(Re: Doughnuts Go Gournet, Issue 212) I’ve been reading The Boro Park View for a long time, and I love looking at the beautiful recipes. Sometimes I even think, “I would love to try that.” But I never actually did… until I saw your doughnut recipe. I’ve never actually made doughnuts. In fact, I only started making latkes a few years ago, when my grandmother was very elderly and could not make them anymore. That’s when it suddenly struck me that if I didn’t make the latkes, no one would, and what kind of Chanukah would that be? But doughnuts are a totally different story; my grandmother never made them, and we always bought them from the store. And while I’m a good cook, I have no self confidence when it comes to baking. And I don’t even like doughnuts. But those pictures just grabbed me. I said to myself, you mastered challah, you mastered babka, you mastered latkes — you can make doughnuts. Plus that lotus cream looked divine. So on Tuesday before Chanukah, I made the vanilla filling and lotus cream. On Wednesday, I made the dough. And on Thursday, the very first night of Chanukah, I fried the doughnuts. They were delicious! They tasted nothing like the store-bought donuts; they were a totally different creation. (Re: Home Base, Issue 209) Thank you so much for your Home Base serial about organizing. Although I enjoyed many articles in your magazine, this series actually transformed my life. I consider myself a very organized person, but I’m also a very busy person. I don’t have time to sit and think about every area of my life and how it’s functioning and how it can be improved. I do that for my kids — but not for my housekeeping. The Home Base serial made me aware of so many small things I could do to improve the functioning of my home. Throughout the day, there are so many small frustrations — you lose your keys or your phone or your baby’s shoes, or even worse, your kids lose their things, and then you really don’t know where they are. Or you’re upstairs and you need something from downstairs, and you don’t have the second to run up and down, especially if it happens many times a day. The tricks I learned from the Home Base serial have decreased those small daily frustrations significantly, so my day is so much smoother. I don’t waste emotional energy calming my frustration, which means I am calmer and more present in general. I knew I had made a real change

when I saw what my four-year-old did this Chanukah. He received a set of Play-Doh and tools from us as a gift, my parents gave him a set of Spirograph tracers, and my in-laws gave him money. He took three new bins from the closet, put each gift into its own bin, and put them in his room. Now if only I could get my teenagers to do that! The Gemara (Shabbos 21b) says that the mitzvah of Chanukah obligates one flame to be lit per household. One who would like to perform the mitzvah with greater hiddur lights one candle for every person in the home. Those who want to perform the mitzvah with even greater hiddur, mehadrin min hamehadrin, kindle one light on the first night, and add an additional candle each night. There is a klal in Chazal that to do a mitzvah with extra hiddur, one may add up to one-third of the value of the actual obligation. By Chanukah licht, we all seem to do far more than one-third, doubling and tripling beyond our obligation. Why is the hiddur mitzvah different in this case? TWO YIDDEN CAME to Rav Bentzion Abba Shaul, zt”l, leading Sefardi posek and Rosh Yeshivah of Poras Yosef in Yerushalayim, to arbitrate their argument. One was a bus driver and the other a “bus rebbi,” who was responsible for the children while they rode the bus. In those days, bus doors were not automatic, and someone needed to manually crank them open and closed. As the bus drove along its route, making stops all over town, its doors had to be opened many times. “I was hired to drive the bus,” the driver argued, “and I need to focus on the roads! I cannot be expected to open the doors at each stop, time and again. That is the job of the bus rebbi.” But the bus rebbi maintained: “My job is to make sure the boys sit safely in their seats, and it’s my responsibility that everyone gets on and off where they’re supposed to. How can I be busy opening and closing the doors when I’m busy with the children?” Rav Bentzion listened thoughtfully. He told the men he wanted some time to look into the matter before issuing his psak. But in the meantime, he asked them a question. “How much does pesichas ha’aron (the honor of opening the aron kodesh) cost in your shul?” The two agreed that the average price on a regular Shabbos

was about 100 shekels (around $25). On Rosh Hashanah, they said, the price could go up much, much higher. And on Yom Kippur, by Ne’ilah, it could reach thousands. House Speaker Promises To Be Staunch Advocate for Yeshivas Yeshiva parents have found a friend in newly elected House Speaker Mike Johnson, with the Louisiana Republican telling a group of rabbanim last week, “I’m with you 100 percent.” Hamodia reported that Johnson met with the rabbanim at a December 3 fundraiser in Bronxville for Representative Mike Lawler. Johnson was in the New York area last weekend for a series of fundraisers, and Lawler arranged the meeting at the request of a group of New York rabbanim. Johnson made it clear that he would oppose the New York State Education Department’s curriculum mandates, which would have outside entities certifying that yeshivas are providing their students with a secular education that is equivalent to what is being taught in public schools. He spoke at length about how freedom of religion has come under attack, and its importance as a core value of the United States Constitution. Johnson noted that freedom of religion is the very first freedom listed in the Constitution’s Bill of Rights. “The reason the Founding Fathers put it there is because they understood [that] next to life, the most important value we have is the right to the free exercise of our religion, and the government is trying to take that away,” said Johnson. Among those in attendance were Rav Mordechai Beck, Rav Aharon Yida Blum, Rav Simcha Yisroel Blum, Rav Chaim Flohr, Rav Moshe Kessler, Rav Ben Zion Laub, Rav Mordechai Mecholowitz, Rav Pinchas Eliezer Meislish, Rav Chaim Leibish Rottenberg, Rav Refoel Schorr and Rav Yaakov Shapiro.

