We are what we eat. So, eat fresh and avoid processed food that

messes with your digestive system and you’ll feel more energised, maintain a healthy weight and good health.

CARBS Along with protein and fats, carbohydrates are 1 of the 3 macronutrients found in food and are our body’s main source of energy. Here I explain how carbs interact with our body’s functions, the link between carbs and weight loss and how the types of carbs you eat and when you eat them can keep you feeling satisfied and energised for longer.

THE SCIENCE BIT

In simple terms, once consumed, carbohydrates are broken down into glucose (sugar) before being absorbed into the bloodstream. From there, the glucose enters the body's cells, with the help of insulin. Unused glucose can be converted to glycogen stores found in muscles and the liver. However, if more glucose is consumed than can be used, it is converted to fat for long term storage of energy.

CARBS & WEIGHT LOSS

Reducing carbohydrates from your diet is often linked to weight loss. Why? • Cutting down on any food without replacing it, means a reduction in calories. • Eating more carbs than our body can use, means the excess is stored as fat. Smaller portions

equals less excess and less storage. Having less quick energy also means your body has to use its fat storage as fuel.

• Reducing carbs can lead to a drop in excess water and weight, as your body uses circa 3 lbs of water to process/store 1 lb of carbs. Do exercise caution, as cutting carbs completely is likely to leave you lacking fibre and struggling with energy levels. However, most people can afford to cut their carbohydrate intake by at least 20%.

TYPES & TIMING

Carbohydrates are usually classified into two groups - simple or complex, according to how quickly they break down into energy. Simple carbs such as non wholegrains, sugary snacks and drinks digest very quickly and rapidly increase blood sugar. By comparison complex carbs including

However, if you’ve been inactive and eaten carbs throughout the day, it’s unlikely they will need topping up.

S​ALMON SALAD WITH CITRUS-MISO DRESSING Preparation time: 20 minutes Cooking time: 10 minutes Serves: 2 Ingredients: 12 wild Alaskan keta salmon fillets 100g frozen edamame soya beans 115g pack baby spinach 100g radishes, finely sliced 80g trimmed sugar snap peas, halved ½ x 28g pack coriander, roughly chopped 40g roasted cashew nuts 2 salad onions, finely sliced Rice to serve

Dressing: 1 tbsp Miso Tasty White Miso Paste 1 tangerine, juice 2 tbsp groundnut or sunflower oil 2 tsp maple syrup 2 tbsp Japanese rice vinegar

Preheat the grill to high; arrange the salmon fillets, skin-side down, on a foillined baking tray. Whisk all the dressing ingredients together and spoon a little over each fillet; set the rest of the dressing aside to serve.

Grill the salmon for around 8 minutes – thicker fillets may take longer to cook through. Meanwhile, blanch the edamame in a pan of simmering water for 3 minutes; drain.

Divide the spinach, radishes, sugar snap peas, coriander and edamame between two plates. Lift the salmon fillets from the tray (leaving the skin behind) and lay on top. Drizzle over the dressing (you won’t need it all – any left over can be stored in the fridge for up to 3 days). Roughly chop the cashews, then scatter over the salad along with the onions and serve immediately. Serve with steamed rice on the side.

ROASTED SWEET POTATO & GOAT CHEESE SALAD Preparation time: 15 minutes Cooking time: 25 minutes Serves: 4 Ingredients: 500g sweet potatoes 1 tbsp olive oil 50g pecan halves 2 tbsp extra virgin olive oil 1 small red onion, finely sliced 130g pitted black olives, drained and roughly chopped 1½ tbsp balsamic vinegar 250g pack pre-cooked red and white quinoa 115g pack baby spinach 125g soft goat cheese, crumbled Squeeze lemon juice

Preheat the oven to 220˚C, gas mark 7. Rinse and cut the sweet potatoes into 3cm chunks (no need to peel) and toss with the olive oil in a large roasting tin. Season and roast for 25 minutes, stirring halfway. Put the pecans in a smaller roasting tin and place in the oven for the final 6 minutes of the cooking time.

Meanwhile, heat the extra virgin olive oil in a small pan over a low heat and very gently fry the red onion until softened, about 4-5 minutes. Tip in the olives and balsamic vinegar, warming through, then season and set aside.

