A common lament of the modern age is the constant sense of distraction and lack of concentration that infuse our lives. We typically blame technology for flaming an incessant demand for Internet, smartphones, and social media, and impeding our ability to focus on the task in hand. Yet the culture of distraction we face runs much deeper than we might actually imagine. Though it would be convenient to blame all of our distractions in undermining our ability to focus on one thing at a time, our productivity levels are impacted more by the fact that we have simply not been precise about what we really want to direct our attention to. And thus, it becomes hard for us to resist all the enticements and allures that jolt our attention, since there isn't a concrete choice to stick to, but rather a desire to perfuse the number of choices to maximize our sense of freedom. Truth is, the dissipation of our energies is what make us like a rudderless sailboat at the mercy of the prevailing winds and currents, and yet very unlikely to reach its desired destination. Without an unclouded focus, we are likely to become an unwitting victim of those distractions with an obscure purpose for living. If Candy Crush seems like a more engaging activity to do amid your salsa class or social gatherings, then maybe the utter reason underlies in the fact that those time-consuming activities aren't adding to your long-term sense of fulfillment and may you are even skeptical about what’s worth paying attention to. That really comes down to the question of what to value because what you pay attention to is what is most real and compelling for you. After all, your attention is tapping into appetites you have for particular types of inspiration. In that condition, I believe it is hard to sustain a coherent life based on infinite choices. And while technology is making our world more frictionless, it is this effortlessness that impedes us from becoming well-rounded individuals and experiencing autonomy. What you choose to do at the present is what you will reap in the future. If you surrender to endless distractions while delving into your selfgrowth journey, don’t be surprised when you regret all past moments that offered gates to accomplish remarkable goals and grow maturely but preferred to check some non-sense pictures of superficial people you once knew! The present is a gift‌ and a choice to either walk to prosperity or breakdown.

The Science of Sauna What’s better than some alone time in a steamy sauna? Pretty much nothing!

As you are sweating all of your stresses away, you are also flushing toxins from your body and clearing up your complexion. Here is how you can benefit from your health club’s sauna membership.

Why It Is Good to Sweat As you workout, you boost your heart rate and blood flow as well as your pores to open enough room for sweat to flush out the toxins. Fewer toxins mean fewer clogged pores, which result into smoother skin. Same goes with sauna. High temperature increases blood flow, which in turn delivers more nutrients to the skin.

Benefits You Need to Consider According to a study published in the journal Age and Ageing, the frequency of sauna bathing is associated with lowered risks of dementia and Alzheimer’s disease. One possible explanation is that men who use sauna multiple times a week tend to have better blood flow, which delivers the blood to organs like the heart and brain. There is a valid reason why many fitness fanatics jump into the sauna post to a workout. According to The North American Sauna Society, saunas help alleviate soreness because of the endorphins that are produced while using them. Advocates claim that saunas help eradicate lactic acids and toxins released during workouts and enhance blood flow throughout the body so that muscles feel relaxed and rejuvenated. Moreover, sauna bathing has a positive effect on lipid profile in young active men. One study from Poland published in PubMed. gov subjected 16 young men (20-23 years) to 10 sauna bathing sessions, with one day gap each. Meticulous measurements were taken before and after each session. The study concluded that sauna bathing caused a reduction in total cholesterol and LDL cholesterol fraction levels during the sessions and a gradual return of these levels to the initial level during the 1st and the 2nd week after the experiment. However, the effect of sauna on lipid profile is similar to the effect of moderate intensity physical activity. 18 | May 2017

Good news for headache sufferers! Regular sauna bathing could decrease headache intensity significantly. A study in the Journal of Alternative and Complementary Medicine examined the applicability of sauna bathing as a new method of treatment for reducing pain in patients with Chronic TensionType Headache – a chronic syndrome characterized by frequent headache that occur more than 15 days per month. The study, however, could not prove the correlation between regular sauna bathing and the duration of headache.


The Perfect Sauna Routine • If you do use a sauna, limit your visits to 15 minutes as the heat can have diminishing returns on your circulation and body functions. • Drink two to four glasses of water after your sauna visit and avoid alcohol. Leave the sauna if you feel dizzy, irritated, or unwell. • The combination of salt, sebum, and bacteria contributes to breakouts, thus it is important to wash away all sweat right after the sauna bathing. • Cold water contracts the pores back to their resting size and brings the blood back to the body’s vital organs. Make sure to wash your hair and body with cold water.

The Verdict While some of the benefits are not yet supported with concrete evidences, it is never wrong to unwind in the sauna – unless you suffer from extreme high blood pressure or heart issue.

What got you interested in the telecommunications industry? Innovation and technology have always fascinated me as well as the thrilling dynamic market that constantly keeps me on my toes to offer the next big thing.

Our slogan is a representation of our mission here in Orange Egypt. We are a family of thousands of employees who understand that reliable technology goes hand-in-hand with personal experience. Basically, we listen to our customers to anticipate their needs and provide what is essential for them.

