Slimming World’s lemon

meringue pie

Serves 4 Prep time 20 minutes Plus 3 hours Syns per serving 4½

Bring a big slice of retro glamour to the table with this Slimming World take on a favourite English classic. The light meringue topping makes a gorgeous contrast to the tangy citrus filling.

Ingredients

• 1 level tbsp flour, for dusting • 250g ready made shortcrust pastry • 2 egg whites • 5 tbsp sweetener

For the filling

Method

• Make up the jelly according to the packet instructions and then set aside to cool.

• Break up the sponge fingers and divide between 4 dessert glasses. Pour over the cooled jelly and put in the fridge for 2 hours, or until it’s set.

• When set, top with the strawberries and spoon over the custard. Return to the fridge and chill for a further hour.

• Spoon over the fromage frais and then melt the chocolate in a bowl over a pan of simmering water and drizzle over.

• 75g sweetener • Zest and juice of 2 lemons • 3 egg yolks • 2 x 12g sachets powdered gelatine

Slimming

Roast Chicken, Potatoes & Thyme Serves 4. Ready in 1 hour 20 minutes

1kg potatoes, such as Maris Piper or King Edward, washed or peeled and cut into chunks 1 red onion, cut into wedges • 1 lemon, sliced • 2 bay leaves Large bunch of fresh thyme, broken into sprigs 1 tbsp tomato purée • 1 tbsp balsamic vinegar 120ml boiling chicken stock • 1.25kg chicken thighs and drumsticks, skinned Low-calorie cooking spray • Salt and freshly ground black pepper

Method

• Put the potatoes into a large shallow ovenproof dish in a single layer. Scatter over the onion, lemon slices, bay leaves and most of the thyme sprigs.

• Put the tomato puree into a bowl with the vinegar, stir in the stock and pour over the potatoes. Top with the chicken and coat it with low-calorie cooking spray.

Season to taste.

• Roast for 50 minutes or until the chicken is cooked through and the potatoes are tender.

• You can skin the chicken using kitchen paper to

help you get a good grip (for the drumsticks, peel skin away from the thick end then pull it off over the bony part).

Transfer the chicken to a plate and cover with foil to keep warm. Increase the oven temperature to 220C/Fan 200C/ Gas Mark 7 and roast everything else for 10 minutes or until the potatoes are turning golden.

Put the chicken back on top, garnish with the remaining thyme and serve hot with salad or your favourite vegetables.

ike many mum’s Karen Pigott found that after each of her children were born the baby weight seemed harder and harder to shift. “After my first three children were born I was able to lose weight fairly quickly, unfortunately 18 months after my third child was born I was diagnosed with breast cancer.”

Following aggressive, but successful treatment Karen was told she was unlikely to have any more children. To her delight she proved the doctors wrong by going on to have two more children. “I found that with my youngest two my eating habits had completely changed, I ate far more food, but probably not the food I should have been eating. I ended up putting on 6 stone with each pregnancy”.

Over the next 10 years Karen tried everything to lose the weight and was always looking for the next quick fix. “My confidence was at an all time low and it left me feeling totally inadequate. It wasn’t until I saw a friend who looked great, that I heard about Slimming World.” At the time Karen was living in Austria and was delighted to discover that she could follow Slimming World online.

“Finding a plan that my whole family could follow was key. I didn’t want to be cooking different meals for everyone. It was amazing to find that we could still enjoy family favourites like lasagne and chips. Food Optimising is so easy to follow and you can adapt it to your lifestyle.”

On returning to the UK Karen didn’t hesitate to go and join her local group to continue her weight loss journey. She had already successfully lost 1st7lb online. “Joining my local group was amazing. No matter whether you have had a good week or a bad week, the motivation you get from the group is brilliant.” With the support of her group Karen has gone on to lose another stone.

Her confidence has grown, she has become far more active and her children have learnt to make healthier choices. “It really has been a family journey where we have all benefitted from a healthier lifestyle”.