Heat the quinoa according to pack instructions. When the sweet potatoes are done, take out of the oven and stir through the quinoa to combine. Transfer to a large serving plate with the spinach, then roughly chop the pecans and scatter over. Spoon over the red onion, olive and balsamic dressing and top with the goat cheese, a grinding of black pepper and a squeeze of lemon juice.

VIETNAMESE-STYLE CHICKEN & NOODLE SALAD Preparation time: 20 minutes Cooking time: 15 minutes Serves: 4 Ingredients: 2 lemongrass stalks, tough outer leaves removed 1 tbsp Cooks’ Ingredients Nam Pla Fish Sauce 1½ tbsp light brown soft sugar 40g fresh root ginger, peeled and cut into matchsticks 1 red chilli, finely sliced 2 chicken breast fillets 1 tbsp toasted sesame oil 200g pack dried rice vermicelli noodle nests 4 little gem lettuce hearts, shredded 3 carrots, peeled and pared with a vegetable peeler 1 cucumber, halved, deseeded and cut into half moons 2 limes, zest of 1, juice of both ½ x 25g pack Thai basil 15g Cooks’ Ingredients Crispy Fried Onions

For the dressing, halve the lemongrass stalks widthways, then bash the thicker ends and finely chop the thinner ends. Place both in a small pan with the fish sauce, sugar, ginger, chilli and 5 tbsp water. Bring to the boil, simmer for 3-4 minutes then set aside to cool.

Heat a griddle or frying pan over a high heat. Put the chicken breasts between 2 sheets of cling film or baking parchment and flatten out with a rolling pin until about 1cm thick. Brush with ½ tbsp sesame oil and griddle for 4 minutes on each side until cooked through, the juices run clear and there is no pink meat. Slice into thin strips.

Meanwhile, put the noodles in a large bowl and cover with just-boiled water. Leave for 10 minutes, then drain and toss with the remaining ½ tbsp sesame oil. Divide between 4 plates with the prepared vegetables and cooked chicken. Remove the thick lemongrass stalks from the dressing, stir in the lime zest and juice and spoon over the noodle salad. Pick the leaves off the Thai basil and, along with the crispy fried onions, scatter over to serve. URBAN FOX JULY 2019 27

GOOD Make light work of the strawberry season with these deliciously easy desserts.

STRAWBERRY SHORTCAKE ICE CREAM Ingredients: 400g strawberries, hulled 1 litre vanilla ice cream 200g pack butter shortbread fingers, broken into small pieces 4 tbsp Waitrose Seriously Buttery Caramel Dipping Sauce Method: Thinly slice 4 of the strawberries and roughly chop the remainder. Line a 1.5-litre loaf tin with a double layer of clingfilm, allowing for some overhang. Arrange the sliced strawberries in the base of the tin. Using a large knife, roughly chop the

ice cream then mix with the chopped strawberries and the shortbread pieces. Spoon half of the mixture into the prepared tin, patting down firmly so there are no air bubbles. Dot the caramel sauce on top of the ice cream then cover with the remainder of the mixture, firmly smoothing over the surface. Fold over the overhanging clingfilm and place in the freezer for several hours or overnight until very firm. To serve, gently lift out the ice cream and remove the clingfilm. Leave to soften for 10–15 minutes then slice thickly with a large knife.

STRAWBERRY MALLOW MOUSSE Ingredients: 400g pack strawberries Grated zest and juice 1 orange 40g caster sugar 250g mini white marshmallows 2 x 200g tubs fromage frais 2 tbsp roughly chopped pistachios Method: Reserve 6 small strawberries for decoration. Hull and roughly chop the rest and put them in a saucepan with the orange zest and juice, plus sugar. Stir over a gentle heat until the sugar has dissolved, then simmer for 5–10 minutes until the strawberries are soft and pulpy. Mash with a fork and stir in the marshmallows until melted. Transfer to a bowl and set aside to cool. Fold the fromage frais into the strawberry mixture and spoon into 6 serving glasses. Chill for at least 6 hours, until set. Hull and slice the reserved strawberries and arrange on top of the mousses. Scatter over the pistachios to serve

