Your article about going gluten free really resonated with me, because I had a very similar experience to the writer. I didn’t go off gluten completely, but I cut all cake and pastries out of my diet. (I still eat bread in the morning.) I try to eat fruit, vegetables and protein instead. And, exactly as the writer says, I stopped getting headaches, I was in a great mood all the time, and I had way more energy. If completely going off gluten seems too drastic for you, keep in mind that any improvement in your eating and health habits can have enormously beneficial results.

Last week, when I told people that I haven’t started Pesach cleaning, they warned me that I’m so late in the game. But guess what? I have one question, though. Is this program set up for people with Pesach kitchens? I see that the kitchen is only being started in Week 3. I know many people in my shoes, with big families and no Pesach kitchen, who are planning to kasher their kitchens at the beginning of next week so they can start cooking. I need at least a week of cooking before Yom Tov starts. I would rather push off my bathrooms and laundry rooms and walls for Week 4 when the kitchen is done so that I can juggle the cooking and chametz-free cleaning at the same time. This seems to make the most sense for people without a Pesach kitchen.

I’d like to comment on the discussion regarding cleaning help, which many of us rely on. We all know that our cleaning ladies work in several Yiddishe homes, and just like we don’t

want others to keep her overtime and encroach on our time, we shouldn’t do it to others.

But sometimes the temptation is too great, and it happens. Some even ask their cleaning help if she’s available, and she may say yes, figuring she’d rather stay in one place longer. Unknowingly, we are taking away badly needed help from other women who are desperately awaiting the arrival of their cleaning lady.

Last year, I had a steady cleaning lady coming to me weekly for a few hours of help I desperately needed. I had three little kids; the oldest, with special needs, was three years old; and I was working, as well. Last year, before Pesach, my cleaning lady began canceling on me every other week, and eventually, even more frequently. I found out who else she worked for, and I reached out to her to see if we could work out a schedule that worked for both of us. She informed me that she “filled up” the cleaning lady’s week with work, and therefore she now had the “right” to keep her for herself and her neighbors, even though the cleaning lady had previously worked for me. She said she had told the cleaning lady to tell the other lady she works for (me) that she won’t come anymore after Pesach. I informed her that this arrangement meant she knowingly took away desperately needed help from me, but it didn’t make her change anything.

I’d like to propose an idea to help avoid such problems. Everyone employing the same cleaning lady should create some form of communication so that they can work together to make sure no one takes time away from anyone else. They can also keep each other informed if they don’t need their usual hours, or if she doesn’t show up. Cleaning lady agencies can do the same. Let your cleaning lady know that you’re in contact with each other, and that we’re one team, not working against each other, chas v’shalom. Lets bring Mashiach closer by increasing ahavas Yisroel.

Pesach With Joy

Pesach comes once a year. That should lead us to feel an extra sense of love and excitement for the mitzvos involved, the Shelah Hakadosh says. Since it isn’t an everyday opportunity, we should be sure to prepare for it with extra joy.

THE ARIZAL ONCE SHARED with a close acquaintance that everything he achieved, and all madreigos of chochmah and ruach hakodesh he merited, came as a reward for always being b’simcha when he performed mitzvos. When the Arizal did a mitzvah, he was overwhelmed by a great joy that knew no bounds.

Reb Hershel of Rimanov used to say, “If I wasn’t so selfconscious in public, I would take my matzah along with me to shul and lovingly shake it the way we shake the lulav and esrog!”

Reb Itzik’l of Pshevorsk shared that one year, his grandfather, Reb Shmelke Horowitz of Pshetzlov, spent Pesach in Kaminka, under the wings of Reb Shalom of Kaminka. It was an elevated, inspiring Yom Tov. On Motzei Pesach, as Reb Shmelke was sitting in the beis midrash learning, two men entered and sat down nearby. Reb Shmelke overheard one ask the other, somewhat in jest, “Nu, did you eat chametz yet?”

When Reb Shmelke heard this statement, the reality that it was time to return to eating chametz hit him with finality. He was overcome by an extreme letdown, and when he tried to resume learning, he found that his heart wasn’t in it. He was simply too sad to focus! After several tries, he realized he had no choice but to close his Gemara. He broke into inconsolable tears, which lasted through the night — right there on the bench in shul.

He was so connected to the mitzvah of matzah that he couldn’t bring himself to leave it behind.

One Erev Pesach, the Galanta Rav and his talmidim were ready to leave the matzah bakery after baking Erev Pesach matzos. Another Yid came to pick up his box of three matzos, and they watched as he suddenly broke out in a happy little dance.

“This reminds me of a similar story that took place with Rav Nosson Adler,” the Rav said.

One Erev Pesach, Rav Nosson returned home from personally baking his own matzos. He had invested his heart and soul and extra hiddur in these precious matzos. Looking out the window, he noticed a simple man walk past. In his arms were three matzos that he had just picked up from the matzah bakery. His face was shining and he was dancing down the street out of sheer gratitude that he had merited receiving matzos of his own.

Rav Nosson immediately sent someone to talk to that man. “Would you be willing to make a switch?” he asked. “Rav Nosson would like to have your matzos — and he will give you his!”

Without thinking twice, the simple man agreed. “I’d be thrilled to take home the Rav’s special matzos!” he exclaimed, and immediately handed over his.

When he came back inside, the messenger asked Rav Nosson why he wanted that simple Yid’s matzos. “Rebbi invested so much in his matzos — watching and baking them with every measure of care! The matzos of that Yid were simple bakery matzos, without all the extra hiddurim.”

Rav Nosson replied, “This man was so overjoyed with his matzos that it was worthwhile for me to give up my own personally guarded matzos in exchange for his. I’d rather have matzos that are saturated with the middah of simcha and ahavas hamitzvah — even if they were baked on the simplest level!”

Such is the value of a mitzvah done b’simcha!

When one does a mitzvah in a state of joy, all the challenges involved fall to the wayside, and he doesn’t sense any difficulty. His love and joy at being able to accomplish another mitzvah wipe away any hardship that may come along with it.

Tuvia held the high-ranking position of judge in the royal court. Every sentence he issued was carried out to precision, and he was venerated among the populace. He did have enemies, though, and people who were jealous of his success decided to stage a libel against him. They slandered him to the king, who declared that Tuvia must be removed from his post immediately and would be punished severely for his alleged betrayal.

Tuvia realized he had to escape. He changed into civilian clothing and made his way by foot, headed to a faraway destination. Suddenly, he encountered an obstacle. Before him was a stream; there was no way he could continue his hasty escape!

As he stood at the riverbank, unsure of what to do next, a villager passed by. Recognizing his face, he called out, “Tuvia the Judge! Is that you?”

The villager had no idea that the judge had been removed from his post and was now a fugitive. He assumed the judge must have an important reason to cross the river, and he decided he would help him. His motive was selfcentered; this was a great opportunity to get into the good books of the judge who had the final word in court!

“Please, get on my shoulders,” the villager said to Tuvia. “I will take you across the river.”

Tuvia gratefully agreed.

The villager began making his way across the river, encumbered by an overweight Tuvia on his back. Yet the heavy load seemed effortless to him.

When they were three-quarters of the way across the river, Tuvia called out to his savior, “When luck will shine upon me again and I will return to my position, I’ll be sure to repay you for this tremendous favor!”

“What do you mean?” the villager replied. “Are you not the chief judge?”

As soon as the villager heard that Tuvia had been deposed, he dropped him into the water. “When you’re back in the courtroom,” the man said, “I’ll be back to lift you on my shoulders and take you across the river.” Then he made his way back to the spot on the riverbank where he had first picked up Tuvia.

Some spectators asked the man why he’d suddenly lost his energy. “If you took him that far, couldn’t you have managed to take him all the way across?”

“You don’t understand,” the villager retorted. “So long as I thought I was carrying the leading judge of the country on my shoulders, I was elated and happy to do the job. I didn’t even feel his weight on my back! But once I heard he turned into a simple citizen — and a fugitive, at that — I simply had no strength at all to carry him…”

Mayor Hosts Media Meeting To Address Concerns of Jewish New Yorkers

A dozen invited journalists spent an hour last week with Mayor Eric Adams and his senior staff, taking advantage of an opportunity to share the Jewish community’s concerns during what are clearly stressful times.

