Michael’s career with Sysco spans 22 years holding positions in customer service, business resources and for the last 12 years as marketing manager. Michael originally created our focus on local program, highlighting BC growers and producers. In his spare time Michael is a semi professional photographer working with local food and beverage producers such as the BC Blueberry Council, Squeezed Wine, Time Winery and Townhall Brands.

When I think of my favourite ingredients from BC, a couple things come to mind... great farming and the Paci c ocean. My go to is Beer battered Halibut cheeks, BC grown Kennebec potato fries and a fresh lime cilantro green cabbage slaw. I like to serve it with a little twist using a cusabi tarter sauce.

Wild Chinook Salmon (Oncorhynchus tshawytscha) harvested sustainably from Port Alberni, BC by Hupacasath and Tseshaht Nations fisheries.
Authentic Indigenous Seafood is a national supply chain collaboration among Indigenous sheries that will help improve the viability of many small to medium scale community sheries by connecting them to the value chain.
Supporting these sheries will improve sheries sustainability and will foster regional economic, employment, and food security.
Tus-Ma-Uss candied salmon nuggets with tender baby spinach leaves tossed in a maple miso vinaigrette layered with radicchio leaves, spicy glazed pecans, blackberries and shaved parmesan cheese garnished with savoury sunflower crackers.
We breed our own ducks, so we have a breeding stock, we get their eggs hatched, then raise the ducklings. We do this to keep the integrity of the Pekin Duck line. Our breeding flock comes from Grimaud breeders from France. They have rigorous control over maintaining the healthiest bird that’s true to the traditional Pekin Duck breed.

We never force feed our ducks. They choose to eat when they want to eat.
Processed in our Provincially Inspected facilities located on the farm in Yarrow.
We believe in full-cycle farming: we use sawdust that’s leftover from sawmills, we sell every part of the duck for zero-waste, then we allow the compost (sawdust and droppings) to decompose and they’re used as fertilizer on blueberry farms, and the feathers are sold to jacket and bedding manufacturers.
We are partnering with Sysco and bringing two new pack sizes to market on our Duck Breast and our Duck Leg/Thigh Quarter. These are now available in a 2/12 count or 24 portions to a case.
We know that cash flow and bottom line profits are front of mind for operators and these smaller pack sizes will make it to make it easier for the operator to carry less overhead cost and turn inventory.

Tabasco or chillies
¼ cup pine nuts, cashews, or almonds