ENEMY We’ve all heard her — that mean, inner voice that speaks up whenever we’ve made a mistake, or something didn’t turn out as we planned it. Silencing negative chatter is one of the wisest things you’ll ever do, says Sarah Mettrick. Do the words ‘should’, ‘must’ and ‘have to’ feature heavily in your everyday dialogue? Do you still believe you can conquer that ‘to do’ list if you go quick enough? Has berating yourself become a daily pastime? Or maybe you’ve lost your sense of fun and can’t find time to look for it! If anything sounds familiar here, you’re not alone. For many women life has gotten far too serious and it’s time to lighten up. It takes years of training to get this serious, children laugh a lot, far more than adults. As we grow we learn to self-criticise and that’s a sure way to suck the joy out of life. Can you imagine telling a friend they look like the back end of a bus, are crap at parenting, are always messing up and are about as talented as a goldfish? We’d be Billy No-Mates in no time. Yet our inner critics can yap away like this endlessly. It’s not on! We need to practice self-kindness, laugh at ourselves, reduce expectations and relish in being perfectly imperfect. We trick ourselves into thinking that once we’ve banged out all the jobs we’ll somehow feel calm and chilled. However, the list is endless so we need to learn to live happily alongside that list and in spite of it. I’ve become so intent on ticking all the boxes before I let myself relax each

evening my children may as well have a robot for a Mother. Dinner 1- tick, Dinner 2 - tick, kit washed- tick, stay off the wine - no tick. I even take on their stuff as my own which makes me controlling and bossy. Why do they need to do their homework before I can chill out? Striving for control is a natural instinct but also exhausting and we need to let go if things don't happen on our preferred timeline.

"bend the rules, stop comparing, engage in the present, be impulsive, give laughter free passage, be silly..." So, what can we do to lighten up, have more fun and regularly belly laugh again? Well just that, we need to lighten the load. We can become rigid, full to the brim with chores, worries, guilt, regrets, insecurities and so on. Not only do we feel lighter and happier when we drop this unnecessary baggage those around us benefit too. When we step out of the intensity we’ve created for ourselves and stop getting bogged down,

worked up and continuously distracted we can lead the way on the mood front for all the family. If we’re happy, relaxed and in the moment, the karma will spread. So much stuff doesn't matter, choose your arguments wisely. Learn to let things go and reap the benefits of being more laid back. This doesn't mean letting our kids go feral or not achieving goals, but embracing patches of chaos with humour, being flexible and accepting life will flow in all directions albeit different from our expectations. So, bend the rules, stop comparing, engage in the present, be impulsive, give laughter free passage, be silly and accept others do things differently. It’s easy to lose perspective over incidental things so let’s be intentional on lightening up. Go ditch that negative chatter ladies and go easy on yourself, we’re all amazing and it’s time to become our very own cheerleaders.

Form Model, actress, fashionista, director: Chloe Sevigny has lived her life unapologetically both in front of and behind the camera – but as she looks back on a life in the spotlight, the star finds there’s much more to life than just looking good.

As one of showbusiness’ adagedefining ‘It Girls’, it’s no wonder that Chloe Sevigny has often found herself tasked with meeting the high expectations of the world’s press. Her repeated brushes with the more avant-garde aspects of independent filmmaking have, on occasion, led to some less than positive reviews. True to her New Yorker heritage, however, Sevigny has always fiercely and fearlessly defended her creative choices when the spotlight has been cast upon her. That being said, despite the raised bar Sevigny’s media profile has afforded her, the star is open about the more laissez-faire elements of her professional attitude. “I probably have been too laid-back when it comes to promoting myself and going after work,” the 44-yearold nods. “I love acting and I’m very focused when I’m involved in a project, but I’ve never won a part by auditioning for it. This business can create a lot of anxiety if your films aren’t getting seen and you can’t get a meeting with important directors because you’re just not bankable. I’m just lucky that I’ve been offered a lot of work by different kinds of directors and so I’ve never really had to freak out about sitting around and doing nothing.” It’s true that Sevigny’s time onscreen has seen her work with a host of Hollywood’s most famous directors, from David Fincher to Jim Jarmusch and Werner Herzog. Sevigny herself has also spent time behind the camera, showcasing yet again the multi-faceted nature that has taken her from the catwalk to the silver screen.