The meeting took place on April 8 at City Hall and lasted approximately one hour, with Adams and his staff sharing an overview of how the administration is seeing to the needs of the five boroughs’ Jewish communities.

Pinning the blame for spiking crime rates squarely on state laws that did away with cash bail and prevent judges from jailing dangerous lawbreakers while they await trial, NYPD Deputy Chief Richie Taylor hailed Adams for his repeated efforts in Albany that have reversed at least some of those laws, reported Hamodia.

“Now, if a person is charged with a hate crime, a judge has the discretion to impose bail and keep that offender in custody until there is a real trial,” explained Taylor.

Adams emphasized that the NYPD is under orders to give priority to any reported hate crimes, in light of the rise in anti-Semitism, and has allocated sufficient staff to support that

initiative. He also noted that the NYPD is just one cog in the system of justice, making it incumbent on the city’s district attorneys and judges to make sure that justice is served and that criminals are not returned to the streets without suffering the consequences of their actions.

Also discussed was subway safety, the increasing outbursts of anti-Semitism in city schools and concerns about squatters, who are legally allowed to claim owners’ rights to a property if they live there for 30 days. That issue looms large for those who might be heading out of town during the summer months and Adams said that he has been working with the City Council to have that 30 day minimum moved up to 45 days, in keeping with state law.

WIC Voucher Amounts Increasing, More Foods Added to Eligibility List

Covid-era changes to the Women, Infants and Children program are becoming permanent, with news of increased voucher amounts coming as good news to low-income families who struggle to pay their grocery bills.

The new rules will have the Federal Food and Nutrition Service paying $26 per month for children ages one through four, while between $47 and $52 allocated to women who fit certain criteria. The program is also expanding its list of eligible items, although monthly allowances for milk will be trimmed, while juices may be removed altogether.

The WIC program hasn’t updated its rules in ten years.

The new guidelines place a greater emphasis on fresh produce and whole grains. According to Agriculture Secretary Tom Vilsak, the goal is to fill the nutritional gaps that exist in many people’s diets. New items that will be covered by WIC include canned fish, fresh herbs, quinoa, wild rice, millet, teff and lactose-free milk. Peanut products did not make the cut, despite a request from allergists who noted that introducing peanut products at a young age could prevent future peanut allergies.

The new vouchers are expected to be issued in June, with a complete rollout of the program taking place over two years in most places.

Mail Thieves Apprehended in Boro Park

Three full bags of stolen mail were recovered by the NYPD along with a loaded gun, thanks to an alert member of Boro Park Shomrim.

Hamodia reported that a Shomrim member observed a UHaul truck parked near 12th Avenue and 36th Street shortly before noon on April 11 near a mail relay box, one of the many large green metal containers on city streets used by letter carriers to temporarily hold mail that doesn’t fit into their carts.

Mail theft, a federal offense, has been on the rise recently in

New York City, and Shomrim has been monitoring boxes that are believed to have been targeted, including the 12th Avenue box. When the Shomrim member saw a man removing bags of mail from the relay box, he began following the culprit and contacted police.

Seeing that he was being followed, the mail thief left the area on foot. He was arrested a short time later by police on 9th Avenue. When police opened up the U-Haul truck that had been parked on 12th Avenue and 36th Street, they discovered several bags of mail and a loaded handgun.

Shomrim coordinator Mutty Braunner said that mail thefts have been on the rise during tax season, with people sending in tax returns and getting refunds from the Internal Revenue Service. Thieves have been purchasing keys to the mail relay boxes on the black market, and Shomrim was involved in two similar incidents last month, one that involved two separate relay boxes in Flatbush and another that involved two suspects working together using a U-Haul truck. It is unclear at this time if any of these incidents were committed by the same individuals.

The stolen mail was returned to the United States Postal Service.

EMTs May Get Bulletproof Vests in NYC

In a sign of the times, the City Council approved a measure last week that could require the FDNY to outfit all emergency medical technicians and paramedics with bulletproof vests.

An increase in the number of attacks on first responders prompted a pair of bills written by Council Minority Leader Joseph Borelli. The legislation would outfit EMTs and paramedics with vests that are bulletproof and stab-proof and would also provide them with self-defense and de-escalation training.

Similar bills have stalled previously in the City Council, but having passed muster this year, the legislation is headed to the desk of Mayor Eric Adams for his approval.

“In the four or five years since these bills have been kicked around, attacks on EMTs have gone up double in that short amount of time,” said Borelli.

Borelli noted that the number of attacks on EMTs have gone up 20 times since they first started being recorded two decades ago. There were 363 incidents of attacks on EMTs in 2022, and Borelli’s bill highlights the fatal stabbing of FDNY EMT Captain Allison Russo-Elling in 2022. The 61-year-old Russo-Elling was six months away from her retirement when she was stabbed nineteen times by Peter Zisopoulos, who was found to be mentally unfit to stand for trial in 2023.

The suggested training would include teaching EMTs to recognize and understand mental illness while also teaching them how to defend themselves in violent situations.

“We owe it to them to take every possible measure to safeguard their lives while they protect ours,” said Councilman Kevin Riley, the bills’ co-sponsor.

CHAPTER 7

Yoel is edgy about the trial. Russy calls the Rav. Kristina lets on that Zevi is still home, and Russy sends Chavi some money. Zevi finally goes back to school, and Chavi resolves to attend her father’s sentencing.

When the judge called a recess after the closing statements, Yoel had no problem being transported to all the recess times in the history of his life: a condemned convict in the corner of the schoolyard. Or as Zanvi, the tallest boy in the class, put it, “Spoiled milk smells, Shorty!”

Yoel’s father would show up to the school building with a milk delivery every morning, his blue shirt open at the cuffs and blackened at the edges. He would grunt as he carried the precarious pile of blue and red crates. Then he would take the opportunity to visit his son’s class every day and hear his rebbe’s glowing reports.

Because although he wasn’t much of a success at recess, he was definitely a success in the classroom.

If his classmates thought that Yoel destructed in the corner of the schoolyard like curdled milk, they were wrong. It was then, during those endless recess times, that he planned his future down to the last detail.

When Zanvi would take a cardboard milk carton during lunch and purpose-

ly mangle the triangular opening, he would imagine himself as a big rav or philanthropist. Or both.

But a loser is a loser is a loser.

Yoel opened his shirt button.

He was alone. The bleachers reserved for family were empty, save for Russy and some court personnel. None of the shul members he supported, none of his hundreds of business contacts, and certainly none of the five children he raised, were there.

Spoiled, curdled milk.

“Yoel?” Russy said softly, walking toward him.

Yoel turned to his wife. Her shoulders were straight and she looked directly into his eyes.

“Yoel, I want you to know that…” she paused and lowered her eyes, “that regardless of the outcome, I know you are the most honest man.”

She stood next to him, the silence stretching for another minute. Then he watched her slowly make her lonesome way back to the bleachers. An unfamiliar guilt wormed its way into his throat. He’d made the choice not to share this

with anyone, but what about Russy? Maybe it was even more frightening to be a lonely bystander.

The courtroom instantly quieted as the judge made his way back in, his black robe sweeping ominously behind him.

Yoel turned around again toward Russy, trying to find strength from her words — and saw another woman slide into place near his wife.

Chavi! How did she know?

He watched her lightly hug Russy and hesitantly wave to him. He relaxed somewhat and sat down just as the judge banged his gavel.

The judge went on to cite some of the statements made during the trial and then paused.

Yoel’s heart thrummed against his ribs.

The judge looked straight at him as he delivered a hefty dose of mussar about his responsibility toward his tenants, his city and the country.

And then he announced his verdict.

“Considering that the tenants have not paid rent since the indictment, each

“Additionally…” The judge looked at Yoel. “The defendant will serve 60 hours of community service in the city of the crime and will be on probation until the hours are completed. This is to pay back to the community he has wronged!”

Only Russy noted the softness in Yoel’s shoulders, the way they suddenly hung loosely instead of practically hugging his neck. He held the signature Tequila 1942 bottle and gleefully poured one l’chaim after another for the many visitors and collectors who showed up, even allowing himself the occasional sip.

Russy smiled indulgently as she watched him order Chuni around with the pile of pre-printed OJC checks. She’d missed the old, familiar Yoel.

The waiting game was finally over.

As a form of denial, she suspected, Yoel threw himself into Purim prep with gusto. Only a few hours after the trial concluded, Shia Furst was already

meeting with Yoel at their house. He’d invited Chuni and Yosef Yehuda to the Purim planning meeting, too.

