BOOST It’s time to shake off the winter blues and spring into action with renewed energy and motivation, says Rebecca Watts at TheStudios40. Spring is incredible for lifting your spirits and focusing on your health goals. Here’s a few ways you can boost both your physical and mental health.

Longer days

In days gone by, people lived by the seasons and would only be out and about in daylight hours. However, our modern busy lives are the same whatever the season. It’s not unusual in the winter months for people to go to and come home from work in the dark. With the lack of natural daylight sapping our physical and mental energy, it’s not surprising that as many as 1 in 3 people in the UK suffer from seasonal affective disorder or SAD. But the start of spring brings lighter and longer days and with it a new wave of energy and motivation. It’s important that we make the most of these longer days and use them to be active. Try getting up 30 minutes earlier and take the dog for a walk, go for a run or cycle to work. Alternatively make a stop at the gym on your way home.

Seasonal sun

There’s something about sunny spring mornings that boosts our feel-good hormones. Even if it’s a little chilly, the sunshine helps to lifts our spirits. The sun is also our best source of vitamin

D, needed to promote healthy bones as well as support our immune, brain and nervous systems. The amount of sun needed each day is not an exact science and can vary with skin colour and type, but it is thought that as little as 9 minutes a day can help to boost your reserves. Get your daily dose of Vitamin D with a 10-15 minutes lunchtime walk and use your weekends to get the most from the sunshine and the great outdoors. Put away your phones and tablets and reconnect with nature, which will naturally boost your mental health too.

Spring clean

Spring is the perfect time for vegetable lovers, when local, seasonal foods become varied and more exciting. Eating seasonally and locally, is not only better for the environment it’s great for your health too. Fruit and vegetables have been shown to be more nutritional in their natural seasons, they are grown more naturally, they taste better and work more effectively with our own natural cycles. Spring sees the start of leafy greens, salad fruit and vegetables and asparagus. Why not support your local farmers or get the children involved and grow your own?

SPAGHETTI WITH PEA, ALMOND & MINT PESTO Preparation time: 10 minutes Cooking time: 15 minutes Serves: 2 Ingredients: 200g garden peas 180g spaghetti 3 tbsp extra virgin olive oil 1 tbsp Cooks’ Ingredients Frozen Chopped Garlic 2 tbsp toasted flaked almonds 1½ tbsp finely grated parmigiano reggiano Large pinch dried chilli flakes (optional) ½ lemon, zest, rest cut into wedges 10 mint leaves, shredded

Cook the peas in a pan of boiling water for 3 minutes then drain and set aside. Meanwhile, cook the spaghetti in a separate large pan of boiling water.

Return the pea pan to a medium heat with the oil and fry the garlic for 2 minutes until fragrant, then stir in the peas, coating them in the oil; remove from the heat. Tip ⅔ of the peas into a small food processor with the almonds, cheese, chilli (if using) and lemon zest. Season and pulse to a rough paste, then return to the pan with the whole peas.

Scoop a cupful of cooking water from the spaghetti then drain and return to the pan. Stir the pea mixture into the pasta along with a splash of the cooking water and toss together, adding more water as needed to make a loose pesto that coats the spaghetti. Stir through the mint and serve with lemon wedges and extra parmigiano reggiano, if liked.

Cook’s tip: This pea pesto is also great served on toast, topped with strips of Parma ham or a poached egg.

PUY LENTIL, ASPARAGUS & EGG SALAD Preparation time: 15 minutes Cooking time: 20 minutes Serves: 4 Ingredients: 3 tbsp extra virgin olive oil, plus extra to drizzle 1 ½ tbsp red wine vinegar 1½ tbsp dijon mustard 1 tbsp finely chopped shallot 1 tsp clear honey 375g cooked puy lentils (175g raw weight) 6 free range eggs 400g pack asparagus, ends trimmed Small handful flat leaf parsley, chopped 1 tbsp chopped tarragon

In a large mixing bowl, whisk together the olive oil, red wine vinegar, mustard, shallot and honey; season. Toss the lentils into the dressing.

Meanwhile, lower the eggs into a pan of boiling water. Simmer for 6½ minutes, then drain and cool in a bowl of cold water. Rinse out the pan, then fill with water and bring to the boil. Add the asparagus and simmer for 2 minutes (thicker spears may need longer while thinner spears less), then drain.