Rav Elya Ber Wachtfogel arrived only at the meeting’s end because of unusually heavy traffic conditions. Another meeting is scheduled to take place in Washington, D.C., next month to discuss possible future strategies in the ongoing battle over the state’s latest round of regulations, which are currently on hold due to legal proceedings.

Double Standard: Non-English Instruction Allowed in Public Schools But Not In Yeshivas A Brooklyn Law School professor is holding the New York State Department of Education’s feet to the fire for allowing subjects to be taught in multiple languages in public schools, while its most recent guidelines require English-only secular study instruction in yeshivas. The New York Post reported that Aaron Twerski accused NYSED of discrimination, saying that the state approved 200 “dual-language schools” for bilingual New York City public school students, even as it has told yeshivas that it cannot provide secular studies instruction in Hebrew. “It’s blatantly unconstitutional,” said Twerski. “If the state doesn’t voluntarily change the policy, the court will change it. Not only does the state allow dual-language instruction in public schools, they encourage it.” NYSED’s David Frank expressed concern last month about forcing yeshivas to teach secular subjects in English only, noting that it differed from public schools’ academic offerings. “I don’t think it is educational best practice,” noted Frank. A lawsuit filed against the guidelines is currently making its way through the courts, with Avi Schick, the lawyer representing yeshivas, saying that the state has overstepped its boundaries. “They’re saying instruction can only be given in English in private schools but not in public schools,” said Schick. “Even worse, state officials blatantly misled the court about what they were doing. What’s being promoted in the public schools is being prohibited in the private schools.”

of a larger effort to help the Metropolitan Transportation Authority prevent people from riding the trains without paying, which caused $690 million in losses last year alone. The New York Post reported that the new chest-high gates were installed at the Sutphin Boulevard-Archer Avenue station in Jamaica, which has been using turnstiles to control passenger entry for decades. Unlike the turnstiles, which are easy to jump over or crawl under, the new electronic gates swing open with the tap of an OMNY card or the swipe of a MetroCard, and then close again, blocking entry to the station. The MTA will be testing several different potential designs so that it can identify a system that best suits its needs. The gates are wide enough to accommodate riders’ bags and even luggage, an important factor at the Jamaica station, which connects the subway system with the JFK Airtrain. “I don’t think I’ve seen technology that’s perfect in any city, frankly,” said New York City Transit president Rich Davey. “But this is obviously going a long way to improving our current turnstile system.” The 8th Avenue-Penn Station in Manhattan is second on the list of locations to be outfitted with the new gates, a project that comes with a $700,000 price tag. The MTA has yet to request other gate designs, although it did reveal several types of fare gates more than half a year ago. The agency is also looking beyond turnstiles when it comes to stopping fare-beaters. The MTA has been submitting changes to its station designs that, if approved by the FDNY, will eliminate emergency fare gates that are left open. MTA chairman Janno Lieber described those gates as the “superhighway” of fare evasion, with riders walking straight through them without paying.

Adams’ plummeting poll numbers have definitely made waves, said progressive activist Janos Marton. “Ever since the news came out that the FBI is investigating Eric Adams, you’ve seen a shift where people who were probably leaning against running are at least considering it, and people who were considering it are now much more likely to do it,” said Marton. “That’s a trend that you’ll continue to see as the bad news around Adams and his administration continues to accumulate month after month.” Ramos is considered to be the most likely candidate to attempt a run for City Hall, although she hasn’t made any decisions yet. “I think New Yorkers are expressing a hunger for an honest debate about how this city is being mismanaged and how tax dollars are being misspent,” said Ramos. “Whether that debate comes from me or another qualified, prepared candidate, is too soon to say.”

Defibrillators a Requirement at Summer Camps Under New State Law Taking concrete steps to ensure safety, Governor Kathy Hochul signed legislation that will require all camps and youth sports programs in New York to have implementation plans in place for the use of defibrillators in cases of cardiac emergencies. The law applies to all summer camps and sports programs that have five or more sports teams. Camps that meet the criteria will have to have protocols in place to ensure that automated external defibrillators, also known as AEDs, are easily accessible. Additionally, camps and sports leagues will be required to have a qualified adult on site who has successfully completed an AED training program. While heart attacks and other cardiac conditions are typically associated with older adults, they can occur in younger individuals as well, sometimes without warning. Last January, a 24-year-old professional football player nearly died of a heart attack after being hit hard in the chest during a game. Hochul expressed concern that other young athletes could be at risk for similar injuries. “By requiring camps and youth sports programs to establish an AED implementation plan, kids will be safer and teams will be prepared,” said Hochul. “I want every parent in New York to know we’re doing everything we can to keep your kids safe.”