“I love directing and I love to have the chance to tell stories in my own way,” she nods. “As an actress I often find myself having a lot of ideas but it's difficult to be heard most of the time. I enjoy being able to bring my own vision and have a greater say in the process.”

In much the same way that her filmography has often divided critics in terms of its artistic merit, Sevigny’s time on the red carpet has come under intense scrutiny – but as usual, the star is less interested in acceptance and content just to flex her fashionista muscles. “It's a hobby as much as it is a passion of mine,” she says. “I still love studying fashion magazines and looking to come up with ideas and looks that are a fun way for me to express myself. I look at fashion as a way of penetrating into the culture of young people and the new generation and I try to understand how young people relate to each other through the clothes they wear. It's always fascinating for me. I still think a lot about what I wear. These days, however, with her status as a fashion icon firmly locked down, Sevigny is taking the time to avoid the burden of always having to look great: “I’m trying to

simplify my life,” she explains. “I want to own less stuff,” she says. “Apart from my closet in New York, I rent a storage unit in Connecticut, actually, two units, where I keep all my clothes. But I recently did a major clean-up and I've kept only the most important outfits and accessories from big events like the Golden Globes, the Oscar and the Met Gala. I make a point of recycling my clothes, so I give everything to charitable organizations or sell them or give them to friends. I think we all have too many objects in our lives. There's this need to buy – how to fill a void or feel sexier – what does it really mean? I'm trying to understand a lot of things about myself, about my relationships with others, and how so many pieces of clothing define or alter my image.” Some might consider this outlook ironic coming from someone as connected to the fashion industry as Sevigny, but behind this exterior, there’s a homeliness to the star, and a sense of a bohemian often at odds with the vagaries of her professional persona. “My first trip abroad was when I came to London to see my high school sweetheart when he was studying in university. We took the ferry across the Channel and then took a train to Paris and spent the weekend there. We hardly had any money at all, but we had a great time there. But I'm too much in love with New York City to move to France. I just love being there - it's home. I can't see myself ever living anywhere else.”

ENTRANCE

The front door is called ‘the mouth of Chi’ in Feng Shui. That’s because this is how your house absorbs Chi or energy. So, ensure it’s well-maintained, doesn’t squeak and has attractive hardware. The colour of the door is also important. If it’s south facing use colours associated with the fire element such as red, orange or yellow. If it’s facing north, try using blue or black. Avoid having a mirror in your entrance hall facing the front door as it pushes away all the good energy that could otherwise enter the house.

LOUNGE

Keep your living area clutter free, organised and clean. To create balance, ensure that your décor incorporates all five elements of Feng Shui (wood, fire, earth, water, metal) but in varying

proportions. You should also consider how the elements react side-by-side. For example, if you have a fireplace, avoid placing an aquarium close by, as the fire and water elements interact creating conflicting energies.

BEDROOM

This should be a quiet and tranquil space. Use calm and neutral colours and leave windows open. This will keep the room full of oxygen, helping you to relax better. Your bed is also important. Choose one with a solid headboard and good mattress and use quality sheets made from natural fibres. Avoid beds with built-in storage as they don’t allow the energy to circulate. Finally ensure your bed is approachable from both sides and isn’t in line with the door.

KITCHEN

The part of the home thought to

nourish and sustain life. Start with the basics and keep your kitchen bright and airy, clean and clutter free. Although there are a lot of things we need in the kitchen, keep it simple and don’t overload countertops with gadgets. A mini herb garden is a great addition. It creates a vibrant energy that connects you to nature. If space is an issue, a bowl of fruit, cut flowers, or a plant on your kitchen table will produce similar results.

BATHROOM

Ensure your bathroom is more than functional, a place where you can soothe aware the stresses of another busy day. Create a spa environment through calming candlelight (or a dimmer light), plus essential oils and fragrances to calm or invigorate you, depending on your mood or the atmosphere you want to create. Decorate using earth colours (green, neutrals) or metal colours (white, grey) and incorporate indulgent products such as luxurious towels, lotions and potions. Now just go with the flow. When choosing secateurs for pruning, choose a model that is the right size for your hand or that can be adjusted for various users. Secateurs that are too big will cause hand strain.

