling it. Toss well, adding more cooking water until it’s lovely and glossy. 8. Serve with Parmesan and an extra twist of pepper.

METHOD 1. Place bulgur in a microwave-safe bowl and cover with water just to the top of the bulgur. Place in the microwave and cook on High for 1 to 2 mins. until the bulgur is swollen and the water is absorbed. Toss briey and allow it to stand until cool. 2. Place the mint leaves in a food processor. Process, gradually adding onion through the feed tube, until both mint and onion are ďŹ nely chopped. Stir the mint-onion mixture into the bulgur, with the cumin, allspice, salt, and pepper. Stir the bulgur mixture into the ground lamb and mix thoroughly. Using damp hands, shape the beef and lamb mixture into small, palm-sized patties. 3. Place the olive oil in a skillet and heat over medium heat. Add the kibbeh patties and cook until the outside is golden brown and the center is cooked through, turning it once for about 6 mins. on each side.

METHOD 1. In a large bowl, mix all but 2 tbsps of flour (set aside) with the cornstarch and baking powder. Season lightly with salt and pepper. Whisk using a fork, add beer and sparkling water to the flour mixture and mix until batter is thick and smooth. Place batter in the fridge to rest for 30 mins. to 1 hr. 2. Cut the potatoes into slices (a little less than a half an inch). Place chips into a colander and rinse under cold water and then into a pan of cold water. Bring to a gentle boil and simmer for 3-4 mins. 3. Drain carefully and dry with paper. Keep in the fridge covered with paper until needed. 4. Lay the fish fillets on a sheet of kitchen paper and pat dry. Season lightly. Heat the oil to 350F in a deep-fat fryer. Cook chips a few handfuls at a time for 2 mins. Don’t brown them. Once slightly cooked, remove and drain. Keep to one side. 5. Place 2 tbsp of flour reserved from the batter mix into a shallow bowl. Toss each fish fillet in the flour and shake off excess. 6. Dip into batter, coating the entire fillet. Check that the oil temp. is still 350 F. Carefully lower each fillet into the hot oil. Fry for about 8 mins or until batter is crisp and golden, turning the fillets from time to time. 7. Once cooked, remove fillets from the hot oil and drain on kitchen paper. Sprinkle with salt. Cover with greaseproof paper and keep hot. Heat oil to 400F then cook the chips until golden and crisp ( 5 min.) Remove from oil and drain. Season with salt. 8. Serve with the hot fish and a side dish.

METHOD

1. In a large bowl, mix ground beef, onion powder, salt and pepper until just combined. Do not overmix, or your patties will be tough. 1. Divide into six portions and form patties, without pressing too hard. They should be uniform in thickness. Smooth out any cracks using your fingers. Make these right before you grill them, so they stay at room temperature. 2. Preheat your grill, grill pan or cast-iron skillet to high heat and add burger patties. If using a grill, cover with the lid. 3. Cook until the crust that forms on the bottom of the burger releases it from the pan or grate — about 2 minutes. Gently test, but don't flip it until it gets to this point. When burgers lift up easily, flip, add two slices of cheese to each, close the lid if using a grill, and cook on the other side for another 2-3 minutes for medium to medium rare. 4. Remove burgers with a sturdy metal spatula and transfer to a plate. Allow to rest for several minutes, then transfer to buns. 5. Garnish as desired and serve immediately. 6. To garnish: ketchup, mayonnaise, thousand island dressing, sliced red onion, sliced tomatoes, sliced pickles, fresh lettuce leaves.

La La Land (2016) This romantic musical film tells the story of a jazz pianist and an actress who fall in love and together, face several obstacles as they chase their artistic dreams in Los Angeles.

Brooklyn (2015) Set in the 1950s, the movie is about an Irish immigrant who moves to Brooklyn in New York City. She falls in love with a New Yorker and has to decide between staying in Ireland or returning to Brooklyn.

Hidden Figures by Margot Lee Shetterfly This nonfiction novel tells the true story of the trailblazing team of African American female mathematicians who played a major role in the NASA mission that sent the first man to the moon.

The Great Gatsby by F. Scott Fitzgerald Written in 1925, F. Scott Fitzgerald’s novel is set in New York City during the Jazz Age (referred to as the Roaring Twenties) and explores themes, such as morals, idealism, and the American Dream.

Into the Wild by Jon Krakauer This nonfiction book is based on a true story about self discovery. Chris McCandless sells everything he owns and sets off to explore the Alaskan wilderness and create a new life for himself.
