MANAGER’S MESSAGE by Kim

Happy December Residents!

Well, the gang’s all here! Our winter residents have for the most part, arrived and have waved goodbye to their friends from across the miles who may be sending great video and pictures of snow as we bask in the sun and take a dip in the outdoor pool and hot tub. As we prepare for the holidays and the coming of the New Year, I don’t know about you but I’m hoping for a safe and prosperous 2026.

With cooler weather in Arizona, now is the time to freshen up the home, our surroundings, and add some personal touches that make each home unique.

A power washing or maybe even a new paint color can give our homes a beautiful reflection of our personal style. Should anyone wish to make outdoor alterations, just stop by to fill out alterations request at the office.

We hope to be able to soon get everyone together for some seasonal fun. We appreciate everyone who helps with taking a part in the great group of volunteers that allow the community to really thrive.

We wish everyone a wonderful season from the office staff and Cobblestone Assets!

I’m a proud Arizona native who grew up on the Colorado River Indian Reservation and have called the metro area home since 1998. I earned my bachelor’s degree from Arizona State University and have been a licensed real estate agent since 2017. Easy Moist Pumpkin Bread Recipe

Dry Ingredients

• 2 cups all-purpose flour

• 1 1/2 cups sugar

• 1 tsp baking soda

• 3/4 tsp salt

• 3/4 tsp cinnamon

Wet Ingredients

• 2 large eggs

• 1/2 tsp baking powder

• 1/2 tsp nutmeg

• 1/2 tsp cloves

• 1/4 tsp ginger

• 1/4 tsp allspice

• 1 cup canned pumpkin puree

• ½ cup canola oil

• 1/3 cup water

Optional Add-ins

• ½ cup chopped walnuts or pecans

• ½ cup chocolate chips

Description

This Easy Moist Pumpkin Bread is the ultimate fall treat—soft, flavorful, and perfectly spiced. Made with simple pantry staples and just one bowl, it’s a no-fuss recipe that fills your kitchen with the warm, comforting aroma of autumn. Enjoy a slice fresh out of the oven with butter or freeze for later—it’s just as good toasted the next day.

Instructions

Making Autumn Harvest Beef Stew is straightforward if you follow these steps:

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter

Mix the Ingredients

In a stand mixer, add all the ingredients. Mix on low to medium speed for 2 minutes. Do not over mix.

Fold in Optional Add-ins

Gently fold in nuts or chocolate chips if using.

Pour & Bake

Pour the batter into the prepared loaf pan. Smooth the top and sprinkle with turbinado sugar if desired. Bake for 50–65 minutes, or until a toothpick inserted in the center comes out clean. (Start check at 50 minutes—ovens vary!)

Cool

Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Storage Tips

Room Temperature: Wrap in plastic wrap or store in an airtight container. It stays moist for 2–3 days.

Freezer-Friendly: Wrap tightly in plastic and foil or a freezer bag. Freeze for up to 3 months. Thaw overnight at room temp.

Crispy Ranch Brussels Sprouts (Air fryer Friendly)

Ingredients

• 1 pound of Brussels Sprouts

• 2 Tablespoons of Olive Oil Plus more for Garnish

Steps

• 1 ½ Hidden Valley Ranch Seasoning

• 1 Tablespoon of Lemon Juice

• Sea Salt for Garnish

1. Preheat the oven to 425 degrees. Spread the Brussels sprouts out on two baking sheets.

2. Drizzle with the olive oil and sprinkle on the seasoning mix. Toss well to coat with your hands.

3. Roast for 10 minutes. Sprinkle the lemon juice and flip with spatula to toss with the juice and turn the sprouts over.

4. Cook for another 10 minutes or so, until browned and crisp. Remove from oven, drizzle with a little bit of oil and season with sea salt. Serve hot.