The impact on Karen has been so positive that she has decided to become a Slimming World consultant. “I know how my confidence was effected before I lost my weight that I want to help anyone else who is feeling the same. ‘cheap as chips’ chocolate pots

Serves 4 Cooking time - 2 hours 30 minutes Skill level - easy peasy lemon squeezy

Ingredients • low calorie cooking spray • 400g small shallots • 100g back bacon rashers, all visible fat removed, chopped • 700g stewing beef, all visible fat removed, cut into bite-size pieces • 3 garlic cloves, finely chopped • 150ml red wine • 425ml beef stock • 1 level tbsp tomato purée • sprig of fresh rosemary • sprig of fresh thyme • 700g swede, peeled and cut into large chunks • 50ml vegetable stock • 1 bay leaf • pinch of grated nutmeg • small handful fresh parsley, chopped, to garnish

• Preheat your oven to 180C, gas 4. Place a large frying pan sprayed with low calorie cooking spray over a medium heat. Add the bacon and shallots and fry for 3-4 minutes until starting to brown. Add the beef. Stir-fry for 5-7 minutes over a high heat until browned.

• Stir in the garlic, red wine, stock, tomato purée and herbs.

Season, bring to the boil and then transfer to a casserole dish.

Cover and cook in the oven for 2 hours.

• Meanwhile, boil the swede for 12-15 minutes until tender. Drain.

• Add the stock and nutmeg, then season and mash.

• Divide the bourguignon and mash between 4 plates, garnish with parsley and serve.

Slimming World’s chocolate pots will be a big hit with the chocolate-lovers among your friends and family. Infused with dark rum, these rich, dark chocolate pots are really simple to make. They take just 20 minutes to prepare then you can leave in the fridge to set before serving. Serves 4.

Ingredients

Top each pot with a dollop of fromage frais and decorate with chocolate sprinkles and a white chocolate star.

Method

- Melt the chocolate in a heatproof bowl over a pan of simmering water then leave to cool for 10 minutes.

- Beat the egg yolks, sweetener and rum into the cooled chocolate.

- Whisk the egg whites until just stiff but not too dry then fold into the chocolate.

- Transfer the mixture into small serving glasses (shot glasses are ideal) and chill for 1 hour or until set.

• 60g dark plain chocolate • 3 eggs, separated • 3-4 tbsp sweetener • 2 tbsp dark rum • 4 tbsp fat free natural fromage frais, sweetened to taste • 1 level tbsp chocolate sprinkles, to decorate • 4 white chocolate stars, to decorate

egular housecleaning can get rid of many allergy triggers and help relieve your symptoms.

Common mistake - using heavily scented cleaners could make your allergies worse, not better.

Here are some ways to keep your house clean and allergies under control: • Vacuum twice a week.

Make sure your vacuum has a HEPA filter as some allergens are so small that they pass right through a regular vacuum filter. That means that every time you vacuum, you could be sucking them off the floor

and shooting them into the air, where you breathe them in.

• Cut clutter. Piles of boxes or clothing can trap dust and hide allergens like dust mites and cockroaches.

• Wear a mask when you clean and when you’re done with your housework, leave the house for a few hours. It will limit your exposure to allergens you kicked up into the air.

• Keep the bathroom free of mold.

Scrub tiles regularly. Don’t forget the shower curtain, too. You may be able to toss it in the washing machine.

• Wash sheets weekly in hot water.

Make sure it’s at least 50 degrees celsius. That’s hot enough to kill dust mites.

MIDDLETON CHENEY ART GROUP

We are holding our annual Art Exhibition at Chacombe Village Hall, Thorpe Road, on Saturday 21st May and Sunday 22nd May. It will be open from 10am to 5pm each day.

There is plenty of free parking and it can also be reached on the 500 bus from either Banbury or Brackley. Entry is free.Tea/ coffee and cake will be available, enabling you to relax and discuss the exhibition. Some artists will be painting or drawing in the hall and there will be members of the group to answer questions and help.

Come along and see some of our work. We hope that regular fans will continue to support us and new visitors will come to see what is on show.

Artwork and cards will be for sale, so do come along and visit us.

Banbury Bavarian Bierfest!

Plenty of Bavarian style, fun, food and bier with linked arm swaying and rhythmic bier stein banging Music provided by The Oompha Band, featuring Heimi Winklestroker on Trombone and Herr Lipp on Clarinet!

A DJ to host the evening plus lashings of genuine German food catered for by Bestwurst, such as : Wursts, Jager Schnitzels, Schwein Steaks, Frikadellen, Kartofalsalat, Fries, Curry Sauce and Senf (with vegetarian options) followed by desserts such as Black Forest Gateaux and Apfelstrude with ice cream/cream.

The Bier is sourced from Munich and served to you in glass Steins by traditionally dressed JUNE Bavarian Waitresses (Madchens).