Standard gardening gloves will typically suffice, but for tackling thorny jobs like roses or brambles, switch to a gauntlet glove. What you can lose in dexterity, you’ll gain in protection.

If you find watering a chore, forget lugging heavy watering cans and traditional garden hoses. Use a lightweight coiled hose

PLAN... You’ve found the perfect destination, booked your flights and bought those holiday essentials. Now comes the real challenge, says Kirsty France, packing the family suitcase.

Aren’t summer holidays wonderful? You get to switch off and relax. Whether you’re heading to an old favourite or discovering somewhere new, it’s your time to chill out and enjoy some time with your loved ones. In theory, at least. The reality is that we spend the time leading up to our holiday getting stressed out with planning and doing a mountain of laundry so you can pack. By the time you arrive at your destination you’re completely frazzled and need a week off just to recover. I decided to do things differently this year. Here’s my guide to getting ready for your holiday without the stress.

MAKE A LIST

I love lists. Mainly because I can buy more notebooks. I’ve fallen out of the habit of making a packing list but I’m going to start again. My lists were really useful when my children were still in the baby

and toddler stage, simply because there was so much extra kit to transport. Now I’ve realised that a list helps me focus on what we really need. I can think about how we’re going to spend our time on holiday and that makes me happy. When you make your list, ask yourself what you’re going to be doing. Are you spending your holiday by the pool or on the beach? Are you dressing up for the evening or spending it playing board games with the kids? You might find you need a lot less than you thought.

CATEGORISE YOUR PACKING

This sounds boring but I promise it’s useful. Grouping similar things together makes everything easier to find. You can get to the airport knowing exactly where your passports, tickets and currency are. The kids’ games and snacks will be easily accessible. Having a snack instantly available has prevented WWIII breaking out in the back of my car more than once. When you reach your destination, you might be able to use the pool even if your accommodation isn’t ready yet. Find your kit quickly and you can have

fun swimming instead of hanging around a reception desk. I’ll often pack the children’s pyjamas near the top of the bag if we’re arriving late in the day so they can go to bed and I can unpack after a glass of wine. Even putting stuff away is easier.

FOCUS ON THE FUN STUFF

Remember when you decided where you were going on holiday? I’m hoping you chose your destination because there was lots to do (or even because it had a great beach to lie on for two weeks). If you’re getting stressed out, remind yourself why you’re going. Look at the tourist guides or go on TripAdvisor for local activities and days out. Imagine yourself stretched out on that sun lounger with a cocktail in your hand. That won’t be me, but I can dream. If nothing else, it’ll help you work out what you need to pack. It might even get you excited about your holiday again. I’ll sound one note of caution. Don’t stress yourself out with over planning. Sometimes wonderful things can present themselves when you get on holiday. You’re even allowed to do nothing if you want. Wherever you go, have a wonderful (and relaxing) holiday! I met Richard in 2004 and 3 years later we married on his family farm in Nanpantan. Richard was farming and working at NFU Mutual, so I became more involved in supporting the family business around my full-time job. Following our own ‘DIY’ wedding, Richard and I thought there was a gap in the market for outdoor weddings. People wanted support behind the scenes, not just a field on a farm. So, in 2012 we started Bawdon Lodge Events and a year later our daughter Annabelle was born. As we’ve grown, our focus has been on giving our clients peace of mind. We co-ordinate everything, which can mean having alpacas walking down our woodland aisle, to grand arrivals

Over the past 7 years we’ve increased our events. It’s important for us as a local business to be a positive and sustainable employer and actively support other businesses and the local community. We’ve hosted Artisan Fairs for local businesses, collaborated on events such as ‘Theatre in the Barn’ with the ESNA Players Theatre Group and run an array of workshops in our meeting room. I’m also keen to support and raise the profile of charities through community events, including Barn Dances, Gin-ema nights and Open Farm Sunday. We attend networking groups and are Business Sponsors of Charity Link Leicester. We’ve also supported Rainbows, Leicester Hospitals and local churches through our events this year. We’re continuing to diversify too. We’re winners of the National Forest Tender