Toss the asparagus and herbs through the lentils, then arrange on a large serving plate. Peel and halve the eggs and place on top, adding a grinding of black pepper and a drizzle more oil, if liked.

Cook’s tip: Swap asparagus for tenderstem broccoli. Sliced radishes add a nice peppery crunch too. Images and recipes: Waitrose

SPINACH, COURGETTE & LEEK TART Preparation time: 25 minutes Cooking time: 40 minutes Serves: 4 Ingredients: 8 tsp olive oil 2 medium leeks, trimmed and sliced 260g spinach 2 courgettes, trimmed and sliced 3 garlic cloves, crushed 175g ricotta 1 egg 1 lemon, zest ¼ nutmeg, finely grated 4 sheets filo pastry

Preheat the oven to 200˚C, gas mark 6. Heat 1 tsp oil in a large non-stick frying pan over a medium heat. Fry the leeks gently for 5 minutes until wilted but still bright green; tip into a bowl. Fry the spinach in another 1 tsp oil for 2-3 minutes until wilted; tip into a sieve and leave to drain over the sink.

Turn up the heat below the pan; fry the courgettes in 1 tsp oil for 2-3 minutes. Add the garlic; fry for 2-3 minutes more until golden all over. Meanwhile, use the back of a spoon to press as much water as possible out of the spinach in the sieve, then tip onto kitchen paper and squeeze dry. Beat the ricotta, egg, lemon zest and nutmeg in a large mixing bowl. Tip in all of the vegetables, mix together and season.

Line a large, flat baking sheet with parchment. Lay a sheet of filo on top and brush all over with a little oil. Layer up the other 3 sheets, brushing with oil in between. Spread the spinach ricotta mix on top, leaving a 5cm border all around. Fold up the edges, crinkling them slightly, and give them a final brush of oil. Bake for 20-25 minutes; cool slightly and serve.

Cook’s tip: To give the tart an extra kick

of flavour, add ½ teaspoon chilli flakes to the ricotta mixture, if liked. URBAN FOX MARCH 2020 19

Better than a takeaway, these home-made koftas and flatbreads are the ideal spring sharer.

FRUITY LAMB KOFTAS Time: 20 minutes Serves: 4 Ingredients: 50g bulgur wheat 250g lamb mince ½ small onion, finely chopped 1 clove garlic, crushed ½ tsp ground cumin ½ tsp ground coriander 40g Ocean Spray Pomegranate Juice Infused Craisins 25g pack fresh flat-leaf parsley, roughly chopped 1 cucumber portion, halved and sliced 270g pack cherry vine tomatoes, halved 125g feta, crumbled 25g pack fresh mint, chopped Juice of ½ lemon 1 tbsp olive oil

Method: Place the bulgur wheat in a small pan, cover with cold water, bring to the boil and cook for 5 minutes until the tender, then drain well. Place the lamb in a food processor with the bulgur wheat, onion and garlic. Add the cumin, coriander, Craisins and half the parsley. Pulse until combined, then divide into 12 equal portions. Preheat the grill. Take a portion of the mixture and press tightly round a skewer to form an oval. Repeat to make 12 skewers. Place on a grill pan and grill for 10 minutes, turning until nicely browned and completely cooked through. For the salad, place the cucumber, tomatoes, feta and mint and remaining parsley in a bowl and toss gently. Stir together the lemon juice and olive oil and drizzle over. Serve alongside the koftas. Delicious served with a spoonful of houmous or Greek yogurt.

LAMB FLATBREADS Time: 15 minutes Serves: 2 Ingredients: 300g unsweetened live yoghurt 4 garlic cloves, crushed 1 tbsp Cooks’ Ingredients Ras el Hanout 225g extra trimmed lamb leg steak, cut into 3cm chunks ½ lemon, zest and 2 tbsp juice 1 tsp clear honey 10 mint leaves, shredded, plus extra leaves to garnish 1 red onion 2 flatbreads 250g mixed tomatoes, sliced Method: In a large mixing bowl, mix 150g yoghurt with 3½ crushed garlic cloves and the Ras el Hanout spice mix. Stir in the diced lamb and leave to marinate for 30 minutes or up to 24 hours. Aim for a nice yoghurt coating on the lamb, but discard any excess marinade Mix the remaining 150g yoghurt in a small bowl with the remaining crushed ½ garlic clove, lemon zest and 1 tbsp juice, honey, mint and 2 tsp water; chill until ready to serve. Halve the onion and finely slice one quarter; toss in a bowl with the remaining 1 tbsp lemon juice. Cut the rest of the onion into 3cm chunks, and thread onto 4 metal skewers alternating with the marinated lamb. Preheat the grill to high. Arrange the skewers on a foil-lined baking tray and grill for about 12 minutes, turning every 4 minutes, until cooked through and charred in places. Heat the flatbread according to pack instructions, then top each with the sliced tomatoes, lamb, garlic yoghurt dressing, pickled red onion and a few extra mint leaves.a or crusty bread for scooping up the sauce. Weed

Spring is a busy time for gardeners. Get it right now and you'll be all set for summer.

