PRESIDENT’S MESSAGE In last year’s “State of the Association” speech, I talked about the many accomplishments Tahoe Donner achieved over the past few years, starting with the McGlashan Springs and Euer Valley acquisitions. This year’s list may not be as long, but is certainly no less substantial, in accomplishments that keep the association as a modern and up-todate mountain resort community. First, we have begun construction on our new Cross Country Ski Center. The demolition of the old building is complete, grading is underway, and we are on track for completion in early January 2015. We have an internationally recognized cross country trail system and now we’ll have a building to match the quality of our trails. It will not only serve the needs of our members, but will attract national and even international events. Thanks to all of our staff, members, and consultants who made this project possible. Properties within Tahoe Donner comprise the TSSA-1 Special Assessment district, and allowable uses of funds are established by the Town of Truckee each year in advance of the special assessment collected. Members and the board supported the use of TSSA-1 tax dollars this year for the proposed Trout Creek Trail project that will connect Northwoods Boulevard just above Coyote Moon Golf Course to Bridge Street in downtown Truckee, a sensible use of our tax dollars. Construction is scheduled to begin this summer with completion next year. The board, along with wide-ranging member support, endorsed Measure R, a quartercent sales tax that equates to 25 cents for every $100 spent. The funds generated from this revenue source — approximately $1 million per year — will be used exclusively for the planning, construction, operation, and maintenance of trails, and for no other purpose. Trails are a vital component of our lifestyle here in Truckee and we will all benefit by an enhanced trail system. Incremental improvements are being made to the Beach Club Marina, including replac-

ing a decrepit and dangerous walkway to the upper lawn area with a new sidewalk and railings. The Marina, which last year was our second most-utilized amenity, also received two upgraded docks, replacing the failing, 14-year-old docks. Pizza on the Hill, a favorite family venue here in Tahoe Donner, has received kitchen upgrades and an additional pizza oven, which will enhance customer service and reduce wait times for pizzas, along with numerous new menu items. Due to growing popularity and demand for the game of Bocce within the membership and their guests, the Bocce courts at Northwoods Clubhouse received improvements, repair, and maintenance prior to league play that started in June. We have seen an increase of younger families with kids buying Tahoe Donner property. We need to focus on more family activities such as summer camps, Waterpalooza, bingo and trivia nights, BBQs, music nights and more. Additionally, we need to reach out to our second homeowners, who make up 75 percent of our population, to obtain their input and desires on what they want for the association. Lastly, I would like to congratulate Ron Wulff and Steve Miller who have just been elected to three-year terms on your board of directors. Volunteering on a homeowner association board sounds easy enough, but our directors are called upon to invest a surprisingly large amount of time and energy. The last board year included a number of challenges, which the board met with resolution, determination, and responsibility. We will continue to move forward with our strategic plan and mission statement as our guide. In closing, I’d like to thank our general manager, Robb Etnyre and his collective staff for the hard work and excellent results realized for Tahoe Donner this year. They are a first-class team that any organization would be proud to have.

