Their first stop on this opening leg of her UK tour was De Montfort University, where she and the Duchess were the guests of honour at a fashion show staged to mark the Diamond Jubilee. hey have been used extensively in the UK and it is fair to say most of us over the age of 35 have got one or used to have one of these in our mouths.

Most current dental amalgam contains around 2-3% mercury, the vast majority at between 6775% is silver, next is tin at around 25-28% and copper and zinc are also present. There are thousands of articles relating to the negative impact on general

and oral health on silver fillings however it is very difficult to find one study that had been well undertaken in a respected journal. The only hard and fast advice that has been issued by the Department of Health was on 29th April 1998 which read “As a precautionary measure COT advise that it may be prudent to avoid, where clinically reasonable, the placement or removal of amalgam fillings during pregnancy”. That been said, many patients would rather not have this material in their mouths, for a number of reasons. Certainly a percentage of patients

worry about the potential health implications, a large percentage of patients hate the appearance of the fillings as they show up on photographs and discolour the remaining tooth and other patients have experienced the other downside to this filling type, it causes teeth to break. This generally means patients with large amalgam fillings will find that over time portions of the remaining tooth break away and will have to be replaced with a new filling, repaired or a crown placed.

Fillings, tHe First AnD most common is comPosite or A tootH coloureD Filling. As long as it is undertaken by a suitably experienced dentist and is in an appropriate position, these last as long as their silver filling counterparts. They do not carry the same risk of tooth fracture and if undertaken with care, can restore the tooth as if the filling were not there. If the tooth is past the point where it can be refilled then composite or porcelain inlays can be used. These are manufactured in a specialist dental laboratory and are incredible at reproducing the original appearance of the tooth before the silver filling was placed. If this is not clinically appropriate than a porcelain crown or cap can be placed. Again the life-like nature of these restorations is astonishing and they also have a great longevity in the mouth. From personal experience it is true to say that replacing silver fillings dramatically improves gum health. In addition almost all patients who replace their silver fillings end up smiling a lot more, but you would, wouldn’t you?

R

eference to ‘pesto’ or a pasta sauce using battered garlic and basil, dates as far back as the 1600s. It is also mentioned in ancient naval logs. Basil was taken on board and grown in pots and the other ingredients including garlic, oil and parmesan cheese were all items easy to store on long voyages. Whilst the recipe of garlic, basil, lemon, pine nuts and oodles of virgin olive oil continues to exist in its traditional form, at the end of last summer I decided to reinvent this tried and tested formula using local produce. I cut back my overgrown sage plant and made a sage, spinach and walnut pesto; freezing it in pots and enjoying it over the winter months. Since then, I have continued to experiment

with local cheeses, oils and herbs and here is a recipe which I think you’ll enjoy.

Method:

n Open the bag of spinach

and cook it in the bag, in the microwave, for 2 minutes. Drain well in a sieve pressing it firmly to remove all liquid. n Put the spinach, sage, garlic, lemon zest and ½ the juice, pine nuts and oil into a mini blender (or alternatively use a hand blender or pestle and mortar) and blend the mix together to a rough paste. n Add the cheese, blend again and season well with salt/pepper. n Adjust the flavour to your liking by adding more lemon juice, oil, cheese or garlic. n The mixture ideally wants to be as loose as jar pesto but you can make it runnier and easier to coat your pasta by adding a little water as necessary. n This will keep in the fridge for up to 3 weeks, so put it in a jar and keep it for when a fast supper is required.

1 bag small salad spinach leaves 15 sage leaves 150ml Welland Valley rapeseed oil 25g pine nuts Grated zest of ½ fresh lemon + the juice 1 large clove garlic – peeled and finely grated 125g aged Red Leicester finely grated Water to loosen the mix Salt/pepper

Thankfully, the foodies are quick to rubbish the claims. “Why oh why would I want to break up the Bikers?” King fires back immediately.

he problem we face is the anglicised perception of dishes that are quintessentially Italian. Take the much loved Lasagne; in Italy it is sparse in ragu and béchamel, heavily layered with pasta and honestly, altogether more dry than the British like it. A good lasagne in Italy will stand tall on a plate, not sit slumped in a bowl coated in sauce. Furthermore, each region and each family will have their own traditions of ‘assembly’. These methods may be as subtle as the use of a local cheese or, in the case of Lino’s mother, layered with wafer thin cooked ham onto each layer of pasta. It’s delicious, and has proved a real hit at Boboli, even if we do finish it off with a dollop of extra sauce! Risotto is another contentious dish. Made

Lino gently suggested that it wasn’t really necessary, and all hell broke loose! In my maturity I have come to listen a little more to my wise husband, and realise that the essence of Italian cooking is in its honest simplicity; less really is more. A couple of sprigs of fresh basil, and/ or parsley is really all it takes, even if you do have an entire Mediterranean herb garden to hand!

