1 C dried chickpeas
½ tsp. baking soda
1 Tbsp. lemon juice
½ C. tahini
¾ tsp. kosher salt
2 garlic cloves
¼ C cold water
Salt to taste
Olive oil
In a medium bowl, cover the chickpeas with 2 inches of water. Soak for 12 hours.
Drain and rinse the chickpeas and place them in a large pot with the baking soda. Cover with 2 inches of water and bring to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and simmer until the chickpeas are very soft, about two hours. Drain and let cool slightly, then transfer to a food processor
Add the lemon juice, tahini, salt, and garlic to the food processor and blend until very smooth, about 1 minute. Then, with the motor running, drizzle in the water and continue to blend for about 2 to 3 more minutes. Taste and season with additional salt if needed
Transfer to a serving dish and top with your preference of olive oil, ground sumac, paprika, zhoug, more tahini, onions, red peppers and/or parsley. Serve with pita wedges or vegetables.
Leftovers will keep for three days in the refrigerator, stored in an airtight container and covered with a thin layer of olive oil.