Spring is the time where growth of weeds increases due to the warmer weather. Remove any weeds in borders paths and driveways before they become established. Weeds can be controlled without resorting to weed killers – manual hoeing, hand-pulling and flame guns are other options.

Feed

Most gardeners start cutting back from March onwards. Cut back dead stems on perennials right to the base to encourage new growth, avoiding removal of any new shoots. Get rid of any debris and replace mulch as necessary.

Prune

At this time of year plants surge into growth, meaning there’s plenty of pruning to be done. However, take care only to prune shrubs which flower in late summer and not those that flower

Inject colour into your garden with containers of spring flowering bulbs - daffodils, primroses & cowslips all work well. Now’s the time to plant shrubs, roses and fruit trees too. Just ensure the soil isn’t waterlogged or frosted.

Give your spring bulbs the best chance by removing the top 10cm of compost in the containers. Loosen the rest and then refill with fresh compost. Add a little slowrelease fertiliser to the compost to encourage healthy growth.

Trim

Give the lawn its first trim of the season. Avoid cutting when the grass is wet and raise the blades for the first couple of cuts. Rake

off any moss to help young growth and repair bare patches. Apply a proprietary spring lawn fertiliser when the soil is moist, or when rain is expected.

Renew

Give wooden garden furniture, sheds and fences a new lease of life with a coat of paint or varnish. Alternatively replace worn tables and chairs with one the latest garden furniture trends. It’s a great excuse to go shopping!

It’s the perfect time for a spring clean. Maintain your patio by getting rid of unwanted algae. Choose an organic treatment that won’t harm surrounding plants. REVIVAL As modern life takes over, our free time is often lost in a perpetual list of 'things to do'. This spring we’re taking action and reclaiming the ritual of the weekend.

Here’s 13 ways to revive your weekend…

Don’t leave all your chores until the weekend. Instead spend half an hour a day cleaning one room in your house and by Saturday you’ll have free time to do something more exciting.

Prepare for Monday, on Friday. Think how much better you’ll feel when you arrive at work Monday morning. So clean out your inbox, make any urgent calls, and tie up any loose ends.

If you implement #2, you should avoid pulling a ‘workend’. If you really do have to work, limit it to two hours or one weekend a month. Otherwise it can quickly spiral out of control.

THE LIMIT Spring is in the air and now’s the perfect time to encourage children to take a more active approach to learning, says Carla Brindley, Manager at Loughborough Nursery

Here’s some of my ideas to get your children excited to learn…

Sensory learning

As spring approaches there are a wealth of opportunities to help children explore and develop their senses. Investigating different textures of leaves and flowers, playing with taste and smells, and learning about natural seasonal cycles are just a few examples. These mindful activities are hugely beneficial for developing fine motor skills and encouraging problem solving. Primarily, this use of hands-on learning helps to develop skills associated with control of the smaller muscles in the hands. These skills are important for tasks such as writing, manipulating materials, holding objects, and more.

Combining actions

By combining activities that require simultaneous movement, talking, and listening, you activate multiple

areas of the brain. Play is a fun, voluntary activity that encourages communication and listening skills, as well as essential skills such as compromise, conflict resolution and sharing, while also nurturing creativity and imagination. Through guided play, children can still experience the joy of play but with the additional challenge of progressing towards a specific learning goal. Playing with shapes and counting exercises helps to develop literacy and numeracy skills, for example, while active play helps develop physical coordination and strength. Examples of activities that combine both sensory learning and play include traditional methods using simple materials like playdough which have a wealth of possibilities, developing fine motor skills and relying on senses such as touch and sight. It’s a really simple and effective way to get children to experiment and learn.