FROM THE GENERAL MANAGER’S DESK

The extraordinarily low precipitation last winter is an indicator that the threat of wildfire is greater than usual. Tahoe Donner urges each homeowner and guest to use considerable caution this summer due to the recent drought conditions that create high fire danger. Extreme caution should be used when using outdoor fire pits and BBQs this summer! To learn more about what you can do to further prepare your property for defensible space and reduce potential fire hazards see Tahoe Donner’s forestry pages at tahoedonner.com/forestry and CAL Fire’s website ReadyForWildfire.org. Additionally, I encourage each household to review their emergency preparedness and evacuation plan in the event of an actual emergency. The Nevada County and Greater Truckee Area Emergency Preparedness and Evacuation plan provides valuable information and is a great guide. More information, including links to websites with valuable information, can be found on page 22. Tahoe Donner continues to be dedicated to maintaining the health of the forest within the association’s 7,000-acre boundary while minimizing the threat of forest fires. The association’s forester Bill Houdyschell and his team are nationally regarded as leaders in their field and manage a variety of programs to protect and enhance the health of our forest, which includes 477 acres of reforestation/fuel breaks, 618 acres of fuel reduction zones, and 1,344 acres of common area with approximately two-thirds dedicated to fuel reduction. These programs, along with our homeowner defensible space program, continue to help ensure our community maintains the best practices as a fire-safe mountain community. In addition, our forestry department has already planted 2,940 Jeffrey pine and 1,815 red fir trees in plantations this year alone. They have also helped homeowners remove green yard waste by chipping over 57 tons of material in the month of May. Does the term stored value mean anything to you while you’re at Tahoe Donner? Did you know you can put money on your Tahoe Donner membership ID cards? You no longer have to carry money or your credit card with you when you visit Tahoe Donner’s amenities. Called stored value, it’s very easy to put value (money) on your card. Just come into Member Services with cash or a credit or debit card and our staff will put the money on your card for you. To redeem your stored value, simply tell the staff member that you have stored value on your member or guest ID card. Your receipt will display the balance left on the ID card. Additionally, you can check your balance or add value to your card at any time by going into your profile on Shop TD under My Account (click on Stored Value). Remember to always take your ID card with you to use stored value at the amenities. This will be the fourth summer of this program which continues to receive outstanding reviews and participation. So, don’t worry about carrying your wallet — stored value and your membership ID or guest card is all you need this summer at your personal resort. Membership ID cards are used within Tahoe Donner and each property is entitled to as many as four member ID cards for qualified individuals. Each property may purchase up to four additional member ID cards for qualifying family members. Your member ID card identi-

fies you as a member and affords you access to the private and public amenities at the member rate, where applicable. Each property is also entitled to a maximum of two transferable guest cards for use by property owner’s guests to gain access to the private amenities, where guest access fees will apply. Up to four guests may gain access on a single transferable guest card. Upon payment of the annual recreation fee, a member and any other eligible members associated with that membership are granted access to the Beach Club Marina, Northwoods Pool, Trout Creek Recreation Center and the Tennis Center without having to pay the daily entrance fee. The 2014-2015 recreation fee is $245 and is valid from May 1, 2014 through April 30, 2015; it can be purchased at Member Services in the Northwoods Clubhouse. If you have elected not to purchase the recreation fee, then daily entrance fees will apply to your amenity visits. The entrance fee for the private amenities, including Trout Creek Recreation Center, the Tennis Center and the Beach Club Marina, is $6 for members and $8 for guests. This fee provides access to all these amenities for the entire day. The entrance fee for Northwoods Pool will also be $6 for members and $8 for guests this summer. Over the course of this next year the association’s board, staff, and committees will be working on several significant projects which will include a number of opportunities for membership input. First, we will be updating our strategic plan. Second, we will be updating our general plan, which serves as our long-term infrastructure (capital) investment plan for improving and/or replacing major facilities. And lastly, we will be developing a master plan for land use as a key future reference document for our capital and recreation development plans over the next 5-10 years. Truckee Thursdays has begun and Tahoe Donner is providing a free shuttle service to and from the event. Downtown Truckee Thursdays is a great community event with live music, great art, children’s activities, a beer garden and a variety of vendors. The event takes place in downtown Truckee for 11 weeks through August 21 from 5 to 9 p.m. The complimentary shuttle will leave Trout Creek Recreation Center starting at 4:30 p.m. and will run every 15 minutes, with the last shuttle departing Trout Creek at 9:15 p.m. Shuttles from downtown returning to Trout Creek will begin at 4:45 p.m. and will run every 15 minutes, until 9:30 p.m. We will adhere to this schedule as best as possible, although unforeseen traffic issues may cause delays.

