It was a busy summer season here in southeastern North Carolina, by which I mean we had a ton of visitors. The beautiful beaches, charming communities, friendly people, amazing restaurants and shops, great fishing, boating and watersports – it all adds up to a world-class vacation destination.Hopefully all of this summer tourism was lucrative and full of positivity for the Topsail-area businesses. Combine half the grapefruit wedges, honey and a few rosemary sprigs in a large pitcher and mash with a muddler or wooden spoon.

For this recipe I used vodka because it is my go-to liquor. But my spouse is partial to bourbon, so I created it both ways, and they were both exceptionally tantalizing.

I went to our bar to see what liquor options I had on hand. My spouse came running down the steps after hearing me clanging bottles and glasses in the bar. I have learned that if you rattle a cocktail shaker, they will come.

Add grapefruit juice, vodka or bourbon and lime juice; stir to combine.

If you are in search of a thirst-quenching cocktail that offers the flavors of fall, then this is your drink. The recipe below is for a pitcher of four drinks that’s perfect for sharing with friends. Try it both ways!

was time for a drink and relaxation. I have a huge rosemary bush in my yard and I wanted to use some of its lemony-pine-like flavor for an iconic element of autumn. I also had some pink grapefruits that I had just gotten from the market. Grapefruits are available all year long, but on the East Coast they are seasonally best October through June.

Smashing the grapefruit with the honey and rosemary sprigs omits the most pleasantly distinctive bouquet. I poured the pleasantly colored cocktail into our ice-filled glasses and garnished with grapefruit slices and sprigs of rosemary. The color of the bourbonbased drink was not as pleasant, but it was tasty nonetheless.

My father plants a big garden every year and always brings me an abundance of tomatoes and herbs. I knew exactly what to do with this year’s haul — soup. I tried preparing the soup a few different ways until I decided this recipe permeated with herbs was the tastiest. For one of the versions I prepared while testing this recipe, I roasted the herbs with the tomatoes, garlic and onion. It made the entire kitchen smell amazing, but the herbs had lost some of their aromatics and flavor, so I decided to add the fresh herbs after roasting the vegetables. You can certainly switch it up to your preference.

ol’ tomato soup from a can and never really enjoyed it, but it’s what Momma served so I ate it. As I have gotten older, I have ordered tomato soup from various restaurants, and it is always much more enjoyable with the addition of cream or herbs. I knew there must be a better way to cook and eat tomato soup, so I tried my hand at creating a recipe I couldn’t resist.

Of course, my mother served tomato soup with a grilled cheese. Now, I love a good gooey grilled cheese, but I have recently tried to eat less carbs. In doing so, I decided to serve my Roasted Herbed Tomato Soup with Parmesan chips. This was a recipe I saw on the Food Network Channel, and it’s very simple! You merely make piles of Parmesan cheese on a baking sheet, bake them until the cheese melts down and then cool them into crispy chips. I prefer to serve my tomato soup with the Parmesan chips because the salty, crunchy bits pair so well with the savory soup.

Blend the vegetables in a food

Meanwhile, turn the oven up to 400 Pourdegrees.aheaping tablespoon of Parmesan onto a parchment lined baking sheet and lightly pat down. Repeat with the remaining cheese, spacing the spoonfuls out about ½ inch apart. (You should have about 20 piles.)

1 cup grated Parmesan

Pinch of salt and pepper

Preheat the oven to 350 degrees F.

Pour the puree in a pot and bring to a boil over mediumhigh heat. Add the parsley, thyme, basil and salt and pepper. (You may also add a dash sugar if you prefer a sweet note.) Reduce heat and simmer for about 20 minutes.

Serve hot, laced with a whipping cream swirl, garnished with fresh herbs, alongside Parmesan chips.

Roast for 15 minutes, until the tomatoes pull away from their peel. Set aside to cool.

1½ tablespoons extra virgin olive oil

This is a homemade soup recipe you will want to keep in your repertoire and pass down for generations. I share it with you in hopes that you have happy family memories for years to come.

1 tablespoon fresh chopped thyme

Roasted Herbed Tomato Soup with Parmesan Chips

Place the sliced tomatoes, onion and garlic on a baking sheet. Pour the olive oil over the vegetables, and toss to coat. Sprinkle with salt and pepper.