Lani sat at the kitchen table, which was still cluttered with the remains of breakfast, with a 24-ounce cup of coffee and a motivational water bottle in front of her, and proceeded to take alternating sips. Am I a contradiction or a very balanced person? She was definitely a very overwhelmed person. For the first time since she’d started doing breakfasts for Mother Hen, she’d had to tell Devorah Nieder no. There was just no way for her to disappear to her mother’s house to work; the kids were home, and she had three days’ worth of laundry to wash and fold. But mainly, renovating a house was a full time job, and she needed time to take care of a million little 68

things, none of which could be done while making milkshakes. Okay, where to start? A list. That was always the best place to start. It made you feel like things were actually happening. At least her kids were occupied. The workers upstairs were built-in entertainment. Chaim Tzvi walked in, holding phones near both of his ears. He nodded a greeting and planted one of his phones on the table, on speaker. It was business as usual for him — numbers and papers and wires and checks, all conducted out of the spacious office quarters that was his brain. She observed him for a moment, wondering. Was he right or was she right? Had she overstepped her bounds by trying to carry his responsibilities? Neither of them had brought up the topic since Chaim Tzvi’s un-

SHE WAS ON THE LINE WITH BATSHEVA WHEN SHE HEARD POUNDING ON THE DOOR. FOUR GUYS STOOD AT THE ENTRANCE, SURROUNDED BY TOOLBOXES

characteristic outburst. He wouldn’t bring it up again, Lani knew, and she, well, she had nothing to say. Lani stood up to transfer a white load, listening with unusual interest to Chaim Tzvi’s conversation. He was crunching numbers with someone, working out a fundraising goal and plan of action. They were talking seven-digit figures, but by the nonchalance in his voice, you’d think he was discussing a Yom Tov menu. Lani pulled out the inverted sleeves of a white shirt, slipped it onto a hanger, and hung it from the steam pipe that ran across the basement hallway. The entire basement was one big makeshift laundry room, and sometimes that meant crouching to pass. And yet, since Andy’s crew was back, she’d stopped being bitter about it. Amazing, how comforts were all in the brain. Just knowing that it would all be over soon — that she’d have a proper, custom laundry room — kind of resolved the whole problem. “I’m meeting Weisel tonight,” Chaim Tzvi was saying on the phone. “He’ll come through, leave it to me.” People trusted her husband. They relied on him for important matters. And he quietly and professionally — and whenever necessary, humorously — shouldered burdens that few other people would be capable of shouldering. Hadn’t he told her not to worry, when the Strohs had terminated their loan? Had she really thought he needed her to make a bunch of salad dressings to cover construction costs? She ripped off the top page of her notepad, which she’d absently filled with doodles of closet layouts. This was her day off, she couldn’t squander the time. Other closet guy estimate, she wrote. Electrician – low voltage switch, boiler room Order doorknobs – Builder’s Haven Batsheva – paint colors – finalize She was on the line with Batsheva when she heard pounding on the door. Four guys stood at the entrance, surrounded by toolboxes. Lani looked at them questioningly. “Nathan Ziegler, kitchen installation,” a heavyset guy explained, stomping his muddy boots on the doormat. Oh! “I thought he said…” Lani started. “Uh, never mind, hi, nice to meet you! Is Mr. Ziegler here? She slit one open — and gasped. “No.” “What was that?” Mr. Ziegler asked. “This is not our kitchen.” “What do you mean?” He looked at the cabinets lined up on the floor, and then frowned at the papers in his hand. “The cabinet doors,” Lani said tersely. “We ordered white acrylic and taupe accents. We did not order anything gray.” Mr. Ziegler fanned himself with the kitchen plans. “Hodo-dee-dee-dum.” “What now?” Lani couldn’t help asking. But Mr. Ziegler wasn’t paying attention to her. He was going from carton to carton, checking labels and comparing them with the information on his plans. “I’m afraid it isn’t only the color,” he said. “They sent you the wrong kitchen.” Lani turned to Chaim Tzvi in a state of panic. But Chaim Tzvi looked perfectly calm, talking into the phone. “It’s Mr. Eisdorf,” he said. “We have a little gray problem here.” *****

Watching the crew troop out of her house was like escorting her hopes out the window. “We’re going to look into this right away,” Chaya from A&A Kitchens had assured them. “I’m sure we can straighten this out quickly. Don’t worry.” Don’t worry. It took nothing to say that. Back in the basement kitchen, Lani found her motivational bottle on the table, still stuck at 9AM. Keep chugging, the playful font ordered her. She took a swig. “I’m hungry,” Chevi announced. She planted herself next to Lani, helping herself to water from her bottle. Great, now she wouldn’t be able to keep track of her water intake. Never give up, the bottle cautioned her, hitting the 10AM mark. “What’s for lunch?” Chevi asked. Lunch. She was in charge of lunch that day. “Yogurt, cereal, whatever you want,” Lani answered tiredly. Chevi didn’t seem to mind. She picked out a yogurt from the fridge and poured in granola. “Is the kitchen going to be done today?”

