The last two weeks have been an exhausting rollercoaster of emotional highs (and a few disappointing lows) with our tremendous Olympic Games...and didn’t we get it absolutely spot-on?! After the opening ceremony, I felt that the athletics had a lot to live up to, but boy, did they deliver! The closing ceremony, ‘A Symphony of Music’, showcasing 4000 or so performers, Britain’s well known and equally respected music industry, displayed yet another jaw-dropping spectacle; a joy to behold which left me feeling upbeat and ready to tackle the world.

ave Fun, Stay Cool and Safe This Summer With weather set to improve, get together with family and friends for a garden party and barbecue. There are a lot of factors that make for great barbecues and memorable times outdoors.

Here are 5 tips for hosting a barbecue this season.

1. Safety First

Some basic rules first. Wash those hands before cooking and eating! Use separate chopping boards for raw and cooked foods, keeping these foods apart. Keep hot foods hot and cold foods cold.

Buy a meat probe to test to ensure the meat, especially poultry, is cooked properly.

Always light a traditional barbecue at least half an hour before cooking to allow for the flames to die down.

Avoid flare-ups by wiping off any excess marinades before placing it on the fire, and avoid overly fatty meats.

Kettle barbecues are great for giving a smoky flavour by cooking with the lid on. Keep a water spray handy to doist the inevitable breakout of flames.

2. Make a Kickin’ Sauce Let’s face it, a great barbecue is all about the sauce! Serious barbecue connoisseurs make their own sauces from scratch. Gather some recipe books and do some experimentation in the kitchen. Chose 3 or 4 versions of sauce that you

think are tasty, and then enjoy testing them when grilling.

Cover your chicken breasts, hamburgers, shish-kababs, and steaks with different sauces. Dig in and taste - test your concoctions. If none of your sauces make the grade, use your favourite store-bought sauce. Add a little of this or a dash of that and make it your own.

Using dried herbs such as rosemary, thyme, oregano in the coals will infuse the meat.

Fish such as monkfish and salmon is also fabulous on the barbie. Veggie skewers taste great - peppers, onions, mushrooms, garlic, all make for great variation. Crisp potato skins with a brushing of olive oil. The point is to give your guests a taste treat!

3. Keep your Grill Clean A few days ahead of time, make sure you clean your grill. This should include the actual cooking surface all the other parts as well.

Cooking on a dirty grill will add unwanted flavours to your foods. That is not a good thing. We say do it a couple days ahead

of time, because as the day gets near, or a rainy day keeps you from it, its easy to forget this step.

4. Plan Fun Activities

A volleyball court is awesome. An arsenal of soaker squirt guns or water balloons will keep young and old entertained. Most of your guests will be happy to sip a cold drink in the shade, others will want some fun things to do. Grandma’s and uncles alike may even like a pack of cards! Cover your bases and everyone will have a great time! A game of Jenga anyone?

5. Have Lots of Drinks

Staying hydrated is a safety measure that will ensure everyone enjoys themselves. Have a cooler located where everyone can see it and make sure it is stocked with ice and water bottles. Having an awesome BBQ this summer can happen when you remember these tips for quality time in the garden.