FOR THE PARMESAN CHIPS:

1 sweet onion, rough chop

5 cloves of garlic, peeled and crushed

My parents came to my house for dinner, and I made this soup and chips for them. We laughed while talking about my childhood and the canned tomato soup mom used to serve. My dad was impressed that I was able to use up most of the tomatoes and herbs he brought me, and everyone cleaned their bowls.

Bake for about 5 minutes or until golden and crisp. Set aside to cool.

Crews Respond to Wildfire in Holly Shelter Game Lands

Pender County Veterans Affairs Offers Flag Retirement Collection Boxes

In partnership with the National Association of Counties and the North Carolina Association of County Commissioners, Pender County Veterans Affairs installed a flag retirement box, at no cost to the county, at Pender County’s administration office, 805 W. Walker Street in Burgaw. A collection box was also installed at the Hampstead Annex, thanks to an Eagle Scout Project by Hayden Burns of Troop 777. The Hampstead Annex, 15060 U.S. Highway 17, is open Monday through Friday, with the exception of national holidays. The collection box is located near the main entrance to the auditorium. The United States Flag Code prescribes flag etiquette and covers everything from flying it near other flags to instructions on how to raise and lower it. “The flag, when it is in such condition that it is no longer a fitting emblem of display, should be destroyed in a dignified way, preferably by burning,” says the code. Flags should be folded respectfully before being placed in the box.

Bond Referendum Makes It to November Ballot

Pender County Emergency Management recently assisted the North Carolina Forest Service at an approximately 150acre wildfire inside the Holly Shelter Game Lands. Smoke from this fire affected the Maple Hill, Holly Ridge and other neighborhoods along the Pender County and Onslow County borders. Pender County Schools (PCS) welcomes Dominique Bates as the new Director of Career & Technical Education. A native of Salisbury, North Carolina, Bates has been involved in education for 12 years, the last eight in CTE leadership. He comes to PCS after serving as the Interim CTE Director of Rowan Salisbury Schools. Bates’ wife, Kathryn, will join Topsail High School as an AP, pending board approval. The Bates have a four-year old daughter who joins the pre-k system this school year.

Pamela Brame joined Pender County administration as the new Human Resource Director on September 6. Brame, who is experienced in all aspects of governmental Human Resources, describes herself as a “good problem solver.”

Commissioner Newton said the state of Pender County’s Emergency Services Management team is strong. Attendees heard from N.C. Pender County Visitor Spending Increases by 6 Percent

Domestic and international visitors to and within Pender County spent $165.29 million in 2021, an increase of 6 percent from 2020. The data comes from an annual study commissioned by Visit North Carolina, a unit of the Economic Development Partnership of North Carolina. According to the data, the tourism industry directly employs more than 924 in Pender County. The total payroll generated in Pender County’s tourism industry was $37.1 million. The state tax revenue generated in Pender County totaled $6 million through state sales and excise taxes and taxes on personal and corporate income. Approximately $8.9 million in local taxes were generated from sales and property tax revenue from travel-generated and tourismrelated businesses. The amount of local taxes generated by tourism in Pender County is significant because it equates to a savings of $243.32 per resident in Pender County. These statistics come from the Economic Impact of Travel on North Carolina Counties 2021, which can be accessed at partners.visitnc.com/economic-impact-studies. The study was prepared for Visit North Carolina by Tourism Economics in collaboration with the U.S. Travel Association. Statewide, visitor spending in 2021 rebounded by 44.9 percent to reach $28.9 billion. Following the devastating pandemic-related losses of 2020, the total fell just short of the record $29.22 spent in 2019. Direct tourism employment increased 10.5 percent to 197,500.

Pender County Commissioner Jackie Newton completed the 100 Counties Prepared Emergency Preparedness Training for County Commissioners at the N.C. Association of County Commissioners’ (NCACC) 115th Annual Conference in Cabarrus County on August 11. Commissioner Newton attended the inaugural training for this Emergency Services Training for Commissioners, which was developed by Brunswick County Commissioner Frank Williams, who saw the need for further training of elected officials in their responsibilities and duties during times of emergency.

Gene (Tony) Hudson has been named as the new principal at Heide Trask High School (HTHS).

