Baking Circle

Baking Circle • Preheat oven to 180c.

• Grease a 20cm sandwich tin and line the bottom with greaseproof paper.

• Strain the juice from the tin of pineapple rings and arrange the rings on the bottom of the tin – you may want to trim a few down to fit around the edges. When finished, place a cherry in the centre of each ring.

• Heat the syrup up in a saucepan to loosen its consistency, and then carefully pour this over the fruit.

• Sieve the flour and baking powder together into a separate bowl, add the sugar, butter/margarine and eggs and mix together until well combined and a smooth consistency.

• Spoon the sponge mixture carefully over the fruit in your sandwich tin.

• Place the tin in the oven and bake for 40 – 50 minutes, or until the sponge is well risen, firm and golden brown. (Tip: The sponge is cooked if you insert a skewer or knife into the sponge and it comes out clean).

• Once cooked, remove from the oven and allow to cool until the tin is cool enough to handle. To remove the pudding from the tin, place a plate over the sponge, turn both over and then gently shake to release the sponge.

Carefully remove the tin and peel off the greaseproof paper.

And ta-dah! You have an Upside-down Pineapple Cake!

A Charity based in Warwickshire (WRAP for short) has joined up with Galanos House to provide an information and support programme for those caring for a loved one living with dementia (LAALO) The programme covers the different types of dementia and all aspects of the journey you will undertake. There will be guest speakers that cover legal information and advice and medical facts, Carer’s allowance and much more.