In what ways is Orange’s Human Resources management

different from Etisalat and Vodafone? The culture is completely different. At Orange, we always aim to create a strong workplace bond among employees. Orange has gained high prevalence in the market during the past year. What are the main elements behind this success? The past few years have been tough on the entire telecommunications sector and we, as a company, had even more challenges that we managed successfully. Rebranding from Mobinil to Orange has been a major change; however, that never hindered us from being a brand close to the hearts of the Egyptians.

Orange Egypt has recently received the first European standard certificate for Gender Equality (GEEIS) from Arborus Fund. In what other ways did gender equality benefit your company? Well, this certificate is not a benefit that we received, but rather recognition of the actual attention we dedicate towards diversity and gender equality. At the same time, it is a commitment from our side to continue to deepen the efforts dedicated to major issues ranging from equal opportunities in all occupations, women’s representation in the management positions, to work-life balance and much more. When we look at an employee, we recognize talent not gender.

The program has been running for three years now with two rounds rolled out every year. The Wellness Program includes many aspects; a prominent one would be the tailored weight loss and fitness challenge for male and female employees under “physical wellness.” Hundreds of employees are engaged each round for around two months in a specially tailored exercising and nutrition plan at Egypt’s most reputable gyms. What we do is we design the program, subsidize the participation fees, offer incentives to committed participants, and throw a special celebration for the winners at the end of each round. The physical wellness also includes on-site yoga sessions and ladies only classes at the gyms to ensure that we cater to all employees. There are other aspects with special activities under Orange Wellness program like parenting sessions, leadership skill development for children during the summer, awareness sessions about health-related problems like cancer and diabetes, subsidized passion courses so that employees can learn diving, water

sports, photography, and much more. We also started blood donation initiatives and vaccination campaigns. Orange Wellness program is duplicated in Orange MENA, and we took the best practice for the past three consecutive years, which is also one of the pillars that got us to the Top Employer in Egypt and Africa for 2016-2017.

What type of programs do you offer to your employees to enrich their skills? We send out an employee satisfaction survey every period of time to know about our employee’s hobbies, select few highly-demanded hobbies – such as life coaching, mentoring, horseback riding, and photography - and design specially-tailored programs under the supervision of experts to enrich the employees’ skills. This opens up more channels for employees to enrich their

skills and bond with colleagues, creating a pleasant work environment and better quality of work.

For younger generations, what is the worst thing anyone can do in an interview and what is the best piece of advice for anyone looking to make it to director level? My advice for young candidates is “never doubt yourself” because no one would know your good qualities as well as you. Your self-confidence will make you shine in any interview, and most importantly, never fake anything thinking that this will please the recruiter or the hiring manager. On the other hand, to make it to the director level, you need to think business and people – never one above the other. Finding balance is difficult to master, but is what makes a good leader.

Dahab Out & About DIVE SITES

Gabr El Bint

Even though it is less frequently dived than other diving sites, Gabr El Bint, or The Grave of the Girl, is one of the most attractive sites of North Sinai with two possible dives there. The right side, also known as the dark side, landscapes a steep wall that drops down to about 60m cut by numerous chasms, sandy ravines, and overhangs, while the left side is a far more colorful featuring a virtual forest of gorgonians. The ledge is riddled with exquisite coral heads that attract numerous reef species.

Blue Hole

Craved into a reef just offshore on the east coast of Egypt’s Sinai Peninsula, is Egypt’s most famous diving and snorkeling site. The Blue Hole features an unusual structure, unique challenge to descend to the deepest wonders, and unrivaled marine line and coral reefs. The Blue Hole is about 15 minutes drive or an hour by bike from Dahab, and you can rent diving and snorkeling equipment from any restaurant. 42 | May 2017


Eel Garden

Situated around 1.5 km north of Lighthouse area in Assalah bay, Eel Gardens takes its name from the uncountable colony of garden eels that carpet the sea floor. After a walk across the reef shelf we enter the water at a channel entrance in reef shelf, you get to meet the eels over a coral ridge on the sandy bottom. Resume up the sandy slope to the fringing reef and you will find the most beautiful reefs, coral, and aquatic life in Dahab.

The Canyon

The Dahab Canyon is a phenomenal diving spot for all fanatics of caves and marine life. The dive site is up to 10 meters high and emerges in large glassfish filled coral dome that leads out to beautiful coral gardens inhibited by octopuses, butterflyfishes, unicornfishes, anthias, pufferfishes, and countless types of unique fishes.