NEW CONSTRUCTION HAS BEGUN With recent agency approvals, Tahoe Donner Association commemorated the official start of construction for the new Cross Country Ski Center on June 13 with a groundbreaking ceremony. Staff and supporters gathered to celebrate the long-awaited opportunity for overdue improvements at the new Tahoe Donner Cross Country Ski Center and parking lot, which are designed to improve operational and energy efficiencies, while implementing necessary protections to natural resources. Representatives from Tahoe Donner Association, including Robb Etnyre, general manager, Tom Johns, president of the board, and Forrest Huisman, director of capital projects, attended the groundbreaking while supporters were invited to participate in the ceremony. Truckee dignitaries, including Truckee Mayor Patrick Flora, were present as well. “At long last, with years of research, collaboration and planning we are excited to be able to move forward with construction of our new Cross Country Ski Center,” said Johns. “We sincerely appreciate the efforts of those who attended the planning commission hearings, wrote letters of support and helped make this project become a reality.” The new Tahoe Donner Cross Country Ski Center, designed by local firm, Dale Cox Architects, will meet the growing needs of the community. Robert Scarborough is the contractor responsible for construction. “Today is a celebration of the valuable collaboration, community relationships, and project coordination that has taken place during the last three years of planning. The success of this project is a result of everyone’s continued vision and support,” said Huisman during the celebratory event. “Collectively, we are making history by dreaming

big, developing our collaborative vision, and following through for the shared benefit of the Truckee community.” Access to 100 percent of our spectacular cross country ski trails will still be available as soon as the weather permits this winter. Temporary structures will be utilized to service operations as necessary until the new building is completed in 2015.

Junior Sailing Program The Junior Sailing Program is designed for beginner to intermediate sailors, ages 9 - 16. Each threeday session includes three hours of instruction per day with the majority of the time spent on the water. Classes are limited to eight students to ensure plenty of individual attention, so be sure to make your reservations early. Payment must be made at the time of reservation. Kids Camps Kids Camps have expanded this year, and the camps will take place every weekend through Sept. 7. These two-day camps run from 9 a.m. to noon and are open to kids ages 10 to 18 who can ride a bike for an hour and a half at a time. We will focus on providing a fun, safe environment where kids can improve their general mountain biking skills while exploring the trails of Tahoe Donner. Our guides have years of experience teaching kids to become better riders. Cost for the camp is $80 per child; rentals are available for a separate cost if needed. Strava Competition For this summer, we have created new Strava segments on trails commonly ridden in Tahoe Donner. Strava is an independent website which allows users to compare their times on certain segments of roads or trails to others who have ridden that particular segment. We will have a season-long competition to see who can ride each segment the fastest. You can use any iPhone, Android or Garmin device. Tahoe Donner Women’s 9-Holer Golf Club The 9-Holers held their kick-off breakfast on May 22 at PJ’s at Gray’s Crossing. Our honored guests included Tahoe Donner’s new head golf pro Rob Weizer and returning pros James Murtagh and Charlie Lyon. Vivian Wakefield was presented with an award for making a hole-in-one on August 29, 2013, on the fourth hole. We played golf afterwards. Our first official day at Tahoe Donner was May 29. It was a little chilly, but the golf course was in excellent condition. Besides our regular Thursday morning play, we have other events planned throughout the summer. We have four couples tournaments followed by dinner at The Lodge Restaurant & Pub, a luncheon at Zano’s in June, our President vs. Vice President match, a golf tournament in August and our awards banquet August 28. Following our last day of play at Tahoe Donner in October there is a luncheon at The Lodge Restaurant & Pub. Sound like fun? We’d love to have you join us. Tahoe Donner Men’s Golf Club On June 1, the Tahoe Donner Men’s Golf Club kicked off its 2014 tournament season with the very popular Ice Breaker tournament. This year we had a record turnout of 59 players and everyone had a great time. Congratulations to the winning team of Gary Gonsalves, James Ozimek, Mike Ginsberg and Todd Lopez! During the tournament season, we hold a total of 11 tournaments, plus our Wednesday skins and team games. The next upcoming events are the Match Play Qualifier on Sunday, July 13 and the Junior/Senior (Father/Son) tournament on Saturday, August 2. You can pick up an application on the Men’s Club Bulletin Board, which is right outside the pro shop, or print out from our website at www.tdgolfclub.com. As the 2014 golf season gets underway our Men’s Club board is asking all our members to take part in a simple, yet highly effective course maintenance program. This program was first initiated last year and the results were very positive. Each member will be assigned to one hole, which works out to 10-13 members per golf hole. Once you receive your assignment, you will be asked to fill multiple divots and repair ball marks on the green when you are playing. This will greatly enhance the quality of our course. Progress of the program will be monitored and updates will be provided. Towards the end of the season we will acknowledge those members who have kept their fairway and green in the best condition. Please help us keep our course in top shape by participating in this activity.

