elcome to the fifth edition of Voice African and Caribbean & Food Restaurant Guide. This 2020/2021 edition is digital! We started this journey in January 2016 and look how far we have come. With limited events at which to distribute the guide, this year we have embraced technology to ensure that this is shared far and wide. In this issue, the advertisements are linked to websites to provide direct access to the companies in the guide. Videos have also been included to confirm the adage…. a picture is worth a thousand words. Our 96-page keepsake is your essential directory for African and Caribbean cuisine throughout the United Kingdom. African and Caribbean cuisine continues to experience steady growth and increasing popularity which is demonstrated by its inclusion in numerous TV food shows with celebrity chefs. Veganism and Vegetarianism are also on the rise, chefs are reflecting this in their menus. With the recent lockdown during the Covid 19 pandemic, home cooking has become essential, and many people had the time to experiment or perfect their culinary skills. At the height of lockdown, cooking videos for African and Caribbean dishes became widespread and flooded social media platforms. Many more food businesses now trade online and so there is an increase of African and Caribbean food choices from numerous delivery services. In this new issue, we take you behind the scenes of some of our well-loved African and Caribbean cuisine; share the nutritional value of herbs, share an exciting variety of videos from our sponsor Grace Foods UK; provide current listings of African and Caribbean Food restaurants from across the UK. Producing the 5th edition of the guide was no easy feat with many persons still working remotely and several businesses slowly reopening. We are proud to be Britain’s leading black media group and we strive to continually support our community. super grains for you Baobab - Adansonia digitata

Baobab from the ‘tree of life’ contains vitamin C, calcium, fibre, prebiotics and other nutrients. The leaves are used for soups, stews, the fruit for tea, smoothies and baking. High in pectin, it is also used for jams. The powdered form is readily available the UK.

Moringa - Moringa Oleifera

Moringa leaves are rich in minerals and have a bitter taste. Dried or fresh, they are used for stews, soups, baked goods and tea. Moringa is available in dried leaf form in many African stores and in powdered form in health food shops.

Sorghum - Sorghum bicolour

Sorghum is a traditional African grain used for ‘pap’ and porridge. The grains can be popped like popcorn and it is also available as flour. University of Georgia research found that sorghum has more antioxidants than blueberries and contains anti-inflammatory properties. Sorghum has links to the American South where Sorghum syrup/molasses is widely used.

Teff - Eragrostis Tef

Gluten and sugar free, teff is an ancient grain that has been endorsed as a “supergrain”. It is rich in calcium and iron and teff flour can be used as an alternative to wheat. Teff is popularly used in bread and is used for injera, the national dish of Ethiopia and Eritrea.

Immunity Boosting Roasted Cauliflower, Grape and Wensleydale Salad Cauliflower is a great source of vitamin C which plays a key role in maintaining a healthy immune system. Baked Black Beans and Kidney Beans with Sweet Potato Wedges This easy recipe is full of beta-carotene, which is converted into vitamin A by your body. This helps your immune system fight illnesses and infections. Recipes Portobello Mushrooms with Halloumi Vitamin D is usually obtained from sunlight, but that may be difficult with limited hours outdoors. If you can find wild mushrooms in your supermarket then snap them up and substitute them in this delicious recipe – wild mushrooms grown in daylight can provide some vitamin D. https://vegsoc.org/recipes/portobello-mushrooms-with-halloumi/ Hearty Vegetable Curry with Raita and Brown Rice Iron is important in helping to boost your body’s immune response and this delicious dish contains plenty of it. Chosan Baobab Jams Review by Voice Food Guide

I

first met Eliza Jones at a Trade Show many years ago when she launched Chosan 100% organic Drinks. Chosan brings a taste of the exotic to you through their vegan friendly and gluten free baobab or hibiscus based food and drinks. All their products (jams, sorbets or drinks) are free of preservatives, artificial additives or colourings . I was really pleased to receive a set of the new Chosan range of artisan Baobab jams and spreads with exciting and zesty flavours. I have long known of the healthy properties, including antioxidants derived from Baobab, especially boosting the immune system. I first tried the Baobab Chocolate Spread,

and found it really creamy and tasty. I am not a chocolate lover, but I could get used to this. The Orange and Baobab Jam went down well on some crackers with some ginger tea. I would definitely recommend it. A few days later one of my colleagues had the Baobab Jam with Ginger which actually had a smooth warm taste. The ginger was just the right strength. The Banana and Baobab Jam was also very delicious and we had that with a bit of seeded toast. I certainly recommend the new range of Baobab Jams from Chosan as a tasty condiment, at breakfast or afternoon tea. n