When Chuni called Yosef Yehuda “YY,” which Yoel hated, Russy was thrilled to see his glare. Ahh! Yoel was back!

“No tent this time!” he’d announced, and winked at her.

Shia was a genius. In under a week, he figured out how to maximize the space by utilizing the foyer and coat room in a better way. He persuaded them to store their 200 gold and leather chairs and go with minimalist acrylics instead to give them more space.

He’d also partitioned the room into a food court, family room and dance floor, and planned the menu down to the nosh dispensers hanging on the wall. The bar had an impressive selection of wines, including some real specialties. Yoel had warned the sommelier to be careful with the bar and serve with good sense.

Now another group of bachurim, these dressed as British soldiers, rolled in, each one in a different degree of inebriation. They had a little Purim shpiel,

something cliché about supporting an army of Torah, and Chuni handed them a check.

Yoel spoke to the bachurim, asking them what they were learning and what the specialty of the yeshiva was.

One bachur, his braces glinting under the lights, took the cordless mic and started crying how he wanted to learn, and that every dollar went to supporting his yeshiva. And that they didn’t rent a party bus; they came in a dilapidated school bus because every dollar went for the yeshiva.

In the family room, Zevi was bouncing on his inflatable horse and neighing louder than an entire stable of horses. Russy noticed that he, too, appeared a bit more relaxed, or maybe grounded was a better word.

Purim was the best medicine, Russy decided.

Just as she was about to serve herself a portion of stuffed cabbage, the door was flung open, and another group of bachurim — these dressed as Yerushalmis — bounced in.

“Tatty!” Menachem cried. She hadn’t

even recognized him. His white Yerushalmi socks were dirty, and he was wearing long, curly peyos down to his waist.

“Tatty!” he cried again. He stumbled to Yoel’s seat and attacked him with a crushing hug. “All I want is to learn! Tatty! I want cheshek for Torah! But I need you to listen to me!”

With that, he flung himself onto the floor and sobbed like a baby. “No one listens to me! I have no one!”

Yoel stood up angrily. “Menachem, get up!” he commanded.

Menachem continued sobbing. “See? I have no one to talk to!”

Yosef Yehuda and Chuni jumped up and dragged Menachem to a bed upstairs.

Reb Lemmel, the shul gabbai walked in. Bad timing. Yoel did not like the man. He was a busybody and got on his nerves, but Rabbi Viener never allowed Yoel to fire him. What was he doing here?

Russy watched with a sinking heart as Lemmel made his way to Yoel, who was still trying to collect himself after Menachem’s embarrassing behavior.

“Ah freilichen Purim,” Lemmel announced. “R’ Yoel! Kol haposhet yad! Please, as a naggid it’s your achrayus to keep our tzedakos running!”

Russy watched with growing horror as Yoel’s face reddened with a combination of anger and alcohol.

“Really?” he asked slowly, sardonically. “It’s up to me?”

Lemmel nodded vigorously, rubbing his palms together in anticipation of the check.

“So you aren’t happy with the $40K I gave you last week for kimcha d’Pischa?”

Lemmel seemed oblivious to the cynicism. “It’s enough for kimcha d’Pischa, but not for the electricity bills and the gemach.”

Yoel looked long and hard at him. “I’m not a bank, and I think I gave enough.” His tone was loud enough for the room to go extremely quiet.

Lemmel dropped his hand and seemed puzzled by the response.

“Don’t worry, I’ll give something.” Yoel added, and instructed Chuni to give Lemmel a check for a thousand dollars.

Russy breathed again, but not for long.

Lemmel was still making his way out when he bumped into a burly man in a clumsy head-on collision.

“Sorry,” Lemmel said, rubbing his forehead.

The burly man seemed unhurt. “Is this the home of Joel Brandwein?” he asked.

Lemmel nodded. “What are you dressed up as?” he asked, looking him up and down. With no answer forthcoming, he pointed to Yoel. “That’s him.”

Benevolently, he walked the guy all the way to the head of the table.

Russy hurried over to help out, but it was too late. The stranger strode over to Yoel. “Mr. Brandwein.”

“And you are?” Yoel asked pleasantly. The man was tall and clean-shaven. It didn’t look like a Purim get-up, and he seemed bewildered at the Purim scene. Lemmel stared in fascination.

“Sorry to be a party pooper here.” He gestured toward the general chaos, though he didn’t seem sorry at all. “But I’m your probation officer, and we gotta set up your hours, sir.”

As a confirmed chocoholic, my go-to flavor profile for baking often includes chocolate. Here I bring you two chocolate recipes using heimishe ingredients that yield two different chocolate experiences. Try one or try ‘them both, and get that coffee brewing for the perfect accompaniment.

CHOCOLATE ESPRESSO PUDDLE COOKIES

These charming chocolate cookies with their cracked and glossy tops are a chewy delight!

INGREDIENTS

2 cups confectioners’ sugar

¼ cup cocoa

2 egg whites

1½ T. coffee dissolved in a little hot water

1⅓ cups chopped nuts, roasted Pinch of salt

DIRECTIONS

1. Preheat the oven to 325°. Line two cookie sheets with parchment paper. Set aside.

2. In a bowl, combine the confectioners’ sugar and cocoa.

3. Add the egg whites and diluted coffee, and stir until combined. Add the nuts and salt.

4. Place mounds of dough on the cookie sheet, leaving plenty of room between each mound, as the cookies will “puddle.”

5. Bake for 16 to 18 minutes. Allow to cool before peeling from the parchment paper.

CHOCOLATE PECAN BISCOTTI

I love recipes that call for almond flour instead of potato starch; they seem more wholesome and appealing to me. In fact, I’d gladly eat this biscotti all year long! The chocolate glaze is totally optional; it upgrades the presentation factor, but the biscotti is also delicious on its own.

INGREDIENTS

2 eggs

2 T. oil

¾ cup sugar

1½ cups almond flour

½ cup cocoa

¼ tsp. salt

½ cup chopped pecans (or any other nuts)

DIRECTIONS

1. Preheat oven to 350°.

2. In a bowl, mix eggs, oil and sugar until fluffy.

3. Add remaining ingredients, and mix to combine.

4. Using wet hands, form the batter into a long log on a lined cookie sheet.

5. Bake for 25 minutes. Remove from the oven, and allow to cool.

6. Once cooled, cut into oblong, ¼-inch-wide slices, and return to the oven for ten minutes on each side.

CHOCOLATE GLAZE

INGREDIENTS

⅓ cup cocoa

¼ cup honey

2 T. hot water

2 T. oil

Pinch of salt

DIRECTIONS

1. Combine ingredients to form a smooth glaze.

2. Smear over half of each biscotti, and top with chopped nuts if desired.

BROWNIE CHEESECAKE

Simple yet craveworthy!

INGREDIENTS

4 eggs

1½ cups sugar

1 cup oil

½ cup cocoa

¾ cup potato starch

1 tsp. coffee dissolved in a drop of water

CREAM CHEESE FILLING

8 oz. cream cheese

1 egg ½ cup sugar

DIRECTIONS

1. Beat eggs and sugar until pale yellow.

2. Add the oil, cocoa, potato starch and coffee. Mix until combined.

3. Pour batter into a lined 9x13” pan.

4. To prepare the filling, blend the cream cheese, egg and sugar until smooth and creamy.

5. Swirl into the batter.

6. Bake at 350° for 45 to 50 minutes.

CHEESE ROLL

An elegant Yom Tov treat.

INGREDIENTS

6 eggs, separated

½ cup sugar

½ cup potato starch

1 T. oil

1 T. cocoa

CHEESE FILLING

8 oz. cream cheese

½ cup sugar

CREAM GLAZE

6 yolks

1 cup sugar

¾ cup oil

2 T. coffee dissolved in 1 T. water

1 T. cocoa

DIRECTIONS

1. Preheat the oven to 350°.

2. Beat egg whites while gradually adding the sugar until stiff.

3. Add the yolks, and mix until just combined. Do not overmix .

4. Add the rest of the ingredients and mix. Again, do not overmix; it will cause the batter to fall apart.

5. Spread the batter onto a lined cookie sheet. Bake for 20 minutes.

6. Meanwhile, dust a dish towel with potato starch.

7. When the cake is ready, gently flip it onto the towel. Remove the baking paper, and dust some more potato starch on top. Roll, starting from the smaller end. Set aside.