Friends of Tahoe Donner Trails The Friends of Tahoe Donner Trails Club is for those who value and enjoy Tahoe Donner’s natural surroundings. Last year we removed a truckload of asphalt, concrete and barbed wire from Tahoe Donner’s Alder Creek Meadow. Unfortunately, quite a bit of debris still remains. On July 19, from 9 a.m. to 12 p.m., we will partner with the Tahoe Donner Trails Department for another volunteer effort to continue to clean up. The Trails Club is also delighted to announce that on August 2 the Weed Warriors from the Truckee River Watershed Council will return for another educational weed walk here in Tahoe Donner. Last year’s event was an amazing success, and the Weed Warriors are as pleased to return as we are to have them back. This is an event you won’t want to miss. IMPROVING PACE OF PLAY ON THE GOLF COURSE BY ROB WEIZER, HEAD GOLF PRO Unfortunately, almost three million golfers quit the game every year, and it’s safe to say that slow play and the time it takes to play are the leading culprits. In reality, it takes about an hour to play 18 holes of golf. The other three to four hours is logistical positioning – getting to the next shots, picking the right club. It’s a classic problem: the slowest group dictates the pace of play for everyone. Groups that get out of position — especially early in the day — can affect many groups after it. A golf course has to provide feedback to slow golfers. Having a marshall or player’s assistant is the most inexpensive and efficient way to do that, by identifying groups that fall behind and providing help to catch up, or encouraging the group to skip holes if needed. Here are some tips for speeding up slow play on the golf course:

• Choose the correct set of tees from which to play. • Members of a group should not travel as a pack, with all members walking together to the first ball, then the second ball, and so on. Go directly to your ball and be ready to play when it’s your turn. • When two members are riding in a golf cart, drive to the first ball and drop off the first player with his or her choice of clubs. The second player should proceed in the cart to his or her ball. After the first player hits, he or she should begin walking toward the cart as the second player is playing. • Use the time you spend getting to your ball to think about your next shot – yardage, club selection, elements, etc. When you reach your ball you’ll need less time to figure out the shot. • If you’re unsure whether or not your ball has come to rest in a hazard or is out of bounds, immediately hit a provisional ball so that you won’t have to return to the spot to replay the shot. If you’re playing a fun match with, shall we say, a “loose interpretation” of the rules, then simply drop a new ball somewhere around the area where your ball was lost and keep playing, taking a penalty of course. • If you’re following the rules, you won’t be using any mulligans. But if you are, limit them

to no more than one mulligan per nine, and never hit a mulligan if players behind you are waiting. • Begin reading the green and lining up putts as soon as you reach the green. Don’t wait until it’s your turn to putt. Read the green as soon as you reach it so that when it’s your turn you can step right up and putt. • If using a cart on a cart-path-only day, take more than one club with you when you walk from the cart to your ball. Getting to the ball only to find out you don’t have the right club is a huge time waster on the golf course. • On the tee, pay attention to your partners’ drives. If they lose sight of their ball, you can help direct them to it to avoid a lengthy search. • Leave your cell phone in the car!