They really don’t use that much cream, and pasta in Italy is usually served with sufficient sauce simply to coat the pasta, not to leave it swimming or even drowning in a ‘soup’ of sauce. They even use particular pasta shapes with particular sauces, which are aimed at complementing each other, but that’s a whole other article!

ou may have guessed where this is going but I have acquired an L shaped garden which is very exciting, much better than my little window box at the flat.

tHe gArDen is Quite over lookeD on tHree siDes AnD so my intention is to PlAnt some smAll trees to give A little Bit oF screening But Also some HeigHt.

The trees I will probably plump for are Amelanchier lamarckii which really is a wonderful small garden tree with white blossom in spring, ovate green leaves in summer and it turns amazing colours of yellows and oranges in autumn. These trees may also give a little shade in the height of summer as the garden is south facing and will probably act as a sun trap. Being L shaped, one part of the garden is quite sheltered and the house

f you’ve ever been on an organised tour or day trip, you’ll know that one of the drawbacks is being shunted along with lots of other people to tourist attractions but then only having a limited amount of time to appreciate them; or spending time in the confined quarters of a coach, bus or train with people you have little or nothing in common with. fter moving to the South of France with new husband Bastien Boosten nearly three years ago, the BBC sports presenter endures a difficult commute back to the UK every week, but admits she’d never give up her new life in the French Riviera. “It’s not the easiest of routes to work,” the 41year-old confesses, “and it’s pretty much, every Monday morning, the drive to Nice airport, the flight to London, getting settled and sorted again and back on Friday. But we have such a wonderful life in the South of France, we’re 10 minutes from the sea, there are fresh food markets on every corner, we’ve got the Alps practically on our doorstep. I think we made the right choice”.

Diamond Jubilee Tour: First Stop DMU De Montfort University (DMU) celebrated one of the proudest days in its history when it welcomed Her Majesty The Queen on the first stop of her Diamond Jubilee Tour last month.

ccompanied by the His Royal Highness The Duke of Edinburgh and Her Royal Highness The Duchess of Cambridge, Her Majesty arrived to the roar of a huge crowd that had gathered in DMU’s Magazine Square; many of which had been waiting to catch a glimpse of them since 4am. Professor Dominic Shellard, Vice-Chancellor

“The fact that De Montfort University was the very first place that Her Majesty The Queen visited to launch her Diamond Jubilee tour of the nation was not lost on any of our students and staff and they

turned out in their thousands to cheer her on in a huge show of admiration for her magnificent 60 year reign. We were filled with pride to have her here.” The Queen and Duchess of Cambridge later watched with delight as collections designed by four of DMU’s graduates graced the catwalk at the fashion show staged to mark the Diamond Jubilee. Already making their mark in the fashion world, two of the four alumni from DMU’s class of 2011 have internships at Vivienne Westwood.

Last month saw the arrival of Leicester’s first ‘pop up’ restaurant White Room Dining.

Christopher Wright is an existing and established luxury salon based in Leicestershire.

This concept which sees a temporary restaurant ‘pop up’ in an unusual setting was the result of the combined creative talents of Stoneygate’s Lucy Cufflin of Lucy’s Food and Debbie Johnson of Powder Blue. For two nights only this unique and exciting dining experience saw supper guests enjoying a fabulous four course meal cooked by local cookery writer and Chef Lucy, in a stunning dining room ambience created by Debbie in her very own store. For £30 per head, diners were treated to a delectable menu of local produce comprising of pannacotta of Rutland trout, terrine of duck, Rutland venison and apple tart. Whilst guests were free to bring their own wine, a handpicked selection was available to pre order from local Stoneygate wine merchants Les Caves Du Patron. Speaking after the event Lucy said “For me it was a very special evening and the beginning of my food adventure round Leicestershire, Rutland and other local counties.