The African Chef's Chakalaka Sauce takes meatballs to another level Simple Meatballs Recipe Ingredients n 500g Minced beef (10-15% fat) n Splash of Sunflower Oil n Knob of butter n 1 Jar of The African Chef n Chakalaka Sauce n Good Pinch Of Sea Salt n Good Grind Of Black Pepper Method Season the meat with the salt and black pepper. To form a large ball, one by one pull an even amount of meat and roll in the palm of

your hands to form a circular meatball. Once all the meatballs have been made, add them to a large pan of hot sunflower oil. Once the base of the meatballs are nice and brown, turn over using tongs and repeat this process, cooking for approximately 10 15 minutes or until all the meatballs are cooked with a nice brown coat. Once cooked, tip any excess fat into a bowl to remove and add a jar of Chakalaka to the pan. Stir through, cook for a further 5-8 minutes. Plate up and enjoy!

Sweet Potato and Coconut sauce Ingredients: (Serves 2)

For the Pan fried Salmon: 400g Salmon Fillets n 2 x tbsp. Sunflower Oil or Coconut Oil n Large Knob of Butter n Lemon n Salt and Ground Black Pepper n

For the Sweet Potato & Coconut Quinoa: n 75g Cooked Quinoa. n 3 tsp Ac Sweet Potato & Coconut Chilli Relish n 1 tsp Dried Parsley n 1 Cube Veg Bouillon Stock Cook the Quinoa in a pan of water seasoned with veg bouillon and set aside. Mix in the Sweet Potato Relish and add the parsley. For the Pumpkin Avocado Salsa: n 1 Avocado n 1/2 Red Pepper n Handful of Watercress n 2 tbsp. Toasted Pumpkin nuts n 1 tbsp. Toasted Pine Seeds n 1 tbsp Extra Virgin Olive Oil n Splash of Baobab Balsamic Dressing n Pinch of Sea Salt and Black Pepper Removed the skin from the avocado and slice into chunks. Finely chop the red pepper and add ingredients to the watercress. Toast the pumpkin seeds and pine nuts. Add the the salad with the balsamic dressing, olive oil and season.

Add the Salmon fillets to a medium pan of sunflower oil skin-side down. Season with salt and freshly ground black pepper. Fry for 2-3 minutes, then turn the salmon over and fry for a further 1-2 minutes, or until cooked through but not over. Add the lemon juice and serve. We enjoyed this recipe as a super healthy lunch or dinner. Salmon is an excellent source of high-quality protein, vitamins & minerals (including potassium, selenium and vitaminn B12) but its content of omega-3 fatty acids along with avocado - a great source of potassium, omega-3 fatty acids, and lutein. Because of the fat content in avocados, will facilitate absorption of fat-soluble nutrients (vitamins A, D, E & K) when combined with foods containing those nutrients.

T

he intention behind creating Ital Nomad is to showcase black owned vegan businesses worldwide. I wanted travellers like myself, who are Vegan to be able to find completely plant-based food spots across the globe and simultaneously be able to circulate money back into our community. There are thousands of black-owned businesses all across the world and I’ve made it a prominent part of my purpose to source them and introduce them to the rest of the community. The name ‘Ital Nomad’ is my combination of being black, vegan and someone who loves to travel, all in one. I chose ‘Ital’ as it is derived from the Rastafari community representing the livity of the movement and the importance of eating real food from the earth, more specifically

unprocessed food that is cooked with only natural seasonings such as vegetables and fresh herbs. When I think ‘Ital’ I think Rasta, and when I think Rasta I think about them being the liberators of Africans (both at home and abroad) this is demonstrated through the emphasis they place on knowledge of self, the importance of knowing your roots and the empowerment of the black race. The Rastafari movement started in Jamaica and is also where Ital Nomad was born. Ital Nomad was created off the back of a recent trip during which I came across an abundance of vegan restaurants. This is what inspired me to want to share the amazing vegan cuisine Jamaica had to offer. Which now brings me to the ‘Nomad’ part of my name. Nomad meaning: ‘a person who does not stay long in the same place; a wanderer’. I have always loved travelling and have always desired to relocate and have a change of lifestyle, somewhere to contrast the cold, grey winters I’ve always experienced in the UK, somewhere more warm, inviting, tropical and serene, just to simply experience a new way of living.


