It is well worth the wait, made with fragrant garlic, shallots, thyme and parsley. Served with a light and creamy swede mash, this dish is healthy as well as filling.

‘cheap as chips’ chocolate pots

Serves 4 Cooking time - 2 hours 30 minutes Skill level - easy peasy lemon squeezy

Ingredients • low calorie cooking spray • 400g small shallots • 100g back bacon rashers, all visible fat removed, chopped • 700g stewing beef, all visible fat removed, cut into bite-size pieces • 3 garlic cloves, finely chopped • 150ml red wine • 425ml beef stock • 1 level tbsp tomato purée • sprig of fresh rosemary • sprig of fresh thyme • 700g swede, peeled and cut into large chunks • 50ml vegetable stock • 1 bay leaf • pinch of grated nutmeg • small handful fresh parsley, chopped, to garnish

• Preheat your oven to 180C, gas 4. Place a large frying pan sprayed with low calorie cooking spray over a medium heat. Add the bacon and shallots and fry for 3-4 minutes until starting to brown. Add the beef. Stir-fry for 5-7 minutes over a high heat until browned.

• Stir in the garlic, red wine, stock, tomato purée and herbs.

Season, bring to the boil and then transfer to a casserole dish.

Cover and cook in the oven for 2 hours.

• Meanwhile, boil the swede for 12-15 minutes until tender. Drain.

• Add the stock and nutmeg, then season and mash.

• Divide the bourguignon and mash between 4 plates, garnish with parsley and serve.

Slimming World’s chocolate pots will be a big hit with the chocolate-lovers among your friends and family. Infused with dark rum, these rich, dark chocolate pots are really simple to make. They take just 20 minutes to prepare then you can leave in the fridge to set before serving. Serves 4.

Ingredients

Top each pot with a dollop of fromage frais and decorate with chocolate sprinkles and a white chocolate star.

Method

- Melt the chocolate in a heatproof bowl over a pan of simmering water then leave to cool for 10 minutes.

- Beat the egg yolks, sweetener and rum into the cooled chocolate.

- Whisk the egg whites until just stiff but not too dry then fold into the chocolate.

- Transfer the mixture into small serving glasses (shot glasses are ideal) and chill for 1 hour or until set.

• 60g dark plain chocolate • 3 eggs, separated • 3-4 tbsp sweetener • 2 tbsp dark rum • 4 tbsp fat free natural fromage frais, sweetened to taste • 1 level tbsp chocolate sprinkles, to decorate • 4 white chocolate stars, to decorate

S

ports activities are a regular way of life for many of us now, and involve people from across all age groups from those who have an avid interest to those who just wish to keep fit; from the elite professional to the casual participant.

Many of the injuries are the result of overuse i.e. playing too hard and too often e.g. tennis elbow, golfer’s elbow, and biceps tendinitis, or from not warming up properly beforehand or from not warming down after exercise.

Sometimes incorrect equipment can lead to injuries – ill-fitting footwear can cause hip, knee and foot injuries (e.g. Achilles injuries).

Reduced joint flexibility will affect the degree of performance and may result in injury if the player is unaware that they cannot perform to the same level as they used to, for example golfers who cannot turn at the waist as well as they used to, and the enthusiastic older footballer whose knees do not bend as well as they once did.

Young people especially are vulnerable in sport as their rowing bodies are often expected to perform to high standards and are putting exceptional physical demands on themselves. The good news is that although sports injuries are common, those who are fit tend to recover more quickly and easily from their injuries.

How Osteopathy can help An osteopath can help improve performance as well as treat the injuries being suffered. By using their knowledge of diagnosis and highly developed palpatory skills they can help to restore structural balance, improve joint mobility and reduce adhesions and soft tissue restrictions so that ease of movement is restored and performance enhanced.

For those of you wishing to keep fit, the osteopath can help you keep supple and improve muscle tone so reducing the risk of injury to soft tissues unaccustomed to the extra work they are being asked to do.

Advice on diet and exercise which will help you

with your specific sport may also be offered.

Remember • Begin slowly and build up, especially after an injury • Warm up first, and then warm down with stretches afterwards • Drink plenty of water when exercising • Exercise regularly, and try to alternate the types of exercise that you are doing every day • Following a joint injury apply ice to the area for 10 minutes, every hour, if practical • Apply a bandage to compress the tissues • Elevate and rest if possible Osteopathy and you Osteopaths consider each person as an individual. Utilising gentle techniques they will work with your body to create the perfect conditions to encourage the healing process.

To qualify, an osteopath must study for four to five years for an undergraduate degree. This is similar to a medical degree, with more emphasis on anatomy and musculoskeletal medicine and includes more than 1,000 hours of training in osteopathic techniques. By law, osteopaths must register with the General Osteopathic Council (GOsC). It is an offence for anyone to call themselves an osteopath if they are not registered.

The British Medical Association’s guidance for general practitioners states that doctors can safely refer patients to osteopaths.

Caring members of Banbury’s & Moreton-in-Marsh’s Slimming World groups have donated over 300 bags of clothes they’ve successfully slimmed out of to raise money for Cancer Research UK.

anbury and Moreton-inMarsh’s weight loss Consultants who run Slimming World groups, encouraged members, their friends and families in Banbury, Middleton Cheney, Kings Sutton and Moreton-in-Marsh to spring-clean their wardrobes and collect the clothes, shoes and accessories they’ve successfully slimmed out of to generate valuable stock for the Banbury Cancer Research UK shop.

Groups, which meet weekly were taking part in the organisation’s national fundraising campaign, the ‘Big Slimming World Clothes Throw’. Last year Slimming World’s Big Clothes Throw raised £1.7m for Cancer Research UK, and this year the organisation aims to raise £2m for the charity. With each bag worth up to £25, local consultants hope the contribution from all the groups held locally will help to reach that total.

Many students have used their qualifications to move into new careers – two students have gone on to join the elite Kew Diploma course, some have set up in business for themselves or gone on to work in public gardens. Others just enjoy the chance to learn something new, and to perfect their gardening techniques.

The RHS Practical courses are assessed - there are no examinations, so no stress. Level 2 is the starting point: you watch a demonstration of the most effective way to carry out a task like taking cuttings or drawing a seed drill, and then you practise until your assessor thinks you are competent. You learn week by week to identify a range of plants, pests and diseases, and at the end of the course, if you pass all the assessments, the RHS awards you a Level 2 Certificate.

If you want to take your skills further, you can progress onto a Level 3 course.

If you want to learn more about the ‘Why’ behind the ‘How ’, then the RHS theory courses in Plant Growth and Garden Planning can give you the background information that makes sense of garden techniques – why you prune Forsythia in June and Buddleja in February, and apples, when they are dormant to promote fruiting?

Who are BEST?

In 2012 former horticultural college lecturers formed BEST in Horticulture to teach RHS practical and theory courses at Ryton Organic Gardens, as well as offering online and correspondence courses for RHS qualifications.

In January 2016 The Academy of Practical Horticulture was formed, as part of the BEST Group, to concentrate on ‘face-to-face’ teaching at three sites across Warwickshire and Oxfordshire.