Outdoor play

Technology is advancing rapidly and children are becoming more and more exposed to screens and digital platforms than ever before. There are various advantages to introducing interactive screens into a child’s learning practices, however I believe there should be a balance with alternative screen-free learning. With the temperatures beginning to feel warmer it’s the perfect opportunity to explore your local woodland environment or your own back garden. Outdoor play encourages curiosity, enabling children to learn and discover new things with a hands-on approach. Activities like building dens, going on a nature hunt, or playing in a ‘mud kitchen’ are really engaging for little ones, helping them on a journey of self-discovery, improving communication and raising self-esteem. Once children step outside, you immediately see a different side to them, as their imagination and creativity really begin to flow freely. Incorporating these ‘out-of-the-box’ learning styles are not just about teaching tactics, but they expand the whole learning environment to inspire children to look at their world differently. From English rose to award-winning horror sci-fi star, Emily Blunt’s career looks set to continue apace with another cliché-defying action turn…

When Emily Blunt first burst onto the scene as the cut-glass and cutthroat senior assistant vying with Anne Hathaway for Meryl Streep’s affection in 2006’s The Devil Wears Prada, few could have predicted where her career stands today. That’s not to say that her turn wasn’t anything short of scenestealing – it certainly was. But Blunt would go on to mix roles more traditionally in keeping with her typically British sensibilities with a string of performances in fantasy adventures (Snow White & The Huntsman), action thrillers (Sicario, The Edge of Tomorrow), and critically acclaimed sci-fi horrors (A Quiet Place). “I went from being very sweet interesting English rose characters to the British bitch,” Blunt, now 36, explains. “I had to shake that tail, by doing other stuff. I’m feeling whispers of ‘She does action now’. I don’t want to be pigeonholed.” Even so, some opportunities are too good to be missed, and Blunt will soon be returning to her more physical persona in the upcoming sequel to smash-hit alien flick A Quiet Place, made alongside husband (and US Office star) John Krasinski. “We were aware that the studio was probably going to make a sequel, with or without us," she explains. "…We were both very steadfast about not being involved. And then all of that mad reaction to the first film happened”. Arriving in 2018, it was an immediate critical and commercial triumph. The SAG award-winning performance laid down by Blunt in her role as the mother of a family living in a world where the slightest sound could be fatal, spoke to something much deeper.

“The true heart of the film, in my opinion, is the relationship between the members of that family,” the Wandsworth-native nods. “And what makes this so much more intense and personal is that this relationship has to be shown with gestures and not with words. And because the film is about love, it doesn't need to express itself in words. You can look back to the example of the great actresses of the silent movie era and how they were able to convey such extreme feelings as happiness, sadness or terror simply with their expressions. In a way we were going back to that era.”

...once we finished the film, we had this very good and gratifying feeling about the process. A Quiet Place also gave fans their first viewing of cinematic supercouple Blunt and Krasinski’s work on a project together. Though their relationship seems tailormade for Hollywood’s more schmaltzy offerings, few could have predicted the tone of their eventual joint debut. “The idea of doing theatre together was already something we had been discussing,” Blunt reveals. “And for several years the studios had been sending us scripts for romantic comedies which would have given us the opportunity to play in the same movie. We didn't want to tread on each other's territory. That's why he didn't ask me to play the main role in A Quiet Place at first. Instead, he waited until I asked him if I could do it.” With their soon-to-be ten-year marriage, and the two daughters they share together, was Blunt at all worried about starring alongside and

being directed by her husband? “Yes, of course,” she smiles. “In the first film we had no idea beforehand how things would work out on the set between us. We had been looking for the right thing to work on together for a long time. But once we finished the film, we had this very good and gratifying feeling about the process. We were really thrilled to see how we respected each other and cared for each other while shooting the movie that was on a totally different level from our marriage.” In fact, it seems for Blunt and Krasinski, the chance to spend two years fleeing from an imaginary extra-terrestrial invasion on screen, actually strengthened the pair’s bond behind the camera. “Because he involved me so much in artistic decisions, I also became his creative partner apart from being his lead actress. We trust each other and care for each other very deeply, and that means we can enjoy our lives together and believe in building a future together with our children.” And not only has the chance of A Quiet Place franchise secured that future, but the trials and tribulations of action heroism have their other perks, too. “I'm lucky that I come from a family where we don't really put on a lot of weight,” she says, “but I've also learnt how to train properly from working with Tom Cruise on The Edge of Tomorrow and then doing a film like Sicario. “You learn to enjoy the discipline of that, although if I don't have to prepare for a very physical role, I'm usually riding bicycles or going on hikes with my husband anyway.”