Aside from highlighting black owned vegan businesses worldwide, what I also hope to achieve with Ital Nomad is the decolonization of plant-based diets, as a lot of our community only know one side of our food culture and have not been exposed to any other parts of it. Throughout my journey of researching and networking, I have found a plethora of vegan chefs, restaurants and food services from countries such as: Nigeria, Congo, Jamaica, France, Ghana, Kenya, Ethiopia, South America, Barbados, Trinidad and so many more! Vegan food does not have to be ‘bland’ nor do you have to compromise culture to enjoy it. A lot of our ancestors lived off their land and indulged in purely fruits, vegetables, grains and herbs, so there is no reason why we can’t! I invite you to visit your local black owned vegan restaurants, to not only support them, but to experience the food, experience an alternative lifestyle and also try something you usually wouldn’t try before! n ital Nomad recipe:

FRITTAZ WITHOUT THE FISH (Callaloo and Seaweed Fritters) n ½ tin (270g) Callaloo n 1c Gram flour n 1 sheet of Nori Seaweed n 1C Spring Water (cold) n 1 Scotch Bonnet Pepper (finely chopped WITH seeds for added heat and flavour) n 2-3 stalks of Thyme n 1T All Spice n 1T Paprika n 1T Turmeric n 1t Cayenne n Oil to fry Add Callaloo, Nori and Scotch Bonnet Pepper into a mixing bowl and combine together. Next, add all the dry ingredients and mix. The mixture should not be too runny but not too thick where it forms a dough. Finally, add your oil to your frying pan and add small amounts of the mixture to hot oil and fry on medium heat till golden brown on both sides. Enjoy alone or as a side dish!

Preparation time 10minutes Ingredients For 4 persons Recipe 2 ounces Grace Pineapple Juice 2 ounces Grace Orange Juice 2 ounces Grace Tropical Rhythms Fruit Punch 6 ounces Grace Strawberry Syrup 4 ounces dark rum 6 ounces white rum 1 ounce lime juice 4 drops Angostura Bitters 6 cups cubed ice Seasonal Rum Punch Directions Combine all the ingredients in a shaker or jug, shake well. Pour into 4 chilled serving glasses. To Serve: Decorate with pineapple slice, maraschino cherry, parasol pick and a jumbo straw.

Sweetcorn Tatale Patti Sloley

Snack and main

Serves 2 Tatale is a classic Ghanaian savoury pancake, normally fried on a large black iron skillet. Call me biased, but my Grandma Elizabeth made the best tatale ever and for me the taste and aroma is a comforting childhood memory. I like to add sweetcorn for the texture and taste, grated courgette works equally well. 2 plantains - over-ripe - black skin ¼ scotch bonnet chilli n 1 onion, roughly chopped n 1cm/½ inch fresh root ginger, peeled and grated n 140g/5oz plain flour n salt to season n 1 spring onion, finely sliced n 100g/3½oz sweetcorn, pre-cooked oil to shallow fry n n

Method: 1. Peel the plantain and place in a blender together with the other ingredients, except the sweetcorn and oil, and whizz to form a batter. Stir in the sweetcorn. 2. Heat a large frying pan, add a little oil then pour half cup of batter in to form individual pancakes. Fry over a moderate heat until bubbles appear. 3. Turn the pancakes over and continue to fry until cooked through, pressing and flattening the pancake with a palette knife as it cooks. 4. Transfer to absorbent kitchen paper and keep warm whilst you cook the rest. Serve on their own as a snack, or with a bean stew.

Nori & Callaloo Fritters

(Gluten Free, Nut Free, Soy Free) Ingredients 2 cups Chickpea Flour n 1 cup chopped callaloo n 1 cup cold spring water n 1/4 cup Avocado oil (or oil of your choice) n 1 scotch bonnet finely diced n 1-2 spring onion finely sliced n 1-2 sheets of nori seaweed finely chopped (this will add the ‘fishy’ flavour) n 1 tbsp baking powder n 1 tbsp allspice n 2-3 stems of thyme (de-stalked) n 1 tsp paprika n 1 tsp turmeric n 1 tsp cayenne n 1 tbsp pink salt For garnish: flat leaf parsley, finely sliced spring onion (optional) n

Add the callaloo, spring onion, nori and scotch bonnet into large mixing bowl. Stir to combine everything together. In a separate bowl, combine all the dry ingredients (flour, baking powder and dry seasonings). Add the dry mixture over the vegetables and stir in making sure both are well combined. Slowly add the cup of cold water to reach desired consistency. The consistency should be thick enough to scoop out but not thick enough to create a dough. Pre-heat the oil on a medium-high heat and once the temperature has risen add your batter! Fry a few at a time to avoid overcrowding and causing the oil to cool down.