BEAVERS CREATE FISH AND WILDLIFE HABITAT FOR TAHOE DONNER

T

ahoe Donner is lucky to have two beautiful streams supporting diverse wildlife, including native North American beavers (Castor Canadensis). Beavers are aquatic mammals and excellent swimmers, but awkward and vulnerable on land. They need to build dams in ponds to protect themselves from predators, and to be close to their food sources. Beavers are strict vegetarians, and feed on the inner bark, twigs, leaves and roots of various plants, favoring aspen, willow, cattails and lily pads. They also consume algae and plants that can clog creeks. Beavers form strong family units and the adults mate for life. Both males and females care for one or more babies, called kits, born in the spring. A typical family, or colony, consists of the parents, kits and one

Beavers and their dams are a valuable component of our mountain ecosystem.

or two yearlings who act as babysitters for the kits. Kits spend two to three years with their parents learning the skills they need to survive. Beaver ponds create wetlands, which create rich habitat for many other mammals, fish, amphibians, and birds. Native Americans called them the “sacred center” and scientists call beavers a keystone species, meaning one that has a disproportionately large effect on its environment relative to its abundance. The presence of beaver dams has been shown to increase the number of fish, their size, or both, in a study of brook, rainbow and brown trout at Sagehen Creek, just north of Truckee. Other studies show beaver ponds are a preferred habitat for juvenile trout, salmon and steelhead. Beaver dams also slow water flows, reduce erosion, replenish the water table, and filter out sediment and toxins. A local group of volunteers, Sierra Wildlife Coalition, promotes humane and practical solutions for living with beavers and local wildlife. To resolve any conflicts with beavers and their dams, they install economical pond levelers, water-control devices constructed of pipe and fencing that allow water to flow through dams to prevent unwanted flooding. They also protect trees from beaver chewing with abrasive paint, which is sand mixed with paint to match the color of the tree. There is a beaver pond right next to Skislope Way near the corner of Alder Creek Road. Together with Tahoe Donner Forestry, Sierra Wildlife Coalition installed a pond leveler there in 2011 which prevents the flooding of a nearby trail. The Tahoe Donner Trails Department also did a great job of relocating that trail away from the creek, and installing culverts to divert flows from the road. The beavers have a series of dams down this small side creek to Fjord Road, which keep these meadows wet all year, even during recent dry summers. Ducks, other birds and deer are often seen there. More beaver dams down Alder Creek toward Highway 89 create wildlife habitat and enhance riparian vegetation. Sierra Wildlife Coalition also installed a pond leveler through the beaver dam on Trout Creek below Zermatt Drive, where Tahoe Donner has their informational sign about beavers. ver dams in this area, creating large wetlands with abundant willows. Beaver chewing actually stimulates re-growth of fast-growing species like willows, creating a low density habitat favored by many nesting birds. Another study of Tahoe streams, including Trout Creek, using aerial multispectral videography, has shown that deciduous, thick and thin herbaceous vegetation has increased near beaver dams. Other studies show that beavers create habitats that provide resilience to drought. Examining how beavers influenced some of Alberta’s wetlands in Elk Island National Park in Canada over a 54-year period, the presence of open water increased up to nine times in areas with beavers and their dams. Utah, Washington and other states are now using beavers to restore watersheds. It’s easy to see beavers’ dams and ponds, but not as easy to spot the beavers themselves, as they are mostly nocturnal. Dawn and dusk are best times to take a walk and look for beavers. This is the time of year that new beaver kits might make their first appearances. If you are calm and quiet (never walk on their dams or lodges), you might be lucky enough to see them – they often ride on the back of their parents or older siblings. Beavers don’t have strong eyesight, but hear and smell very well, so noises or sudden movements will spook them. Please don’t go into creeks or ponds near them, as the parents will be nervous for their babies. If you are interested, there are numerous websites with more information and videos of beaver families. Check out martinezbeavers.org – there is a beaver family right in downtown Martinez on San Francisco Bay, or beaversww.org – Beavers Wetlands and Wildlife in New York has a beaver pond and wildlife sanctuary and has rescued orphaned kits. Both sites have great video footage. A wonderful documentary called “Leave It to Beavers” that recently aired on PBS’s Nature series is available online. READY FOR WILDFIRE? Unprecedented weather conditions in Truckee and Tahoe this past winter means we are heading into a summer of dangerous fire conditions. Compounding this is a forecast calling for more extreme weather swings with high winds and lower than normal humidity resulting in even drier conditions. Since 2007, Tahoe Donner has actively pursued improved defensible space through the Defensible Space program implemented by the Forestry Department. If you have any concerns or questions about your defensible space, our friendly forestry staff will be glad to assist. It is important to review your defensible space and maintain your property on an annual basis in preparation for a potential wildfire event. The requirements of our defensible space program mimics a low-intensity wildfire, which helps reduce the risk of a wildfire moving from the ground to the tree canopy. Truckee fourth of July Parade and Fireworks This old-fashioned hometown 4th of July parade starts at 10 a.m. on the west end of town and marches down Donner Pass Road, ending up in historic downtown Truckee. So you want to be a Grill Master?