MORE Need a holiday to get over the stress of organising the last one? It could be a sign that it’s time to declutter your holiday, says Kirsty France. If you’re thinking about your next holiday and starting to feel your stress levels rise, it could be a sign that you need to simplify things. I’ve learned to take a decluttered approach to my holidays and here’s how you can too…

The kids are alright

Family holidays are all about getting the quality time that you might struggle to fit in at home. Unfortunately, it can be easy to fall into the trap of thinking that you have to plan every activity to within an inch of its life. The truth is you don’t. A bit of planning ahead is great but some of my best holiday memories are things we discovered by accident or did on a whim. Give my kids a bucket and spade and a stretch of sand and they’re happy for hours. Relaxing and keeping things simple could transform your holiday.

Go for a package

When you travel in the UK it’s easy to book your travel and accommodation separately, but I used to take the same approach when I travelled overseas as well. We’re heading off on our second foreign holiday with the kids in a couple of months and I had no hesitation in booking a package. If this is already a no-brainer for you, great.

You’ve already reduced your stress levels. On the other hand, if you think all-inclusive dining is for wimps, think again. It eliminates the nightly trawl of the local tourist trap restaurants. What’s more, if there’s a buffet the kids can even choose for themselves.

Embrace organised fun

I know, you probably think that organised tourist excursions are incredibly cheesy. You’re probably right. They’re also designed to relieve you of as much money as possible. During my honeymoon, we went on a trip that included a stop off at a local stall that sold ‘authentic Mayan calendars’ for any special date you might want to remember. To me, that’s the perfect marketing opportunity for a tiny local business. The thing is our cheesy excursions have included taking in Mayan ruins and snorkelling in beautiful blue waters. They can be loads of fun and a great way to declutter your holiday.

You just get on a minibus and go.

Keep packing simple

Have you ever unpacked and put a heap of unworn clothing straight back in the drawer? Me too. Then I realised that no-one needs a completely new outfit for every day. Changes of clothes for my under 10s are more likely to be needed because they’re encrusted with filth from another muddy adventure. I loved decluttering my packing because it meant making two lists (and I love lists). One of potential holiday activities (nothing too detailed, just beach/pool/ sightseeing etc.) and what clothes we’d need. Then make another list of clothes you’ll actually wear, plus a few extra if your children are mud magnets like mine. “I re-joined the firm as a Partner specialising in matrimonial finances and complex child cases. It was an incredible opportunity”, says Jennifer McNeil, Partner at Dodds Solicitors. I was born in Sutton in Ashfield, Nottinghamshire but spent most of my childhood in Derbyshire. I have wonderful parents, both of whom have an incredibly strong work ethic. Drilling into my sister and me from an early age that working hard is a good thing. I was educated in state primary and secondary schools and later went on to Billborough College in Nottingham and later De Montfort University in Leicester, to study Law and Psychology. I was interested in both subjects and wanted to combine the two. However, after finishing my course, I decided that law was my preferred route and in 2006 I applied for a job at Dodds Solicitors in Leicester as a paralegal in the family department. I worked hard and took the opportunity to train part-time, completing the Graduate Diploma in Law and Legal Practice Course required to become a qualified solicitor. Shortly after qualifying it became clear that I needed to choose a specialism and was offered a role with a local commercial firm as a matrimonial solicitor. I’d undertaken a great deal of matrimonial work at

Dodds and felt the position was a good fit and would give me the experience of a commercial practice, as well as enabling me to specialise. By 2016 I was invited to become an Associate Solicitor. I got married the same year, so it really was a busy time! Then the following year, I was approached by my old boss at Dodds to re-join the firm as a Partner specialising in matrimonial finances and complex child cases. It was an incredible opportunity. I said “Yes!” Since returning to Dodds I’ve had responsibility for helping the firm to grow and for recruiting specialist solicitors to help manage the legal work and practice. In my first year as Partner, we passed our first Lexcel audit, which is the Law Society's legal practice quality mark for practice management and client care. It was a great achievement. Then last year my daughter was born. Another amazing achievement. My spare time is currently taken up trying to survive the first year of parenthood! We do like to socialise with friends, although this now involves children’s parties as opposed to dinner and cocktails, but there’s often cake, which helps!