Toyota Celebrates Double Win at 2017 Middle East Car of The Year Awards Prius wins ‘Future of Motoring’ award while Fortuner named ‘Best Midsize SUV’

oyota has once again achieved success in the 2017 Middle East Car of the Year (MECOTY) awards, the biggest and most prestigious awards program for the regional automotive sector. The Toyota Prius bagged the ‘Future of Motoring’ special category award, while the Toyota Fortuner was named the ‘Best Midsize SUV’. The winners were chosen by a jury of 15 independent motoring journalists from leading automotive publications throughout the Middle East and North Africa. Helping to mitigate the environmental effects of automobiles has long been a priority for Toyota. Based on the stance that environmentally-friendly vehicles can only truly have a significant positive impact if they are widely used, Toyota has encouraged the mass-market adoption of hybrid vehicles across the globe. Toyota launched Prius ― the world’s first mass-produced hybrid passenger vehicle ― in December 1997. Since then, Toyota hybrid vehicles (HV) have received tremendous support from consumers around the world. What makes the Prius particularly innovative is the presence of two power sources in the form of the sophisticated electric motor and petrol engine. Thanks to the harmonious blend of the twin power sources, the car moves off under full electric power right from the start, using 46 | May 2017

Your opponent is exposed. His arms are exhausted and his head is bobbing around waiting for your final strike. But your arms are giving up too, so you put all your effort into that one last kick, but miserably fail! Why? Flexibility is what gives you the range of motion you need to land that kick high enough and reach your target. The fact is, the more you stretch, the more flexible you will become. Lack of stretching has been linked to back pain, whether mild, moderate, or severe. The truth is that we are living a life that promotes poor flexibility. The more time we spend sitting down in the office, the shorter our hip flexors become, as they are left in a contracted position throughout the office hours. Increased flexibility, on the other hand, makes our muscles tension-free.

Stretching Techniques: Ballistic Stretching

This is when you use the momentum from a movement to stretch a muscle beyond its normal range of motion by springing it into or out of a position.

Dynamic Stretching

Unlike ballistic stretching, the movement here is controlled, yet gradually increases in speed, reach, or both. This doesn’t involve any sudden movement and should be done in the form of repetitions.

Static Stretching

Static stretching refers to reaching further. It requires you to stretch a muscle and hold the position for 10 to 60 seconds. It is best done post to a workout when your muscles are active and relaxed.

Stretches: • Hip Flexing and Quad stretching - kneel down with your left knee on the ground and extend your right leg as far back behind you as possible, within bearable limits. Keep your upper body in an upright position.

Passive Stretching

• Bridge - lay on your back with only your feet and back touching the floor, and raise your hips to a higher level forming a dome shape.

Proprioceptive Neuromuscular Facilitation

• Foldover - stand upright and slowly bend down in an attempt to reach your thighs with your head while keeping your legs straight.

Passive stretching requires an external force exerted by special equipment or a partner to push the joint beyond the active range of motion.

PNF provides results faster than the above methods, but also has a disadvantage - it requires a partner. Your partner gently forces your muscle into a stretched position (passive stretching) for about 10 seconds, followed by a contraction for 10 seconds.

Active Stretching

The antagonist muscle is contracted to stretch the agonist muscle. For example, to stretch your biceps, your triceps must be fully contracted. This increases blood flow to the agonist and antagonist, while strengthening the contracted muscle. 52 | May 2017

How can I get more energy for early morning workouts?

First of all, you build an increased range of motion. Again, range of motion is important for sport specific moves and even for reaching for that dish on a high shelf. You will squat deeper, run faster, and throw better when you include flexibility training to your routine! You’ll also have better posture and you’ll move correctly, thus preventing injury that comes with tight and overactive muscles. Moreover, incorporating flexibility training in your routine will constantly make you feel more relaxed and looser when you take the time to stretch those tight muscles! Consequently, it will reduce your chances of developing an injury.

Getting adequate rest is absolutely vital in regards to energy levels. For adults, 7-9 hours of sleep is suggested. If you are getting adequate rest but you’re still not feeling energized in the morning, the problem may be that your body is in a state of ketosis after fasting throughout the evening during your sleep. Ketosis is when the body is using fat for energy. If you aren’t eating enough carbohydrates, then your body turns to fat for energy. This can cause that low energy feeling before your workouts. Green tea, green juices, coffee and even getting sunlight can help boost energy levels. Starting your workout routine with a fast-tempo, blood circulating dynamic warm up may not only help boost energy but will help prevent injuries caused by low energy, low focus workouts. Is training to failure the best way to build muscle?

How do fat burners burn fat?

No, in fact, it’s probably one of the worst. Constantly training to the point of muscular failure is an easy recipe for remaining small and weak. The reason being that, when you consistently work your muscle to failure, they require a ton of recovery. This then doesn’t allow you to complete enough volume to stimulate growth. The best way to build muscle is by consistently lifting heavier and heavier weights, combined with adequate weekly training volume. A good hypertrophy program will have you training to failure sparingly, if at all, and will focus mainly on total weekly volume and progressive overload to induce growth. A great hypertrophy program won’t have you train to failure at all, instead focusing on volume first, followed by tempos, exercise variation, compound sets, and much more.