Lani couldn’t help laughing. “No, sweetie, it takes some time to install a kitchen. Besides, we have a little problem, so it’s going to take a little longer.” “Problems again?” Problems again. From the minute the Strohs had asked for their money back, her life had been one chain of problems. But this problem was different. It wasn’t Riva’s fault. It wasn’t Chaim Tzvi’s fault. Money wouldn’t even be a solution in this case. She could blame it on Chaya from A&A, but it probably wasn’t her problem either. The problem just… was. Unlike other problems? Having someone to blame a problem on was cathartic. Blaming made you feel like you were doing something. But when there was nobody to blame, there was nothing left to do but to accept the reality. What was control anyway, if not an illusion? Chevi stood up and tossed the yogurt container in the garbage. Then she drank some more water from Lani’s bottle and asked, “Can I go over to the Strohs now?” “What?” “Until around four-ish,” she replied casually. “I made plans with Fraidy to study for our Chumash final.” *****

There was a box leaning against the door when Riva returned from work. Shutterfly! The scrapbook! She took Eli out of his stroller and dumped some toys in front of him, then ripped open the box anxiously. Eli climbed right onto her to check out the excitement. “Hold it, Mister, you can’t ruin this, it’s for Bubby and Zeidy.” She held the book up in the air while the baby scrambled at her feet. Niiiiiice. The printing wasn’t the greatest, but it was decent enough. She turned the pages slowly, kvelling. Instinctively, her hand reached for the phone. She silenced the wounded voices in her head as she dialed Lani. Lani had done — or not done — what she’d done, but this was still their joint project. “You know what?” Lani said. “I’m coming over right now, before the kids get home.” She was at Riva’s door fifteen minutes later. They huddled over the book on Riva’s dining room table. “This is my favorite spread,” Lani said, pointing at a picture of their father sitting on a horse. They’d made a collage of pictures from all of their family trips. There were spreads for every Yom Tov, a spread for 72

each of their weddings, a spread of snowstorm pictures and one of all the barbecues the Millers hosted in their backyard every summer. The last page was a stunning picture of the entire family — Zeidy and Bubby, Lani and Chaim Tzvi, Riva and Yaakov, and all their kids — that they’d called down a photographer to shoot the previous year, as a Chanukah gift for their parents. “They’re going to love it,” Lani declared as they closed the scrapbook. “Wow. You really did an amazing job.” Riva beamed. “Thanks… I’m happy we got it done.” Lani placed the book back in the box and looked at Riva hesitantly. “Can I ask you…” she started. “Totally unrelated. Uh…” She squirmed. “The Chumash final, our girls studying together. Did it go well?” She looked anxious. Riva lifted up Eli and tousled his hair. “It went pretty okay,” she said. “Maybe it was a little stilted — they mainly studied and didn’t schmooze much or anything. But once they got into the groove, they seemed fine. I think.” “I hear. That’s good, that’s really good.” Was she reassuring herself or trying to convince Riva? Riva didn’t say anything. She didn’t want to tell Lani that she was afraid to base any hope on this one-time incident. It was probably “homework” that Chevi’s therapist had given her. Which was okay. But the real celebration would be if this change carried over to all other interactions between the girls. Lani hesitated, then continued. “I’m curious, whose idea was it? Chevi didn’t tell me much, and I didn’t want to make it sound like it was a big deal…” “Right, we shouldn’t make it sound that way.” Even if it really is… Riva picked up the box from the table and forced herself to look at Lani. “It was Chevi’s idea.” Lani’s relief was electric. “Baruch Hashem,” she whispered. “Let’s hope…” “Yeah,” Riva said. When Lani left, Riva sat down to look at the pictures in the scrapbook one more time. Her eyes got stuck on one picture, of herself and Lani as little kids, holding a huge cone filled with popcorn and grinning at the camera. It wasn’t easy to be the mother of a kid who was being bullied. But being the mother of the bully, she acknowledged, was no fun either. TO BE CONTINUED…

Pinch of salt D IR EC T I O N S 1. Combine all dough ingredients to form a smooth dough. This can be done by hand. 2. Divide the dough in two. On a well-floured surface, roll one half into a long, narrow rectangle. Hundreds of satisfied graduates

3. Spread half the chocolate filling over half the width of the rectangle. Fold the other half of the rectangle over the chocolate filling. 4. With a sharp knife, cut the dough in the width into ½-inch-wide rectangular strips. 5. Hold each strip by both ends, and twist it to create a spiral shape. Place this spiral on a cookie sheet lined with Palisades parchment paper. 6. Repeat the above steps with the remaining dough. 7. Bake at 350° for 30 minutes. 8. Once cooled, top with drizzled chocolate and confectioners’ sugar, if desired.