Pender County Board of Education approved the position during the August 9 meeting and fills the vacancy created when Michael Taylor accepted the position of Chief Officer of Auxiliary Services. Most recently Hudson served as principal at West Pender Middle School (WPMS) and has been with the district since 2005. The search for a principal for WPMS is currently underway. A graduate of Wofford College, Hudson earned his Master of School Administration from East Carolina University in 2017. In his new role at HTHS Hudson’s time with Pender County Schools has come full circle — he joined the district in 2005 as a teacher and assistant coach at Heide Trask High School.

The Pumpkin Patch is returning to Hampstead United Methodist Church (HUMC) on Saturday, October 1 and will run through Halloween. Patrons are welcome to stop by Monday through Saturday from 10 am to 7 pm and Sunday 11 am to 7 pm. Located at 15395 U.S. Highway 17 beside the Dunkin Donuts in Hampstead, the Pumpkin Patch is set up on HUMC’s large front lawn, under the beautiful live oaks that form a canopy over the patch. Lights in the trees and fun things for kids to do ensure a magical fall adventure for all. All the net proceeds from the Pumpkin Patch go to the youth group at HUMC and other charities. Festivities will kick off with the Pumpkin Toss on October 1 from 9 am to noon. Volunteers in the community are needed, assemblyline style, to help unload the semi-truck that holds thousands of pumpkins. If you miss the first toss, a second truck will bring more pumpkins to unload. The second Pumpkin Toss will take place on Saturday, October 15, also from 9 am to noon. Oyster Company in Surf City has fabulous oysters and a great event space for the community,” Allen says. “We showcased them and their restoration efforts, along with other oyster farmers and Coastal Federation projects along the route.”Tickets to the Surf City event included oysters, brews and eats. At the event, guests learned about local conservation projects and what they can do to protect and restore the coast.

The trip, and all outrigger paddling, is steeped in Hawaiian culture. All the paddling commands are called in Hawaiian. The Hawaiian proverb “Malama i ke kai, a malama ke kai ia 'oe” guides the paddlers. It

Janine Stidley, director of the Missiles and More Museum, says, the mini library was “modeled after an observation tower from Operation Bumble Bee, the top secret military program that was on the island 1946-1948.”

“The group was called Toned Mamas, and I loved it,” Webster says. “When the trainer who ran it moved away, I didn’t want it to end, so I got certified as a personal trainer. I renamed the group Beach Mamas Bootcamp, and on July 1, 2019, we had our first official class under the pavilion and have since just kept growing over the past three years.”

“We have ladies who’ve never worked out, pregnant and postpartum moms, women who’ve never had any children, grandmothers and ladies in their 70s and 80s,” Webster says. “We’re all inclusive and that’s what makes it really work, because when people first show up, they feel welcome, which is a huge thing for us. It feels different from a gym because we’re a tribe and everybody’s there for the same reasons — to better themselves, get out of the house, have an hour in the fresh air, get their workout in and meetSherryfriends.”Panzardi discovered Beach Mamas Bootcamp one morning while walking through Kiwanis Park. She stopped to watch the group, then returned the next day to work out

“Being in a group setting with such welcoming women of all ages is very comforting, since I’m 59 years old and not a mom,” Panzardi says. “I’ve been with the group for almost two years now in Hampstead or Holly Ridge and through live videos if I can’t make either park, and I’ve become stronger and more balanced.”

Along with offering local women a great way to be active and stay fit, Webster’s goal is also to bring women together, help them build bonds and create a support system. Having moved to the area herself as a mother to two young children and having worked hard to make connections, she says her favorite thing to do now is connect people and help her friends become friends. With so many military wives in the area whose husbands are deployed, she knows the importance of finding a tribe in which women can feel like they belong.

open the bakery. Her family includes her son, Matthew, and his wife, Jennifer, who teaches at Topsail High School, and her granddaughter, Whitney, all of whom work in the bakery. Another grandson, Joseph, works elsewhere. The training process was working with Seferyn as she baked for about three months. During the training period, they digitalized recipes and learned to use commercial ordering system and other pre-opening procedures. On a typical day, baking starts at 4 am and sometimes lasts late into the night, says Matthew. They bake pies, cakes, cookies, brownies, scones, muffins and more every day.