Fat burners through their stimulant like effect cause the release of epinephrine and norepinephrine, hormones that signal the mobilization of fat from fat stores to the blood stream. Once fat enters the bloodstream however, it doesn’t magically disappear. There has to be a use for it to be burned as energy by the body. This is why to get the most out of a fat burner, it’s important to be working out regularly. If you’re not working out and creating an energy need, the fat that gets released into the bloodstream will just be stored as fat again. Fat burners can also help you lose weight by either providing a natural appetite suppressant and increasing thermogenesis in the body. Both of these effects help you create a calorie deficit, which technically translates into weight loss.

Any sort of change in fitness—good or bad—comes as a result of adaptation. And your body adapts specifically to meet the demands. In the world of exercise sciences, it’s known as the S.A.I.D. principle (specific adaptations to imposed demands). Most people know that if you eat more calories than you need, you’ll gain weight. And if you eat less calories than you need, you’ll lose weight. Both are examples of adaptation. When you consume calories in excess, your body stores the extra energy. When you don’t eat enough, your body utilizes that stored energy for fuel. As a result, you get bigger or you get smaller (respectively). Your body changes, or adapts, to the specific stimulus you provide. If the stimulus never changes, you won’t either. Eventually, your body will adapt to your program. At that point, you need to impose new demands to stimulate more adaptation. Without it, you’ll stop seeing results.

Training properly will increase sleep quality thus allowing you to sleep less. But I’m not talking any old workout. For this to work, your heart rate needs to be high for a sustained period. None of those typical bodybuilding routines work well, except for maybe a high volume leg day. There are countless options to achieve a high body temp during your workout. I’ll share with you my favorite. One is pyramiding rest times if you’re using straight sets. So as you go through your workout you rest less. For example, you may rest 3 minutes between sets of exercise 1, then 2 minutes between sets of exercise 2, and 1 minute between sets of exercise 3, and so on. METABOLIC INTERRUPTS: Add explosive bodyweight movements in between exercises or even sets such as burpees, jump rope, box jumps, box pushes, sprints or any cardio machine using quick bursts of speed. For example: Dumbbell Row —-> 10 burpees —–> Repeat X 3-5.

How Best to Tackle Training in Ramadan By: Victoria Haig

With Ramadan fast approaching 1.6 billion people around the world, a large number of workout devotees will fast from sunrise to sunset, making it an ideal time to remind ourselves of how best to observe Ramadan without compromising our fitness goals. First and foremost, the most crucial piece of advice is: do not stop training. Although it might be tempting to let exercise take a back seat this month, it is in fact an ideal opportunity to get leaner and stronger. Numerous studies proved that fasting has an overwhelmingly positive effect on your hormonal profile – resulting in a unique opportunity to be spiritually and physically better. Reap the Rewards of Ramadan Training Some of the benefits of fasting that affect your ability to lose fat and gain muscle are, increased levels of HGH - human growth hormone - which leads to faster muscle repair and growth. One study showed that interval training while fasting increased HGH by a whopping 1300% in women and 2000% in men. Ramadan also provides a chance for restored insulin sensitivity – fasting, especially when combined with frequent exercise, is one of the most effective ways of normalizing insulin sensitivity. So unless you have a medical reason that prevents you from exercising (if in any doubt please do not hesitate to consult your doctor) then please press on. In light of the research highlighted above and a plethora of reasons, let’s consider some useful tips for getting the most from your training. The Great Ramadan Training Time Dilemma Is it better to train just before Iftar or after you’ve broken your fast? Different fitness specialists will give you different answers with perfectly plausible explanations to back their opinion. 56 | May 2017


In brief, before Iftar may enable you to burn more fat by taking greater advantage of the hormonal response outlined above, whereas if you choose to train after Iftar you will have more energy and therefore be able to bring more intensity to your workout. Frankly, the decision is yours. Do what best suits you in terms of time and energy in general or on any given day. Don’t overthink this dilemma, instead look for windows of opportunity to train and continue to make training an integral part of your lifestyle.