8. Prepare the cheese filling: Blend the ingredients together until smooth. Set aside.

9. Prepare the cream glaze: In a double boiler (I used two disposable pans), mix the cream ingredients. Let it boil for 15 to 20 minutes, mixing intermittently, until the sugar is fully dissolved and the cream has a nice, soft mixture.

10. Beat the cream until stiff. Place in fridge to cool.

11. To assemble, unroll the cake, and transfer onto a parchment paper. Spread approximately half the cream glaze onto the cake, then spread the cheese filling and re-roll, the same way as before. Top the roll with the rest of the cream.

I’ve got something to prove. It’s that Pesach desserts can be spectacular!

POMEGRANATE ORANGE

PAVLOVA WREATH

This elegant dessert offers a delightful blend of tangy citrus and sweet pomegranate layered on top of a crispy meringue base. Delicious, pleasing to the eye, and really not that complicated! You’ll thank me later.

PAVLOVA

¼ tsp. salt

¾ cup sugar

4 large egg whites

ORANGE CURD

¼ cup orange juice

3 tsp. sugar

1 tsp. potato starch

1 egg

POMEGRANATE CURD

¼ cup pomegranate juice

3 tsp. sugar

1 tsp. potato starch

1 egg

GARNISH

Orange slices

Pomegranate arils

DIRECTIONS

1. Preheat oven to 220°.

FOR THE PAVLOVA:

2. Combine the egg whites and salt, and beat on high speed until frothy. Once it becomes frothy, keep beating while adding 1 tablespoon of sugar at a time. Continue mixing until stiff peaks form.

3. Draw a 9-inch circle on a parchment paper.

4. Turn the parchment paper over, and draw 6 circles along the 9-inch circle to create a wreath.

5. Place some of the egg white mixture evenly onto each circle, creating an indent in each one so you can later fill with curd.

6. Bake for 1 hour and 15 minutes.

7. Turn the oven off, but keep the pavlova inside, making sure not to open the oven. Let it sit in the turned-off oven for an additional 2 hours.

FOR EACH CURD:

8. Place the juice, sugar, potato starch and egg into a heatproof bowl. Mix well until combined.

9. Place bowl on a double boiler (see note). Mix continuously on a low flame until the curd thickens.

10. Once thickened, remove from heat and allow to cool completely.

11. Cover and refrigerate until you’re ready to use it. (It’s normal for the curd to settle slightly, just mix well before using.)

12. Assemble right before serving so the pavlova doesn’t get soggy. Place some curd into each indent created in the pavlova, and top with fruit. Enjoy!

Note: To create a double boiler, fill a pot with water, and place the heatproof bowl on top of the boiling water.

SUGAR-GLAZED ALMOND MANGO TART

This tart is a mouthwatering dessert. It isn’t too heavy, and it boasts the tropical sweetness of mango in a golden, buttery crust. You’ll be glad you tried this!

TART

2½ cups almond flour

3 T. sugar

¼ tsp. salt

2 T. cold oil (see note)

1 egg

6 tsp. almond butter, for coating the shell

MANGO COULIS

2 heaping cups cubed mango

Juice of 1 lime or juice of ½ lemon

1½ T. sugar

SUGAR COATING

1 cup sugar

½ cup water

DIRECTIONS

1. Preheat oven to 375°.

2. Combine all dry tart ingredients in a large bowl.

3. Add the cold oil and egg, and mix well into a dough.

4. Refrigerate for a half hour.

5. After refrigerating, you can either use 6 small tart pans, or one 9-inch tart pan. Shape the dough into the tart pan(s), prick holes in the center, and place a piece of silver foil on top so it doesn’t blow up.

6. Bake for 15 minutes. Remove the silver foil from the center, and bake for an additional 3 minutes. Allow to cool.

7. While the dough is cooling, create the mango coulis: Place the mango, lemon juice and sugar in a pot, and leave to simmer on a very low flame for 10 to 15 minutes until the mango becomes super soft.

8. Blend the mixture with an immersion blender until smooth.

9. Once the tart shells are cool, place 1 teaspoon of almond butter into each shell (use 6 teaspoons if you’re using one large shell).

10. Pour the mango coulis over the almond butter, and decorate as desired with additional fruit.

11. In a separate pot, mix the sugar and water until it reaches a roaring boil. Pour it over the tarts to create a sugar glaze.

Note: To create your cold oil, place 2 tablespoons of oil into the freezer until it hardens.

SANDWICH COOKIE COFFEE NICE CREAM

This beautiful dessert is simple to create, yet looks like it’s taken hours! Elegant and delicious, you’ll find yourself serving this multiple times over Pesach.

COOKIE

2½ cups confectioners’ sugar

¾ cup cocoa

¼ tsp. salt

3 large egg whites

1 cup chocolate chips or chopped nuts of choice

COFFEE NICE CREAM

The term “nice cream” is used to refer to ice cream that’s made of frozen fruit and is therefore more wholesome and healthy. Try it, and you just might get hooked!

5 bananas

3 tsp. coffee, dissolved in ¼ cup hot water Chopped nuts of choice

DIRECTIONS

1. Combine all cookie ingredients.

2. Refrigerate for at least a half hour and up to overnight.

3. Preheat oven to 350°.

4. Scoop 2 tablespoons of cookie batter at a time onto a cookie sheet to create cookies of the same size.

5. Bake for 10 minutes.

6. Slice the bananas and freeze them (approximately 2 hours).

7. Once the bananas have frozen, blend at high speed along with the coffee, and mix well until smooth.

8. Place a scoop of banana nice cream on a cookie. Cover with a second cookie, and roll in nuts.

9. Freeze, and enjoy!

ALMOND THUMBPRINT COOKIES WITH APPLE PIE FILLING

These cookies are perfect to serve for kiddush on Shabbos Chol Hamoed, or on Pesach itself.They’re fancier than a basic cookie, but still super easy to put together.

ALMOND COOKIES

4 cups almond flour

APPLE PIE FILLING

DIRECTIONS

APPLE PIE FILLING:

1. Toss the cubed apples in lemon juice.

2. Place the apples, water, cinnamon, coffee and sugar in a 4-quart pot.

3. Bring to a low boil, then reduce to medium heat. Allow the mixture to cook for 5 to 7 minutes.

4. In a small bowl, combine potato starch and cold water. Pour this mixture into the cooked apples. Keep the pot on heat, stirring continuously, until the mixture has thickened and no lumps appear. Remove apple mixture from heat and allow to cool.

ALMOND COOKIES:

5. While the apples cool, preheat the oven to 325°.

6. Line a baking sheet with parchment paper.

7. In a bowl or plastic bag, mix together all ingredients.

8. Use your hands to form small balls, and place them about 1½ inches apart on the cookie sheet.

9. Using your thumb or the back of a spoon, create a small indentation in the center of the cookie.

10. Bake for 10 minutes, and remove from the oven.

11. While the cookies are still hot, use the same spoon to press into the indentation, and place a bit of apple mixture into the center.

12. Return the cookies to the oven, and bake for an additional 11 minutes.

13. Allow to cool fully before removing from the baking sheet. Enjoy!

A glorious Pesach delicacy, this traditional apple roll cake carries with it a stately elegance.

SPONGE CAKE

6 eggs

6 T. sugar

1½ T. oil

6 T. potato starch

APPLE JAM

4 large Cortland apples, peeled and grated

1–2 T. lemon juice

Sugar to taste, about 3–4 T.

DIRECTIONS

1. To prepare the cake: In a mixing bowl, beat the egg whites while slowly adding the sugar. Continue beating until stiff.

2. Slowly fold in yolks and oil.

3. Slowly add potato starch.

4. Bake on a parchment-lined cookie sheet for 15 to 20 minutes, until a toothpick inserted comes out clean.

5. Sprinkle confectioners’ sugar liberally over a kitchen towel.

6. Run a knife around the edges of the cake to release, and flip the warm cake onto the towel.

7. Remove parchment paper, and roll up jelly roll style. Cool completely.

8. To prepare the jam: Combine ingredients in a saucepan, and cook over low-medium heat on a gentle simmer for about 2 hours, mixing occasionally until the apples take on a jam-like consistency.

9. Unroll the cake, and spread jam over it. Roll up again. Dust with confectioners’ sugar, or add an optional caramel glaze.