“It’s all artisan and made from scratch,” Matthew says. “Mom’s old school. She doesn’t believe in short cuts.”

Matthew and Jennifer also own Topsail Escape Room. Both businesses are located in a one-story building at 328 N. Topsail Drive. Before remodeling, the bakery space was a two-bedroom home.

Remodeling required moving walls, putting in new floors and building an outdoor deck and seating area. They did most of the work themselves, except installing commercial lighting and electrical work.

Drawing on Seferyn’s extensive knowledge, they also accept custom orders for birthday and wedding cakes.

The family started the Escape Room, the first in Pender County, after Jennifer’s mother gave them a gift certificate for Christmas 2016 to visit one in “IWilmington.thoughtitwas the worst present ever,” Matthew says. “I was not into puzzles. With urging from Jennifer, I begrudgingly went and had a great time.”

the perfect pumpkin this fall? Or maybe one that’s a little different, with a few bumps or even stripes? The Surf City Rotary Pumpkin Patch has all of that and more, and their pumpkin patch sales make it possible for the organization to provide valuable donations to a number of community groups.LizHawthorne, the 2022 Pumpkin Patch chair, says that proceeds from the annual pumpkin patch sale “all go into our fundraising account and that goes right back into the community.” Beneficiaries of these funds include local organizations such as Share the Table, Reel Housewives of Topsail Island, Paddles 4 Troops, Boys and Girls Home of Lake Waccamaw and others.

In addition, Hawthorne says, “we try to keep our eye on the community for needs.” For example, when there was a huge multi-house fire in Surf City in 2019, they were able to help.

City Rotary Pumpkin Patch runs from October 15 through Halloween, but planning starts in the spring each year. Hawthorne says they work with Pumpkins USA. The organization grows and delivers pumpkins and makes sure the club gets the kinds they want.

One of the Rotary’s fall projects that benefits from the pumpkin patch sales is Dictionaries for Third Graders. Hawthorne explains: “We’ll get a dictionary, put a Rotary sticker in it and then give one to every third grader at the school.” Although several counties participate in the dictionaries program, the Surf City Rotary focuses on the third graders at Surf City Elementary. She adds that the kids really love it. “It teaches them about a great resource that they don’t need WiFi for and it’s their own,” Hawthorne says. Teachers also appreciate the donations as it helps them lesson plan.

The Surf City Rotary Pumpkin Patch debuted in 2019. At the time, Debbie Sasser was in charge of the patch. Sasser has recently been elected as club president so Hawthorne and her husband, Hugh, have taken over the pumpkin patch duties. As patch manager, Hugh will be onsite every day, making sure pumpkins don’t go on the ground.Itiscritical that the pumpkins stay on their pallets and off the ground, to prevent them from rotting. Hawthorne offers a piece of advice that most people may not know, but that is critical to keeping pumpkins looking good longer. “You’re not supposed to hold the pumpkin by the stem,” she says. “It can cause them to cave in later. Hawthorne explains that some of the pumpkins are pretty heavy. It takes about 30 people to get everything unloaded and set up on the pallets.

Even during the height of the pandemic, the Pumpkin Patch sales went well. “You can social distance while looking for your pumpkin in a nice open field,” Hawthorne says. 2020 was their best year to date, in terms of sales and the amount of donations they were able to give back to the community.In2022,as they have in years past, Coastal Pender Rotary in Hampstead will help out with the Pumpkin Patch. There will be a great variety of pumpkins available in the patch, from the standard orange pumpkins to unusual heirloom varieties.

time spent together during the start of the pandemic for helping come up with the restaurant’s unique offering, the ancient Roman-style pizza called pinsa. The term comes from the Latin word pinsere, which means “to press or spread by hand,” as in the shape of an oval.

Jake and Brian, their two young sons, are the inspiration behind the family’s new restaurant, which opened last year. As parents, Jamie and Donna knew how challenging meals out can be for a family with children and busy schedules. They wanted a place where families could meet friends or grab quick meals after events, all in a casual and fun setting.

“These have quickly become fan favorites, in addition to the prosciutto, meat lover and veggie pinsa,” Jamie says. “We built our menu to offer a variety of flavors, but also to be consistent, fast and fresh.”

