TACOFILLING:
3Tbsp.extra-virginoliveoil 1mediumyellowonion,diced 3cupsroughlychoppedcauliflower 3poblanopeppers,sliced 2garliccloves,minced
1jalapeñopepper,seededandchopped
3Tbsp.lowsodiumsoysauce
¼c freshcilantro,chopped 8oz halloumicheese,cutintocubes
1Tbsp rawsesameseeds 1avocado,sliced Corntortillas(warmedforserving)
SAUCE:
1c.fullfatplainGreekyogurt
1c.freshcilantro
1jalapeñopepper,seededandsliced Juiceof1lime Koshersalt
Tomakethesauce,inablenderorfoodprocessor,combinethe yogurt,cilantro,jalapeño,limejuice,andalargepinchofkosher salt.Pulseuntilsmooth,about1minute.Setaside.
Tomakethetacofilling,inalargeskillet,heat2tablespoonsof theoliveoilovermediumheat.Whentheoilshimmers,addthe onionandcook,stirringoften,untilsoft,about5minutes.Stirin thecauliflowerandpoblanopeppersandcookuntilthe cauliflowerstartstobrown,5to10minutes Addthegarlicand jalapeñoandcookuntilfragrant,about1minute.Addthesoy sauceandcook,stirring,untilthesoysaucecoatsthe vegetables,about2minutesmore.Removetheskilletfromthe heatandstirinthechoppedcilantro.
Inasmallskillet,heattheremaining1tablespoonofoliveoil overmediumheat.Whentheoilshimmers,addthehalloumi andcookuntilgolden,about1to2minuteseachside,4to5 minutestotal Removetheskilletfromtheheatandstirinthe sesameseeds
Addthefillingtothecorntortillasandtopwiththefried halloumi,avocado,andyogurtsauce.