CARAMEL GLAZE

INGREDIENTS

1 cup sugar

2 T. water

DIRECTIONS

1. Cook sugar and water in a small pot without mixing, until the sugar is caramelized.

2. Place apple roll cake on a raised cooling rack, and drizzle a thin layer of caramel over the cake. Be sure to keep the layer of caramel very thin because it hardens, and the cake will be difficult to cut if the caramel is too thick.

20 cooking apples

4–5 cups water

2 cups potato starch

¾ cup ground almonds

1 egg

¾ cup oil

½ cup sugar

¼ tsp. salt

DIRECTIONS

1. Peel and slice the apples.

2. Place in a large Crock-Pot, and add the water. Bring to a boil on high heat.

4. For the crumbs, preheat the oven to 350°. Mix all ingredients in a bowl. Spread the crumbs on a lined baking sheet, and bake for 25 to 30 minutes, until golden brown.

WAS the moment we were waiting for. Leave! Leave the dry hills and the Nile riverbank. Leave the mud-brick homes and thatched reed structures. Leave the cities that had been ours for more than 200 years. Stop, drop and run!

In a jiffy, mothers, with toddler sextuplets tugging at their skirts and older siblings watching openmouthed, ushered their progeny out the door. Men swiftly saddled the horses and loaded donkeys with newly-acquired riches. Without as much as a glance back to admire the tall pyramids built with their own sweat and blood, they left.

Free from bondage to a savage people. Free from the shackles of impurity. Free to serve our Creator.

But why so quickly? Couldn’t we have been given just a bit of notice? Just enough time to pack up calmly, to prepare some food for the way?

We were embarking on a journey across the vast desert, with no provisions other than our half-baked matzos. We were relying solely on Hashem to provide for us.

It was this very act, inspired by our inner faith, that earned us Hakadosh Baruch Hu’s praise.

While we refer to this Yom Tov as Pesach, reminiscent of the miracle Hashem performed for us by skipping over our homes during Makkas Bechoros, the Torah calls it “Chag Hamatzos,” proclaiming Hashem’s

praise for us. As Reb Levi Yitzchak of Berditchev explains, this was praise for our devotion to Him.

More than just crispy baked flour and water, matzah is spiritual food — bread of emunah

Bread of Faith

As we sit down to the Seder, we are surrounded with infinite spiritual potential. Even the food we eat is otherworldly. The Tiferes Shlomo says that on this night, matzah is so holy that it has the ability to sanctify the entire body. Thus, matzah provides our spiritual nutrition. The kedusha becomes a part of us.

For the first 30 days in the Midbar, all we ate was matzah. And it filled us and sustained us. Every time we ate, we were reminded that this was no simple eating experience; this was purely a miracle.

Today, millennia later, our matzah contains the same secret, transcendent ingredient.

The Torah says that we were fed mann in the Midbar for 40 years. Really, it was 40 years minus one month,

since that first month, we ate matzah. But Chazal explain that our matzah had the otherworldly quality of mann. Both were served to us directly from Hashem and engendered our gratitude and the recognition that life is in His hands. We try to sustain ourselves, but He holds the key.

So it is that matzah nurtures emunah.

It is a gift we are granted every year again on this holiest of nights. As the Apter Rav explains, when we sit with the matzah and maror before us, we are gifted with the ability to absorb emunah, grow in emunah, and come close to Hakadosh Baruch Hu.

Bread of Humility

The letters mem and hei of the word “matzah” ask the question: “Mah?” What are we?

Mundane eating can lead one to arrogance. When sampling a fresh slice of bread or relishing that sumptuous cut of meat, it’s easy to become self-absorbed and enjoy the moment and sensation of pleasure.

Yet when a tzaddik — as signified by the middle letter of the word “matzah” — eats, he reflects upon his Creator Who provides him with his food and enables it to satisfy him.

From the time kernels of wheat are embedded in the earth until a fresh loaf of bread is removed from the oven, many hands and many hours of toil are invested. The bread seems to be a product of our efforts, conveniently hiding

the hand of Hashem.

A leavened loaf of bread, baked of dough that has risen, denotes a puffed up sense of self. Yet matzah, with its two simple ingredients and no time to rise, is the opposite, indicating one who is open to self-improvement.

So it is that along with emunah, matzah fosters humility. It tells the tale of the tzaddik — a status we’re all privileged to hold on this special night — as we experience that perception of “Mah?”

Bread of Paradox

Matzah signifies the emunah and anavah that we displayed in those early days of Geulah, when we followed Hashem into the barren Midbar. But what about the matzah we ate while still in Mitzrayim?

Matzah can be divided into “pre-Geulah matzah” and “post-Geulah matzah.”

While we were still in the clutches of the land from which no slave ever went free, Hashem required us to prepare to leave our personal Mitzrayim. We had to acquire a matzah mindset, an unshakeable trust in Hakadosh Baruch Hu. We had to let go of our internal shackles and realize just Who is in control.

Matzah is so holy that it has the ability to sanctify the entire body

At that first Korban Pesach, while still in Mitzrayim, we ate matzah on its first level. It was our gift to Hashem, a symbol of our submission.

This was followed by the matzah that was baked on our backs. In our hasty demonstration of

sheer emunah, we were endowed with the second level of matzah, a gift of acceptance received from Above.

The matzah at our Seder demonstrates our loving dedication to our Father, and in turn, His loving approval for us, His children.

Bread of Healing

The Zohar tells a famous mashal.

A king had a son who was unwell. After days of not eating anything at all, the prince finally woke up one morning with an appetite. The servants were delighted and wished to prepare the finest delicacies to help nourish him back to health, but the royal doctors vetoed the plan. “The prince must eat only healing foods,” they said. “Make sure there is no other kind of food in the palace.” Only once the prince had consumed food that was safe for his fragile body did he grow strong enough to eat other dishes without being harmed.

Afikomen as a Segulah

Several years ago, a family in Eretz Yisroel was robbed. Sitting side by side in their home were two chests filled with valuables. Besides cash and jewelry, one of them contained another treasure — a piece of afikomen matzah. The family was shocked to discover that the burglar had emptied all the contents of only one chest. The chest with the afikomen remained untouched.

Many tzaddikim suggest keeping a piece of the afikomen matzah in the home as a segulah for shemirah and parnassah

It is also propitious for children, following a play on words of the pasuk in Tehillim (17:14), “U’tzefuncha (tzafun) temalei vitnam yisbe’u banim — and whose middle you will fill with Your hidden treasure, who have children in plenty.”

The Maharil suggests placing a piece of matzah in the pocket of one who has strayed from the Torah path as a segulah for teshuvah

Anyone who is struggling with parnassah should place a piece of afikomen in his wallet, and he will find bracha in his finances. At the same time, so long as the matzah is there, no one will be able to do him any harm.

When we left Mitzrayim, we were like the sick prince. Hakadosh Baruch Hu declared that, to start, the only suitable nourishment for us was matzah. Only after we ate the matzah — our bread of healing — could we stomach leavened foods.

Matzah is the only food that the Zohar labels “food of refuah,” or meichala d’asvasa. It literally contains healing powers. By eating matzah, one may merit arichus yamim

Rav Chaim Friedlander, zt”l, explains that matzah serves a dual role as food of emunah and food of refuah, which teaches us that man must be healthy in both body and soul.

Bread of Growth

The mitzvah of sippur Yetzias Mitzrayim applies when we are seated at the Seder table, with the matzah and maror before us. Only then, ba’erev, in the evening, do we eat the matzah. The Tiferes Shlomo sees a hidden implication in a second meaning of the word ba’erev: sweetness. Matzah is a sweet and pleasant mitzvah.

Matzah lifts us to spiritual madreigos we may not be able to attain otherwise. It brings us the kedusha we need in order to grow closer to Hakadosh Baruch Hu all year long.

The Gemara in Pesachim (35a) says that matzah may only be baked with ingredients that could potentially become chometz. This reminds us that we each have the tools within ourselves to serve Hashem or chas v’shalom rebel against Him. It is up to us to capitalize on our strengths, l’Shem Shamayim

Perhaps the first area that comes

to mind is nutrition. Matzah helps us eat for the purpose of serving Hashem in good health, rather than eating for personal pleasure, as the Meor Vashemesh points out.

Bread of Protection

In turn, matzah serves to protect us.