Fluffy Banana Spelt Pancakes (Sugar Free, Soy Free, Nut Free)

Ingredients 1-2 sliced bananas n 1 cup of wholegrain spelt flour n 1 cup of oat milk (or nut milk of your choice) n 1 tbsp of baking powder n 2-3 tsp of coconut sugar n 1/4 c of organic cold pressed rapeseed oil pinch of salt, cinnamon and a drop of vanilla extract n

Add all dry ingredients into a bowl, including 1 tbsp coconut sugar and mix well. In a separate bowl, combine oat milk and vanilla extract and whisk thoroughly. Pour the wet mixture into the dry and stir slowly, adding 1 tbsp of oil. The consistency should be not too runny or to thick as it should slowly fall off of the spoon. Once you’ve reached the desired con26 African & Caribbean Food Guide

sistency, pour the remaining oil into your pan and bring to a medium heat. Once the oil is hot, slowly pour your batter into the pan and create small even circles to form your pancakes. Tip: Grab the sliced bananas and place on top of pancakes whilst they are cooking! (Make sure they are well in the pancake as when you flip you don’t want them to fall out) Use roughly 3-4 slices per pancake. Fry for 5-6 minutes untill golden brown on both sides! Once your pancakes are cooked, sprinkle the remaining coconut sugar on top and garnish with any other toppings you wish. These pancakes especially go well with sweet and ripe mango and also agave syrup.

C

heryl’s Caribbean Kitchen started in March 2019 borne out of a request to provide prepared meals for kick boxers fighting out of Renegade Fitness Academy. My youngest son was one of their semi professional title winning fighters. This led to me providing healthy food and beverages for inter club events at the Academy. This wider exposure resulted in a contract to prepare food for a professional MMA cage fighter, Jamie Richardson, who wanted healthy prepared food with a Bajan twist. Jamie knew that I was not able to digest white starch and dairy, and I no longer ate meat so he knew that my meals would be exactly what he was looking for. The word began to spread via Jamil’s Hair Studio’s clientele so from this the demand for quality healthy snacks and meals mushroomed. My cooking and menu filled a gap in the local market as there were no Caribbean take aways in Stevenage at that time. I decided to

do a trial weekend and we called it Jerk Weekend, and it was extremely successful...demand was beyond anything I had imagined...So, for a short period of time we only offered chicken and a vegan mains, along with a small side menu. Eventually we extended the menu to inCheryl clude curry goat and Saint Luce my signature side dish - broccoli slaw. I was then asked to prepare business meals for a client as they wanted to watch their weight and improve their diets. One of my clients didn’t eat vegetables however, once they sampled my pumpkin coconut curry, chick pea and lentil curry and broccoli slaw, they could not get enough. The business has gone from strength to strength with a loyal client base...At Cheryl’s Caribbean Kitchen we have a set menu which we post on Instagram and Facebook, our menu includes home baked ‘Sweet Treats’ which are vegan. We are only open on Fridays and Saturdays, 4pm to 9pm for collection only. n

A dream becomes reality Jewel Isle Rum Punch is a dream turned reality for Anita Williams. She began to sense something life changing was coming her way.

I

n her own words she describes how “I could feel it, I could smell it, I could taste it, I knew a shift was coming but didn’t know in what shape or form or what it was about” Her life ambition was to own a posh classy restaurant, with an atmosphere of love. Her father himself was a successful and respected business man. After living here in the late 50s, he returned to Jamaica in 1963 and successfully ran 3 bars (pubs) and restaurant. He also was a property agent for people who lived in the UK and had properties in Jamaica. Entrepreneurship was his life as he bought his first home at age 21. Her mother emigrated to Canada from here in the early 70s and also went into property business. Before she left Jamaica she being trained by the infamous Madame Rose Leon she owned her own hairdresser salon. LIFE AMBITION “Stepping into my 40s, made me start to look into my culture, purpose, ambition

and the history of my generation” The conclusion I came to was that business is in the blood. I then started to think of what do I enjoy doing, and what do I do best. All that sat in my head was the restaurant and this was purely because of all the culinary delights I use to see my father cook, and Anita the delicious juices Williams he would make, he would juice anything going if you allowed him!! Rum Punch and Jerk Pork were his main two perfections. BUSINESS ACHIEVEMENT Anita who credits working for a leading soft drink manufacturer for over 15 years gave her the courage to venture on her path, took a career break and today with accreditations of Entrepreneur of the Year Award and Silver Award as British Female Innovator and Inventor for developing the new flavours still believe there’s more creativity in her yet still to come out. n

Oxtail recipe

Tinique Hay is the brains behind Hay Events, an Event Planning & Management service based in London, and specialising in delivering unforgettable events, which are professional, consistent and most of all above standards. Here she shares with Voice Food Guide, her favourite African and Caribbean Recipe. As an events organiser, I am always curious about the food that will be served at the events I am organising.To be true to my upbringing, my favourite is Jamaican Oxtail and this is my recipe. Ingredients