I have been hosting parties and standing behind the grill for almost 30 years now. My events are always well-attended, and though I would love to believe it is due to my good looks and charming personality, it is really because of the food—especially when it involves meat! So if you are vegan or vegetarian turn the page here and move on to the next article. For those of you still reading, I would like to pass on some grilling secrets to make you the Grill Master.

Choosing the right steak and proper handling First, it’s important to understand the meat and the different cuts. One of the nicer cuts is the filet mignon. It is the most tender, the most expensive and the least flavorful. It is designed to melt in your mouth, but you will notice it is usually served with a sauce or some enhancement such as a béarnaise or bordelaise sauce, or it may be wrapped in bacon. Here at The Lodge Restaurant & Pub we serve our hand-cut filets with a port wine demi, topped with healthy portion of crumbled Maytag blue cheese and tempura onion rings. It is a decadent dish, and if you have not tried it I highly recommend it. Another cut is the porterhouse or T-bone. This steak is made up of a portion of New York strip on one side and a smaller portion of filet mignon on the other. These steaks are usually a larger cut and are bonein. Two of my personal favorites are the New York strip and the rib eye: in my opinion they are the right combination of tenderness and flavor. When choosing one of these—and for that matter, most steaks except filet—you want to look for marbling of fat throughout the steak. In the words of the immortal Julia Child, “fat equals flavor.” Once cooked, this is what makes the magic. It should look like a marble and be consistent throughout. Avoid the larger pockets of fat that you may get from cheaper cuts of meat. Top sirloin is the next cut down. This is going to be the toughest of the top cuts but you will get the most flavor from it. If prepped and cooked properly this can still be outstanding. Last but not least, and one of my favorites, is the tri-tip—a very versatile cut of meat. I prefer to prepare it with a number of different marinades but my wife likes it just the way it is.

Know your grill Now let’s discuss your grill. I personally am a gas grill man, though I thoroughly enjoy the charcoal grills as well. I prefer the consistency of the gas grill but what I like even better is that getting it going is much quicker. What do I mean by “know your grill”? It is extremely important

to understand how it cooks. All gas grills have hot spots. This means there are sections of the grill that will cook faster than others. If you know this, you will avoid ending up with a steak that is rare on one side and well done on the other.

Preparation is key Let’s start by trimming the fat. The more expensive the steak, the less trimming you will need to do. Costco sells very nice cuts of meat that are usually ready to grill, but can be twice as much as the grocery stores, so let your budget be your guide. For New York and rib eye steaks, I would not recommend any marination, as these really have great beef flavor when cooked properly. Pat the steaks dry with paper towels. I start off with a grind of sea salt and fresh cracked pepper on all my steaks. For some I will even add a dusting of garlic powder. Rub it into the meat while it is resting prior to cooking. Very important: ALWAYS ALLOW ALL MEAT TO REACH ROOM TEMPERATURE PRIOR TO COOKING. Most folks take the meat from the refrigerator to the grill. This causes your meat to overcook on the outside while undercooking on the inside. Also, be sure to warm up your grill. I will set my grill on high for about 10 minutes prior to cooking. This allows a good even temperature. Should you decide to use a lesser cut, like sirloin or tri-tip, you will want to tenderize it prior to the rub. This can be as simple as using a long pronged fork. Stab that thing like it is (fill in the blank): your ex-wife, your mother in law, your no-good husband, the tax collector, but be thorough and make sure to cover all the meat, both sides. This