The word “matzah” is spelled out in the pasuk in Tehillim (54:9): “Mikol tzarah hitzilani” — He saved me from every misfortune. This hints to us that anyone who is careful with matzah will be saved from all harm. Sheidim and mazikim will not have power over such a person.

It is brought in Sefer Segulos Yisroel that if one eats matzah joyously l’Shmah, no harm will befall the person that year.

Rav Chaim Palagi, zt”l, used to eat or place a piece of matzah on his table on Rosh Hashanah since eating matzah on Seder night with the right intentions is a source of protection during the judgment of Rosh Hashanah. One who does so will merit a successful year filled with shefa, brachos and nachas. May we all merit a year filled with the brachos that the matzah inspires.

As Pesach gets closer, matzah bakeries are buzzing with action. Matzah might look simple, but there’s a lot of hard work and dedication that goes into baking each piece. We spoke with three people to get the inside scoop on how matzah gets to your Pesach tables.

EXPERIENCE: 18 YEARS

PLEASE TELL US ABOUT THE BEGINNING OF YOUR MATZAH BAKING JOURNEY.

I started helping out in a matzah bakery during bein hazmanim in Chodesh Nissan soon after my bar mitzvah, when I needed something to keep me busy. As the years progressed, I continued working in the bakery every Erev Pesach, and eventually, it became a permanent position.

I’ve done nearly every job at a matzah bakery, including kneading dough, rolling the dough, making the holes, training new employees and more. I also learned how to work the 1,200° oven, which is a lot harder than it sounds. You need to figure out where to place the matzos in a way that they don’t blow away from the heat, don’t get burned by the heat, yet are in a hot enough place to get baked quickly and thoroughly. At a certain point I even assumed a managerial position.

HOW MANY MATZOS DO YOU PRODUCE IN A FIFTEEN-MINUTE RUN?

We usually produce around 500 to 700 matzos in a run.

HOW DO YOU MANAGE TO KEEP THE PRODUCTION ENVIRONMENT KOSHER FOR PESACH?

We follow strict cleaning procedures between each run, with a mashgiach on site to ensure that everything is done properly. We meticulously clean and kasher all equipment, switch tabletops, and make sure that all employees give themselves a good scrub-down. The mashgiach will glance at everyone’s hands and inspect all equipment to make sure no dough remained from the previous run. The production process itself is also supervised so it runs seamlessly and continuously.

MATZAH IS MADE OF FLOUR AND WATER. IS THERE A DIFFERENCE IN TASTE BETWEEN THE MATZOS BAKED AT ONE MATZAH BAKERY AND ANOTHER?

I think so. The re-kneading process in our bakery involves employing a hinged metal rod that refines the dough. This tool is pressed down and folded into the dough several times, ensuring an exceptionally tough yet smooth consistency. The dough we produce is a very high-gluten dough, which is meant to withstand lots of “abuse,” so to speak. This factor allows us to roll out the dough very thinly. Our bakery is known for producing thin matzos, which strongly affects the taste.

HOW MANY TYPES OF MATZAH DO YOU PRODUCE, AND WHAT ARE THE DIFFERENCES BETWEEN THEM?

We produce several types of matzah, including regular, whole wheat, spelt, and gluten free (which is made of oat flour). Each type of flour is sourced from a different region, like Oregon, Arizona, California and even Eretz Yisroel, and lends a different texture to the matzah.

WHAT IS THE BIGGEST CHALLENGE IN THE MATZAH BAKING PROCESS?

One of the biggest challenges is dealing with environmental factors like weather, which can affect the dough’s moisture levels. Sometimes you can taste a soggy matzah, but that has nothing to do with how old it is; usually it is related to the weather. It’s very hard to keep the matzah bakery completely temperature controlled, and we actually adjust the recipe according to the weather. During humid weather, for example, we might add less water since there already is a lot of moisture in the air.

CAN YOU TELL US ABOUT THE WORK SCHEDULE IN A MATZAH BAKERY?

Right after Sukkos, we begin working eight-hour workdays, with each shift lasting up to four hours. As you can imagine, the work is very fast-paced. The busiest time of year is from after Chanukah to Pesach, with work hours increasing significantly the closer it gets to Pesach. That’s when we’ll have nine- to twelve-hour operations daily, starting at 6 a.m. every day. We manage this by bringing in more staff closer to Pesach.

WHICH JOBS ARE GENERALLY ASSIGNED TO NEW EMPLOYEES?

They take matzos to the people manning the oven, place matzos in baskets so they could cool down after exiting the 1,200°F oven, or package matzos. The more time they spend in the matzah bakery, the more they learn about the process, and eventually they can take an active role in the matzah baking crew.

DO YOU EVER HAVE TO DISCARD MATZOS?

Yes. About 10% of the matzos are not used due to their falling to the floor, becoming burnt or other quality-control issues. Before packaging, each matzah is inspected, and those that don’t meet standards are not sold.

EXPERIENCE: 4+ YEARS

PLEASE TELL US ABOUT THE BEGINNING OF YOUR MATZAH BAKING JOURNEY.

While I was still in yeshiva, I was looking for a part-time job. Since a matzah bakery is a kosher environment for a young bachur, it was an excellent option. I started out as a kneader part-time, and eventually took on other jobs in the bakery as well.

WHEN DOES THE MATZAH BAKING PROCESS START IN THE BAKERY YOU WORK AT?

The process begins right after Pesach. In the early stages, the focus is on obtaining quality wheat. The bakery I work at sources their wheat from Arizona, Canada, California, Montana and New York. The wheat is stored in a cool, dry place to prevent it from becoming chometz. We grind the wheat before the summer in a separate facility, and then we get ready for test runs. We test the wheat in a lab as well as in-house using specialized equipment to measure the wheat’s natural sweetness and other factors. Then we test a few different dough combinations to see the type of matzah this flour will produce before we settle on the final product we will be using for that year’s Pesach runs.

WHAT DOES AN AVERAGE WORKDAY LOOK LIKE AT THE BAKERY?

Each shift lasts about two to three hours, with a 30-minute break in the middle. Shifts run from 8:30 a.m. to 6:00 p.m., with most people staying for the full day. The work is physically taxing, but the breaks we get are adequate.

CAN YOU DESCRIBE THE MATZAH BAKING PROCESS?

I’ll give you the basic process, but it may vary in other bakeries.

1. Two different people pour water and flour into a large bowl.

2. The dough is kneaded, often completely by hand, though sometimes with tools.

3. The dough is re-kneaded to attain a firmer texture (often referred to as iberkneiten).

4. The dough is cut in half and rolled into long logs.

5. Each log is cut into 20 to 26 pieces, depending on how thick or thin the resulting matzos will be.

6. The pieces of dough are distributed to the people who roll them out. Once the initial rolling is complete, each piece of dough goes to an additional person who rerolls the dough for perfect shape and thickness.

7. The matzah-shaped dough is punctured with holes to prevent the dough from rising (also referred to as reidling).

8. The matzos are placed on a long stick and carried to the oven.

9. The matzos are placed in the oven for 20 to 30 seconds, and upon removal, are placed in a wooden crate.

10. The matzos are transferred to a packaging room where they are inspected, weighed, wrapped and then sealed.

WHICH VARIETIES OF MATZAH DOES THE BAKERY PRODUCE?

Regular, whole wheat, spelt, einkorn (which is close to gluten-free) and oat. Some of these will produce thicker matzos, and others will produce thinner matzos. Different people have different preferences.

HOW MANY MATZOS DO YOU PRODUCE PER RUN?

Around 700 matzos per fifteen-minute run.

WHAT MAKES EACH BAKERY’S MATZAH UNIQUE?

Each bakery has its supply sources; ratio of flour to water; and methods of mixing, rolling and baking. Many people can taste a matzah and identify the bakery it’s from, or even the type of flour used.

PLEASE TELL US ABOUT YOUR BACKGROUND IN MATZAH BAKING.

I’ve worked in several bakeries over the past twenty years and have done different jobs throughout these years. The industry hasn’t changed much in these years, especially when compared to other industries. The matzah baking process is one that requires consistency, diligence and focus. The one thing that has changed is the price. The reason for this is very simple: The cost of supplies has gone up tremendously. The reidel I used to buy for a dollar now costs six dollars! The same goes for all the equipment and supplies, as well as for the pay for bakery workers.