Types of Training in Ramadan Dehydration can reduce your strength by up to 19%. This Ramadan will be summer and therefore unless you live in Iceland, it will be hot. If you train pre-Iftar, you may want to consider substituting more strenuous cardio activities and replacing them with gentler activities like a brisk walk or some isolated weight training at the gym. Irrespective of whether you choose to train before or after Iftar, you probably won´t have as much time as you normally would. So make every minute count. This month may even be a good time to try some new types of training. Remember, muscle confusion equals growth, so don’t be afraid to switch it up. If you feel overwhelmed, seek the advice of a professional trainer or group fitness coach, set some goals and stick to them. Ramadan Nutrition Needs During Ramadan, you don’t need to count calories but good training should always be supported by good nutrition and this equally as true in Ramadan. Calories are not the key but getting sufficient protein is – aim for 2g/kg of body weight. You can achieve this by always making protein your priority, eat the protein portion of your meal first then eat your carbs, then add some healthy fat for satiety. Don’t be afraid to rely on supplements during your non fasting window – whey can be particularly helpful at this time in terms of reaching your protein quota. Branch chain amino acids or BCAA are good for protecting muscle, providing hydration and enhanced performance if you are training after Iftar. Hydration is an important issue – aim for at least 2.5 liters of water divided throughout the evening, so you don’t flush it all out and find yourself overtly thirsty the next day. A final point on nutrition is to forget the no carbs at night rule – carbohydrates at night can be very muscle sparing and fat burning. Oatmeal, sweet potatoes, and whole grain breads and are good Suhoor options. Get Sufficient Shut Eye The holy trinity of muscle growth is training, nutrition, and sleep. Don’t skimp on the third; getting enough sleep is critical for muscle growth. If it is impossible for you to get 8 hours at a time – then this might be the time to schedule a nap. Try to plan your training, meals, and sleep patterns in advance, so that you are more likely to stick to it. Don’t just tell yourself you will, take your fitness goals seriously and make a plan. If you make the time to train, and commit to, at the very least, maintaining your fitness level and muscle mass you will be very pleased at the end of the month. Like many things in life, it’s a mindset – yes you can, follow these guidelines and reap the benefits of training throughout this Ramadan. May 2017 | 57

A warm up is the act of preparing for an athletic event or workout through a gradual increase in intensity in physical activity beforehand. A warm up period is now almost universally accepted as an integral part of any training session or competition. A warm up helps reduce your risk of injury and the aches that come with exercise. The physiological reason to warm up is to assist your circulatory system in pumping blood-rich oxygen to your working muscles. Cold muscles do not absorb shocks or impact as well, and are more susceptible to injury.

Types of Warm Up

General Warm Up The general warm up period is the first part of a warm up, and it consists of 5 - 10 minutes of slow, aerobic activity such as jogging, skipping, or cycling. The aim of this phase is to increase heart rate, blood flow, deep muscle temperature, and respiration rate. Specific Warm Up Following the general warm up is the specific warm up period, which incorporates movements similar to the movements of athlete’s sport “dynamic stretch” such as arm swings, leg swings, and side bending. The aim of this period is to replicate the range of motion required for the upcoming activity. The specific warm up usually lasts 5 - 10 minutes.

Benefits of Warm Up

• Increases movement of blood through your tissues, making the muscles more pliable. • Upsurges delivery of oxygen and nutrients to your muscles. This prevents you from getting out of breath early or too easily. • Trains your muscles for stretching. • Prepares your heart for an increase in activity, preventing a rapid increase in blood pressure. • Prepares you mentally for the upcoming exercise. • Primes your nerve-to-muscle pathways to be ready for exercise. • Improves coordination and reaction times. • Enhances metabolic reactions.

The Warm Up Drills

After finishing the 5 – 10 minutes of light cardio exercise, the intensity is 60% - 70% of max heart rate. (The equation of max heart rate is “age -220 = Max heart rate then multiply the percentage of the intensity.) For example, if you are 20 years old and the intensity 70%, then 20 – 220 = 200 \ 200 * 70% = 140 BPM of heart rate. Then will start the dynamic stretching. Using swinging movements is a great way to loosen up your muscles and joints so they are primed for handling heavy resistance.

Here are some exercises to prepare for a great workout • • • • • • • •

Front to back leg swings: 1 set of 10 reps, each leg. Straight leg march: 2 sets of 15 yards. Cross-body leg swing: 1 set of 10 reps, each leg. Standing gate-openers while walking: 2 sets of 15 yards. Lunge and twist: 1set, 12 steps for each leg. Arm circles: 1 set of 10 reps, forwards, 1 set of 10 reps, backwards. Arm swings: 1 set of 10 reps. Animal movements

The raw tuna tostadas were awakening and epic! The signature dish was a heavenly fusion of Asian and Mexican ingredients, comprising of fresh raw red tuna and avocados over a bed of a tostada chip and topped with sesame oil, soy sauce, and a hint of inducing chili. A snack that cannot be missing in any Mexican restaurant is the famous Las Quesadillas made of flour tortilla stuffed with ground chicken cubes, pico de gallo, sour cream, and spicy salsa; all smothered in a thick juicy mixture of yellow and red cheddar cheese. And here comes the real piece of art, an inducing fresh black salmon fillet topped with avocado and tomato cubes and lightly infused with grilled and roasted chunks of pineapple and oranges, and served with sweet and chili sauce composed of strawberry sauce and chili chipotle to give the salmon a spicy flavor with refreshing taste. What is the difference between a chef, a recipe developer, and a food stylist? Recipe developing is a type of customizing a recipe to match different criteria: who it’s developed for, the product it’s developed for, the use of the recipe and the type of cuisine. So finally you get a recipe designed for a product or a book matching all specified needs. Did you ever think that you would be so successful at blogging and when did you start? Never… I started without thinking at all about what will happen next. I just started by sharing my thoughts and recipes with my followers. What is the most adventurous Moroccan dish you’ve ever made? And can you provide us with the directions? I cook Moroccan food on a daily basis. Since it’s my hearty kitchen that I spent many years exploring and enjoying, each plate is adventurous for me. I will share with you one of my favorite recipes, Moroccan Chicken Pastilla:

Delve into the Art of Moroccan Cuisine with Assia Othman Where does your passion for cooking come from? I got my passion for cooking from my mother and grandmother and grew fond of the Mediterranean diet recipes. The plates they cooked and presented were always very colorful, beautifully set, and delicious, but the most intriguing thing about their recipes was how light it was and this is what inspired me in my recipes; how to cook healthy, light, and appetizing food using all types of natural and healthy ingredients. As a food stylist, I learned from them that how your plate is presented depends mainly on the fresh ingredients that you use in cooking. Where do you get your cooking recipe inspiration from? From across the world, but I am very much attached to the oriental cuisine. Various 62 | May 2017

cuisines reflect different cultures. You can understand a country’s culture from the way they eat, the ingredients they use, and how they combine different ingredients together. But as a Moroccan citizen, I tend to like the oriental cuisine - all the way from the Gulf to the Mediterranean - more than any other, because it is rich with healthy ingredients and spices. The different cooking methods of oriental cuisine also inspire me to a great extent, such as cooking in a beram or a pottery tajine. The variety of dishes that can be cooked in these berams are numerous, and any dish would taste good if cooked in a beram only if you use the right ingredients. The challenge for me when it comes to cooking in berams, is that as part of oriental cuisine you either use ghee or butter, and that makes the dish very heavy and not exactly healthy, and some recipes require a lot of hassle to prepare and cook in a beram.

Ingredients: • 1 kg of chicken • 4 sweet medium onions • 5 tbsp. olive oil • 1 saffron dose • 1/2 tsp. ground ginger • 1/2 tsp. ground cinnamon • 6 eggs • 1 cup fresh flat-leaf or Italian parsley, chopped • 10 - 15 Phyllo dough sheets • 140 grams (5 oz.) blanched almonds • Salt and pepper • Some melted butter for brushing Method: Preheat the oven to 400 °F / 205 °C. Spread almonds in one layer on a shallow baking pan. Roast for 10 to 15 minutes, stirring occasionally until golden. Heat four tbsp. of olive oil in a large pot. Braise the chicken pieces on all sides for a few minutes, and then remove. Add the onions with the spices, including ginger, cinnamon, and saffron. Return the chicken to the pot, add one cup chopped parsley, season with salt and pepper, cover and gently simmer over low heat for about an hour. Remove the chicken. Reduce the chicken sauce until there is almost no liquid remaining. Add the eggs to the sauce and stir constantly on low heat until you have a creamy consistency. Remove.


Remove the meat from the bones and shred it with your fingers.Take a round cake mold (or tart ring) and brush it with melted butter. Thaw completely the frozen phyllo in the refrigerator for 24 hours and bring to room temperature before using it. The dough can be gummy if thawed too quickly outside the refrigerator. Make sure that the hands are dry when handling the phyllo dough. Cut the phyllo sheets with a pair of scissors in half. Warp one half well with plastic wrap and then into a zip-style plastic bag. Lay one phyllo sheet on a flat surface (I use a silicone liner) and brush with clarified butter. Fold it in half and brush the two sides. Use a pizza cutter or sharp knife to cut off a 2 – 3 inch wide strip of phyllo dough from one end. Line a baking sheet with silicone liner or parchment paper and place a buttered ring on top (2 - 6 inch diameter). Fold the dough over the filling to form a triangle. Continue folding in triangles until all of the edges are sealed (it is like folding a flag). Brush some melted butter over the end strip, so that when you give it the final fold it stays shut. Preheat the oven to 400 °F / 205 °C. At this moment, freeze the wrapped pastilla in a plastic wrap to bake another day. Place the pastilla in the oven for 10- 15 minutes, remove the tart ring, then flip the pastilla and bake for another 15 – 20 minutes or until golden. You’ve published five international cookbooks with more than 3000 recipes from different places around the world. How did you gain enough knowledge to delve into the authentic secrets of every country? I traveled a lot and explored various cuisines. I have read and spent a lot of time discovering other cuisines via Internet, magazines, cookbooks, and live workshops... So I can say that I am really obsessed with this field. Why do you insist on cooking with olive oil? It’s by default. I grew up in Morocco, one of the Mediterranean countries that know the value of olive oil. I never miss out on olive oil in my recipes because this type of oil has its own identity. Is it true that it is healthy to cook with olive oil? It’s really healthy and safe: you can check the Mediterranean diet and see how Italians, Greeks, Turkish and North African people survive on it. Olive oil is at the heart of