Jamie says that pinsa’s 80% water-to-flour ratio, along with the longer fermentation process and special flour blend, make it easily digestible and lower in fat, calories and gluten.

“Customers tell us they can finally eat pizza again because our pinsa doesn’t leave them feeling sick,” Jamie says. “Our pinsa crusts boast lower

He adds, “It’s humbling to hear our pinsa compared to experiences in Rome, because so much work goes into every pinsa, from dough prep to stretching our crusts, to finishing the perfect pinsa for each customer. It's amazing to know that people look to us for their pizza fix.”

Ellis started the food pantry when she partnered with the Food Bank of Central and Eastern North Carolina to provide extra food to those neighbors who came to the community meals. She noticed that although participants enjoyed the meal itself, their true excitement was over the extra food that they could take home. She notes that “people were picking up all the food after the meal. That’s when we started the pantry.”

Today the organization feeds about 1,000 individuals each week with the community meal, a food pantry and a school backpack program. They do this in a tight, dark, leaking and very warm warehouse space with limited parking. Volunteers help community members shop for their food items, serve on boards and committees, pack and deliver backpacks, rescue food from local grocery stores, work in the household ministry and continue to prepare the free meals on Sunday evenings.

Expanding services has always been key to the growth and sustainability of Share the Table. Ellis has seen needs and responded to them consistently over the past 12 years. The school backpack program was launched when she was volunteering at North Topsail Elementary School. At the time, it was the only school in Pender County with a backpack program, with food provided by Hampstead United Methodist ChurchRecognizing(UMC).a greater need, Ellis asked Hampstead UMC if they could join in and expand to all the area schools. The markers physically mark sites critical to the Civil Rights Movement in North Carolina. By 2023 there will be 50 markers placed across the state, at sites honoring events, places and people who had an impact on the Civils Rights movement here. The growth of the North Carolina Civil Rights Trail is supported by the William G. Pomeroy Foundation and presented by the North Carolina African American Heritage Commission in partnership with the North Carolina Office of Archives and History and Visit North Carolina.

Fifteen years before the official end of segregation, Ocean City Beach was established as the first residential beach community with Black home ownership in the state of North Carolina. In December 2021, the community made history once more by becoming the fourth recipient of a marker signifying inclusion in the North Carolina Civil Rights Trail.

Ocean City’s N.C. Civil Rights Trail marker reads: “OCEAN CITY BEACH. An African American beach community est. 1949. Home to families, motel, pier & Episcopal camp. Devastated by Hurricane Fran in 1996.” Torrey adds, “The close-knit community, now a part of North Topsail Beach, continues to grow. Despite the passing of time, Ocean City remains a community united in values and tradition.”Themarker unveiling ceremony also kicked off the Ocean City Jazz Festival with a performance by the George Freeman Band. Held July 2 and 3, the 12th annual celebration was the first fully in-person festival for the community since 2019. 

Adding that her own research led her to new discoveries about the Ocean City community, she says about the N.C. Civil Rights Trail inclusion, “I hope it makes people do a little more research about the climate and how the development of the community was an anomaly. It teaches people perseverance.”

Torrey worked with Angela Thorpe to complete the application for the N.C. Civil Rights Trail marker. She started the process in the summer of 2021, submitted the application in October and was notified of Ocean City’s acceptance in December. She says, “To me, it’s a way to continue to preserve the history of the community and to let other people know about our history and that we’re still here.”

I asked Wenzel for some examples of some unique items they have framed

“We frame a lot of very large items,” he says. “One of the most unique items I have framed was an Olympic torch from the 1996 Olympic games. This was a real torch that was used to bring the Olympic flame to the games. We built a beautiful shadowbox to encase the unique item.”

With so many pictures available these days on electronic devices or regular cameras, we don’t think about preserving them as a keepsake on the wall like we used to. That is where Jeff Wenzel, owner of Topsail Frame Shop & Art Gallery, comes in very handy. Not only does his shop do a top-notch job framing art, photos, posters and diplomas, but also they frame them with glass that protects the artwork.

Twenty years ago, non-glare glass was widely used. Now it is rarely used as a newer crystal-clear museum glass provides a clearer view with the additional UV protections. The glass is virtually reflection free, allowing the viewer to enjoy the art without any window or light glare distractions.