NO -RISE COFFEE RUGEL ACH Skipping the wait for the dough to rise is a treat when kids are “helping” in the kitchen. Mommy will be rewarded with heavenly rugelach that much sooner, too! INGREDIENTS 1

cup warm water

D IR EC T I O N S 1. In a mixing bowl, dissolve the yeast and sugars in water. Let this mixture rest until it’s bubbly, around 5 minutes. 2. Add the rest of the dough ingredients, and mix to form a soft dough. 3. Divide the dough into four parts. 4. Combine the filling ingredients, then set this aside. 5. Prepare the glaze by bringing the water, sugar and vanilla sugar to a rolling boil in a small pot. Remove from heat and set aside. 6. Preheat the oven to 350°. 7. On a well-floured surface, roll out one part of the dough into a large, thin circle. 8. Drizzle the dough lightly with oil,, then spread a quarter of the coffee filling evenly over the dough. 9. Cut the dough into triangles, pizza style. Roll up these wedges into rugelach. 10. Place the rugelach on a cookie sheet lined with Palisades parchment paper. Bake until golden, 25 to 30 minutes. 11. Immediately brush the rugelach with the glaze. 12. If not using the dough right away, store in the fridge. Letting the dough sit around for too long will cause the rugelach to bake too flat.

Confectioners’ sugar, for dusting D IR EC T I O N S 1. Dissolve the yeast and sugar in the warm water, and let it proof for a couple of minutes. 2. In a separate bowl, combine margarine or butter, flour and salt until the mixture has a sandy texture. 3. Add the egg yolks and yeast to the flour mixture. Mix until a dough is formed. 4. Cover the dough, and allow it to rest for 1 hour. 5. Preheat the oven to 375°. 6. Divide the dough into two for larger rugelach and into four for small ones.

My husband and I like to travel, to put it mildly. From the 32 countries we’ve visited together, we’ve had a broad range of experiences. Some of our trips were scary, like entering North Korea’s Panmunjom Kijong-dong zone, which required us to sign life waivers. I remember sitting on the bus with fellow American tourists when the tour guide asked the group, “What is the number one rule for today’s visit?” and a woman called out, “Have fun!” To which the tour guide replied, “No, the number one rule is: Do not step on landmines.”

Other trips were a testament to Hashem’s natural wonders, like our visit to the glowing cenotes in Tulum, Mexico, and Positano’s sparkling Tyrrhenian Sea. To say my eyes were opened to different cuisines would be an understatement. The king cobra restaurant and large animals roasting on spits in Hanoi Vietnam are sights and smells I will not forget. (In unfortunate circumstances, the lunch the Chabad shlucha prepared for us that day was burgers, and I cross-referenced the smell of the roasting animals to the meat I was eating. Let’s just say I went vegan for a while.) The list goes on to include scorpions, crickets and other creepy-crawlies that were popular fare in Bangkok, Thailand, and other locations across South East Asia. Some places we visit are a one-and-done, such as Siem Reap, Cambodia (let’s just say my showers at night were not for relaxing but rather necessary). But other destinations keep us coming back to explore their unique cities, such as China’s Beijing, Badaling, Shanghai, Zhujiajiao, Shenzhen, Hong Kong, Guangzhou and Macau. Hong Kong specifically has a special place in our hearts; our upcoming trip will be my fifth visit and my husband’s ninth.