their diets and daily meals: they cook with it, make deserts with it, bake with it. Some people have this myth that you cannot cook with olive oil and that it is unhealthy, and I assure them that this is not true at all! On the absolute contrary, it is the healthiest way of cooking. Other people also fear using olive oil in cooking or baking desserts, because it might make the dish taste bitter, but that is not true either. Only low quality olive oil would make a dish taste bitter, but if the olive oil is of a good quality and has a low acidity level, it will not make the dish taste bitter but rather more delicious. As a recipe developer, what is the difference between virgin and extra virgin olive oil, and how do you use them in cooking? The acidity. The extra virgin oil has only 0.8% of acidity, which is safe for cooking purposes compared to 2% of acidity that is found in virgin oil. Can you tell us more about your campaign Beram El Hana that you did last year and what was your objective behind it? When I came to Egypt, I was amazed by berams since they represent the same way of cooking of the Moroccan tagines. But I was so sad that they are so heavy because women tend to cook with ghee. So, I wanted to prove to all Egyptian housewives that even with olive oil, your beram will be yummy and healthy too. That’s why I exclusively teamed with Wadi Food, because we share the same vision and they support this vision by introducing a wide variety of healthy products to Egyptian consumers. I felt that I had to come up with another concept of cooking in berams, the same traditional recipes but while adding to it a healthy twist, and still make it delicious and easy to prepare. As such, I had to adopt other cooking techniques that I learned from other cuisines, like Italian and Indian cuisines when it comes to using herbs and spices. I was very worried when I first introduced such recipes, but the feedback in Egypt and the Arab world was very encouraging, so I pushed myself a bit harder and introduced Beram EL Hana last year with Wadi Food. It was 30-olive oil based Ramadan Recipes cooked in berams. The same traditional recipes that we like to eat during Ramadan, such as vine leaves and “Mahshy,” but cooked with no ghee or butter, only with olive oil. I also added some twists to each recipe using spices, herbs, and even vegetables to make the recipes even more delicious, light, and healthy. To my surprise, the recipes are still being shared and talked about over social media until now, even long after Ramadan was over, and I always receive comments and questions from my fans in Egypt about the different recipes that I introduced in Beram El Hana.

What advice would you give to people willing to start a healthier lifestyle? Reduce one spoon of salt, sugar, and fat daily, and replace ghee with olive oil. Include as much veggies in your daily meals and try to add more greens to every meal during the day, like cucumbers, baby spinach, lettuce, etc. Exercise every day, even for 15 minutes, to reap more health benefits health, burn fat, and enhance your metabolism. How can we stay healthy and fit and still eat what we like and what we crave for? Consume food throughout the day, but in very small meals, and avoid fats, carbs, and sugar after 6pm. Of course, drink 3L of water daily to detox the body. What ingredients would you bring on a desert island with you? You can only pick only 4! Olive oil, tomatoes, olives, and cucumbers. Who would you consider a culinary icon? Any housewife who cooks with passion and love! What are the latest plans that you are working on for Ramadan 2017? Do you have any surprises for your fans? I am working on a lot of surprises that will be out in Ramadan this year. I am working on two web cooking shows that will revolutionize Egyptian cooking and eating habits with my partner, Wadi Food. It is another evolution for Beram El Hana Campaign and actually it is taking Egyptian cooking to a totally different level. All my fans have to do is follow Wadi Food and me on our SM pages as we will have a lot of surprises for them. Finally, how has your life changed since working in this field? I have become more creative, positive, a source of female empowerment, and I started sharing a lot of things with my entourage. Indulge in a 3-Course Authentic Mexican Dinner Taco Soup Yield: 4 bowls Total Time: 75 minutes Ingredients: 2 pounds ground beef 1 envelope taco seasoning 1-1/2 cups water 2 tomatoes, diced 1 can mild chili beans, undrained 1 can whole kernel corn, drained 1 can black beans, rinsed and drained 1 can cooked tomatoes 1 envelope ranch salad dressing mix 1 can chopped green chilies, optional Directions: In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add taco seasoning, mix well, and then stir in the remaining ingredients. Bring to boil for few minutes then reduce heat. Simmer, uncovered for 15 minutes or until heated through, stirring occasionally.

