Now that Summer is in full swing, we want to focus on our next menu change cycle - The Fall Menu. A few things come to mind as we begin to develop menu ideas: Fall sports are beginning, back to school is right around the corner, and some commodity markets continue to be unstable.

Fall sports are coming and bringing in groups of people and busy families. Now is the time to identify trending flavors and attach them to Fall menu ideas to make sure we are offering dishes that our customers will come back for time and time again, along with creating savory dishes for Game Day.

Back to school time creates unique opportunities for us. Pizza is a great way to feed busy families and now is a great time to look for those interesting toppings that will make your pizza unique and craveable.

The beef market has been climbing steadily making it difficult to offer the value some of our customers are looking for. You will see that we are poultry heavy in the toolkit - identifying new menu ideas and concepts around chicken. We have seen a stabilization in the poultry market and prices for those products have been consistent. Identifying on- trend ways to utilize both commodity and value -added chicken items will add to your profitability.

Chef Tip: Roasted Garlic Puree and Garlic Oil

(We put this on everything)

Giving your dishes an extra layer of flavor makes them unique and craveable and keeps your guests coming back more often. Try this homemade roasted garlic puree and oil – we put it on everything!

1. Add garlic, canola oil, and EVO to a large pot. Submerge the garlic completely.

2. Bring to a boil then let rest and come to room temp. Bring to boil two more times.

3. Pour contents through a sieve separating the garlic and oil.

4. Smash garlic through sieve and dispose of skins

The finished product is something we use on the grill and mix into all types of cuisines both as an oil and a puree.

Random Chicken Breasts

We are showing some effective ways to use our random chicken breasts. As the name indicates, the sizing on these breasts is not consistent. The producers do not spend time sorting the product, which drives costs down. Finding ways to utilize this product in on- trend ways can decrease food costs and increase profitability.

Lime aioli is a trending flavor for menus across the country. We have used our random breasts to create chicken tender, marinated in adobo buffalo, breaded with Sysco’s traditional Western breading, served with a side of adobo buffalo sauce, and topped with fresh lime aioli and lime zest.