WHAT IS THE ATMOSPHERE LIKE IN THE MATZAH BAKERY?

Everything has to be meticulous and consistent. From when the dough is formed, and during kneading, rolling, puncturing and baking, extreme attention must be paid to each detail. Everyone works very diligently to get the job done. The entire process of baking matzos is an interrelated chain; if one person doesn’t do his job right, it can delay the entire cycle. Everyone feels the responsibility, and we are zoche to a tremendous amount of siyata d’Shmaya.

WHAT DETERMINES THE QUALITY OF MATZAH?

There are so many components, and each one plays an important role. The origin of the wheat, how the wheat is ground and sifted, how well the dough is mixed, how well the matzos are reideled, where in the oven the matzah is placed, how long it’s baked for, and even the weather contribute to the taste and quality.

The supplies used, as well as the method of performing each of these steps, are very similar in each bakery, but small details play a big role in impacting the final product. Each bakery has its unique texture and taste, and expert matzah tasters know how to tell the difference.

HOW MANY MATZOS DO YOU PRODUCE IN A DAY?

We produce around 50 or 60 pounds of matzos per fifteen-minute run, which results in about 500 to 700 pounds per day.

HOW MANY PEOPLE ARE INVOLVED IN EACH RUN?

Each run is staffed by around eight to forty people, although that number can be nearer to fifty closer to Pesach. We also host family groups and chaburos of yungerleit who want to be involved in the baking. Sometimes it’s because they want to be involved in the mitzvah; other times it’s because they want to make sure their chumros are being observed. The group sizes vary, and how involved they are with the baking also varies. Some groups will want to do the actual baking, whereas others only observe the process. We also have to make sure that the ratio of workers at each station corresponds with the amount needed for each specific job so that the matzos can run through the entire production smoothly. For example, if we have ten people rolling out the dough and only one or two people making the holes, we will have matzah sitting and waiting for the next step in the process. This is something we must prevent as it can lead to dough rising as it waits.

WHAT IS THE ROLE OF THE MASHGIACH IN THE BAKERY?

The mashgiach is on site at all times. He checks employees’ hands and rollers before each run to make sure no dough from a prior run is present, and he also ensures that other pieces of equipment, like the wooden poles, for instance, have been properly cleaned and sanded. He may also make a determination about whether specific matzos are kosher to be sold.

WHAT PERCENTAGE OF MATZOS DON’T GET SOLD, AND WHY?

Most of the matzos can be sold since we are very careful throughout the process. They are all inspected before packaging to make sure that we are selling a perfect product.

was a last-minute schedule change, the result of my mother-in-law saying, “Faigy and Baila are both coming for the second meal; can you come for the fourth meal instead?”

We were a fairly young couple at that point, and since Pesach cooking was still a major ordeal, we were happy to be invited out for most meals.

I quickly checked with my mother, who agreed to host us for the second Pesach seudah instead of the seudah the following day.

My parents weren’t having anyone for the second meal, and they didn’t mind the schedule change. What was the difference?

Well, we would all soon find out.

That’s why it’s hardly unusual to start coughing at my parents’ Pesach table. With all of the meal participants happily turning watery-eyed with every serving of fish, it’s inevitable that sooner or later someone will need to gulp down a glass full of water.

Cough, cough.

In my parents’ home (and by now in all of their kids’ homes), maror plays a major role at the table, and not only by the Sedarim. The Sedarim get plain horseradish, since that batch of maror goes onto the matzah, but special containers of grated horseradish, preserved with a dash of lemon juice, accompany every plate of fish throughout Pesach, and the sharper the batch, the happier those partaking are. In fact, every container of horseradish gets covered first in cling wrap (held down with a rubber band) and only then with the lid, in order to keep the contents as fresh as possible. It usually stays so sharp that when the container is opened, the person holding it invariably says, “Whew!” and then

That’s also why, when my father started coughing during that second Pesach seudah, it took a minute for the rest of us to grow alarmed.

Cough, cough. He grew red in the face. Cough, cough

My husband Gedalia poured him a glass of water, and he tried drinking.

Cough, cough.

Okay, this was looking serious.

My father pushed his chair sideways and stood up — and then fell straight to the floor, unconscious.

The room erupted in chaos.

“Yanky!” my mother yelled. She knelt down at my father’s side, her face contorted in fear. “Yanky! ”

I ran straight to the kitchen, grabbed a phone, and got Hatzolah’s number right on the second or third try.

“Yes,” I gasped when they asked for information. “My father, he’s choking, he’s unconscious —”

I supplied the dispatcher with the address and whatever else they asked for, and in the meantime, I heard shouting coming from the dining room.

When I reappeared, my father was sitting up, looking dazed, and my hus-

band was also getting to his feet. He was white and shaking, and he was trying to help my father back to his chair.

“What happened?” I asked.

“I never saw anything like it,” said my mother, whose color was slowly coming back. “Gedalia pulled Tatty off the floor, slid behind him, and thumped him on his back.”

I looked at my husband in wonder. “You know how to do the Heimlich?”

He shook his head. “No, I just did whatever I did without thinking. Your father’s button went shooting across the room.”

“Well, it worked,” my mother said, half-laughing, half-crying. “Tatty was unconscious, and that’s not how you do the Heimlich in such a situation, but it worked!”

Suddenly the room was full of Hatzolah members who’d abandoned their Pesach seudah to save a man from choking, and they came in to find him back in his chair, very red in the face, and with a serious concussion, but otherwise okay.

“I’m okay,” my father said. “Whatever I was eating came out. My sonin-law somehow slid under me and pushed it all out.”

“I never saw anything like it,” said my mother, whose color was slowly coming back

My father was taken to the hospital for observation, and since my mother wasn’t allowed to stay for the night, my father ate a very lonely, very strange Seder in the hospital, all courtesy of the Bikur Cholim room.

For the rest of Yom Tov, all my husband and I could say was, “To think we were supposed to eat that meal elsewhere!”

Hashem had rearranged an entire set of meal plans just to place us in my parents’ home on that very fateful morning. To think we were supposed to eat that meal elsewhere!

Kitchen, Part Two

They’ve done their fair share of serving up gourmet Shabbos meals, daily suppers and quick omelets. Your pots, pans and oven racks are so looking forward to their week of rest. Let’s get them gleaming for their staycation!

Collect anything in your kitchen that is made of metal and can use a deep cleaning. I’m talking stovetop grates, pots, pans, oven racks, stainless steel cookie sheets, pasta strainers and your toaster oven rack. If your ladle and other larger utensils can use a great scrub, throw them onto the pile too.

Next, assign a well-ventilated area as your workspace. A porch is your best bet, but you can use a room with large open windows if a porch isn’t an option. Spread out a disposable plastic tablecloth over your work area, put on a pair of rubber gloves, and prepare a few large heavy-duty garbage bags nearby.

The hero of the day is St. Moritz oven cleaner.

BEWARE: St. Moritz is an extremely caustic chemical that can cause terrible damage if not used carefully. Buy a bottle of this cleanser on the day you are planning on using it, and dispose of it as soon as you are done. Do not store it in your house! Not even triply bagged in your attic.

Take your pots, pans and other metalware one by one, and spray them liberally with St. Moritz. Make sure to spray the areas where the handles are attached to the pot to get the brown gunky buildup out. As soon as each item is fully sprayed, drop it into a garbage bag. When the bags are full, knot them tightly, put them in a safe place for two hours, and go take a nap.

Use the same method for your actual oven. Open the windows to keep your kitchen ventilated as you work, spray the empty oven interior with a heavy coating of St. Moritz, and close the oven door. Make sure to avoid spraying the fan or any place where there are vents so the internal mechanisms do not get damaged. Let it sit for two hours before cleaning with plain water and wet rags. A spray bottle filled with plain tap water can help you rinse the oven well.

Managed to get the inside of the oven sparkling clean, but your oven door is sporting streaks trapped between the glass and frame? I know how annoying it can be, and the good news is that it can be easily remedied. Using your detective powers, glide your fingers around the oven door frame to find the gap between the glass door cover and its frame. Every oven has one. Most have it at the bottom end of the door, some at the sides. Take a thin wire hanger (the kind that the cleaners send back with your shirts), and squeeze both ends of the hanger’s “triangle” to the center. You should end up with a thin long oval with the hanger hook on top. Wrap a very thin rag or paper towel drenched in a mild cleanser like Windex around the oval part of the hanger. Secure it with a rubber band to prevent it from falling off while cleaning your oven door. Having the rag or paper towel stuck in your oven door will look worse than the streaks you are trying to eliminate. Insert the hanger between the oven door gap, and clean the glass by mimicking car windshield wiper motions. Remove the shmatte-clad hanger periodically to rinse it, and respray with cleanser.