Guacamole Hummus Yield: 1 big bowl Total Time: 65 minutes Ingredients: 2 avocados, chopped 2 garlic cloves 1 can chickpeas, drained 2 tbsp. Greek yogurt 3 tbsp. tahini 2 tbsp. olive oil 2 tbsp. onion ¼ tsp. ground cumin ¼ tsp. cayenne pepper ½ lime juice Directions: In a large food processor, combine garlic, chickpeas, avocados, Greek yogurt, tahini, salt, cumin, and lime juice. Blend until the hummus mixture is smooth. Add water if the hummus is too thick. Transfer the avocado hummus to a serving bowl; garnish with cayenne pepper; cover and refrigerate for a few minutes. Serve with tortilla chips and pita bread or pita chips! 64 | May 2017


Chicken Enchiladas Yield: 6 servings Total Time: 45 minutes Ingredients: 6 chicken breasts, cubed 6 flour tortillas 1 cup cheddar cheese, shredded ¼ cup milk ½ cup sour cream ½ green onions, chopped 1 can condensed cream of mushroom soup 1 can diced green chiles 1 tbsp. butter ½ tsp. garlic powder Directions: Preheat oven to 350 degrees F (175 degrees C) and lightly grease a large baking dish. In a medium saucepan, melt the butter and sauté the green onion for four minutes until tender. Add the garlic powder, green chiles, cream of mushroom soup, and sour cream. Stir well until condensed then reserve 3/4 of this sauce and set aside. Add chicken cubes and ½ cup of shredded cheddar cheese to the remaining 1/4 of the sauce in the saucepan. Fill each flour tortilla with the chicken mixture and roll up. Arrange in the prepared baking dish. In a small bowl, mix the remaining sauce with the milk. Spoon this mixture over the rolled tortillas and sprinkle the remaining shredded Cheddar cheese. Bake in the preheated oven for 30 to 35 minutes.

The Fasting and The Fit: How to Eat for Competitions By: Zeina Kassas

R

amadan is just around the corner, and a growing number of Muslim athletes now engage in international competitions. This raises a question every year regarding the well-being of Muslim athletes who compete at high levels. How will they manage? Is that even possible? Not even water? Fasting during Ramadan means abstinence from all food or drink, including water from dawn to sunset. It is recommended that before sunrise, Muslims eat a pre-fast meal known as suhur. This meal often resembles breakfast, but in some cultures it may include more dinner-like foods. After sundown, Muslims break their fast with iftar, a meal that usually starts with dates and water or milk, followed by dinner.

Muslims are permitted to snack at night between those two meals, and hydration is encouraged, especially when Ramadan falls during summer. It’s no secret that not eating or drinking during the day will impact performance. Any professional athlete will know the importance of maintaining a healthy body and eating well, especially pre and post training/ competitions. The ability to abstain from food and water, when you want it, can be extremely difficult. The strong self-discipline, patience, and desire to persevere during the day equip the athlete with the necessary tools to deal with other challenges within their game, for example patience in dealing with injuries or recovery and bouncing back after a loss. Ramadan motivates athletes to achieve their day-to-day results, which in turn allow their confidence to grow as well as their ability

to welcome bigger challenges on the field. Although abstaining from food and drink may not be optimal for competitions during the month of Ramadan, that doesn’t mean that they are unable to achieve peak performance or compete at all. It simply means that they will have to establish a new eat/drink/sleep cycle for that month. A Muslim athlete during the month of Ramadan begins to think about clever ways to minimize loss of body water, and ensures that they eat enough calories to help with the following day. For suhur, an athlete can more easily make it to sundown by eating high-fiber meals to sustain satiety over longer periods, fruits and vegetables to maintain electrolyte stores, and plenty of fluids (especially water) to maintain hydration. Muslims should also limit fried foods and sugary sweets, the latter of which is a common cultural tradition among many ethnicities during the holy month.

That is because fasting promotes the use of glucose and fats to produce energy. Hormones such as adrenalin and nor adrenalin are also reduced during fasting which would help also in the reduction of blood pressure.

Improves Immunity: Elimination of toxins and reduction of fat stores can enhance the immunity significantly as the body stores vital vitamins and minerals rich in antioxidants. It is imperative to consume fruits and vegetables during the non-fasting hours. Enhances Recovery Process: Through fasting, our bodies promote the secretion of the growth hormone by the pituitary gland which is anabolic hormone for formation of protein and collagen and are very important for recovery. Controls Appetite: Reduction of food consumption throughout the day decreases your stomach size which affects food portion and appetite. Reduces Fluid Retention in the Body: Fasting could have a great impact on the reduction of edema in swelling which is abnormal fluid accumulation in the body. Fasting helps in drying up swelling in ankle, feet, and abdomen especially when performing some ankle pumping exercise that are very helpful in reducing the unwanted fluids in the body.

Emirates NBD Egypt wins prestigious IJGlobal Award for MENA’s Best Transport Deal in 2016

Emirates NBD Egypt is pleased to announce that it has won IJGlobal’s Award for MENA’s Best Transport Deal. The industry leading awards program recognized Emirates NBD Egypt’s USD 110 million-syndicated Medium Term Loan for Cairo Airport’s Terminal Two Expansion project. Emirates NBD Egypt was the lead arranger of the transaction for Turkish developer, Limak Insaat. The Cairo Airport Terminal Two Expansion project is valued at USD 387 million and aims to make Cairo a major aviation hub for the Middle East and Africa. The terminal capacity is expected to more than double, reaching 7.5 million passengers each year, up from its current 3.5 million.