But one of our favorite places to visit is Alaska. The first time we went to Alaska, I turned to my husband and said, “Why don’t more people know about this gem?” It has all the beauty of Switzerland without any of the anti-Semitism or steep costs. I saw tall mountains of varying colors, endless fields with stalks of purple and pink flowers, water that is both blue, green, and white all at the same time, glistening aqua glaciers, and cold streams with chunks of ice floating by, reflecting the clouds above them. While the wildlife is fascinating as well, Alaska’s sky was awe inspiring: heavens that seem to constantly glow, and literally do, during the aurora season. A common misconception about Alaska is that it is bitterly cold all the time. People imagine fur wrapped Eskimos in brick-style igloos. This simply isn’t true; our visits have always been in the summer, and the most I’ve needed to stay warm was a hooded sweater. Spending Shabbos in Alaska is unique in many ways, but one significant one is that the sun doesn’t set until very late. On our first Friday in Anchorage, we were in local shops until past 9 p.m. To say it felt odd to be driving and using my credit card that late on an Erev Shabbos would be a gross understatement. More frustrating, however, was waiting for Motzei Shabbos. My husband and I couldn’t bring ourselves to go to sleep and make Havdalah the next day, and so we waited and waited until close to midnight — and even then there wasn’t quite the darkness we are used to. In fact, throughout our entire trip to Alaska, I had to keep the blinds closed even at 3 a.m., because the sky always had some glow to it. While the glacier hikes and water explorations were cool (they even served us drinks with ice they pulled right out of the water as we cruised), the most unique nature experience I had was at the top of Denali (Mt. McKinley). Its peak is 20,310 feet above sea level, and it is proudly known to be the third-highest of the Seven Summits across all seven continents. to change into, including ice-safe boots. We entered a small glacier-landing plane and were given strict instructions on how long we can explore, being that our bodies could only safely handle the lack of oxygen for a limited amount of time. When the plane’s skis landed at the top, I looked out the window and felt like I had a glimpse of what outer space might look like. We carefully stepped out of the plane, and as I awkwardly walked in my ice boots, I felt as though there was nothing for miles in every direction surrounding me. All I could see was snow. The ice beneath us was blue, and streams of water could be seen underneath. The sky was our air; we were above it all. I’ll never forget that experience of feeling like I’d landed on a different planet somewhere in our galaxy. Unlike Anchorage, which is somewhat cosmopolitan, Homer, Alaska is about as small as small towns get, and it’s also one of our favorites. Homer’s population is well under 6,000, although when you are there, it feels no more than 600. During our second visit there, we took a flight on a tiny propeller plane that literally had a bench row in the back. I’m not going to lie; I was afraid. I quite literally saw and heard the propellers working their hearts out, and couldn’t even hear my husband’s reassurance over the noise of the plane that was the only thing keeping us above the water we were flying over. When we finally landed, I began laughing. In a room double the size of my living room, you have the entire airport – departure, landing, car rental and moose reports. No, that was not a typo; you read right. On our way out of the airport to the 30-second walk to our rented car, we were warned that there was a moose on the loose. I forget his name, but he was known throughout the town, and we were warned not to engage with him because apparently, he could be dangerous. 96

Before I describe our departure from Homer’s airport, which was far more eventful than our arrival, I will say that Homer is one of the most beautiful and relaxing cities we have ever been to, and we’ll continue to return to it. The mountains, water, fishing, quaint shops and fresh air gave us the perfect break from city life. In preparation for leaving, we called the airport car rental to see where the car should be returned. I like to refer to the lady who answered the phone as the woman with many hats. She simply instructed us to arrive and assured us that she would be there. This one woman manned all three desks in the airport including the car rental, departures and arrivals. After we “checked in,” I asked my husband where security was and quickly learned that it simply did not exist. No metal detectors, no one looking through our bags. The lack of security wasn’t the only thing lax about this airport. The flight was delayed because the pilot had an appointment, and the flight attendant gave out home-baked cookies and milk. While I may choose to drive there next time, I am eager to book my next trip to Homer’s beautiful blue bay. The memories I made in Alaska involved all of my senses and therefore remain as vivid to me as the moments I experienced them. When I close my eyes and take a breath inward, I am once again at the top of Denali, seeing nothingness for miles; smelling the sweet fields of flowers as we’re driving with the windows open through Seward; and tasting the cold glacier ice as tiny drops of water sting my arms while we cruise above the glacier-filled channel. 98

In many parts of the world, ice forms huge pillar formations and caves. Imagine walking through a cave tunnel, knowing that you are surrounded by miles of ice. While you probably associate ice with the cubes you put into your drink to keep it cold, the icicles that hang from your gutters after a blizzard, and the material used to make magnificent sculptures, ice can be many things — including wondrously beautiful, even in its raw form.


Eisriesenwelt Ice Cave We’ll start with the longest and largest ice caves in the world: the Eisriesenwelt ice caves in Austria. The Eisriesenwelt (Austrian for “world of ice giants”) is a 25-mile-long cave system carved into the depths of a mountain. Its rocky walls are covered in layers of ice, and the caves are full of breathtaking ice formations. There’s the Eispalast (ice palace), which is an ice-covered chamber with a frozen lake. When a magnesium flare is held up to the ice crystals, they twinkle like diamonds — hence the name palace. Another fascinating attraction is the rows of 16-foot high spikes that look like giant candles because of the light that filters into the cave from the outside. These famous ice landmarks are located in just the first half a mile of the cave, while another 24 miles of mystery remain hidden, accessible only to experienced spelunkers (cave explorers). When touring the ice cave, guides will distribute several lanterns to the group. Otherwise, the cave is completely dark. 106

Vatnajokull Ice Caves What better place to find dazzling ice caves than in Iceland? Iceland is full of huge glaciers, sheets of floating ice that are up to 3,000 feet thick. Because of changing seasons and fluctuations in temperature, the outer layers of ice melt and refreeze annually. Caves form in the ice when rivers of melting ice flow out of the glacier, leaving a hollow behind. These caves often exist for just a few winters, after which they dissolve and other caves take their place. Because of this cycle of melting and freezing, the glacial caves can change appearance from day to day and can even look different after a few hours, depending on the temperature. The ice in the caves glistens like sapphires, with a blue hue. That’s because, just like the precious stone, the ice absorbs all the red colors of the light spectrum, while transmitting the blue colors. Being surrounded by smooth blue ice for miles is a unique experience, making caves in Iceland’s Vatnajokull glacier a top tourist attraction. Although every year brings new caves, the especially beautiful ones are sometimes given names. Here are some of the recent popular ice caves in this glacier:

To reach this small glacial cave, tourists followed the river on the glacier until reaching the waterfall pictured. The ceiling wasn’t very high, but for the two years that the cave existed, from 2015 to 2017, it was a popular place to visit. Icelanders hope a cave similar to it will reappear on the glacier in future winters.