ups happen. Be ready to control the fire under the steak if it begins to burn too hot or too high. This is one of the most important parts of the process after you have removed the meat from the grill: ALLOW YOUR MEAT TO REST. This allows all the juices that have been moved all around the steak to settle. Avoid cutting into your meat prior to resting. Have you ever cut a steak too early and had a plate full of juice? Alas, you just lost all of the flavor. If you have a rack that allows circulation underneath, that is best to rest steaks, but a plate will do just fine. Concerned about the meat getting cold? Tent aluminum foil over the top; this should keep heat in. Allow the grilled meat to rest for at least 5 minutes. Then pick out a second bottle of great red, because you should have had the first one while you were cooking, and dig in. If you follow these tips, you too can be a Grill Master. If this doesn’t work, and if you have great steaks and great wine, give me a call and maybe I’ll come by and cook it for you. allows the muscle to begin to break down and will make for a more tender steak. Don’t forget your salt and pepper rub. If you choose to use a marinade, there is no shame in starting with a good base (a purchased marinade). There are a lot of good ones out there. You can then customize it with the ingredients and taste profile that you are looking for. Very important: ALWAYS ADD CITRUS JUICE. Whether it is freshsqueezed or bottled, lemon, lime or pineapple will also help to begin to break down the meat and make it much more tender. It will also help allow the marinade to better penetrate the steak. I like to marinate my meat for at least 24 hours. More time equals stronger flavor, so don’t leave it too long.

INSIDER TIP: Cook chicken low and slow. This allows it to roast and fall off the bone. Cook pork hot and fast. Pork can dry out, so the shortest time on the grill the better. Get it up to temperature as quick as possible and then turn off the heat to rest. Also, meat is handled much better than it was in the old days so medium temperature pork is OK.

Get grilling! Now you are ready to start. As we’ve discussed, the meat is now room temperature, and the grill is now hot. Let’s do this! If you have the grill space, I like to turn one side down to medium and leave the other side on high. Too hot of a grill will cook your meat too quickly and can char or dry it out. Place your meat on the medium heat side, then close the lid. This keeps the flame off the steaks while the high-heat side creates an oven to roast your steaks as well as grill them. I can’t give you advice on cook times, as all grills are different, so you are going to have to experiment a little before you go big with a dinner party. Remember, it’s always better to undercook than overcook, because there ain’t no goin’ back once you’re well done. Very important: ONLY FLIP YOUR MEAT ONCE — half the time on one side and half the time on the other. Meat is smarter than you think. It will usually release from the grill when it is ready. If you have to pull it from the grill or it tears and leaves pieces on the grill, it is not ready to be flipped. And never push on the meat with a spatula or tongs. This forces all the delicious juices out of the meat and into the bottom of your grill. When you flip a fatty piece of meat, the grill is going to light up. Very important: NEVER LEAVE THE GRILL. Many a great steak has been wasted because the chef left the grill, and after the flip is when flare-

Before storing plywood, please take the time to put a coat of paint or stain on them to keep them looking consistent with the rest of your house. Below is the schedule of the Architectural Standards Committee meetings for the remainder of the year and the last date that a project can be submitted to the Architectural Standards Office to be added to the agenda for that meeting. We notify owners of adjacent properties of most proposed projects so that they may have the opportunity to comment on the project. For that reason, all submittals must be made at least three weeks prior to scheduled meetings so that we have enough time to send appropriate notification to your neighbors. Please remember to call our office early to schedule your appointment. As a reminder, if you are doing any exterior work on your home please call our office to give us a description of the proposed work.
