How we helped DCM Surfaces We have been working with well-known large corporations to smaller companies, organisations and individuals all over the UK for the last 26 years. This month, we caught up with DCM Surfaces to see how they benefit from using our free booking service.

The case background: We have been working with DCM Surfaces since 2009 to help bring their accommodation bookings in on budget without compromising the welfare of their employees, working directly with DCM’s Operations team; Mariusz Kusmierek and Matthew Bowry.

• We would find suitable accommodation for installers working on projects in locations too far to travel home to on the same day, and projects needing extended periods of time away from home.

Established in 1995, DCM Surfaces provide innovative products and designs for various surfaces; play including wet pour, sport, decorative gravel and structural surfacing. This keeps their installers busy all over the UK, and is where our team of accommodation specialists step in.

• We would work to the agreed project budget for accommodation as well as ensuring all other special requirements are met, including onsite parking for a company van with no height restrictions and a bar/restaurant is on site or close by to allow employees to get dinner.

• The welfare of installers would be paramount in providing a good standard of accommodation.

The case study: We are in the unique position of working with over 800,000 hotels across the UK, Europe and further afield. Through our long established relationships with hotel groups and independent accommodation providers we’re able to negotiate very competitive room rates for DCM Surfaces.

With our highly advanced internal booking systems, our accommodation specialists can quickly see whether a hotel is in the allowed travel distance of ten miles and see the facilities available, allowing them to check reviews and standards and as a result, book the perfect hotel option.

We also provide an online booking portal for DCM Surfaces so their head office employees booking for those out on the road, have their own safe and secure method of inputting accommodation requests, straight into our live system without having to pick up the phone.

This summer, DCM Surfaces have completed numerous playground installations in the central London area, requiring teams to be on site for a number of days. We were able to source accommodation for staff within a short distance and within the set budget.

Let the food do the talking...

Simon Hardman-Taylor has been in the kitchen for more than 26 years, five of them working with Gary Rhodes.

He’s currently putting his whites on for Best Western Cresta Court Hotel, sharing his signature dish and talking kitchen territory and tactics with us!

What made you want to be a chef?

My inspiration came from watching my Nan cook and helping her in the kitchen – she was amazing. Home cooking is at the heart of many great chef’s cuisine.

It’s basically focused around using fresh, simple, seasonal ingredients and what can be better than that?!

What do you look for when you create a new dish or menu? What’s your main considerations?

Using local and seasonal ingredients is a key aspect of my cooking. We have a wealth of amazing producers and suppliers in the north west who provide the freshest produce. I like to use this as much as possible in my food.

My culinary ‘style’ leans towards more classical and traditional dishes, but with a more contemporary interpretation and presentation style.

INTERVIEW What’s proving to be the most popular dish on your menu this month and why do you think that is?

My signature dish of Braised Lamb Shoulder is an extremely popular choice. It’s a great looking dish, packed with flavour and cooked until the meat is rich and tender.

It makes me hungry to just talk about it!

I think guests initially choose it because it’s a hearty, traditional dish and has a broad culinary appeal. They choose it a second time because they fall in love with the flavour!

When you go home, who does the cooking?

Are you territorial in the kitchen!?

When I’m home I do the cooking. I love to cook for my wife because she will give me feedback, good or bad. I also get to try out new ideas and development dishes at home before I decide if they will appear on my menus. My wife is my worst critic and my biggest fan, and that’s good for me! I know when I am on to a winning dish if she gives it her ‘royal’ seal of approval!

I am very territorial with my kitchen at home and cannot stand when people put things where they should not be! My family have learned to stand well clear!

Which famous person, dead or alive, would you love to cook for and what would you serve them?

Billy Connelly (above, left). I would love to cook him my Nan’s traditional Meat and Potato Pie as that’s the dish that first made me want to become a chef. To this day I still love that dish more than anything else, and I think Billy would appreciate its simple honesty.

If you were stranded on a desert island and allowed one item or ingredient from your kitchen, what would it be and why?

Chorizo - it goes with so many things and can be dried or fresh. It’s good with fish, shellfish and vegetables (desert island cuisine!), or just lovely on its own.

The #shelfie - a chef’s five must have herbs and spices always available on the shelf!

What are yours and why?

Smoked Paprika - it’s so versatile and adds flavour and enhances any dish. Pepper - it’s a basic, but can be overlooked too often. Harissa to give a punch of flavour. Peashoot - because it makes every dish stand out. And finally!

Coriander - in all forms from fresh seeds to ground. It’s an essential in my kitchen.

What’s your favourite cuisine and why?

French/British cuisine.

I love the flavours and simplicity, although I’m starting to add more Spanish and Mexican flavours into my cooking - it is that warmth and aroma from using different spices that appeals.

And if you had to

compare yourself to one,

who would you say you most resemble in terms of cooking style and/or temperament?

Simon Rogan (above) is my favourite ‘celebrity chef’ at the moment. I love the fact that he grows his own produce to ensure it’s the very best, and his creative style of cooking. In terms of myself, I suppose from working with Gary Rhodes (left) for five years I probably most resemble him in terms of cooking style. Simple dishes done with the best ingredients and with great attention to detail.

You’re sharing a recipe with our readers today, why did you choose this one?

I chose the Braised Lamb Shoulder with Dauphinoise potato and glazed baby vegetables as it’s the most popular dish on my menu at the moment. As one of my signature dishes it epitomizes my style of cooking perfectly. Enjoy!

CHEF’S CORNER

BRAISED

LAMB SHOULDER WITH DAUPHINOISE

& GLAZED VEGETABLES

Method Lamb Switch the oven on to 180°C.

Ingredients Lamb 6 x 8oz Lamb Noisette 1 pint beef stock Rough cut vegetables (onion, garlic, celery, carrot and leek) ½ pint red wine

Heat a little oil in a pan, then add the lamb and cook until it is dark brown on the outside.

Transfer to a deep roasting tray with the mire poix (the rough cut vegetables) and cover with the red wine and stock. Braise in the oven for up to three hours or until the lamb is tender.

Remove from the oven and allow to cool.

Strain the stock to use for the Jus. Jus Add the strained stock into a heavy bottomed pan.

Redcurrant jelly

Place on a high heat and add a little redcurrant jelly, and reduce until it coats the back of a spoon.

Dauphinoise

Then pass through a fine sieve and set aside

8 sliced potatoes 500ml double cream

Dauphinoise Boil the cream, milk and butter in a pan until the liquid is reduced by about a quarter.

500ml milk

Thinly slice the potatoes.

50g block of butter

Once the liquid is cooled, add the potatoes and give them a good coating before layering them in an oven proof dish.

100g grated Gruyere Glazed vegetables 6 mini turnips 6 mini carrots 6 baby sweet corn 200g spinach

Cover with tin foil and cook in the oven on 180°C degrees until tender.

For the last 10 minutes of cooking time, remove the foil and add the grated Gruyere. Return to the oven until golden.

Cover with foil and place a heavy object on the top to press the potato dish down, then cut into small squares.

Blanch the vegetables and refresh.

Plate up, serve and savour!