Named for the lines across its ceiling, the Northern Lights cave was discovered by two ice cave guides who thought the cave’s lines looked like the aurora borealis. Among the ephemeral beauty of all glacier ice caves, this cave was a fleeting wonder, as it was accessible for only one winter.

Since the winter of 2011, the Crystal Cave has formed in the same location in the Vatnajokull glacier each year. Known for its crystal dome ceiling, it enjoys the undisputed reputation as the best ice cave in Iceland to tour. It is usually the largest ice cave in the area, able to fit up to 100 people inside at one time.

The vivid blue ice in this cave gave it its name. Located higher up on the glacier, it’s more difficult to access than the Crystal Cave, as well as smaller, fitting just 17 people inside at once. Still, its gorgeous blue color remained an attraction for as long as the cave existed. Today the cave has disappeared and is unlikely to reappear.

Apostle Islands Ice Caves Before you start feeling left out, not all ice caves are in faraway lands. The good old USA also boasts delightful ice caves to explore. In Wisconsin, the seacoast has hollowed out a series of sea caves in the sandstone cliffs at the seashore. Inside these caves, freezing temperatures cause glistening icicles to form. However, this “fairyland of needle-like icicles,” as it’s been called, is not easily accessible. To get to the caves, visitors must hike across the frozen ice on Lake Superior. When the ice is thick enough, it can be crossed while wearing crampons, which are spiked traction devices attached to boots that prevent slipping on the smooth ice. Those who brave the trek across the ice are rewarded with the sight of the one-time ice wonders that form during the coldest temperatures and disappear easily when the weather warms, or with the wind.

What are Ice Caves? There are actually two kinds of ice caves. Glacier ice caves refer to tunnels and grottos carved out of glacier ice, which means the actual cave is made of ice. But the term ice cave can also refer to a cave carved out of rock that is filled with ice sculptures and formations all year round.

Katla Ice Cave The Katla ice cave is also located in Iceland. While the caves under the Vatnajokull glacier are accessible only in the height of the winter, when the ice is frozen enough to be safe, the Katla ice cave is open all year round. This cave is carved into a glacier that covers the Katla volcano. Because of the volcano’s eruptions, the ice in these caves is streaked with black ash and is not as blue as those in Vatnajokull. Although you can visit Katla in the middle of the summer, it’s important to dress properly for the tour. Being surrounded by ice that keeps melting means that your warm gear also has to be waterproof so that you stay dry. 112

Narusawa Ice Cave Located in Japan at the base of its famous Mt. Fuji, these ice tunnels were created by a massive lava eruption from a volcano. The lava caves are full of huge stalactites (icicles that hang from the ceiling) and stalagmites (icicles growing up from the cave floor). In some places, you can find ice pillars that actually connect in the middle. Some of these huge ice pillars are smooth and shiny, like blue marble. Like other ice cave formations, these keep changing according to the temperature. The best time to see the ice is in the middle of the winter, when there is the most ice in the cave.

Vidgelmir Ice Cave Not all of Iceland’s ice caves are glacier caves. The Vidgelmir lava cave is full of picturesque ice sculptures throughout the year. You can also see lava formations in this cave, for a unique combination of wonders created by both heat and frost. With fixed lights on the walls, there’s a stunning color display, which guides usually turn off during the tour so you can see what the cave is like in the dark as well. What’s nice about Vidgelmir is that it’s family friendly, which means it’s easy to access and to walk through, unlike the constantly changing glacier caves. It’s one of the widest lava tunnels in the world, allowing hikers smooth passage, contrary to other lava caves that are tight and narrow.

Mendenhall Ice Caves Another American wonder, these glacial ice caves melt and collapse each season along with the melting of the Mendenhall glacier. This glacier is located in Alaska and is a popular tourist site for a hike across the ice. Depending on the season, there can be wide or narrow cave tunnels to explore. The ice formations inside these glacial ice caves have been described as otherworldly and magical. They can also be dangerous, so, like most ice caves, access is allowed only when accompanied by an experienced guide. 118

Kungur Ice Cave The Kungur ice cave in Russia is a long network of caves and tunnels. The tunnels are lined with ice during the coldest parts of the year, when frozen lakes and surreal ice sculptures dominate the landscape inside this underground world. It’s easy to see why the native inhabitants believed that the labyrinth was a home for some underground creature. Contrary to the unstable reputation of ice, some of the ice formations in the hollows have remained unchanged for hundreds of years. These ancient pillars remain in place because of parts of the cave that are protected from changing temperatures, which means they are cold enough to be icy all year round.