2 -3 tablespoon cooking oil 1- 2 pounds oxtail cut up medium pieces n 1 onion chopped n 2 teaspoon minced garlic n 1- teaspoon fresh chopped thyme n ½ teaspoon smoked paprika n 1 tablespoon ketchup /tomato paste n 1 Whole Scotch bonnet pepper n 2 green onions chopped n 5-6 Whole pimento seeds (allspice), n 1 Tablespoon Worcestershire sauce n 1- teaspoon curry or more adjust to preference n 15 ounce can butter beans , rinsed and drained n 1 teaspoon browning (optional) n 1 Tablespoon bouillon powder or cube (optional) n Salt to taste

1. Season oxtail with salt and pepper. Set aside

2. In a large pot, heat oil over medium heat, until hot, and then add the oxtail sauté stirring frequently, any browned bits off the bottom of the pot, until the oxtail is brown. If desired drain oil and leave about 2-3 tablespoons 3. Add onions, green onions, garlic, thyme, all spice, worcestershire,smoked paprika, stir for about a minute. Throw in scotch bonnet pepper, tomato paste, bouillon and curry powder, stir for another minute. 4. Then add about 4-6 cups of water , it’s best to start with 4 cups , then add as needed . Bring to a boil and let it simmer until tender (depending on the oxtail size and preference) about 2- 3 hours, occasionally stirring the saucepan. 5. About 20-30 minutes before you remove from the stove add broad beans. Adjust thickness of soup with water or stock

Here’s my Bajan Fish Cake recipe n 2 tbspn oil and fry 1 cup of finely chopped onions, leave to cool n 1 cup of plain flour n 1 tspn baking powder n 1 lightly beaten egg n 1 tbspn melted butter n 3/4 cup milk n 2 tbspn finely chopped spring onions n 230g salt fish, cooked and flaked n 1 tspn fresh hot pepper n 2 tspn fresh thyme n Salt to taste

Sift the flour, baking powder and salt into a bowl, make a well in the centre, and pour in the egg, butter and milk. Mixed together lightly, then add the onions, spring onions, salt fish, thyme and pepper. Stir well. Drop by spoonfuls into hot oil, but do not over crowd them in the pan. Cook for about 3 to 4 minutes until they are golden brown on both sides. Remove from oil and drain on kitchen paper

Here’s my oven-baked kelewele! Ingredients and method

1. Peel the plantain, chop into cubes and place in a bowl.

Kelewele (diced, spiced, oven-baked plantain)

2. Add the ginger, cayenne pepper, onion granules, salt and a drizzle of rapeseed oil.

n 2 plantains - ripe - yellow skin just starting to turn black n 1 tbsp grated ginger n Cayenne pepper to taste n 2-3 tsp onion granules n Salt to season n Rapeseed oil n Preheat oven to 180°C/fan 160°C/350°F/gas 4

3. Mix together to gently coat the plantain evenly. 4. Line a baking tray with greaseproof paper and spread the plantain over. 5. Bake for 20-25 minutes until golden and caramelised.

Eating In Ghana Jackie Morrison

I

left the UK on March 13, 2020 for a 6 day trip to Ghana and returned 150 days later, due to the recent pandemic & lockdown. I discovered how delicious Ghanaian food is and I wished I had tried it earlier. My favourite restaurant was The Addo’s, West Hills Mall. Main meals cost GHC 25, £3.50. I loved the atmosphere; their menu was compact, with many favourite dishes. These were ampesi (boiled plantain/ yam) with palava sauce (kontonmire/ cocoyam leaves) & fish, ground nut soup & tuna/salmon with fufu (pounded cassava) or omo tuo (boiled rice balls) and red red (boiled beans) served with palm oil & fried plantain. A nice cool Club lager complimented all dishes. With diminishing funds, I ate at a local Chop Bar in Achimota. For GHC 9, £1.30, I had fufu, palm nut soup, tuna, kontonmire & okra. I even pounded palm nuts in the village. The meals were so filling that I only ate twice a day! Oh, I can’t forget Shito, hot pepper sauce. Me eating pepper, unbelievable! At my apartment, I had access to cooking facilities, so I bought fresh fruits & vegetables at the markets. The pineapples & mangoes are the sweetest in the World. I quickly learnt how to barter to get Ghana prices from the market women, to avoid their tourist prices! The best part was learning to eat with my fingers, no more knives & forks for me! Now I’m back, I’m ordering takeaways. I miss the food so much. n