Okay, whom are we kidding?! Work on some kitchen cabinets or get the dinner act together.

After giving your metalware a two-hour marinade, schlep the garbage bags to the nearest bathtub. (You do not have to worry about the bathroom not being well ventilated while rinsing the pots. After two hours, the St. Moritz fumes have lost most of their toxicity.) Remove the pots one at a time, and wash them with some dish detergent under warm running water, or hose them down with the shower head. No scrubbing necessary. Watch as all the gunk slides right off with no elbow grease! The joy! No toothpick cleaning this year, and you’re very welcome. Spread the pots and racks on a towel on

When it comes to your dinette table, if it’s Formica, glass, metal or plastic-based, scrub it with a piece of magic sponge dipped in water and Mr. Clean to get it looking brand-new. Struggling with tough dried food stains? Ajax dish powder to the rescue. As for the chairs, please refer to the dining room section for detailed instructions.

As for your baby or toddler’s highchair, you can utilize the same cleaning method as the table. If you’ve got a model that has many nooks and crannies or a textured back seat, you can use St. Moritz to get it a gleaming white; however, make sure to wash it off very thoroughly as you don’t want any tender skin coming in contact with it. A safer and more environmentally friendly option would be squirting lemon juice into those spaces and letting it sit for a while before scrubbing down.

Coat Closet

Empty the contents of your coat closet, and wipe down the walls and shelves with good old Windex or a solution of Mr. Clean and water. If your coat closet is always a mess, collect all the rain bonnets, gloves, scarves and hat covers, and place them in labeled bins. If you already have bins in your closet, empty them, wipe them out, and replace their contents. Turn the pockets of the coats inside out, and give them a once over with a men’s hat brush to get rid of any wayward crumbs.

The children’s backpacks are definitely full of crumbs and other unidentified stuff; there is no way you can skip cleaning them. Turn them inside out and vacuum well. Then throw them in the washing machine on a delicate cycle. Throw your carriage/diaper bag into this load too. Allow to air dry.

Now’s also a great time to inspect your pocketbooks and purses. Empty completely, vacuum, get rid of old receipts, and make sure there are no mints hiding anywhere. Done.

Baby Stroller

You’ve traversed the globe or city with your baby stroller and accumulated loads of mileage, but that’s not the only thing it has accumulated. The corners and crevices of the carriage seat are testimony to the many meals and snacks your child has enjoyed on the go.

Remove whatever possible — hood, basket, seat liner, etc. — and throw them into the washing machine on a delicate cycle. Sometimes what you think is impossible to remove may need a simple screwdriver to render it removable and machine washable. (Be careful, however, not to take apart what you won’t know how to reassemble.) Air dry the washed parts before putting Humpty Dumpty together again.

The stroller frame and its non-removable parts should be taken on a trip to the porch, scrubbed with a soapy solution, and hosed down with warm water. Use a magic sponge on the frame and wheels to remove all signs of nicks and scratches, and upgrade your carriage’s appearance from tired to brand-new.

Jewelry

“A diamond is a girl’s best friend,” they say, and I think most of us are inclined to agree. We women just love those sparkly studs that catch the light’s gleam and scatter a confetti of rays in all directions… Er, at least that’s what they’re supposed to be doing.

If you’re one of those people who keep their jewelry on all day while cooking, cleaning and even showering, I am positive that they’re in need of a deep cleaning. Even if you are careful to remove your gems before any dirty work, here are two easy hacks on how to restore their original shine.

POST-PESACH PRO TIP

The moment is perfect. The table is bedecked in a pristine white tablecloth, glistening silver and crystal stemware. The ka’arah is laid out with all the simanim, and you are basking in the sweet, hard-earned feeling of accomplishment.

Kadeish! The entire family sits down to drink the first kos. From the corner of your eye, you watch as your little one clumsily navigates drinking his grape juice.

It all happens as if in slow motion. The kiddush cup slowly overturns, and its contents start to spread. You watch in horror as a purple stain steadily grows, and turns what was once your gleaming white tablecloth into Lake ala Grape Juice.

Fret not. Relax, and enjoy the rest of the Seder. You may think of washing that tablecloth as a demanding and arduous task, but it need not be so. Simply pre-treat the affected area, fold the tablecloth as if for storage, and place it in a mesh bag or empty pillow sham. Folding the tablecloth prevents difficult-to-iron wrinkles from forming, and the mesh bag or pillow sham acts as a “rubber band” of sorts, preventing the tablecloth from unfolding.

Wash on a delicate cool cycle. Remove from the machine, unfold, refold into four, and hang to dry. Some light ironing may be necessary.

Both of these hacks have been suggested to me by a saleswoman at a reputable jewelry store in Brooklyn: Wash with dish detergent and hot water using a soft-bristled toothbrush. For tougher grime, rub toothpaste onto the diamonds and their setting using a soft-bristled toothbrush, and rinse under warm water.

If you choose to go in the toothpaste direction, avoid toothpaste with exfoliating agents. They look like tiny beads and can scratch your gold setting. For the same reason, only a liquid dish soap cleanser should be used, no powdered Ajax.

All Done… Almost!

Whew. You’ve done it! Your house is cleaned from top to bottom. But wait! The actual cleaning gadgets need a deep clean of their own too. Don’t forget to empty the vacuum cleaner bag, wash your broom and mop, and wipe down the shovel and step ladder that have aided you on this cleaning journey.

Some things come in neat sets of item and inventor, like Thomas Edison and lightbulbs, and Alexander Graham Bell and the telephone. (Whether or not history tells the whole story is another matter.) But some things were invented by society over time, then touched up and enhanced by following generations.

The rolling pin is one such thing.

Early versions of the rolling pin were produced in the 9th century in Etrucia, now known as Italy. Makes sense, as Italians have always taken their cuisine very seriously. Ironically, some Italians of today like to use full, chilled wine bottles to roll out their doughs!

The first rolling pins were fashioned of wood, baked clay, stone or even branches. They were also used for chores our factory-based society can’t conjure up so easily; tasks like crushing grains and spices (although we can hark back to that when we crush rice krispies for recipes).

PIN PERKS

The introduction of this kitchen friend upgraded hygiene and precision in baking. The rolling pin lessened direct contact with food, and also helped bakers roll their doughs to very even lengths, producing pastries and pies that were prettier and tastier.

In the mid-1800s, the rolling pin became more accessible and affordable to homemakers as it went commercial. Maple and cherry wood were the material of choice when mass-produced.

In the year 1884, the ambitious Judy Woodford Reed took her improved version of the pin to the patent office. Boasting the addition of two handles on either side of the center rod and dubbed by Judy a “Dough Kneader and Roller,” a US patent was granted — the first ever to an African-American woman.

Reed is credited with the practicality of today’s rolling pins, its handles being great at keeping bakers’ hands off the dough and going a long way in terms of user control and precision in dough-shaping.

Modern rolling pins run the gamut from wood to stainless steel to silicone, and include specialty pins like tapered, adjustable, and pattern-embossed or engraved varieties.

Eighteenth-century French chefs used marble rolling pins, believing it kept the dough cooler and prevented sticking.

The French rolling pin, which sports no handles, has made a recent comeback for its ease of use and cleaning. It’s usually longer and thinner than its handled counterpart and comes straight or tapered.

HOT AND COLD

Did you know that rolling pins can come with climate control? A heated rolling pin will easily handle fondant and other components of specialty cakes, while rolling pins with a cold core will keep dough from excessive softness or tearing.

ROLLING RAINBOW!

Delight a youngster with the longest rainbow he’s ever made! All you need is butcher paper, washable paint in the colors of the rainbow, and a nice, big rolling pin. Tape the paper to the table, space squirts of paint in rainbow order on one end, and let him roll with it!

PRETTY OR PRACTICAL

Have a collection of old rolling pins? Prop some standing up in a basket for a rustic kitchen display, hang them in a vertical row on the wall for unique art, or go practical by screwing some hooks in and hanging keys, aprons or utensils from them.