Dobsinska Ice Cave The ice in this cave could fill 40 Olympic sized swimming pools. Access to the cave is through a metal staircase that leads you directly into the Great Hall of the cave. This cave hall is covered in a sheet of ice 67 feet thick all year round. Tubing destinations for White Winter Days

Snow is so peaceful and pristine — for the first few minutes. Before we know it, the white wonder turns slushy and gray, leaving kids with precious little of that magical white stuff with which to build even a snowman. The snow outside our windows may not retain its beauty for too long, but snow can be enjoyed all the way — visually and actively — on mountains that offer snow tubing. SNOW TUBING TIPS Bundle up with multiple layers! Start with the lightest layer and build up to a heavy outer layer for the most control, as you can always remove them as the day warms up. Wear a warm hat. Since up to 70% of body heat escapes from the head, it is important that you wear a hat, preferably one that covers the ears. Wool, fleece, or a combination of the two will keep your head toasty and help you maintain a proper body temperature while snow tubing. Add a waterproof layer while tubing. You’ll probably get snow on you, and the moisture will make you highly susceptible to the cold. Also, stay away from wearing cotton clothing next to your skin, because it may absorb snow or sweat, which will make you cold. Although you may have put your swim gear away for way warmer weather, you’ll have to dig them out for your snow tubing trip, as sunlight reflects off the snow. Protect your skin by applying a good sunscreen or sunblock, and protect your eyes with sunglasses or goggles.

ith their friendly air, black and white suits, and non-threatening waddle, penguins are just begging you to get to know them!

PENGUIN TRIVIA What are penguins, exactly? With webbed feet and pointed beaks but a definite inability to fly, their classification can be confusing. They don’t seem to conform to the typical criteria for a bird, but they are — aquatic, flightless birds, to be exact. Unlike most birds, whose bones are air-filled and light in flight, penguins have incredibly dense bones that help them dive and swim well. What’s in a name? Penguin may have originated either from the Welsh “pen” plus “gwyn,” meaning “white head,” or the Spanish “pinguino,” referencing excessive amounts of fat. Both ring quite true. A gaggle, a school or a herd? None of the above. A group of penguins on water is called a raft, but on land they’re called a waddle. A RAFT

A penguin lives around 15 to 20 years, in the wild as in captivity. Aptly named emperor penguins, these are the biggest of the 18 penguin species extant today, and among the largest of all birds. Weighing in at around 88 pounds, they’re about the height of a six-year-old child. And the smallest of all? Here’s the sweet little blue penguin, also called the fairy penguin, measuring in at just 13 to15 inches, and weighing just 2 to 3 pounds.

Gentoo penguins are the fastest, reaching swimming speeds of 22 mph. Compare that to the 4 to 7 mph that most penguins manage.

QUITE THE CHARACTER Penguins are associated with the positive traits of friendliness, community and determination, although, according to one animal expert, each penguin has a different personality, with some “being friendly and some downright grumpy, some flinging their fish at feeding time and others greeting you with a friendly honk every morning.”

Looks quite similar to our penguins, no? This here is a puffin who, in contrast to their flightless lookalikes, can manage airtime quite well. They’re also great swimmers.

According to animal experts, penguins are one of the most streamlined animals in the world. See how their bodies are tapered at both ends, especially shaped to help them swim fast.

Penguins have no teeth but excellent hearing.

Penguins huddle to keep safe from predators and also to keep warm in frigid habitats.

Penguins aren’t native to one habitat, but they do favor the Southern Hemisphere, save for the occasional wanderer. From Antarctica to South Africa, penguins make a host of countries their home. Find them off the coast of Ecuador, in New Zealand, Australia, Peru and Chile among others.

Another feature that keeps them warm is their waterproof oil. A gland near the base of their tails provides it, and the creatures spend several hours a day covering their feathers in it — with special attention given to this task before swimming. So next time you see penguins primping and preening, don’t chide them for being vain!

Penguins just seem to come together with polar bears, right? Maybe in cartoons. In real life you’ll never find these species together. That’s because penguins live south of the equator and polar bears north of it.

What’s with the black and white look? Besides being super classy, those colors are a camouflage called countershading: when they swim, their black backs blend with the dark ocean water and away from the prying eyes of predators above. Their white bellies help them hide from predators below, as they blend in with the bright ocean surface when viewed from below.

And by the way, penguins aren’t furry; they’re feathered. They are birds, at the end of the day. And not just any feathers — they repel ice, which is why penguins can withstand extreme cold. As is the way of birds, penguins molt every year. That’s the process of shedding old, worn feathers and growing fresh, new ones.

On land, though, living as they do in the snowy-white polar regions, penguins are highly visible.

Mighty swimmers as they may be, penguins can hike up many a mile by land, too. Some species can march up to about 60 miles of sea ice! In water, too, their feet are very useful, serving as rudders to help them steer and angle for direction control. Penguins spend roughly 25% of their time on the ground; there, they walk with that adorable waddle while using their tails for balance.
